Brown originated the live culinary variety show with his "Edible Inevitable," "Eat Your Science," and "Beyond The Eats" tours that have performed in 200-plus cities with more than 550,000 fans in attendance. Alton Brown has been on the Food Network for over 20 years and is best known as the creator, writer, and host of Good Eats, Good Eats: Reloaded, and Good Eats: The Return. He also hosted Cutthroat Kitchen and served as the culinary commentator on Iron Chef America. He is the host of Top 10 new Netflix Iron Chef reboot "Iron Chef: Quest for an Iron Legend." There are two James Beard awards with Brown's name on them in a drawer in his office, and somewhere in the world there's a coveted Peabody awarded for Good Eats that was stolen out of his car back in 2013. Food Network star Alton Brown brings unusual, wacky live show to Detroit

Get ready to see some wacky and unusual ways to play with your food. 

Alton Brown, cookbook author and famed Food Network show host and star, brings his live culinary interactive show to the Fox Theatre in Detroit at 6:30 p.m. Sunday.

The "Alton Brown Live: Beyond the Eats" is a live performance of Brown's often eccentric, scientific approach to cooking and why things work as they do, paired with music and plenty of what Brown calls "large and unusual" on stage demonstrations.

Tickets start at $40 and are available at 313presents.com. 

Brown's previous variety tours were the Edible Inevitable Tour (2013) and Eat Your Science (2016). Both made stops in Detroit and played in cities nationwide.

Along with audience participation, the show promises there will be, according to altonbrownlive.com , "more cooking, more comedy, more music, and more potentially dangerous science stuff," during the two-hour show.

A new aspect is a game show segment with audience participation. You can take a quiz posted at altonbrownlive.com to prequalify. 

The Free Press reached Brown before his show in Memphis, Tennessee, to get an idea of what's in store for Sunday's performance.

Brown's answers have been edited for brevity and clarity.

QUESTION: What can you tell us about this show?

ANSWER: It follows the same DNA as my other live shows in that it is a culinary variety show, which means that there's music,  there's comedy, there is very large, very unusual culinary demonstrations. It's all-new. But bigger, better, louder, and hopefully funnier. Oh, and it also really smells good.

Q: You've added a game show component. Does the audience participate in the game show?

A: We actually play a game show right in the middle of the show with contestants from the audience. In fact, people have taken a quiz online that I posted about five months ago. For every city that we go to, we have a list of the top scores. I call out people if we know they are in the theater that scored well on that quiz so they can come down and play.

Q: Can you give us an example of bigger, better, louder, and funnier demonstrations?

A: Nope. Not going to do it. Nope, it's all a secret. I don't like to give too much away. There's cooking. There is a very large  ... we've built something impressive. We always try and do demonstrations that are unusual but then also help teach some particular aspect of cooking in an entertaining way, hopefully. Above all, the show is there to be entertaining. If you learn something, great.

Q: Can you give us a hint of what "foodie stuff" those at the show will experience?

A: I will tell you that there are demonstrations, very large, very unusual in creating food that's almost universally adored. I would like to think that the show, we constructed the show, to be enjoyed by someone who is not necessarily a foodie. ... I think this is a very general audience, family-friendly kind of show that hopefully ... God ... I can't believe I am going to use these words, has a little something for everybody. There I've said it.

Q: Your last performance in Detroit was in 2016. What do you remember from your visit?

The shows are so involved that typically I don't get out much. We are building the show during the day.  We take it down every night and put it back together. So I don't get out very often. The last time I was there I managed to sneak out for a hot dog. But I cannot remember the name of the place. It was quite famous. What we will do this time because our COVID restrictions are rather terse, is that we'll ask the fans via social media what food we should have brought in.  ... And then we report on it if all goes well.

Q: Was it a coney dog?

A: I don't remember. It was a place that everyone said you had to go. The main things I remember about Detroit is that there is great coffee in that town, that the Fox Theatre is absolutely one of the marvels of humankind, and Detroit crowds are always a lot of fun. They are very eager to laugh, very eager to be involved, and a lot of fun.

Q: In traveling for the last six months for the tour are there any food trends popping up?

A: The biggest of which continues to be, pretty much in every city, every town in America has really good tacos. The taco is the new cutting edge ...  well, it's not new, it's where the flavors are at now.  Korean cuisine is going gangbusters all across the United States. Really it's in those ethnic, what I am going call fast food ethnic kind of realms where everybody is investing their tongues at the moment. Korean cuisine and tacos. It's massive amounts of flavors. Americans are kind of in tune with fermented foods and the complexities that come out of those flavors. It's really kind of changing the general palate of our country. And in a good way.

Q: What's next for you?

A: I have a new book coming out. The last of the "Good Eats" book comes out in April. I have a new project on a large streaming platform. That's all I am allowed to say. I have a life beyond good eats.

Alton Brown and his wife Elizabeth Ingram were recently enjoying a few free days in Chicago between stops on his latest — and probably final, more on that later — live culinary tour.

The star of such Food Network shows as “Good Eats, “Cutthroat Kitchen” and “Iron Chef America” is on tour with his latest show, “Alton Brown Live: Beyond the Eats.” The tour stops April 2 at the Genesee Theatre in Waukegan.

Brown worked in Chicago in the late 1980s and early 1990s directing commercials.

“The (food) scene here is constantly changing,” he said. “We ate at a place last night called High Five Ramen, which was absolutely wonderful. Some of the best ramen that we’ve had in years. We also hit the classics — we’re going to Shaw’s tonight. Shaw’s Crab House is the first restaurant I ever ate at in Chicago back in 1988 so I always go to Shaw’s when I’ve been gone for a while.

“And sometimes we slip under the bridge and go to Billy Goat’s for a cheeseburger. Things here change and then they don’t change at all. That’s what’s great about towns like Chicago.”

It’s the third installment of his live culinary variety shows, following “The Edible Inevitable Tour” in 2013 and “Eat Your Science” in 2016.

If you’ve seen one of the other live shows, you will be familiar with the structure of “Beyond the Eats,” he said. There’s an opening monologue; funny, food-related songs from his band, audience participation, culinary demonstrations and more.

“The cooking part, which is the entirety of the second act, is more involved and more complex than anything we’ve ever done before. It took a lot to work out the science because it’s a machine that’s never existed before so that’s kind of exciting to watch that,” he said.

“There’s also a bit of learning. I think there’s more educational (components) in this show than there has been before. We do quite an in-depth exploration of what it means for a food to be hot, meaning spicy. We do quite an investigation of the concept of hotness, which I think is going to be interesting for folks.”

This one promises to be bigger and more exciting in scope and content than the previous shows.

“I feel I have the form down but because of that it makes each (show) tougher to come up with because you know what works and what doesn’t work,” he said. “All of my shows have at least one very large, very unusual culinary demonstration that involves machinery that doesn’t exist anywhere else in the world. This tour is the biggest of them that we’ve done and also the most scientifically complex. This took us 10 months probably in research and development to get that part of the show ready.”

New is a game show during the show, he said. Several months ago, he created an online food quiz on his website and he’s got a list of the top 20 scorers in every city. Those are the names he calls first to come up onstage and participate in said game show.

“It’s really been fun so far. People come from all walks of life, all levels of fans,” he said.

His wife, Elizabeth Ingram, joins in on the show — she plays bass in his band and helps with the demonstration. Fans will know her from their at-home cooking series “Quarantine Quitchen” on YouTube that they started during the pandemic.

“We started doing this wacky, online live show at the beginning of quarantine … which is incredibly irreverent, incredibly not for kids, completely raw and people started following her,” he said. “So now we go onstage every night and people cheer for her, which is something she’s really had to get used to.

“This is a woman that works as a designer. Her job is she designs restaurants for a living. She does not play bass. She’s not an entertainer but she decided to go there with me and it’s been really lovely for us. I so enjoy working with her onstage.”

As entertaining and educational as “Good Eats” was, he’s hoping this live show makes people smile.

“A lot of the people in the audience haven’t been out in two years. We’re striving above all for entertainment and creating a community in the room around food,” he said. “I’m not so concerned with educating people. I’m just glad to have people out of the house and in the theater again. Is there something to learn? Sure. But it’s always going to be entertainment first.

“And quite frankly, there’s more personal stuff in this show and that has come out of the experience that I’ve had with fans during ‘Quarantine Quitchen’ on YouTube, which is that people have been really interested in not just the version of me that I’m willing to put out there but kind of the more personal version. So there’s some storytelling in the first act that is quite personal that people seem to enjoy and that would not have happened if it weren’t for COVID.”

This is his Brown’s farewell tour, he confirmed.

“I always said that I would tour three tour shows and then I would move on to other things so yes, this is it,” he said. “People keep saying that I will change my mind and it will be like The Eagles or KISS, but no. I’ve got to stick to this because it’s extremely time-consuming.”

Brown wants audiences to know that “Beyond the Eats” is a family show.

“We love to see young people there,” he said. “They bring a lot of great energy to the room. Especially if they’re in the first few rows, we have a lot of great conversations.”

It’s very large.

It does something that no other cooking device really can do.

And it makes a lot of a particular food in a relatively small amount of time.

“I’m not gonna say anything else,” Alton Brown says. “No. Nope.” I’m trying to get Brown - the superstar TV chef/host, author and general renaissance man – to give a little more info about the “very unusual demonstration” that’s part of his latest touring culinary variety show, “Beyond the Eats.”

As fans of “Good Eats” - the hit Food Network show that made Brown famous - know, he’s fantastic at alchemizing new contraptions that do cool stuff with food. In addition to putting that talent on display once again, live onstage, the two-hour-ish “Beyond the Eats” shows involve comedy, live music and a ton of audience participation. There’s even a game show that takes place in the middle of the show.

“We try not to bring anything out on stage that we don’t know how to control,” Brown says. “The people? You don’t know. And that’s what makes it fun every night.”

On a recent morning, Brown called in for a phone interview from his tour bus, before a “Beyond the Eats” stop in Greenville, South Carolina. Below are edited excerpts from our conversation.

Alton, you studied film at the University of Georgia. What’s a specific way that background impacts what you do onstage and on TV?

Well, I studied film, but my degree was actually in theater, and I spent a fair amount of time doing stage work as well. The film work drove me to cinematography, which then drove me to directing TV commercials. Then I wanted to make food shows, so I quit and went to culinary school so that I could end up making the show “Good Eats,” which kept me employed for a couple of decades.

So for me, it’s kind of coming full circle. I mean, if you if you remove the cinema aspect but leave everything else, you’ve got yourself a live theater show. And I started doing these in 2013, mostly because I was daring myself. It was like, this is something I haven’t done - nobody’s ever done a culinary variety show, that I know of – and would that work?

And that first tour, which was called the “Edible Inevitable Tour,” led to the “Eat Your Science Tour” and then “Eat Your Science” led to “Beyond The Eats.”

With “Beyond the Eats,” what’s the biggest disaster you’ve endured onstage at one of these shows?

We had one about a week and a half ago, they got called up to be on our quiz show, not knowing that this individual was plowed . I mean, fully intoxicated. And once they got there I realized, oh OK, I have to control this situation. I have to try to make it entertaining for the audience, and also keep it safe.

I’ve read on Twitter where you’ve mentioned “Beyond The Eats” being your farewell tour. How serious are you about that? Or are you just like (the rock bands) Kiss or The Who serious about the farewell thing?

Exactly not like Kiss. [Laughs] No, I always said that I would do three tours, and this will be it. I’m not saying that I’ll never appear in front of a live audience again, but I will never undertake something of this scope and scale. I’ve got other stuff to do that I need to kind of move on to try to get done before I wrap up life on planet earth, so to speak. So this is it. And I’m saying that to people to make me live up to my promise. It’s almost like I now have to honor that now that I’ve said it.

Being someone who’s from and still resides in Georgia, what do you think’s an underrated aspect of Southern food?

Vegetables. This whole Southern food thing that’s all about “Woo! Let’s eat some fried food and fried chicken and have us some bourbon” is pretty much what’s been made up by people that are stereotypically Southern, which I am not.

My DNA goes back so far in north Georgia that our family crest has a propane tank on it, so we are most definitely Southern and, I’ve got to tell you, most of Southern cuisine is agrarian. It comes out of vegetables. It comes out of crops. And people don’t think about that or sometimes remember that. Our pickling traditions are as deep as some of those in Eastern Europe, and I wish that people paid a little bit more attention to that. Not everything’s drinking bourbon out of mason jars. Some of us actually like glasses.

What are three items you always keep in your home fridge?

[Nine-second pause.] Mustard. [Five-second pause.] Vermouth. [Six-second pause.] And sauerkraut. I have too much damn mustard. I’m kind of a mustard fanatic – both my wife and I are huge mustard people. Her DNA is Polish so we’ve got all kinds of spicy stuff and a lot of pickled things in there, and I always keep vermouth for martinis.

The fast food you eat most often?

A chain? I don’t do it. I haven’t had any fast food in a decade, probably. I seek out small family-owned restaurants and one of a kind restaurants.

Can you remember the last fast food place you ate that, then?

No. I also haven’t had a cup of Starbucks coffee in five years, which I’m especially proud.

Yeah, that’s easier for me to do.

People expect that everybody has some kind of fast food thing that it’s like a secret passion or something. I don’t. I adore french fries and I adore hamburgers, so I don’t eat them in fast food chains, because I really like them . And I figure you only get so many hamburgers in your lifetime; you only get so many french fries in your lifetime. I think that the quality of chain food in this country is really not very good, to my tastes, so I try to find my food elsewhere.

If you were going to be known for just one of your TV shows – whether that’s “Good Eats,” “Cutthroat Kitchen,” other things  - like if someone who had no idea who you were, what show would you point them to?

Oh, it would have to be “Good Eats.” I mean, I created that show. I directed over 200 episodes of it. I wrote every single script. It’s more like a child than a TV show to me. If somebody wants to know who I am, there it is.

On “Good Eats” you made a lot of these makeshift cooking devices. Back in the day, were you also pretty resourceful in constructing impromptu bongs out of objects?

No, I never started building hacks until I got into food. It’s always been cooking. I never attempted to build other things previously in my life.

When I think of people who are very well known, like food celebrities, there’s you and then another one would be Anthony Bourdain. Back in the day he (Bourdain) had some quips about TV chefs. And you had some replies back (in the press) about you having done a lot of cooking on TV and him maybe not so much, but then you also talked about liking his writing and he (on Twitter) said your work was the smartest stuff on Food Network. After his passing, what do you think is Anthony Bourdain’s greatest legacy?

First off, I worked I worked with Tony a few times. And I spoke with him fairly often, although I didn’t hear from him probably six months before he passed away. But he had helped me plan a trip to Japan that I took my daughter on.

And I think that his greatest legacy is that he opened the world in such a way, as a traveler, that was very different. And it remains and always probably will be very different from anything that anybody else did.

Tony’s job was not to teach us how to cook. It was to teach us how to see and feel other people and other cultures through cooking and through their connectivity through food.

So he was he was a wanderer in the classic sense, and he made the world feel big but also comfortable at the same time. I think he was really a cultural anthropologist more than he was anything else. And he was a fantastic wordsmith, an amazing writer, an incredibly eloquent individual, and I am I am sorry that we do not have him anymore.

Earlier we touched on your background in cinematography. I read that you were the cinematographer for R.E.M.’s music video for their song “The One I Love.” Is that true? And do you have a vivid memory of the band from making that video you can share?

Well, it’s true. Yes, I was director of photography or the cinematographer on that, but I don’t have any stories about them. I lived in that town (Athens, Georgia) for a lot of years. I saw those guys, I heard those guys in clubs. I wouldn’t say that I was a fan. I was more a fan of the painter (Robert Longo) who was going to direct that video, which was the real reason that I wanted to be on that video. I didn’t have anything against R.E.M., but I wasn’t like, “Oh my god, R.E.M.” I appreciated what they were doing and, sure, I liked their music, but it wasn’t a religious experience or anything.

But I do remember it really well because it was something that I had actually moved back from Atlanta back to Athens to wait on, that video coming to town, because I had heard rumors that it was going to happen. So I very strategically put myself in front of that train. And just got very lucky that I had enough skill sets under my under my belt by that point in my life - I was only 25 - to be able to pull it off.

If you were able to pick your last meal, what would it be?

I think probably duck confit because it takes three days to make.

Alton Brown Just Confirmed His Farewell Beyond The Eats Tour Is The Real Deal

Food Network personality Alton Brown

Fans of Food Network personality Alton Brown have flocked to his live tours over the years, but sadly for them the current "Beyond the Eats" tour is his grand finale.

Billed as a "culinary variety show," per the chef's "Alton Brown Live" website , "Beyond the Eats" will be his last such venture, despite its success. He recently told AL.com that he "always said" he'd do only three tours. Although he doesn't rule out doing the occasional live audience show in the future, he says he, "will never undertake something of this scope and scale," again. "I've got other stuff to do that I need to kind of move on to try to get done before I wrap up life on planet Earth, so to speak. So this is it," he says.

Brown also notes he's making this announcement in an effort to hold himself to the promise. "It's almost like I now have to honor that now that I've said it," he explains.

What to expect at a Beyond the Eats show

Brown's tours aren't some dry old cooking demo. In fact, he developed them to be the antithesis of standard shows, with plenty of humor, science, and other surprises built into the equation. Ticket holders get what they pay for, too. The show runs for 2.5 hours, and culinary assistants are chosen at random from the audience! Plus, unlike so many concerts and comedians out there, it's a "friendly for all ages" type of experience.

Indeed, past shows have included games, costumes, puppets, and even the occasional well-controlled fire. Tickets remain for the rest of the tour, which is set to hit cities like Omaha, Little Rock, Toronto, and more in the coming weeks.

The jury's still out on whether or not Brown will maintain his touring moratorium after "Beyond the Eats" wraps. It's a safe bet, however, that he'll come up with new and innovative ways to surprise and delight his fans. That's just his M.O.
