The life of a chef is one of risk. Yes, you can earn a pretty good salary cooking in a hospital or cafeteria, but those who really want to make their mark must find some way to stand out from the crowd. The process of opening a restaurant alone is a big deal — not only financially, but personally, as the chances for failure are high. But those willing to take that risk — followed by further risks to make it popular and profitable — can reap considerable benefits. I could list examples, but really, show me any chef with a successful restaurant and I’ll show you a man or woman who is more than ready to take on a challenge. 

Whether Helena Loureiro took more risks than your average chef is debatable, but her success is undeniable. Since arriving in Montreal from her native Portugal in 1988, her rise to the top has hardly been a walk in the park. Yet Loureiro, one of Montreal’s too-few female chefs, has quietly built an empire. At 49, she is the owner of three restaurants: her first, opened in 2003, was Portus Calle on the Main; her second, opened in 2010, is the swish Helena on McGill St.; and the latest is Cantinho de Lisboa, a café on St-Paul St. 

Racing between three restaurants is no simple feat (she has written a couple of cookbooks as well), yet Loureiro is wildly popular. I know faithful customers who swear by her restaurants, due not only to the fact that she serves delicious Portuguese cuisine, but also because she is a welcoming hostess who is happy to venture into the dining room and greet her admirers. And she always seems to be present, which makes me think there are actually three Helena Loureiros.

This year, however, Loureiro took on a monumental risk. Word came last fall that she would be moving her beloved maison mère, Portus Calle, out of its Portuguese neighbourhood in the Plateau to the oddest — yet potentially the most fabulous — dining space in the city: the revolving restaurant located on the 30th and 31st floors of the Evo student residence building, best known as the former Delta Centre-Ville. Closed in 2013, the Tour de Ville restaurant was not only famous for its 360-degree panoramic views, but also as a popular brunch destination back when it opened in the then-Hyatt Regency in the ’70s. (It became Le Grand Hotel in the ’80s.) 

Having not set foot in this space since my preteens (the revolving restaurant was our primo Mother’s Day brunch destination), words cannot describe how excited I was to return. Loureiro, I’m told, negotiated for over a year to acquire the space, and though I’m certain many questioned her move, for several reasons it seemed more bold than brash. First of all, she is far closer to her downtown business clientele; secondly, she is near her two Old Montreal restaurants. Perhaps most importantly, no other restaurant space in Montreal offers the views of this new locale. It takes just over two hours to make an entire turn, and on a clear night like the one I recently enjoyed, there is no better way to see our city.

As for the food, anyone familiar with the Portus Calle canon will recognize many dishes. After a Porto spritz (white Port with soda water and a twist of lemon), we plunged into four tapas plates, starting with a yellow and red tomato salad. What a perfect beginning that was, with the spot-on ripe tomatoes, bracing pickled onions and flakes of soft São Jorge cheese. With a few sips of vinho verde and that glorious twinkling landscape around me, I was in heaven.

Up next came a dish of scallops. Served with dried chouriço sausage, the two fat scallops were lightly seared and well enhanced with roasted red peppers and a slightly sweet corn sauce. Lovely.

I was a little less taken with a dish of grilled octopus. Placed on a bed of beans and topped with radish slices and herbs, the octopus was meaty but dry, especially as the beans seemed to suck all the moisture out of the dish. Even a drizzle of olive oil would have made a world of difference. By contrast, a shrimp dish was all about the sauce. The four jumbo shrimp were marvellous — just so meaty and fresh — but the spicy garlic sauce underneath them stole the show. 

For mains I chose an Icelandic cod filet from the list of daily specials, and from the menu, two Portuguese classics: pork with clams and seafood rice. The cod was gorgeous: ivory white, creamy texture, fresh. The salting was a bit heavy, but otherwise everything about this dish, including the asparagus, kale and fried chickpea accompaniment, was expertly prepared.

Served in a shallow copper dish, the pork with clams was an absolute treat. The presentation included a dozen juicy clams sautéed with parsley and chunks of tender pork. You really cannot eat at Portus 360 without ordering this dish, which would also make a fine starter for sharing.

And then there was the seafood rice, served in a magnificent stainless steel, flying-saucer-shaped covered bowl. The amount of seafood — mussels, clams, shrimp, squid, lobster — was generous, as was the rice. I enjoyed every bite, though it’s probably too much for one diner. So many dishes here are ideal for sharing, so keep that in mind when ordering.

For dessert we settled on the predictable — but essential —  natas tarts and a verrine of “natas do ceu.” Described by our waiter as a “sort of Portuguese tiramisu,” the dessert consisted of an egg white mousse layered with crumbled cookies and topped with sweetened egg yolks. I loved it all.

From the fine food to friendly service to breathtaking views, the month-old Portus 360 shows great potential. However, there are improvements to be made, such as the wine list. With some steep markups on the low end (like the Vila Regia at four times SAQ retail!) and a lack of avant-garde bottles from Portugal’s progressive winemakers, it’s a list that isn’t on a par with the finesse of Loureiro’s cuisine. 

The parking situation is also a challenge. Due to construction constraints, there’s little parking on the street, and the indoor lot is a maze of poorly marked tunnels that can lead you far from the restaurant. It’s still early days here, but someone should get down there pronto and put up signs for prospective customers, even in the hallways on the main floor identifying the route to the elevator to take you to the 31st floor. And as for the $15 parking fee, considering how empty the lot is at night, it would be great for customers to be offered a discount. 

Loureiro and company are still settling into their new space, which — with close to 200 seats — feels a bit empty right now. (Note: this is a great choice for customers looking for a civilized as opposed to boisterous dining experience.) But this sharp chef has shown us she can handle a challenge or two. I’ll certainly be back, to watch the city go by — and taste the clams go down — again.

On peut sincèrement dire qu’on ne manque pas de restaurants à Montréal. Qu’on veuille manger des sushis , des grilled cheese ou bien manger pour pas trop cher , on a l’embarras du choix. J’adore aller au resto, que ce soit quand ma famille me rend visite ou pour n’importe quelle occasion avec des amis.

Par contre, on a toujours de la difficulté à choisir. Comme quoi, trop (de choix) c’est comme pas assez. Pis j’m’enligne pour nous compliquer encore plus la vie avec encore plus de choix. Au moins, on peut s’dire que c’est un beau problème.

Parce que s’il faut aimer ce qu’il y a dans notre assiette, avoir une belle vue n’est pas désagréable non plus. Que ce soit pour une date ou pour un souper entre filles et prendre de belles photos Instagram, toutes les excuses sont bonnes pour visiter un de ces restaurants-ci!
