Vermont’s World Famous Maple Syrup and Sugar Houses to Visit
Vermont is known for its high-quality maple syrup , which has been an important part of the state's culture and economy for centuries. The history of maple syrup production in Vermont dates back to the indigenous peoples who inhabited the region. These early inhabitants, including the Abenaki, Iroquois, and Algonquin tribes, discovered that maple trees produced a sweet sap that could be collected and transformed into syrup or sugar. They used the syrup as a sweetener and as a trade item with other tribes and European settlers.
Famous Vermont Maple Syrup
Maple syrup production became more widespread in Vermont in the 19th century, as settlers learned how to tap the trees and collect the sap. The process of making maple syrup involves drilling a hole into a maple tree and inserting a spout, or tap. The tap is connected to a bucket or a plastic tubing system that collects the sap as it flows out of the tree. The sap is then boiled down to reduce its water content, resulting in maple syrup.
Vermont's maple syrup industry has grown significantly over the years, and today the state is one of the largest producers of maple syrup in the United States. Vermont's maple syrup is known for its high quality and distinctive flavor, and it is enjoyed by people around the world.

A Sweet Bit of History – Making Maple Syrup in Vermont
The following article is from the December 20, 1873, issue of the Essex County Herald:
Maple Sugar Making
The manufacture of Maple Sugar is an important interest to farmers in this vicinity, and the idea of making a superior article is getting to be of greater moment every year.
Now is a good time to think and get ready to act. The first requisite is neatness or cleanliness, in everything pertaining to the business.
Harvesting Maple Sap
In tapping the tree one-half inch hole is big enough, cut with an instrument that will cut as smooth and with as little bruising as possible so as to leave the grains open. As to the depth, the outside grains are the best, but the sap circulates freely so far as the wood is white some time during the season.
To bore through to where the wood is colored is injurious. Some kind of spout or conductor with a small aperture fitting the hole nicely so as to make tight without marring the tree unnecessarily and prevent the hole from seasoning, which very quickly checks the flow of sap. Catch in wooden buckets, kept clean and sweet by washing and scalding. Tin buckets will make white sugar, but as the season advances sugar made from sap caught in tin buckets will have terribly repulsive and disagreeable taste, caused by the action of the sun on the tin. If one wishes to make a nice article be must gather often, even if sap runs slowly. Boil quickly in shallow pans with skimmer in hand; have a hand to stand right over it and give his or her whole attention to it, and you can have the sap in your boiling pan quite shallow and boil very rapidly, putting in cold sap often and skimming continually.
Boiling Maple Sap
Boil small batches, washing your boiling pan often. The heater with tubes is saving of wood, does the work rapidly, but boils in the scum and so colors the sugar. We prefer fine even threaded cotton cloth for strainer, running it through before it gets so sweet as not to go through readily.
Now for some of the things we have to contend with. One of the worst is silex or silicia [silicic] acid, more or less pervading the sap as it comes from the tree, colorless and kept nearly so if you are particular; if careless, a black gritty substance on the boiling pan and in the sugar. This substance is not discernable till near the granulating point or very thick molasses. It can be got rid of in this state by settling. Another difficulty is the grit or dust blown from the bark and lichens on the trees, some of which will go through almost any filter or strainer; the remedy for this is skimming and settling.
Another thing to contend with is rinsing from maple bark in stormy weather, which not only colors but is better when it is very bad. I throw it away sometimes and sometimes boil it but do not put it into the market. After all, sourness or acidity is the most troublesome thing in the manufacture of sugar to contend with. Washing and scalding are my remedies. Those using the patent evaporators, so far as I have been acquainted, come very short of making as white sugar as we are able to with the common pan. When the Vermont State Fair met at St. Johnsbury , the specimens presented there from the evaporator were decidedly inferior to what we are able to manufacture with common pan. Cooling and heating have a tendency to color the syrup.
If there is anything in the sap before it is boiled that can be filtered out, it is well to do so. If these few hints shall help anyone to improve the quality of their sugar the desired object of the writer will be gained.

I'm just looking for a complete package to give my Birthday the most enjoyable experience as possible!

This is a hard question to answer as they are all so different! Merck Forest is has a great sugaring operation, plus they have farm animals and hiking trails, so that would be my pick in Southern Vermont. I love Shelburne Sugarworks up north and Baird Farm. So hard to choose!

Making maple syrup
Innovations in maple production and technology over the years have refined the sugaring process. Instead of collecting from buckets, sap flows into the sugarhouse through a pipeline system and collects in tanks with help from a vacuum pump. We still collect from a few buckets near the sugarhouse in a nod to the past.
Maple sap flows right out of the trees when weather is favorable and consists of about 2% natural sugars from the trees and 98% water with a sprinkling of minerals and micronutrients that the tree has taken up from forest soils. After collection, sap passes through a reverse osmosis machine (RO) to filter out much of the water before the boiling process. It takes about 40 gallons of pure sap to make 1 gallon of maple syrup, so concentrating the sap reduces boiling time significantly.
From the RO, concentrated sap is pumped to the evaporator for boiling. The boiling process requires an expert hand with constant attention and adjustment to keep maple syrup flowing off the evaporator at the perfect consistency. Our experienced sugar makers triple test the quality of our maple syrup as it's produced and hand select the best tasting syrup for bottling.
Maple Syrup Grades
GRADE A GOLDEN DELICATE
Golden color with delicate flavor, previously called "fancy". Great for pouring on pancakes, waffles, ice cream, or fruit.
GRADE A AMBER RICH
Amber color with rich taste. A stronger maple flavor and a favorite of ours on breakfast or in a strong cup of coffee.
GRADE A DARK ROBUST
Dark color with robust flavor, previously called Grade B. Great for use in cooking or cocktails.
GRADE A VERY DARK STRONG
Very dark color with strong flavor. The strongest maple flavor, used often in cooking and baking.
How do I know which grade to choose?
Selecting the right grade of maple syrup is purely preferential, based on your individual palate and the way you'd like to use it, whether it be for pouring over pancakes, blending into a salad dressing or mixing into a cocktail. Each grade has its own distinct flavor profile with nuanced tasting notes ranging from delicate vanilla or toasted sugar to richer caramels and even chocolatey notes in the darker grades.
Our recommendation is to try all four grades before choosing your favorites. The darker the grade, the stronger the maple flavor. Lighter grades like Golden Delicate or Amber Rich have a more delicate maple flavor and may be overpowered by other ingredients in a complex recipe. If you want the maple flavor to shine, you may want to select a darker grade. If you're using maple syrup simply to sweeten a recipe and don't necessarily need the maple flavor to come through, you can use lighter grades just the same. All maple syrup has the same sweetness. The only differences between the grades are color and flavor.
Bethlehem, NH
A Sweet Tradition
Maple sugaring has been a sweet tradition for centuries in New Hampshire, where smoke rising from sugar houses tucked into the woods signals the welcome arrival of spring. As the days warm, sap begins to flow through sugar maple trees, ready to be collected and crafted into sweet maple syrup, sugar, and candy.
The New Hampshire Maple Experience at The Rocks explores this maple tradition, from the techniques used by Native Americans and early European settlers of the region to the operations of the modern sugar maker.
Housed in a 1906 building on the historic Rocks in scenic Bethlehem, with stunning views of the White Mountains, The New Hampshire Maple Experience is a hands-on educational experience that includes a visit to a working sugar house and interactive museum comprising maple artifacts from the extensive collection of legendary sugar maker Charlie Stewart of nearby Sugar Hill.

Shaver-Hill Maple Farm
Maple Sugaring in New York
New York is one of the few places in the world where Sugar Maple trees (our official state tree) thrive and maple syrup is produced. Native Americans taught early settlers in this area how to create this delicious natural treat. Today New York State is one of the world’s top producers of maple products. Celebrate nature's sweetness during Maple Weekend happening March 16-17and March 23-24! Visit sugarhouses across the state for free to experience the tapping process and taste maple syrup straight from the source!
Open year-round, Sprague's Maple Farms in the Chautauqua-Allegheny region celebrates maple season at their sugarhouse with tree-tapping demonstrations and old-fashioned family fun. Restaurant menu specialties use their signature syrup as a key ingredient.
You will find many maple recipes and lots more information on maple syrup, farm tours, and more at the New York State Maple Association . Wherever you go to experience New York's maple, just be sure to stock up. You'll never go back to grocery store "pancake syrup" after getting a taste of the real thing in New York.
Call ahead and check websites and social media to make sure attractions are open and available.

The Willows is a small family run operation that has been producing syrup for 11 years and has been a part of the Maple Tour for 8 years. We consider ourselves “old-fashioned” in our process and collect sap from 600 buckets hung on trees. We use a wood-fired 3×8 evaporator to boil down the sap into that sweet syrup that is enjoyed by many. Our award-winning syrup is sold by the bottle, and can also be found in our maple cotton candy, maple mustard, maple peanut butter, and maple sugar. This year we are adding a production facility/maple gift shop that will keep guests warm and dry while visiting us on the tour. As we tell our visitors to our sugar shack, if you see steam, stop and take a look!

Moscow Metro
The Moscow Metro Tour is included in most guided tours’ itineraries. Opened in 1935, under Stalin’s regime, the metro was not only meant to solve transport problems, but also was hailed as “a people’s palace”. Every station you will see during your Moscow metro tour looks like a palace room. There are bright paintings, mosaics, stained glass, bronze statues… Our Moscow metro tour includes the most impressive stations best architects and designers worked at - Ploshchad Revolutsii, Mayakovskaya, Komsomolskaya, Kievskaya, Novoslobodskaya and some others.
What is the kremlin in russia?
The guide will not only help you navigate the metro, but will also provide you with fascinating background tales for the images you see and a history of each station.
And there some stories to be told during the Moscow metro tour! The deepest station - Park Pobedy - is 84 metres under the ground with the world longest escalator of 140 meters. Parts of the so-called Metro-2, a secret strategic system of underground tunnels, was used for its construction.
During the Second World War the metro itself became a strategic asset: it was turned into the city's biggest bomb-shelter and one of the stations even became a library. 217 children were born here in 1941-1942! The metro is the most effective means of transport in the capital.
There are almost 200 stations 196 at the moment and trains run every 90 seconds! The guide of your Moscow metro tour can explain to you how to buy tickets and find your way if you plan to get around by yourself.

Fun facts from our Moscow Metro Tours:
From the very first days of its existence, the Moscow Metro was the object of civil defense, used as a bomb shelter, and designed as a defense for a possible attack on the Soviet Union.
At a depth of 50 to 120 meters lies the second, the coded system of Metro-2 of Moscow subway, which is equipped with everything you need, from food storage to the nuclear button.
According to some sources, the total length of Metro-2 reaches over 150 kilometers.
The Museum was opened on Sportivnaya metro station on November 6, 1967. It features the most interesting models of trains and stations.
Coffee Ring
The first scheme of Moscow Metro looked like a bunch of separate lines. Listen to a myth about Joseph Stalin and the main brown line of Moscow Metro.
Zodiac Metro
According to some astrologers, each of the 12 stops of the Moscow Ring Line corresponds to a particular sign of the zodiac and divides the city into astrological sector.
Astrologers believe that being in a particular zadiac sector of Moscow for a long time, you attract certain energy and events into your life.
Paleontological finds
Red marble walls of some of the Metro stations hide in themselves petrified inhabitants of ancient seas. Try and find some!
