I sailed on Royal Caribbean's Icon of the Seas. These were my 8 favorite amenities on the world's largest cruise ship.

  • Royal Caribbean invited me to spend three complimentary nights on its new Icon of the Seas  in January.
  • My eight favorite amenities included the waterpark and jazz bar.
  • I've yet to see most of the amenities on my list on other cruise ships.

There's a reason Royal Caribbean's new mega-cruise ship is only operating seven-night sailings .

The 1,196-foot-long, 20-deck Icon of the Seas is packed with bars, restaurants, and things to do. Any shorter of an itinerary, and you might not have time to experience all it has to offer.

If you're a frequent cruiser — especially with Royal Caribbean — amenities like the mini-golf course and water playground may not seem exciting.

But of all the activities the new world's largest cruise ship has to offer, my eight favorites are, for the most part, ones I've yet to see on another vessel.

Take a look at what made the cut.

1. The six-slide waterpark

It wouldn't be a roundup of Icon of the Seas' best amenities without a mention of its waterpark.

Plenty of family-friendly cruise ships have waterslides, but few have six — or even one that requires a multi-person raft.

However, if you don't like the feeling of your stomach dropping, I'd advise skipping the 46-foot-tall drop slide.

2. The adult-only suspended infinity pool

The 7,600-guest Icon of the Seas has seven pools and nine hot tubs. As a kid-fearing adult, I loved the grown-ups-only suspended infinity pool.

I spent my time there perched at one of its in-water loungers, contently splashing my legs around the water, wondering if I actually hated cruises.

While I would've preferred a quieter atmosphere (the DJ did not, in fact, play smooth jazz), the pool's views, day beds, and lack of screaming children were hard to beat.

3. The Crown’s Edge thrill 'ride'

There's no need to grab coffee before harnessing up for the part-zipling, part-agility Crown's Edge course. You'll be jolted awake when the floor drops from beneath your feet, leaving you dangling 154 feet above the ocean before the zipline kicks in.

Unfortunately, it comes with two costs: $49 and a spike of anxiety.

4. The 'Wizard of Oz' and 'Aqua Action!' shows

If you hate cruise shows, Icon of the Seas could make you change your mind.

The ship's riff on Broadway-approved "Wizard of Oz" — 16-piece live orchestra and flying bed included — delighted me, a hater of most musicals.

For something less traditional, the semi-circle AquaDome theater hosts a compelling multi-disciplinary swim, dive, and aerial show reminiscent of Cirque du Soleil.

It's the first show-at-sea I've seen with a waterfall and nine-foot-tall robotic arms, and so far, it's one of my favorites.

5. The live jazz bar

Ya like jazz? So do I.

Icon of the Seas has plenty of live music venues — including rowdy karaoke and dueling pianos bars, if that counts. But if you're a jazz fan or looking for a peaceful nightcap, none of these options will top the live music at Lou's Jazz 'n Blues.

6. The customizable Mediterranean-style wrap at the five-stall food hall

The mega-ship's food hall wasn't nearly as diverse or exciting as the one on Norwegian Prima .

But compared to the rest of my mediocre meals on Icon of the Seas — including dinner at a specialty restaurant — my complimentary pork pita wrap from the food hall's Mediterranean-inspired stall was admittedly pretty decent.

The Cava -like meal was balanced, succulent, and filling. Ending it with a strawberry nutella crepe from one of the vendors didn't hurt either.

7. The Pearl Café with sweeping ocean views

Everyone takes a picture inside the Pearl . But few people know that the best part about the glittering structure isn't what's inside it — it's what's behind it: the Pearl Café.

Admittedly, the food wasn't standout.

But it's 2024. In this era, we don't dine for food. We dine for vibes . And the Pearl Café was definitely "serving" (even with its mediocre sandwiches).

At first glance, I had snubbed the dining and lounge area as a rip-off of a generic airport coffee shop. But during my three days on Icon, I returned to the centrally located space more often than expected. It turns out it's a great place to get some work done.

8. The lounging pods that tower above passerbys

Speaking of vibes, if you're looking for a secluded place to drink (as in, not the swim-up pool bar), few will top the Overlook Pods, perched just behind the AquaDome.

If you want to feel like you're drinking in a nest atop a tree, bring your coffee-infused cocktail from nearby Rye and Bean to one of the elevated pods. .

Just don't drink too much. What goes up must come down. And to get down from the pods, you'll have to take the stairs.

Royal Caribbean shares big 2024 plans passengers will love

Royal Caribbean knows how to make an entrance.

Icon of the Seas entered the market as a celebrity after what seemed like a year of hype videos and anticipation. It helped that the world's largest cruise ship took the cruise line's Oasis-Class innovations to the next level.

It was a white-paper build — a ship that literally started as a blank piece of paper — but the cruise line allowed its design team to borrow the best features from other ships. 

That's why Icon of the Seas has returning favorites like Playmakers, Schooner Bar, and an enhanced Central Park alongside numerous new features like the Pearl, the indoor AquaDome, and the new Surfside family neighborhood.

Royal Caribbean created something truly new that's also familiar. The cruise line also fixed pain points like elevator queues and not having views of the ocean on public decks.

Icon of the Seas, however, was not the cruise line's only innovation over the past year. Royal Caribbean also added the adults-only Hideaway Beach to its Perfect Day at CocoCay private island and has plans for two private Beach Clubs, one in Nassau and one in Cozumel.

Royal Caribbean has a simple formula that drives its plans moving forward.

Royal Caribbean has a bold plan

Royal Caribbean Chief Executive Jason Liberty laid out the company's plans for its namesake brand during its fourth-quarter-earnings call .

"Our proven formula for success remains unchanged. Moderate capacity growth, moderate yield growth, and strong cost controls lead to enhanced margins, profitability, and superior financial performance," he said. 

"Our operating platform is bigger and stronger than ever. We have the leading brands in their respective segments, the best people, and the best and most innovative fleet and destinations,"

The CEO says its newer ships and Perfect Day at CocoCay give it a major edge.

"We remain intensely focused on delivering a lifetime of vacations for our guests and long-term value for our shareholders," the executive said. "We are leading the vacation industry and creating exciting new products and experiences, which in 2024 include game-changing ships and the expansion of our highly rated destination, Perfect Day at CocoCay." 

Icon of the Seas, he noted, has been a star revenue driver.

"Our new ships are performing exceptionally well. And while we always expect to see strong trends when we introduce new ships, Icon of the Seas is definitely living up to her name and has taken things to a whole new level in every way," Liberty said.

New ships drive battle vs. land-based vacations

Utopia of the Seas will sail three- and four-day itineraries out of Port Canaveral, the first time the cruise line had dedicated a new ship to shorter sailings.

"Demand and pricing for Icon has been incredibly strong. This year, we are also thrilled to take delivery of the sixth Oasis class ship, Utopia of the Seas, which will set the stage for the ultimate weekend getaway," the CEO added.

The challenge, he said, is not stealing share from other cruise lines but in competing with land-based vacations.

"New ships and their incredible innovative experiences further accelerate our efforts to steal market share from land-based vacations," Liberty said.

Coco Cay is a big part of that plan.

"We completed the expansion of Hideaway Beach at Perfect Day at CocoCay just in time to welcome Icon of the Seas, upsizing the benefit of this strategic asset," Liberty said. "Hideaway Beach is our newest adult-only ultimate beachfront paradise at Perfect Day at CocoCay, which expands our capacity on the island to over three million guests annually."

Perfect Day at CocoCay has the highest passenger rating of any Royal Caribbean destination. The cruise line plans to build on that popularity.

History of the Caribbean Mule

Although there’s plenty to love about the original Moscow Mule, variety is undeniably the spice of life. Thus, there is good reason to have a collection of recipes for your cocktails. With only a cabinet full of liquor from different parts of the world and a few basic ingredients, exploring with the Mule drink is like going on an adventure from the comfort of your home bar. 

Because the original Mule was named to pay homage to where vodka came from, Russia, its variations have followed the same idea. The Caribbean Mule takes the spirit of the enchanting blue waters of the Caribbean islands, combined with conventional ginger beer. 

With the Caribbean Mule, you can choose to use spiced rum, white rum, pineapple-flavored rum, or even coconut rum. The sweetness of the drink is livened up by the ginger flavors.

Caribbean Mule Ingredients

The ingredients in this variation are:

  • Rum – To achieve the best flavor, choose a premium quality rum.
  • Lime juice – Fresh lime juice balances out the sweetness and adds a tangy flavor.
  • Simple syrup – This can be made at home and is comprised of water, granulated sugar and, if you want to add a greater ginger kick, fresh slices of ginger.
  • Ginger beer – Choose a high-quality beer for the best results.
  • Ice – Use small crushed ice for heightened sensation and guaranteed chilling while drinking.

Which Rum Should You Use for your Caribbean Mule?

Spiced rum brings a comforting, warm feel that’s perfect during fall. When paired with ginger beer, the result is an extra sweetness and spice perfect for those cozy, cold nights or for entertaining your guests. Even when it comes to mixed drinks, you should always ensure you buy quality spiced rum. Preferably, use one with a medium to heavy texture. The flavors of the rum come out and help even out the ginger beer and simple syrup. 

You can also choose to use Red Leg rum. Red Leg spiced rum comes from the makers of Blavod, a premium vodka. The name is inspired by the red legged hermit crab that is indigenous to the coral reefs found in the Caribbean. The rum is infused with vanilla and ginger  and then rested in oak casks to marry all the spicy flavors. 

The Easy Caribbean Mule Cocktail

Ingredients:

  • 4 oz spiced rum
  • 2 small pieces of fresh ginger
  • 4 oz ginger beer
  • ¼ oz homemade ginger simple syrup
  • ¼ oz lime juice

Instructions:

  • Muddle the fresh ginger.
  • In a cocktail mixer, add the simple syrup, spiced rum, and lime juice and shake well.
  • Strain, then add ginger beer to create that absolutely delicious spicy cocktail. 

Pirate Inspired Caribbean Mule

This cocktail will transport you to the ocean blue waters of the dreamy Caribbean from wherever you are in the world. 

  • ½ oz white rum
  • ½ oz gold rum
  • 1 oz coconut rum
  • Pineapple wedge
  • Mix all the rums.
  • Add ginger beer, then stir gently.
  • Serve in a classic copper mule mug over ice and garnish with the pineapple wedge.

The Kranks’ Caribbean Mule

This easy-to-make Caribbean style cocktail is one tasty treat. It draws its inspiration from a holiday favorite, ‘Christmas with the Kranks.’ In the movie, a couple whose kids are all grown up and have left home go merry-making on a Caribbean holiday cruise. This particular cocktail uses cranberry syrup, which gives the drink a distinctive twist.

  • 4 fresh cranberries chopped
  • 2 sprigs fresh rosemary
  • 12 oz ginger beer
  • ½ cup white sugar
  • ½ cup water
  • 1 oz fresh lime juice
  • 2 slices lime
  • Ice as needed 
  • Put the water, sugar, and chopped cranberries in a saucepan and cook over very low heat.
  • Stir frequently until the cranberries are completely soft.
  • Use a fine-mesh sieve to strain the mixture. Press the pulp gently to extract the liquid.
  • Let the syrup cool for about 20 minutes at room temperature. Cover the syrup and put it in the refrigerator for about 30 minutes before use.
  • Pour ½ oz of lime juice and 1 tablespoon of the cooled syrup into two Collins glasses or copper mugs.
  • Add ice, then pour rum and ginger beer in equal amounts and stir using a cocktail stirrer.
  • Garnish with cranberries, a lime wheel, and rosemary sprig.

Bright Caribbean Cocktail

This low-carb cocktail is bright enough to make you forget a chilly and dull day outside your window. It’s also perfect for weekend entertaining. Besides, you get to enjoy all the goodness of a low-carb  drink which lets you indulge while also helping you in the weight management department!

  • 1 1/8-inch slice of fresh ginger
  • ¼ teaspoon of pineapple coconut water enhancer
  • 4 oz sugar-free ginger beer
  • 1 oz pineapple rum
  • Frozen cranberries
  • 1/2 oz lime juice
  • 2 oz club soda
  • Muddle the ginger in the bottom of your cocktail mixer.
  • Fill with ice.
  • Add all the rum, water enhancer, and lime juice. Shake well.
  • Put the mixture in a glass and add the club soda and ginger beer
  • Garnish using the frozen cranberries and serve immediately.

The result is a sparkly cocktail that is ideal for weekend sipping. If you prefer your drinks a little sweeter and a bit heavier, then add more ginger beer.

Ginger Peach Fizz

The dark rum used has a flavor that perfectly complements the peaches  in this utterly amazing cocktail.

  • 1 ½ oz dark rum
  • ¾ oz simple syrup
  • ¾ oz lime juice
  • 2 slices of peach
  • Muddle peach slices in a cocktail shaker.
  • Add ice, lime juice, rum, and simple syrup, then shake.
  • Strain mixture in a highball glass and top with ice.
  • Fill the glass with ginger beer and stir.
  • Use the mint sprig to garnish.

Which One Should You Use: Ginger Beer or Ginger Ale?

Although it’s possible to use ginger ale instead of ginger beer in your Caribbean Mule cocktails, you won’t achieve the depth of ginger flavor, which is what makes ginger beer such a great mixer. Ginger beer is actually fermented and has a sharper, more pronounced ginger flavor and almost .05 percent alcohol. Besides, it’s less carbonated compared to ginger ale .

Making Homemade Simple Syrup

Simple syrup is a mixture of sugar and water that’s dissolved and then cooled. The ideal ratio should be 1:1.

To make a ginger simple syrup, you should mix a few fresh slices of ginger with water and sugar and put it in a small saucepan. Then, place it over medium heat and cook for about 5 minutes. Once the sugar has dissolved, remove from the heat and allow to cool.

Should You Make Your Own Simple Syrup or Use A Store-Bought One?

Even if you're a novice, making your own homemade spiced Caribbean Mule with your own simple syrup is very easy. The advantage of making your own is you can control the sweetness and flavor when cooking. For instance, adding extra ginger will give your drink more punch. On the other hand, if you need a faster drink, then store-bought simple syrup is your best bet. However, it will not have as much ginger flavor.
