Castelli Romani: l’enogastronomia a due passi da Roma.

L’estate 2020 sarà ricordata per il turismo di prossimità , alla scoperta delle numerose bellezze del nostro Paese. Da buona turista enogastronomica, ho scelto di trascorrere le vacanze in una meta alternativa , poco conosciuta, dove vini e sapori non mancano : i Castelli Romani. Quando ho svelato la destinazione ad amici e familiari, molti non avevano ben chiaro di cosa stessi parlando. E’ bastato accennare il simpatico Alessandro Borghese ed il suo programma “4 ristoranti” per ricordare le tipiche fraschette , dove gli ospiti sembrano uscire con la pancia piena e senza aver speso troppo.
Dove si trovano i Castelli Romani?
La zona dei Castelli Romani si trova appena fuori Roma , a sud est della capitale. Dal punto di vista geografico combacia con i rilievi dei Colli Albani, che testimoniano quello che centinaia di migliaia di anni fa era il Vulcano Laziale. Seppur meta non ancora raggiunta dal turismo di massa, i numerosi comuni parte dei Castelli Romani rappresentano una delle zone più turistiche della provincia di Roma.
Quali paesi fanno parte dei Castelli Romani?
La zona dei Castelli viene solitamente distinta in tre sottozone. L’ area tuscolana comprende i comuni di Colonna, Frascati, Grottaferrata, Monte Porzio Catone, Monte Compatri, Rocca di Papa e Rocca Priora e si collega all’area seguente attraverso il comune di Marino. L’ area appia (o albana) include Albano Laziale, Ariccia e Castel Gandolfo, mentre l’ area lanuvina include Lanuvio, Genzano di Roma e Nemi.
Nonostante il numero di paesi sia abbastanza importante, dovete sapere che sono tutti a breve distanza l’uno dall’altro . In pochi giorni quindi si possono visitare tutti senza alcuna difficoltà. Nel mio tour iniziato nella Tuscia e proseguito poi qui, ho pernottato in una struttura tra Frascati e Grottaferrata, fuori dal traffico del centro e comoda base per esplorare la zona.
Cosa si mangia ai Castelli Romani?
La cucina locale qui si gusta nelle trattorie che propongono piatti semplici provenienti dalla tradizione popolare e contadina. Tra bucatini, spaghetti, tonnarelli e rigatoni alla carbonara, cacio & pepe, alla amatriciana o alla gricia c’è da mettersi a dieta prima ancora di partire per questi luoghi. Il Lazio è la regione del Pecorino Romano DOP , dell’Abbacchio Romano IGP, del Carciofo Romanesco IGP e della mitica Porchetta di Ariccia IGP . Tutti questi piatti si possono assaggiare alle fraschette, le tradizionali osterie tipiche di questa zona, luoghi conviviali e folcloristici, famosi per la porchetta e per il particolare vino proposto: “il vino dei castelli”.
Il vino dei Castelli Romani
Sicuramente se si pensa all’Italia del vino, la zona dei Castelli Romani non rientra tra le prime aree che ci vengono in mente. Le classiche mete internazionalmente celebri per la produzione vitivinicola, come la Franciacorta o la Valpolicella , da anni stanno lavorando allo sviluppo del turismo enogastronomico, mentre qui c’è un po’ più di lavoro da fare. Eppure in questa zona si produce vino fin dall’antichità , prevalentemente bianchi secchi e da bere giovani, provenienti da vitigni come la Malvasia di Candia, la Malvasia del Lazio e Trebbiano.
Le denominazioni del territorio
Dal 1996 Castelli Romani è anche una delle DOC italiane (denominazione di origine controllata) che, a differenza di molte altre, per anni è rimasta legata al concetto di vini da tavola e di qualità mediocre. Negli ultimi anni si sta iniziando a puntare ad una maggiore qualità e reputazione dei vini del territorio e vedremo il futuro cosa riserverà a questa zona. Va ricordato comunque che due delle tre DOCG (denominazione di origine controllata e garantita) del Lazio, si trovano in provincia di Roma e fanno parte di questo territorio: si tratta del Frascati Superiore ed il Cannellino di Frascati .
Mi spiace rivelare che, complice forse il periodo della mia visita (agosto), non sono riuscita a visitare nemmeno una cantina, nonostante la produzione vitivinicola rappresenti l’attività industriale principale della zona.

At the Parco della Gallinara , we devote a great deal of time and attention to maintaining the environment. The Mediterranean scrubland that surrounds us has been kept intact – despite being within a tourist complex – thanks to the careful, efficient use of the land. In addition, we are working to introduce a highly effective recycling system, which will be trialled in summer 2015. This year, we have taken steps to lower our CO2 emissions and to combat environmental, acoustic and visual pollution through energy-saving initiatives and more eco-friendly ways of getting around. We have achieved these results thanks to the installation of low-energy, low-emission bulbs, enhanced systems of heat management in the cottages and latest-generation catering machinery, as well as the possibility of getting around the parkland exclusively on foot or by bike, leaving to one side our much-loved but heavily polluting motor-driven vehicles. The whole site has an exceptionally natural appearance that – combined with respect for and constant maintenance of the trees, undergrowth and seaside – betrays our desire to keep intact this 1,400,000 m2 area of parkland, which is criss-crossed by well-signposted nature and mountain-bike trails, jogging tracks and paths for romantic walks through the woodland. Piatti tipici del Lazio: Itinerario enogastronomico dei Castelli Romani
I Castelli Romani sono un’area collinare che si estende alle porte della capitale e comprende numerosi paesi e borghi antichi la cui storia precede quella di Roma. Il territorio di origine vulcanica nasce dal crollo del Vulcano Laziale ed é caratterizzato da due laghi, boschi e colline molto paesaggistiche. Il valore storico, artistico e naturale di quest’area si combina ad un’ antichissima tradizione culinaria caratterizzata da prodotti semplici e genuini che riflettono la personalitá di questi posti. Se volete abbinare un itinerario enogastronomico tra i piatti tipici del Lazio alla visita di questi borghi pittoreschi, leggete quali sono le leoro eccellenze culinarie. Una vera delizia per il palato!
- CASTEL GANDOLFO
LARIANO [ torna al menu ]
Lariano é un’antico borgo medievale sulle pendici del Monte Artemisio . Lariano é nota per la produzione del pane locale , riconosciuto come prodotto agroalimentare tradizionale della Regione Lazio . Si tratta di un pane di farina semi-integrale a doppia lievitazione, cotto nel forno a legna. Non solo, ogni mese di Giugno si svolge a Lariano la Sagra delle Pappardelle al Cinghiale , uno dei piú apprezzati piatti tipici del Lazio.
VELLETRI [ torna al menu ]
Il comune di Velletri é il piú grande dei Colli Albani e anche uno dei piú antichi . In epoca pre-romana infatti era giá un centro illustre abitato dai Volsci e, grazie alla sua antica tradizione culinaria, merita di essere inserito in un tour enogastronomico dei Castelli Romani. Nei vigneti locali viene prodotto il DOC Velletri , un vino di qualitá esistente sia nella tipologia di bianco che di rosso. Tra i piatti tipici piú rinomati si trovano i Carciofi alla Matticella cotti alla brace e la Zuppa di cavoli con Baccalá , una ricetta di origini antichissime che fungeva da colazione per i contadini locali. Anche gli gnocchi alla Velletrana e la Zuppa di fagioli con cotiche sono dei piatti locali prelibati.
NEMI [ torna al menu ]
La terza tappa del nostro itinerario tra i piatti tipici del Lazio passa per Nemi, un borgo a circa 15km da Lariano, tra i piú suggestivi di tutti i Castelli. Il paesino, avvolto nel verde, si trova ad oltre 500mt di altezza ed offre una splendida vista panoramica dell’omonimo lago. La produzione enogastronomica di Nemi é molto antica e apprezzata. Il prodotto piú famoso sono sicuramente le deliziose fragoline , celebrate in una Sagra locale che si svolge ogni anno a Giugno. Un altro prodotto d’eccellenza é il Fragolino di Nemi , ottenuto appunto dall’infusione del frutto locale e ormai diffuso su scala nazionale. Se vi fermate a pranzo o cena, approfittatene per ordinare anche un buon piatto di fettuccine ai funghi porcini !
ARICCIA [ torna al menu ]
Ariccia é uno dei paesi piú piccoli dei Castelli Romani, ma al tempo stesso uno dei piú importanti centri culturali di quest’area. Non solo per le opere architettoniche del Bernini e per il Palazzo Chigi, ma anche per la sua tradizione gastronomica millenaria. Il prodotto piú conosciuto é sicuramente la famosa Porchetta , una carne di maialino la cui arte di preparazione si tramanda dall’etá pre-romana ! Questa si presenta con una crosta esterna croccante e un’interno soffice e aromatizzato. Ogni anno a Settembra si svolge la Sagra della Porchetta , che attira migliaia di persone.
Un’altro prodotto tipico di Ariccia sono le coppiette di maiale o di bovino, delle strisce di carne essiccate e leggermente piccanti accoppiate a due e speziate con semi di finocchio. Se vi trovate qui, fate una sosta alle fraschette , delle osterie locali dove potrete assaggiare tutti i prodotti tipici dei Castelli accompagnati da un bicchiere di vino rosso o dalla tipica Romanella , un vino leggero molto facile da bere. Le Fraschette hanno una storia antichissima risalente almeno al Medioevo e sono amatissime dai locali e dai turisti. Se non volete fermarvi a pranzo, potete sempre ordinare un buon panino con la Porchetta.
FRASCATI [ torna al menu ]
Frascati é una tappa obbligata per un tour enogastronomico dei Castelli Romani. Questo paese é famoso soprattutto per la produzione del Frascati, un vino bianco DOC che ha una tradizione antichissima. Il Frascati é disponibile anche in versione Spumante ed é probabilmente il vino piú conosciuto e pregiato dei castelli . A Frascati viene prodotto anche un dolce tipico, la “ Pupazza “, un biscotto a base di miele dell’Agro Pontino. Questi biscotti hanno la forma singolare di una donna con tre seni, una tradizione che risale all’era romana e che rappresenta la dea dell’abbondanza. Il terzo seno infatti fa riferimento alla produzione del vino. Immancabili nei negozi locali anche le tipiche ciambelline al vino , prodotte qui come in molti altri paesi dei castelli. Le ciambelline, preparate con vino bianco o rosso e zucchero semolato sono ottime accompagnate da un bicchiere di vino locale.
CASTEL GANDOLFO [ torna al menu ]
L’ultima tappa del nostro tour enogastronomico é dedicata agli amanti del pesce . I ristoranti di Castel Gandolfo oltre ad offrire una spettacolare vista sul lago omonimo, sono rinomati per la cucina dei pesci di lago , tra cui trote, lucci, pesci persico e barbi. Approfittatene inoltre per ammirare la residenza papale di Villa Torlonia o la fontana e la chiesa del Bernini nella piazza cittadina.
Oltre ai comuni giá citati, i Castelli romani abbracciano altri centri di grande fascino e tradizione enogastronomica. Dai paesi collinari di Marino, Genzano o Albano fino alle vette di Rocca di Papa che con i suo 700mt di altezza offre uno dei paesaggi piú belli della valle. Potrete includere nel vostro itinerario anche Monte Porzio Catone, circondato dai vigneti e noto per la produzione di un’altro eccellente vino.
Riguardo alla Pupazza, non sapevo fosse usanza pasquale in altri paesi. Comunque ti consiglio assolutamente di fare un giro in questi borghi, come dici giustamente complice anche il Covid il 2020 puó essere l’anno giusto per riscoprire la nostra terra!

Un tour gastronomico ai castelli romani è una vera bomba! Io sogno ancora di notte la porchetta di Ariccia!
Hai assolutamente ragione, la porchetta é fantastica! Ma anche gli altri piatti tipici non sono male, soprattutto se li accompagni con un buon bicchiere di vino locale!
E io che sto spingendo per andare a visitare Roma dove non sono mai stata! Leggendo il vostro articolo ancora di più ho voglia di andarci!
Michela io sono di parte perché Roma é la mia terra, ma ti consiglio di andarci assolutamente. Se riesci ad abbinare un bel giro ai Castelli sarebbe perfetto perché scopriresti davvero l’animo di questi posti,
