How to Delete Cookies in Safari

When you browse the web on your devices, websites will often leave cookies on your system so that they can remember you and what your preferences are.

However, for the same reason, cookies can pose a privacy risk because of the information they hold about you, which is why you may want to remove them from your computer every so often.

The following steps show you how to delete cookies from Apple's Safari browser on Mac, iPhone , and iPad .

How to Delete Cookies in Safari on iOS

Note that the following steps clear all history, cookies and website data on your device, regardless of when the sites were accessed.

  • Launch the Settings app on your iOS device.
  • Scroll down and select Safari .
  • Scroll down and select Clear History and Website Data .

  • Launch Safari browser on your Mac.

Ahora bien, existen instantes en los que puede ser necesario borrar o eliminar la caché y las cookies del navegador. En ocasiones sucede que las páginas no se actualizan de nuevo, o las imágenes no cargan del todo. Si esto sucede, es probable que la memoria caché se haya dañado.

Para solucionarlo, no hay nada mejor como eliminar las cookies del navegador, o limpiar la memoria caché de Safari. Son archivos pequeños que los sitios web utilizan para guardar datos sobre tí y sobre lo que haces en la página, con el fin de mejorar tu experiencia de navegación. 

También puede que simplemente quieras limpiar la información del navegador de forma periódica para proteger tu privacidad de los fisgones que desean descubrir lo que estás haciendo en la red y las páginas que visitas.

Borrar cookies y la caché de sitios individuales

  • ‘Preferencias> Privacidad> Gestionar datos del sitio web’

It’s a straightforward process to clear cache on Mac in Safari as well as third-party browsers like Chrome and Firefox. While the button in the menu bar for Safari is labeled “Clear History,” it also clears cookies and your cache.

  • Open Safari
  • In the menu bar (top left of your screen) click History
  • You can also choose Safari > Clear History…
  • Use the drop-down menu to pick what timeframe you want to clear history and cookies from Safari
  • One last time, click  Clear History
  • Keep in mind that means you may be logged out of websites, etc.

  • The steps to boot into Safe Mode are different depending on whether your Mac has an Apple silicon or Intel processor. To find out your processor type, click the Apple menu and select About This Mac . [3] X Research source

Step 2 Boot into Safe Mode on an Apple Silicon Mac.

  • Turn off your Mac.
  • Press and hold the power button until you see the Startup Options window. [4] X Research source
  • Select your startup disk.
  • Press and hold the Shift key as you click Continue in Safe Mode .
  • Sign in to your Mac.
  • Reboot your Mac normally when you're finished and your system will start caching again as needed.

Step 3 Boot into Safe Mode on an Intel Mac.

  • Press and hold the Shift key as you turn your Mac back on.
  • Release Shift when you see the login window.
  • Sign in to your Mac (you may have to do this twice). Once signed in, you'll see Safe Boot window at the top-right corner of the window.
  • Restart your Mac to clear your system cache.

Step 1 Open Finder icon.

  • Clearing your Mac's system cache manually is not recommended, as it could cause your Mac to freeze . If you want to clear the system cache safely, you should do so in Safe Mode .
  • If you want to delete files from the system cache manually anyway, use this method to do so. You will need to be an administrator to clear the system cache files.

Step 2 Press ⇧ Shift+⌘ Command+G at the same time.

Moscow wants to be a model smart city; this is how they plan to achieve it

The Russian capital is investing heavily in technology

The concept of smart cities is a well trodden one and has been at the core of the expansion of some of the world’s big megalopolises. 

Moscow, however, rarely comes to mind when thinking about technology, primarily because Russia is often considered to have a significant tech presence - unlike China or the US. 

Companies like Rostec and Kaspersky are changing this and so are initiatives like Moscow’s City-as-a-service. Qualcomm for example, chose the city to launch Europe’s first 5G mmWave network in partnership with Moscow’s Department for Information Technologies of Moscow. We caught up with its head, Eduard Lysenko, to find out more about what they have been doing.

Can you tell us a little about the city-as-a-service concept and how it has benefited the citizens of Moscow?

The digitalization of Moscow started in 2011 and since then the city has become one of the leaders in providing e-services for citizens, with more than 11m citizens using city services today. 

Initially, we had to digitize the city management systems. A few years later we started to introduce e-services for citizens that became very popular. The main feature of e-services in Moscow is that they are being developed by DIT and therefore they have a similar interface, the same login system and all of the services are connected and can interact with each other. It makes it easier for citizens to use.

At the same time we provided opportunities for the development of mobile networks. Due to cheap internet access and huge coverage (99 percent of Moscow is covered by 4G) the penetration of smartphones exceeded 83 percent. So the citizens of Moscow were ready to use these services.

As for the services themselves, they seek to cover all the needs of citizens. They include the EMIAS medical portal, the Active Citizen portal that runs polls for citizens, the Moscow E-school and the portal of the mayor of Moscow, mos.ru . However, there are also services for tourists, complaints, crowdsourcing etc. I’d like to briefly introduce some of these services. 

First of all, the EMIAS service for making online appointments in Moscow public clinics, thanks to which the average waiting time to see a doctor has been reduced to five minutes and 95 percent of prescriptions are now issued in electronic form. With the Moscow E-school, we are creating a high-tech environment to improve the quality of education in Moscow schools. There is also a well-known e-polling service called Active Citizen, which allows Muscovites to make decisions on urban development. Almost 2.3m citizens participate on the platform and about 4,000 decisions have already been implemented via this service. We have recently been developing Crowd.Mos where, in contrast to Active Citizen, people can independently suggest their own initiatives for the city.

As for the possibility of interaction, we are now working on a full integration of all services. For example, in the future, when the winter flu epidemic begins in the city, EMIAS will be able to notify all schoolchildren and their parents of the need for protection and vaccination. All our services will form a single network aimed at helping citizens in a variety of situations. And finally, the mos.ru portal, which is a platform that aggregates all e-services for citizens in one place, as well as providing the latest news about the life of the capital. Mos.ru allows citizens to understand which e-services exist and how they can be received, which saves them time.

One of our aims is to save time for people and this is something that Moscow’s services can do. In our case, speed means comfort. Already, the introduction of EMIAS is saving doctors up to two million hours per year. Making life more comfortable for citizens implies that the city provides services to residents at all levels. Before the digitalization started, people had to spend a lot of time to use city services and go to different institutions but now they are all available online. Last year, we reached 170bn visits to e-government services and $ 1.5bn in payments were processed.

But for us, things don’t end with the provision of basic services. We are striving to add specific new services in accordance with the requests of citizens. For example, in summer, free sports activities with coaches and equipment are now available in Moscow parks for registered users. We are now working on responding to all relevant and adequate needs of people because this approach allows us to boost awareness and the desire to improve in people themselves. In this way, the city itself, in a sense, is becoming a service for citizens - and our aim is to make sure that this is a high-quality service.

How successful have the city’s network of CCTV cameras and facial recognition system been in preventing crime?

Moscow has one of the world's largest network of CCTV cameras, second only to London (according to 2016 PWC estimates). These cameras are now helping to solve about 70 percent of all crimes committed in the city. 

As for facial recognition, at the moment there are 1,500 cameras in Moscow connected to this system in a pilot project. Video analytics takes place in automatic mode and notifies the city services if necessary.  In automatic mode, the camera responds to gestures, movements and elements of behavior, thereby revealing suspicious activity. This year, we plan to launch the system on 105,000 cameras - that is, all cameras capable of observing human faces will be covered. The majority of the cameras are installed in courtyards, entrances and subways, where the footfall is greatest. We expect to reduce the overall number of crimes by 20 to 40 percent by next year. 

In addition to the city cameras, we are developing other technologies with facial recognition capabilities. For example, we tested augmented reality glasses with facial recognition for police. These glasses make it possible to recognize a criminal in the midst of a crowd and significantly reduce the time required to capture criminals. 

Again, many speak critically about video surveillance with a facial recognition system, believing that the government wants to establish surveillance of people. But I can tell you about a successful case - during the 2018 World Cup in Moscow, cameras with facial recognition were used to identify 98 fans banned from visiting fan zones. This helped to provide us with a decent level of security during the championship and not expose people who came to watch the game to unnecessary risk.

The global aim here is to provide a self-regulating and high-quality system, reducing any possible risks for our citizens.

What security measures have been put in place to protect the government-run storage facility that houses the data collected by the cameras?

Providing cyber security for the data was top-priority since the very beginning of the digitalization. Fault-tolerant data processing centers belonging to the Government of Moscow are used as a basis for countering attacks. So far, a data protection system has been built for the data center, which has made it possible to ensure the protection of the information systems located in the data center.

In 2018, we took measures to identify unauthorized access to the Moscow data storage and processing centers. During this year, more than 27,572  cyberattacks have been blocked. We are constantly improving our security system, conducting inspections and audits of security systems.

The correct functioning of the newly built information protection system has been confirmed by the positive results of certification tests for compliance with information security requirements and the issue of a certificate of conformity of the information facility with information security requirements. 

As for our surveillance system, access to these cameras is also limited and controlled. In 2018, we developed an automated information system called Access Control System for Information Systems and Resources of the City of Moscow, which is designed to ensure safe, reliable identification and authentication of users when accessing the information systems of Moscow. The video retention period is about five to seven days. Within five days, any citizen can apply for data from video cameras. According to the statistics, 80 percent of users contact us within three days and a further 15 percent in the remaining two days.

Moscow is known for having the best e-government services. Can you tell us about the Active Citizen app and how Muscovites are using it to participate in city government affairs?

We created the Active Citizen service in 2014 at the initiative of the Government of Moscow. This is a service of electronic polls for citizens, enabling them to make decisions on important citywide issues. Active Citizen is unique case – the service allows ordinary citizens to influence what is going on in the city. Any Moscow resident who has a Russian mobile operator SIM card can register and get involved in changing Moscow. 

To attract citizens, we use elements of gamification — for participation in polls and other activities, users are encouraged with points, which can later be exchanged for various kinds of benefits. As of July 2019, about 2.3m users have registered using the application and more than 4,000 polls have been conducted. Among the decisions made by users, it is worth noting the creation of 25 local parks, 10 new bus routes and bicycle lanes. In addition, citizens can choose names for various urban innovations. For example, this is how the name was chosen for the Moscow Metro’s Third Circle.

Active Citizen is one of our most important services and despite the fact that now it is already successfully operating, we are still devoting energy and resources to promoting and popularizing it.

This year, the service turned five years old and we organized a big celebration in one of the main parks of Moscow. We run these events not so much to attract more users but to increase loyalty among current users.

In addition to Active Citizen, I would like to talk about the launch of the My District service. In simple words, this is like a small version of Active Citizen, where residents of a particular district can make decisions on how to improve their area. We believe that decisions at all levels are important, and My District allows residents to exercise more autonomy in matters of city infrastructure.

Of course, we have been repeatedly criticized for the fact that Active Citizen offers a limited choice and range of issues for consideration. So, this year, we have launched the Crowd.Mos service, which allows people to independently propose their own urban planning initiatives. I can say that we are proudly a world leader in the implementation of ideas proposed by citizens.

I would also mention an experiment with blockchain elections to the Moscow City Parliament this year in the context of e-government. Connecting blockchain technology will not only enable online voting but also ensure the transparency of the elections and the impossibility of changing results, which will be securely encrypted.

How is AI being used in Moscow to improve healthcare?

For a start, it is important to point out that public healthcare in Moscow, as in all of Russia, is free. As you know, Moscow is a gigantic metropolis, accordingly, a huge amount of resources, including humans, are needed to serve all citizens. Currently, the city has about 244 public hospitals and 444 clinics, which employ more than 44,000 doctors.

As part of DIT’s Smart City program, city polyclinics have been connected to the artificial intelligence system. Online services are helping to reduce queues in clinics and make it easy to communicate with doctors. For example, today the majority of city clinics have implemented a patient flow control mechanism - the mechanism covers more than 60 percent of all doctors and allows you to correctly distribute the number of patients for each doctor. Thanks to this system, citizens can see a doctor as soon as possible, and the queues in most metropolitan clinics have almost been eliminated.

Accordingly, it is very difficult to manage this entire system and artificial intelligence helps us in this. In addition to facilitating the process of managing and allocating resources, citizens can now receive their analyses and test results by e-mail, which means they don’t need to go back to the clinic. This makes life easier for everyone - both patients and doctors.

The online service for registering with a clinic without a personal visit has also become very convenient for Moscow citizens. At the end of last year, more than 51,000 people registered with clinics in this way.

A key innovation in the health system is the beginning of the implementation of the Digital Vision pilot project. With the help of big data and artificial intelligence, doctors now have the opportunity to diagnose cancer in its early stages, as well as to assess stroke risks. The use of this technology has already increased diagnostic accuracy in Moscow by 15 percent.

In addition to improving the process of receiving and organizing treatment of patients in clinics, we are interested in the development of telemedicine. Of course, online consultation will never replace a full-fledged doctor's appointment, especially in difficult cases. However, it may be useful for primary symptoms and in cases where a visit to the doctor may not be necessary.

How is the Department of IT using big data to deliver insights about city residents?

DIT processes 14.3 terabytes of data daily. Big data processing technologies allow us to structure and transform the initial data file more quickly and with minimum labor costs, reducing the amount of information that people work with and thus the time spent on solving these problems. Big data helps us better understand our citizens. Thanks to big data, we can make a portrait of a Moscow citizen, understand their preferences and address whatever problems they have. For example, what changes in the infrastructure of the city they need and what is missing. Also, big data can help in predicting natural disasters or epidemics. Today, by analyzing this data, we know what problems are emerging. It is now possible to draw up a plan for the repair of roads or to build social facilities on the basis of this information. In one district, for example, you need to build a school, and in another, residents need additional parking zones.

Moreover, big data provides an opportunity for personalization. For example, there is automatic SMS notification of residents of specific areas of unplanned situations - water shutdown, snowfall, road works, and so on. Big data has long been used in the Moscow call center. First of all, our robot with artificial intelligence is connected to the call center and is trained to answers citizens' questions. At the end of the year, we are planning a pilot launch of a new robot, which can analyze the history of previous calls to predict the nature of a new call. This will significantly reduce the total call time. I notice that many companies, including public ones, consider robots with artificial intelligence to be unprofitable and expensive to develop. However, with the help of our robot, we were able to completely reassign human operators from simple questions to more complex ones, thereby saving them time and energy and reducing labor costs.

We also have separate benefits for businessmen. This year, we are planning to launch a robot that will help automate purchases and inform Moscow entrepreneurs about upcoming tenders. We plan to add more features to it in the future.

Park VDNKh – one of the most famous parks in Moscow. This park is one of the sights of the city as it hasn’t changed much since the Soviet era.

The symbol of VDNKh is a fountain with 16 women symbolizing the friendship of the nations of the USSR. Around this fountain there are all the pavilions representing 16 republics. What is funny the inside of the aircraft there is actually a photo exhibition. Near the northern entrance you there is a famous sculpture “Worker and Kolkhoz Woman”. It is extremely famous among Russians as all the movies by Mosfilm corporation used to start with the picture of this statue. But if you go further inside the park you will reach a very calm area. A lake is there, forest and birds singing. Since the park occupies a large area I suggest you to rent a bicycle.

Sokolniki Park – A Place For A Hunt Or For Leisure?

The park got its name because of the royal falconry, which took place there in the past when there was a dense forest. (Sokol means a falcon.) In 2011 it was significantly transformed: updated lawns, landscaped ponds and picnic areas, restored summer cinema and theater, a large rose garden, sports grounds, bicycle paths and other things.

From the main entrance along the alley you can walk to the Sokolniki circle, where 8 alleys form 9 sectors, in each of them you will find trees of the same breed.  The park is famous for its rosary, as well as flower decoration. On the territory of the park there are concert halls, a library, amusement zone, dances zone and many many other attractions. In winter the park has a skating rink (a free of charge one) and ski runs. During the warm season you can rent a bicycle.

Tsaritsino Park – A Different World Inside Moscow

The most amazing part of the park is the lake with a light and musical fountain. Every evening the fountain starts the show. What I personally like about this park is the atmosphere. This place is actually far from the city center but I love going there anyway. Whenever I go there I feel like I left Moscow with all its hectic lifestyle. It is the place where I relax, enjoy myself or a company of my friends and feel kind of different. By the way totally suggested for a date!

Kolomenskoye Park – Combination Of Reserve and Architecture

The Kolomenskoye park is actually a Museum-Reserve. It is a former residence of Russian tsars and one of the most scenic places in Moscow.

 Alike with Tsaritsino park Kolomenskoye park has its own special atmosphere with all the architecture, trees, ponds and even a river bank. The park regularly hosts various folk festivals and different fairs. In summer time you can play with kites or rent a bicycle and ride around the huge area of the park.

I love the view that you get on the city from one of the hills near the river. I love the apple trees alleys and the beautiful churches. It is also a bit far from the city center but yet worth going there. One of my best friends even celebrated her wedding there.

Aptekarsky Garden or Botanical garden of the Moscow State University – The Best Botanical Garden in The World

Aptekar in Russian language means a pharmacist so basically it is a pharmacist’s garden. It was founded in 1706 by Peter The Great for growing medicinal plants for the royal family. But later they moved it from under the walls of the Kremlin to the current location.

In the botanical garden there are no attractions and noisy crowds of tourists. The area of the garden is not as big as any other park in Moscow. And the entrance is not free. But this exactly what makes this park one of the most comfortable in the city. In the Aptekarsky garden they grow thousands of different plants, flowers and trees. Some of the trees are more than 300 years old. They held different festivals there: flowers festivals, sand and ice sculptures expositions.

For me it is one of the most beautiful parks not only in Moscow but in the world. I have never seen so many different flowers and plants anywhere else. And trust me I am a real park lover. And what is more the staff really takes care about every single tree or plant there, some of the trees have names and stories. I love it there and I think the price is really worth what you get.

Victory Park – A Park That Makes Us Remember The War

The park is located on the Poklonnaya Hill and it has one of the world’s largest memorial complexes dedicated to the World War II. The park was opened for the 50th anniversary of the Victory on May 9, 1995. It is also one of the main venues in the city for holding a variety of mass events.

On the main avenue of the park there are with 1418 fountains – exactly as long as the war lasted. Fountains make five water terraces, symbolizing five years of military operations. And in the center of the park there is the Museum of the Great Patriotic War. If you are interested in the history of the war do not miss it. The Poklonnaya Hill is a part of the park and from the hill you get one of the best views on the city of Moscow. And I could say this is the best place for watching the fireworks during the mass celebrations. But be aware it gets too crowded then. As in most of the other big parks you can rent a bicycle or rollers there.

Izmailovsky Park – A Mix of a Big Forest and Attractions

Izmaylovsky Park occupies a huge green territory, making up a large part of the Izmailovo district. The park consists of two parts: Izmaylovsky Park of Culture and Rest and the forest park of Izmailovo. First part is full of attractions and restaurants while the second one is like a real forest with pine trees, birch groves, beautiful clearings and ponds.

It is easy to spend there a whole day. A large landscaped area and a lot of various entertainments for children and adults will help you not to get bored. An observation wheel, a boat station, children’s playgrounds, a dance floor, sports grounds, a skate park – all this is only a small part of the possible leisure activities. In the park there are bike paths and a rental services.

I don’t go there often to be honest. But the park is very very close whenever to a souvenir market on Partizanskaya metro station. And whenever the weather is nice and I have enough of free time I stroll through the alleys of the park and enjoy the nature. So if you are going to the souvenir market too and you have enough free time then do go to the park too.

Le Corbusier’s triumphant return to Moscow

The largest Le Corbusier exhibition in a quarter of a century celebrates the modernist architect’s life and his connection with the city.

Given his affinity with Moscow, it is perhaps surprising that the city had never hosted a major examination of Le Corbusier’s work until now. However, the Pushkin Museum and the Le Corbusier Fund have redressed that discrepancy with the comprehensive exhibition “Secrets of Creation: Between Art and Architecture,” which runs until November 18.

Presenting over 400 exhibits, the exhibition charts Le Corbusier’s development from the young man eagerly sketching buildings on a trip around Europe, to his later years as a prolific and influential architect.

The exhibition brings together the different facets of his talent, showing his publications, artwork and furniture design alongside photographs, models and blueprints of his buildings.

Irina Antonova, director of the Pushkin Museum, said, “It was important for us to also exhibit his art. People know Le Corbusier the architect, but what is less well know is that he was also an artist. Seeing his art and architecture together gives us an insight into his mind and his thought-processes.”

What becomes obvious to visitors of the exhibition is that Le Corbusier was a man driven by a single-minded vision of how form and lines should interact, a vision he was able to express across multiple genres.

The upper wings of the Pushkin Museum are separated by the central stairs and two long balconies. The organizers have exploited this space, allowing comparison of Le Corbusier’s different art forms. On one side there are large paintings in the Purist style he adapted from Cubism, while on the other wall there are panoramic photographs of his famous buildings.

Le Corbusier was a theorist, producing many pamphlets and manifestos which outlined his view that rigorous urban planning could make society more productive and raise the average standard of living.

It was his affinity with constructivism, and its accompanying vision of the way architecture could shape society, which drew him to visit the Soviet Union, where, as he saw it, there existed a “nation that is being organized in accordance with its new spirit.”

The exhibition’s curator Jean-Louis Cohen explains that Le Corbusier saw Moscow as “somewhere he could experiment.” Indeed, when the architect was commissioned to construct the famous Tsentrosoyuz Building, he responded by producing a plan for the entire city, based on his concept of geometric symmetry.

Falling foul of the political climate

He had misread the Soviet appetite for experimentation, and as Cohen relates in his book Le Corbusier, 1887-1965, drew stinging attacks from the likes of El Lissitsky, who called his design “a city on paper, extraneous to living nature, located in a desert through which not even a river must be allowed to pass (since a curve would contradict the style).”

Not to be deterred, Le Corbusier returned to Moscow in 1932 and entered the famous Palace of the Soviets competition, a skyscraper that was planned to be the tallest building in the world.

This time he fell foul of the changing political climate, as Stalin’s growing suspicion of the avant-garde led to the endorsement of neo-classical designs for the construction, which was ultimately never built due to the Second World War.

Situated opposite the proposed site for the Palace of the Soviets, the exhibition offers a tantalizing vision of what might have been, presenting scale models alongside Le Corbusier’s plans, and generating the feeling of an un-built masterpiece.

Despite Le Corbusier’s fluctuating fortunes in Soviet society, there was one architect who never wavered in his support . Constructivist luminary Alexander Vesnin declared that the Tsentrosoyuz building was the "the best building to arise in Moscow for over a century.”

The exhibition sheds light on their professional and personal relationship, showing sketches and letters they exchanged. In a radical break from the abstract nature of most of Le Corbusier’s art, this corner of the exhibition highlights the sometimes volatile architect’s softer side, as shown through nude sketches and classical still-life paintings he sent to Vesnin.

“He was a complex person” says Cohen. “It’s important to show his difficult elements; his connections with the USSR, with Mussolini. Now that relations between Russia and the West have improved, we can examine this. At the moment there is a new season in Le Corbusier interpretation.” To this end, the exhibition includes articles that have never previously been published in Russia, as well as Le Corbusier’s own literature.

Completing Le Corbusier’s triumphant return to Russia is a preview of a forthcoming statue, to be erected outside the Tsentrosoyuz building. Even if she couldn’t quite accept his vision of a planned city, Moscow is certainly welcoming him back.

Reviving classic Russian cuisine

Roads & Kingdoms talks to Russian chef Vladimir Mukhin of Moscow’s super-restaurant, White Rabbit.

Still in his mid-30’s, Vladimir Mukhin is already one of Russia’s best known chefs and the leading culinary light of the White Rabbit Group, which has 16 restaurants around the country. The most well-known of these, Moscow’s  White Rabbit , was named one of the 50 best restaurants in the world last year. Roads & Kingdoms’ Nathan Thornburgh talked to Mukhin in Moscow about being a fifth-generation chef, reviving classic Russian cuisine, and finding good product in the age of embargoes.

Nathan Thornburgh: Tell me about White Rabbit, what is the food? What are you trying to accomplish there?

Vladimir Mukhin: The White Rabbit is a big restaurant. We’re trying to revive Russian cuisine. I’m a fifth-generation chef, so I’m passionate about the food we create. During the Soviet Union period, we killed Russian food. Classic Russian recipes became too simplified. For example, usually you drink tea, but if you want to be, just to be creative, want to make the tea with milk, you can’t. It would be like stealing milk from the government. People went to jail.

When I was growing up, I remember my grandfather coming to the kitchen and crying because he couldn’t experiment with his food.

Thornburgh: Wow. I remember this famous photo session with Che Guevara which came up with some of his best pictures, maybe two incredible iconic portraits came from an entire roll of film, and the photographer went to him and showed him this roll of film and Che said, What the hell are you doing? You wasted all of these images. You took 30 pictures to get one? That’s the government’s film. It’s a similar mentality.   So you’re telling the story of a kind of cuisine that was lost on the Soviet history and now you’re playing with this idea of finding it again. What does your process look like? Do you get as many grandmothers as you can round up and just kind of shake recipes out of them? How were you doing this?

Mukhin: I just try to work with as many local farmers and producers as I can, so we can use as many Russian ingredients as we can.

Thornburgh: So this is a close relationship.

Mukhin: Yes. I traveled throughout Russia—not just the big cities, but also the villages to talk with older people.

Thornburgh: You know I think people don’t understand the vastness of Russia, and how big it’s collection of cultures and languages and cuisines is. What parts of the country influences your food?

Mukhin: I’m inspired by the whole country. It’s a big territory, and sometimes it feels like it’s too big. I try and use different techniques and ingredients from all over the country, which I think makes my menus distinct.

We have an a la carte menu with about 50 dishes of classical Russian food. Everything looks modern because I’m a young chef. But if you close your eyes and try these dishes, you’ll taste 100% classic Russian flavors.

I want to highlight all aspects of Russian cuisine. Before the Olympic Games in Sochi, we opened a restaurant there, not just to make money, but to expose people visiting for the Olympics to Russian food. That’s why we opened The Red Fox restaurant. It’s all about Russian ingredients.

Thornburgh: Sochi, at least when I’ve been there, is like a Miami Beach. It’s like a place to get pizza and sushi, and go to the nightclubs.

Mukhin: You been?

Thornburgh: Yeah.

Mukhin: It’s crazy.

Thornburgh: It’s a little crazy, but it’s interesting to bring in Red Fox and sort of say okay, because people are coming out, let’s bring Russia to Sochi.

Mukhin: It was incredible. We had thousands of visitors at the restaurant.  

Thornburgh: So you really looked internally for inspiration. Did working outside of Russia motivate you to focus on Russian cuisine?

Mukhin: Yes. I spent time working in Avignon, France. I worked with Christian Etienne, and he would make a special Russian meal once a year.  It was crazy.

Thornburgh: How was the food?

Mukhin: It was shit. I told him that I would cook real Russian food for him, and I did. I cooked borscht, blinis, and other classics. He liked it and said that once a year we should use my recipes, but with his influence. I agreed, and we went on to make amazing food. Eventually, I wanted to come back to my motherland. So I left and I started working on making White Rabbit a reality.

Thornburgh: When people go to White Rabbit, what are they going to find?

Mukhin: Someone once told me that there is a new Russian cuisine and an old Russian cuisine. I think Russian cuisine is going through an evolution. So I hope people will come and see evolution at White Rabbit.
