We were celebrating many big milestones and the restaurant was top notch. The food was creative and very good. The service was excellent. I wanted the list of the four course wine pairing with our meals and I was told the manager would email me but they never did.

My husband and I have been lucky enough to dine several times here. We are fortunate enough it is only about a 20-25 minute drive from our house. We wanted to celebrate our 20 year anniversary at Latour. We opted for the 7 courses and wine pairing. It was very very pricey but so worth it. Each course that was presented to us was delicious and the chef is so talented with the combinations of ingredients that work so well together. The service was impeccable as always. The staff always makes it a memorable dining experience for us. If you have the opportunity and/or want to celebrate a special event, I would give Latour a try. It is very expensive but the dining experience will be remembered for a lifetime. Thank you Latour.

Encyclopedic doesn’t begin to describe the wine list at Restaurant Latour in the Crystal Springs Resort in New Jersey. The cellar here comprises an almost incomprehensible 9,100 different labels, and more than 135,000 bottles, many if not most of them bearing the names of the world’s most sought-after producers.

Perhaps aware that the collection it has amassed might be just a little intimidating to many of its customers (the white wine list alone runs to 140 pages; the red a further 220 pages) the wine team at Latour has taken steps to accommodate the casual diner with a more focused “Sommelier’s List” of good value bottles, (such as Château Guiraud G de Guiraud dry white Bordeaux at $50) and intriguing by-the-glass offerings from top producers such as Argentina’s Catena and Australia’s Torbreck.

But the real fun at Latour lies in exploring that astonishing collection of fine classic wines, including the inevitable, but still remarkable selection from the restaurant’s namesake Bordeaux château: a near-complete run of 20th-century vintages, and bottles dating back to 1863.

Interview: Chef Anthony Bucco Of Latour, New Jersey's Most Upscale Restaurant

Chef Anthony Bucco

Crystal Springs Resort , in northwest New Jersey, serves as one of the premier culinary destinations in the state . Overseen by food and beverage director Anthony Bucco, who also holds the title of Executive Chef, the resort's menus – there are several cafes and restaurants – utilize flavors that reflect the tradition of haute cuisine. Restaurant Latour has attained numerous culinary awards and is complemented by one of the most extensive wine cellars in the country. Home to 75,000 bottles, some of which are priced at $25,000 and up, the wine cellar's collection is valued at $15 million.

Chef Bucco knows his way around both the kitchen and chef's garden, which grows behind the lodge. The garden features a wide variety of produce that is both indigenous to New Jersey, including the state's famed tomatoes, and food not normally grown locally, such as artichokes. According to Bucco, the garden's main function – while also providing food for the menu – is to educate guests about the importance of sustainable food and its impact on one's body.

The Daily Meal: Can you briefly describe your culinary philosophy? Chef Anthony Bucco: I am an ingredient-focused chef, who is hyper sensitive to the complexities of products that I work with. Seasonality is paramount when determining what I will be utilizing, but the goal is to modify the ingredients in a way that gives that the proper platform for true flavor expression. I enjoy incorporating texture and acid into the dishes to really push the palate in a flavorful direction.

What makes Restaurant Latour so special? Attention to detail. We really do think about everything with the goal of creating an elevated experience for each of our guests. It doesn't hurt having an amazing wine cellar, great team, and stellar sunsets.

What is grown in the Chef's Garden? The Chef's Garden is lush with a variety of edibles and beautiful flowers. We have the luxury of growing so many different items within the Garden's modest footprint. Each plant tells a story, each guest gets to experience it.

What are some of your favorite meals to prepare? I feel all chefs are defined by their flavor profiles which result from the personnel and professional experiences they have had in their careers. I love to eat, so for me I love to cook! While I find enjoyment in front of the stove, some of my favorite meals to prepare generally involve cooking for those that I love .

How often does your menu change? The menu at Latour changes weekly; while season has an impact, ultimately the menu is determined by what is "special" at the moment. While local is preferred we are realistic that we are delivering a luxury experience. If amazing langoustines show up, they are on the menu.

How important is it to have a world class wine cellar at your disposal each day? Our award winning wine cellar lends credibility to our food programming. Guest expectation is certainly different when someone makes the trek to experience the virtues of the Restaurant Latour Wine Cellar. Therefore we are sensitive to the development of flavor and its relationship with wine.

What is your personal interpretation of haute cuisine? It comes back to sensory experience. Taking nature's bounty; handling it with care, preserving its integrity while reinventing the way it's understood on the palate, presenting it beautifully, and then charging for it.

If you’re staying in a suite at the Grand Cascades Lodge you can easily cook up a meal in the kitchen, have a sandwich on the go in the Biosphere Café, or sit down for a casual to fine dining meal at several Crystal Springs Resort restaurants like the Crystal Tavern. Crystal Tavern

Located within the clubhouse at Grand Cascades Lodge, Crystal Tavern serves seasonal New American cooking with an emphasis on market ingredients yearround in the Clubhouse. The menu features salads with produce freshly picked from the garden and meats cooked on the grill or in the onsite smoker. A kids’ menu was available.

The Kids Menu at the Crystal Tavern did not disappoint.

The Crystal Tavern is where my boys and I ate dinner during the first night of our stay and breakfast on the following morning. While reservations were preferred, they were not required. It says smart casual for dress. My boys were okay with jeans and no one frowned on their attire. We were able to be seated rather quickly for a weekday dinner and breakfast. The views were truly incredible and the service was top notch. When my youngest ordered a chocolate milk it was delivered with whip cream and chocolate sauce. He was delighted. The Biosphere Café

The Biosphere Café is located at the Biosphere pool and open during the Biosphere hours. It’s the only onsite location at the Grand Cascades Lodge for grab and go sandwiches, salads, foods, and drinks. The poolside cafe offers gelato and specialty drinks as well. Grab a meal to eat poolside, eat outside (in warmer months), or to bring back to your room.

Chef’s Garden

Open during warmer months, this inspiring outdoor venue allows guests a truly unique “garden-to-table” al fresco dining experience with a backdrop of beautiful organic vegetables, flowers, herbs and the Kittatinny Mountain Range. The 100% organic garden was designed to be aesthetic, educational and to supply seasonal bounty to the Crystal Spring Resort restaurants. Watch as the Chefs pick the ingredients from the surrounding gardens and use them to prepare your meal right in front of your eyes. Restaurant Latour is the finest of the Crystal Springs Resort restaurants. Located in Grand Cascades Lodge, guests enter a classically appointed dining room featuring a glass wall framing the sunset over the Kittatinny Mountains. Executive Chef Anthony Bucco and Chef de Latour Martyna Krowicka have developed entrees with flavors reflecting the tradition of haute cuisine pair with the artful presentations. Bear Den Grille

One of the top upscale Fine dining spots in northern New Jersey. Restaurant Latour is in the Crystal Springs Resort, a 4,000-acre high end Alpine themed hotel resort. This destination, Chef-Inspired Fine dining restaurant, has all the amenities of fine dining without the "Old World" stuffy ambiance. It is a great choice for diners who can afford to splurge to celebrate a special occasion or a romantic experience. The Kitchen is run by Executive Chef Aishling Stevens. Chef Stevens received a degree in Commercial Recreation & Hotel Management from East Stroudsburg University. She later honed her culinary skills in Australia and in the U.K. where she worked as a sous chef at The Walpole Arms, a Michelin Bib Gourmand farm-to-table country pub. Prior to serving as the Executive Chef at Restaurant Latour, Chef Stevens served as Culinary Director with the American Hospitality Group in NJ. The well-executed, and artfully crafted seasonal menu at Restaurant Latour is prepared using the best seasonal and foraged items, and fresh local produce, when available. The Crystal Springs Resort On-site Chef's Garden provides a seasonal source of organic herbs, lettuces, fruit, vegetables The menu options include four-course prix fixe (plus optional cheese) or the seven-course chef's tasting Restaurant Latour is especially popular with wine aficionados. It contains an impressive wine collection with over 105,000 bottles. Every day at 3 p.m., a complimentary public cellar tour is offered to everybody who signs up for it at the hostess stand by the Crystal Tavern. In 2018 they were inducted into Wine Enthusiast's America's Best Wine Restaurant Hall of Fame. Restaurant Latour is the only restaurant from New Jersey included in the newly created Best Wine Restaurant Hall of Fame, which also boasts industry royalty like Daniel, Eleven Madison Park, Gramercy Tavern, Per Se and The French Laundry. The dining area interior has recently been renovated with a stunning, elegant, modern look using natural and reclaimed elements, including real tree bark, stone from local quarries, caribou hides, and other improvements including antique lighting fixtures from Europe, a hand-woven wool carpet from Barcelona, and custom-made table and chairs upholstered in moss green mohair. The dining area also has a six-seat Somm table crafted from a local quarry stone and supported by reclaimed train trestles. The Somm Table has communal seating and is less formal than the rest of the dining area. This is nice addition for solo diners who do not want a full dinner and is a popular spot for sampling wines. A highlight of the ambiance is the scenic view looking through the floor-to-ceiling windows out over the golf course to the Kittatinny Mountains. In the summer there is outside dining on the patio that gets you close to nature with an un-filtered view of the Kittatinny Mountains. For that special ambiance, arrive for dinner in time to take in the sunset over the mountains. It is a plus for a romantic occasion. In the warmer summer months, there is outdoor dining on the patio with scenic views of the Kittatinny Mtns in the direction of the Delaware Water Gap and Pennsylvania Not recommended for children. Children under 21 not admitted Restaurant Latour is open 4 days/week: Thursday - Sunday for Dinner: 5:00PM - 10:00PM Reservations are required.   • Additional amenities include linen and fine China table settings, carpeted flooring, chandeliers, and complimentary sorbets, dessert chocolates, etc.

Restaurant Latour at Crystal Springs Resort in Hamburg has undergone a complete renovation. The concept, conceived by Crystal Springs Resort CEO Julie Mulvihill and COO Robby Younes, is based around New Jersey’s forests, and draws inspiration from the natural world.

Real tree bark salvaged from fallen trees create new wood paneling. When the sun goes down, a glowing ceiling casts shadow-free light onto the room. Antique lighting fixtures from Europe, a hand-woven wool carpet from Barcelona and custom-made table and chairs upholstered in moss green mohair complete the look.

As for the eats, executive chef Aishling Stevens and chef de cuisine Matt Laurich have created a revamped menu that features foraged mushrooms, Bang Island mussels, New Jersey lobster, Scottish wild hare and more. A four-course prix-fixe meal and a seven-course chef’s tasting menu is now available, as well as a six-seat Somm Table, a communal seating area that will serve small plates with unique wine pairings by wine director Susanne Wagner.

The redesign was done by INC Architecture & Design , which has also worked on places like Momofuku in New York City and 1 Hotel in Brooklyn. Local artists also helped out, like Bonnie Hull of Sussex County, who made the plates for the redesign.
