Eden Mill Distillery

Share "eden mill distillery", description.

Another pride of Scotland, Eden Mill Distillery is located on Guardbridge in St. Andrews. The historical distillery is just a few miles away from the Scottish ‘Home of Golf.’

In the 19th century, the Haig family was the first people to make whisky on this site before Eden Mill took over and made several renovations.

The distillery (located in the Lowlands ) has hardworking distillers who make some of the best whisky around the world but in small and limited quantities. A taste of these brands will expose you to the history, experience and craftsmanship that are poured into the making of these whiskies.

Visit this distillery and enjoy the historical journey of this site.

10 Reasons Why You Need To Do the Eden Mill Gin Tour in St Andrews

A scrumptious gin tour that should be your number one to-do in st andrews., aubrey thompson, get spoon university delivered to you.

You tryna be tricky? That email doesn't look right.

By adding your email you agree to get updates about Spoon University Healthier

Fun fact: apparently, gin-lovers are psychopaths , so if you don't have a little crazy in you, it's probably best to stop reading this article now. For the crazy gin lovers like myself, this article gives you all of the reasons for taking an afternoon out to do the Eden Mill Gin Tour. Drinking establishments are pretty repetitive if you're a student at the University of St Andrews. After going to the gin tour, I can confidently say that the Eden Mill Gin Tour is a refreshing remedy to your usual pint at The Central.

1 . Gin Is Trendy Right Now

There are too many gin companies in Scotland to count, all with their respective stake in the long-standing tradition of gin making — Eden Mill Gin is one of them. More than half of gin made in the UK is made north of the border, which means that Scotland is a sea of gin distilleries. This is due to the relative speed of developing gin's citrus-y flavor with distilled botanical elements. Whisky, on the other hand, has to spend a long time aging in a barrel before distribution. Interesting, considering that whisky is recognized as the epitome of Scottish soul.

2. Eden Mill Represents a Growing Gin Market Across the UK

This article in the Guardian  about Eden Mill gin documents the statistics of gin's unstoppable growth in Scotland, especially through small-batch makers. Gin is taking over the spirit market in Scotland, and Eden Mill is a main player in its growth. Although Eden Mill also produces whisky, it is better known for its complex range of gin.

3. It's a Short (And Relatively Cheap) Excursion

The Eden Mill Gin tour is only 10 pounds per person, which is probably what you would spend on one cocktail at a nice bar. Considering you get four full cocktails, this is definitely an affordable and fun experience just 10 minutes outside of St Andrews. The actual tour is a little over an hour, with a tasting at the end where you can linger as long as you like.

#SpoonTip: Definitely eat something substantial beforehand, especially if you are a light drinker. Do not drive afterwards and instead opt for a cab which the Eden Mill team will happily call for you.

4. You Can Bring Your Beer-Drinking and Whisky Connoisseur Friends

Not only does Eden Mill offer separate tours for their beer and whisky production (yes, they do it all), but they also ensure to incorporate the other spirits into the gin tour. I got a sense of a very tight-knit, artisan company, so the overlap between products is very natural. It also allows for plenty of experimentation and cross-distilling, which leads to unusual spirits. These include a hop gin (hops are usually reserved for beer), and a barrel-aged gin: a sort of whisky-gin hybrid. It's the best of both worlds.

 5. The Flavors Are Creative and Delicious

Eden Mill pushes creativity to the limit by using everything from sugar kelp in their new Golf Gin, to milk thistle in their Scottish Rugby gin. The latter is a personal favorite. The milk thistle lends a smooth and creamy note, which surprisingly elevates gin to a palatable state; I could drink it neat all afternoon. These are seasonal and partnership gins that are sold alongside Eden Mill's signature gins. These signature gins include everything from the Original Gin to the Love Gin.

6. The Quality of Ingredients is Excellent

Eden Mill's choice of tonic and mixers paired with their gins keeps with the theme of all-natural and small batch brewing.   Fentiman's rose lemonade with rose essence is the perfect match for their Love Gin; it's surprisingly earthy and expertly avoids the soapy taste often associated with rose flavorings. Other Fentiman's tonics accompanied the other gins that we were served in the tasting. Without giving away too much, there are heaps of herbaceous and floral things to smell during the Eden Mill Gin tour. Your nose will be very happy.

7. The Distillery Is a Great Place to Stock Up on Boozy Gifts

These cute "After-Dinner Gin" bottles elevate gin's status past the standard gin-and-tonic to a place of sipping and savoring. Other great gifts at the Eden Mill Gin tour include a line of matching gin and whisky glasses, serving boards, gift sets, and flavored liquors.

8. Balance! You Will Not Get Wasted, But You Won't Walk Away Unfulfilled

This is an excellent idea if you're doing the noon tasting time on a Tuesday, like myself, because you will not bother your flatmates with your absurd drunkenness on a weekday. Saying that, be warned: the tipsiness you'll experience post-tour might tempt you to immediately open the bottle of Oak Aged Gin that you just purchased.

9. You Are Going to Support a Local Business

There are a lot of tours across the UK to choose from . Eden Mill has an excellent variety of gin that they are always expanding, toying with, and improving on, everyday. The sheer amount of gin varieties that leave this small distillery is impressive.

10. You Can Take Yourself, Your Friends, and Your Parents

This tour is not overly informative or exhaustive, but structured around casual enjoyment and ease for guests. You can go with friends to get a little tipsy and get out of town, or impress your visiting parents with your oh-so-adult gin sophistication.

This tour makes a great afternoon activity for the weekend or weekday, so go and get your gin on by booking a tour through their website .

Last night was a terrible idea…McDonald’s anyone?

I may have found my new go-to summer canned cocktail., if you’re looking for your new favorite summer seltzer, look no further..

  The Eden Mill Original Story

Based in a former whisky distillery and paper mill, the Eden Mill story started with a mission to revive the lost art of distilling and brewing in St Andrews.  It was Scotland’s first single-site distillery and brewery, producing not just gin, but also whisky and beer.

Eden Mill Gin is created in copper pot-stills and exhibits a wide range of flavours from botanicals sourced from the local area, as well as from much further afield. The Original Gin is Eden Mill’s take on a classic London Dry with a twist.

It is made using Fife’s seabuckthorn berries, a superfood that grows within walking distance of the St Andrews distillery. The unique tart berry flavour is abundant but they carefully balance the gin around it using citrus elements drawn from the other botanicals (like lemon balm and citrus peel). This makes a gin that is on a quite different level to most.

Perhaps that’s why Eden Mill Original Gin was voted Gin of the Year & London Dry of the Year at the 2018 Scottish Gin Awards, competing against 116 other gins by a blind tasting panel.

The team at Eden Mill are constantly innovating, producing a range of gins as well as pre-mixed G&Ts and numerous seasonal expressions.

They are currently in the middle of a site move, so distillery tours are temporarily suspended, but 1-hour tasting sessions are available at the  “Gatehouse” site.  anew style of distillery tour will be up and running when the move is complete.

The Blendworks experience from Eden Mill allows you to blend your own gin from scratch and take home a few bottles as a keepsake.

Nose : Strong citrus note – lemon peel, bitter orange, light grapefruit. Delicate spice of coriander and clove at the midpoint. Sweet white fruits – pear, lychee, melon at the very end.

Taste : Very clean sweet taste. Very smooth and soft on the tongue. Spices of juniper and green pepper followed by bitter drying berries of cranberry, seabuckthorn. Subtle tastes of white sugar, pear, lychee for a moment that finish with soft sweet orange peel and vanilla. \

Finish : Slight prickle on the back that the tongue of juniper and coriander that moves to a sweet orangery, lychee note. Quickly vanishing leaving you wanting more.

It’s recommended that you serve Eden Mill Original with Pink Grapefruit Tonic with all citrus fruits and peels to garnish. It also works very well served with a Premium Tonic water with a slice of grapefruit to garnish.

A deserving winner of a gin. Eden Mill Original has everything we love about a great citrusy gin, but the added tart kick of the sea buckthorn coupled with the warm earthiness of juniper and coriander sets this gin apart from the rest.

It makes a top-class G&T – we tried the recommended serve with tonic and a slice of grapefruit and the crisp, refreshing flavours really come alive in the mouth.

We took part in the Halloween Virtual Gin Tasting Saturday 31st October. Adam was our host. He was engaging, funny and had a great knowledge of the subject. The presentation of the gins was excellent and the tasting did not disappoint. This is an excellent purchase for any gin lover and made for a fun night in.This is probably the best virtual gin tasting there is. Can’t recommend this enough.

When we did the tour the old buildings at StAndres were still operating and the tour was great. Now they are in a glorified tent! Not what you would expect. Also the beer is brewed off site so not what it claims to be.And for goodness sake don’t order any beer online at the moment as we did as despite taking our order and our money we have nothing to show for itThey ignore our emails and no one returns our calls so beware!(The tour was not in 2019 But the prompt doesn’t give many options)

We travelled to Eden Mill hoping to buy some gin or whisky. The internet suggested that the distillery was open but we could not confirm that over the phone as no one answered. When we arrived in Guardbridge all we could find was a building site with no signs as to how to get in to the distillery or the shop. We did a bit of research which suggested that there was a temporary outlet in St Andrews but we couldn't find it. We had intended to spend a bit of money there but obviously couldn't. We had visited before and enjoyed a tasting visit in the past, we are fans of Eden Mill gin and whisky but today was a real disappointment. The company needs to be better organized and put out more information while they have these issues.

eden mill tours

Founded in 2012 on the banks of the Eden Estuary, Eden Mill revived the lost art of distilling in the area after over 150 years. Originally, Eden Mill was home to Scotland’s first single-site distillery and brewery, although they are now focussed on producing gin and whisky only. The original distillery was inside a former papermill, which inspired the brand name. The distillers used traditional Portuguese alembic pot stills to produce their unique spirits. As the brand and the business grew, it became clear that the existing site was neither big enough nor energy efficient. A new purpose-built distillery would be the best solution for the company to continue its growth and introduce greener and more sustainable distilling methods.

After a round of talks with potential investors in 2022, Inverleith LLP, a specialist investment company that invests in premium food and drink brands, bought a majority stake in Eden Mill. With this new investment, the Eden Mill team were able to commit to their new distillery build which is due to open its doors in 2024. The new distillery will offer visitors whisky and gin tour experiences and is based on the University of St Andrews Eden Campus. All electricity at the distillery will be 100% renewable, coming from either the solar farm belonging to the University of St Andrews or other renewable energy sources. Additionally, the CO2 produced during fermentation will be captured for further use by either the University, or other organisations.

EXCLUSIVE: See inside Eden Mill’s new multi-million-pound distillery near St Andrews

The Eden Mill distillery in Guardbridge

Plans for Fife-based gin, whisky and beer firm Eden Mill’s new distillery and visitor centre have been revealed.

The £8 million project which will be based at the St Andrews University in Guardbridge is already well under way, with around half of the money already secured to help bring the distillery vision to life.

Currently working with the university to run the Eden Mill distillery as carbon neutral by 2024, the power and heat for the stills will be supplied by a local energy network generated by biomass plant and field electricity. Solar panels will also be installed by the university on the roof of the distillery.

An artist's impression of what the interior of Eden Mill's distillery and visitor centre will look like

The whisky-making process will use water for distillation straight from the biomass, and, once used, the leftover water will journey back to the biomass to be reused. Carbon produced in making the spirit will be captured for the university’s chemistry department for academic use on site.

The visitor centre to open its doors in 2022

With a prominent year lined up for St Andrews next year with the 150th Open Golf Championship taking place in July 2022, Paul Miller, co-founder of Eden Mill, is determined to see the visitor centre open its doors by late spring next year.

Launching the brand in 2012, Paul anticipates around 36,000 visitors through the new premises’ doors in its first year, with 100,000 estimated by year three.

He said: “The project is on schedule to be opening in late spring 2022. We have a clear idea and are pretty confident about it. We need to be open by July 2022 as that is when the 150th Open is in St Andrews and the town will be showcasing itself to the world.

Paul Miller, co-founder of Eden Mill.

“I think we have a great package to offer people. In addition to the whisky production, we’ll also have the gin production and we’ll also be looking to create a botanical centre of excellence.

“We utilise a lot of local botanicals in our gin, from honeyberries from Cupar, to sea buckthorn from the east coast, to seaweed from Crail, but we also know there’s some botanicals we simply can’t get locally.

“We’ll be doing some bioponics and vertical farming to show people some of the different, interesting botanicals that you wouldn’t necessarily get around the local area. We can grow them and use them in our gin.

“The interaction with the university is really important to us and the site is looking incredible just now – it is really taking shape.”

New distillery job creation and capacity

The distillery and visitor centre will create around 40 jobs between full-time and part-time vacancies, complementing the Glasgow site which is similar in numbers for bottling and administrative roles.

It will also welcome thousands of visitors to the area, further promoting St Andrews and the surrounding Fife attractions as a primary location for tourism in Scotland.

Another artist's impression of what the different levels inside will look like.

Paul added: “We’re anticipating 36,000 visitors in our first year, growing up to 100,000 visitors by the third year per annum.

“I think there will be a lot of interest and it is great to be able to complement what is already a really exciting scene in the area with Lindores Abbey Distillery and Kingsbarns Distillery. We recognise we need and want to add something different.

“Capacity wise it will take us to 900,000 litres of pure alcohol, which is how we measure whisky output per year, and we’ll have 4,500 casks within the year.

“Our gin capacity will more than double. With both Glasgow and St Andrews able to produce gin, it will take us to more than 1.5 million bottles of gin per year. There’s a good scope there for us to grow off the back of it.

A graphic showing what the new Eden Mill distillery and visitor centre will look like from the riverside

“There will also be a cafe and a shop on the site, and there will be opportunities for corporate firms to hire out space to hold meetings and events in the private suite on the third floor.”

Eden Mill visitor centre experience

Stretching across three floors with different levels, Eden Mill will offer a range of experiences for locals and tourists alike.

From virtual whisky tours to its already popular Blendworks experience which sees gin lovers create their own version of the trendy spirit, not to mention other experiences, there’s plenty for guests to look forward to.

Paul Miller posing next to Eden Mill drinks

“We want to add to what St Andrews and Dundee already has to offer as the benchmark is already so high.

“We will able to offer something different in terms of our level and commitment of sustainability, the connection with the university, and, with the consumer experience, we think people will really be able to immerse themselves in what we are doing. Hopefully we’ll add to what the town has to offer,” said Paul.

“We’ll be taking our Blendworks Gin School concept to the new site where guests spend two or three hours getting to make their own bottle of gin and we’ll run specific gin and whisky tours, and VIP whisky tours with access to some of the cask storage areas, too.

“Our beer production will take place elsewhere so we won’t be offering the beer element at the site.”

Whisky Casks: A part of history

With the likes of Rod Stewart, Celtic footballer Scott Brown and professional Scottish golfer Stephen Gallacher already owners of one of Eden Mill’s 300 odd whisky casks, the 1655 club, which is a cask-owning club, will see a small quantity be released to locals, allowing them to be a part of the distillery’s history.

Rod Stewart performing live on stage

He said: “We’re hoping we’ll be storing 300 of our initial whisky casks in the distillery space itself, and we’re looking at a site adjacent to the distillery as a long-term cask storing area to minimise transportation of the whisky.

“The 300 casks in the distillery will be the ones owned by our VIP members of our 1655 club. We’ve been releasing a small quantity of casks to different groups of people who have connected with the distillery over time.

“We could sell it five times over as the demand globally for casks is massive, but we’re trying to ensure we allocate a small quantity for locals and those who have previously supported us.

“Our VIP cask member clubs will benefit from access to our third-floor facilities, too. You’ll have your own bit of history which is something really special.

Distiller, Scott Ferguson, at Eden Mill's current distillery.

“People can have a lot of fun with it as well as they can come along and have a taste of how their cask is maturing and bring their friends to the distillery.

“They get the chance to go on free tours twice a year and get their name inscribed into the cask – they might walk in and see their name beside the likes of Rod Stewart, Stephen Gallacher or Scott Brown.

“We set out in 2012 when we first launched to make something the people of St Andrews can be proud of and we hope we can continue to do so.”
