The yaraví of arequipa, brief history.

The yaraví is a song that was widely practiced in colonial times. Mariano Melgar from Arequipa was one of the great cultists and perhaps the most recognized. In this sense, when talking about Arequipa, it is inevitable not to talk about the poet, martyr, and hero of independence, along with the famous yaravíes, songs, and poems that became very similar to the trova.

The Plaza de Armas in Arequipa, lined with palm trees and historic buildings made of white sillar.

Arequipa is famous for its delicious cuisine, distinct colonial charm, and beautiful buildings made of white volcanic stone. It is also the jumping-off point for visiting Colca Canyon, the second deepest canyon in the world.

Arequipa is a serene metropolis blessed with a pleasant climate and eternal sunshine. Among its many treasures are photogenic plazas lined by palm trees, colonial-era architecture that have earned the city its UNESCO World Heritage title, and regional dishes. As you wander the cobblestoned streets, you’ll quickly see why Arequipa is called the “White City” or “Ciudad Blanca.” Sillar is petrified ash from decades worth of volcanic eruptions. Used as the primary building material for Arequipa’s churches and mansions, it bestows the city with a radiant appearance.

Situated beneath the towering gaze of the Misti Volcano, and within easy reach of one of the world’s deepest canyons - Colca, home of the majestic condor - Peru’s second most populous city possesses thrills and attractions to suit all tastes. Among the urban centers of the southern Andes, Arequipa is undoubtedly the most attractive and a must-see for any traveler on a trip to Peru.

Climate & Weather

Arequipa is in a fertile valley surrounded by high-peaked mountains. But the broader region sits on the edge of the driest desert in the world, the Atacama Desert. A couple of hundred miles from the city, in the Cotahuasi area, altitudes range from 3,000 feet to 20,000 feet (and above) and encompass nineteen ecological zones. If you venture out to the mountains and highlands around Arequipa, expect stronger sun and winds during the day and significantly cooler temperatures at night.

In terms of weather, Arequipa has plenty of sunny days that are typical of high desert climates and temperatures moderated by the city’s 7,660 feet (2,335 meters) elevation. Daytime temperatures are usually around 65°F (18°C), rarely going below 50°F (10°C) or rising above 77°F (25°C). Nights can dip down to 45°F (7°C).

The Andean rainy season extends from December to March. In Arequipa, this means cloud cover and light showers in the evenings. The month of February is the exception, and heavy rains are frequent.

Geography & Map

  • Arequipa is situated in the middle of fertile valleys irrigated by meltwaters from the surrounding mountain peaks. Three volcanoes - Misti, Chachani, and Pichu Pichu - stand guard over the city and remind you of the region’s seismic activity.
  • Elevation 7,660 ft (2,335 m) Population: ~1 million

Best Time to Visit

The city of Arequipa enjoys around 300 days of sunshine each year. The best time to visit Arequipa is anytime from April to November when the weather is pleasant. Conditions are sunny with blue skies, and daytime temperatures are mild. The region’s high altitude and plenty of sun produce high risk for sunburn, so stroll the streets of Arequipa wearing a hat and high SPF sunscreen.

If you plan to add Colca Canyon to your Arequipa itinerary, the best time to plan your trip is from May to November. These months are the dry season in Colca Canyon, which coincides with beautiful weather in Arequipa too. One of the highlights of visiting Colca is spotting Andean condors, and chances of seeing them outside the dry season is much lower.

Archeological evidence shows that 1,000 years before the arrival of the Inca civilization, the Aymara indigenous groups inhabited the Arequipa region. According to oral traditions, the settlement was known by a name meaning “summit behind the peak” in reference to the Misti Volcano. In the Aymara language, “ari” means “summit” and “quipa” means “lying behind.”

Much later, in the year 1300 AD approximately, the fourth Sapa Inca, Mayta Capac, arrived with his entourage from the kingdom of Cusco. Legend has it that the name Arequipa arose when the Inca ruler, after admiring the lush valley protected by grandiose mountain peaks, said, “ari, quepay,” which in Quechua means “yes, let us stay.”

Fountain, buildings and palm trees at night in the Plaza de Armas of Arequipa, a popular destination of the 'white city'.

After the arrival of European conquistadors to Peru (and the military defeat of the Inca Empire in Cusco ), the Spanish settler Garcí Manuel de Carbajal re-founded the city in 1540. It is this date that is commemorated with great fanfare during the Fiestas de Arequipa in August, which consumes the entire city and attracts travelers from other parts of Peru.

From the 16th and 18th centuries, under Spanish colonial rule, Arequipa flourished in the crossroads for the silver trade. The city’s architectural aesthetic began to take form during this time when white sillar stone, abundant in the Arequipa region, was used as the primary material to build the casonas of large landowners, beautiful churches, and sprawling convent complexes including Santa Catalina.

From the first click we have been supported and cared for through out the arrangements and whilst in Peru. There was always someone at the end of the phone or can be messaged. We had a great time in Arequipa and the Colca Canyon, with very knowledgeable and caring guides, who could not do enough for us. The views and sights are stunning and like nothing you see elsewhere. We were very lucky to see three condors when at the view point as well as many roaming llama, apacha and vicuna. The guides spoke English brilliantly and if there was any confusion they would work with us until we understood each other (which we are very grateful for). If they recommended certain places to eat or visit I suggest you go. Victor suggested we go to a meal with a show and it was the best night we have had in Peru, we would never have found it otherwise. Also the hot springs are a must! We went in January (rainy season) however it only rained in the evenings and did not spoil the trip at all as we still got to do all we wanted to do.

The Complete Travel Guide to Visiting Arequipa: What to Do and See

Full of traditional culture, legendary gastronomic offerings and easy access to adventurous escapes, visiting arequipa is a must for travelers. , popularly referred to as the white city for its glorious white sillar structures, arequipa is one of the top cities to visit in peru. time after time we have been drawn back to the southern peru area to get another taste of its famed picanterías, one more spin through the historical convents and clusters, and a final gaze at the historical center (a unesco world heritage site). whether preparing for your first visit or overdue return trip, let’s explore arequipa, where is arequipa located.

Hugged by three volcanoes—whose activity in the distant past gave way to the sillar from which the nickname, White City, derives—Arequipa is a rare gem full of colonial charm. Located in southern Peru, Arequipa is some 200 miles (323 km) south of Cusco and just over 100 miles (173 km) west of Puno . Due to their proximity, the three southern cities often form an impressive trifecta for travelers in Peru.

Where-is-Arequipa-located-in-Peru

Incredibly scenic, the geography of Arequipa includes the active volcano Misti in its skyline and the Chili River dividing the northern and southern halves of the city. While the Andes Mountains rest to the north and east of the city, the average elevation of Arequipa floats around 7,600 feet (2,300 meters) , a slightly lower elevation than that of Cusco or Puno.

How to get there

Arequipa can be reached by a direct flight from Lima in less than two hours , making it easily accessible as a weekend adventure or an extended leg on your full Peru tour. The city’s main square (Plaza de Armas) is a 30-minute taxi ride from the Rodriguez Ballon International Airport. Pre-pandemic , daily direct flights were offered from Cusco to Arequipa and clocked in under an hour. Be sure to check with your travel agent before planning.

Travelers in Cusco looking to visit its southern neighbor (some 200 miles away) can also get to Arequipa by a 10-hour bus ride .

If time is not an issue, the most scenic option would be a ride on the Belmond Andean Explorer . Departing from Cusco, you will travel south to Puno before arriving at Arequipa.

History of Arequipa

A leading industrial and commercial center of current-day Peru, Arequipa has consistently played an important role throughout the nation’s history.

Beginning with the city’s name, there are various theories: from the fourth Inca’s reply to his subjects who wanted to remain in the fertile valley ( “Ari qhipay,” meaning “Yes, stay” in Quechua ), to phrases in Aymara such as “ari qipa” (behind the peak). While the former makes for a fascinating anecdote in the legend of the Incas, the latter may be more accurate as nomads deriving from the Lake Titicaca region are believed to be some of the first to settle in the valley of Arequipa.

View this post on Instagram A post shared by 𝓜𝓪𝓻𝓬𝓸 𝓐𝓵𝓱𝓮𝓵𝓶 (@maal216)

From wanderers to pre-Inca cultures, Arequipa developed an agrarian economy over time , evolving from fishing in the Chili River to constructing agricultural terraces on either side of the stream of water. In 1540 the area was reestablished as a city by the Spaniards, with its founding date officially marked as August 15. Monasteries, churches and bridges were some of the first public works, though the new colonial era would also be marked (and nearly destroyed) by dramatic earthquakes and volcanic eruptions in the 17th century .

Incredibly, quite a few colonial architectural pieces remain and have been preserved over time. The historical cityscape matched with local geography has garnered Arequipa recognition as one of the most beautiful cities in Peru .

For most of the year, the weather in Arequipa is dry and the climate temperate . If planning on outdoor adventures while in town just keep in mind that, similar to Cusco, the rainy season lands between January and March.

What to do in Arequipa

Architectural tour.

Strolling through the historic streets of the White City is like a step back in time, giving us an insight into colonial Peru. Begin in the Plaza de Armas, where you will find the elegant, neo-Renaissance Basilica Cathedral of Arequipa and the sensational 16-century Santa Catalina Monastery . Continue on to the Church of the Company, perhaps Peru’s finest example of Baroque architecture . Don’t forget to visit the neighborhoods of Yanahuara and Carmen Alto to enjoy magnificent views of the Misti volcano rising above the city.

Colca Valley

This impressive valley is one of the deepest in the world, reaching depths of approximately 3,400 meters . To give you perspective: the Grand Canyon has a maximum depth of 1,829 meters. As you take in the sheer vastness of this area, you may witness the majestic condors gliding by on the thermals rising from the canyon.

View this post on Instagram A post shared by Henry Tenicela (@henrytenicela)

Descend the valley to discover some of the traditional towns located on the banks of the Colca River, such as Chivay , Pinchollo , Maca , Achoma and Yanque , where beautiful colonial churches are backdropped by the peaks of the Andes.

Adventure sports

The topography of this southern valley is prime for thrillseekers looking to cruise down canyons and mountain sides by bike. Trails that wind up and down Colca Canyon and Misti, as well as riverside paths make for a scenic yet challenging ride.

Located between two colossal volcanoes, Misti and Chachani, the Chili River is a scenic point to practice rafting or kayaking. During the dry season, the water level and rapids are ideal for beginners—though you should only enter the water with an experienced and trustworthy guide.

What to eat

Picanterias (traditional lunchtime joints) are characteristic of Arequipa, filling neighborhood streets with the comforting scent of hearty dishes . Typical dishes include rocoto relleno (a spicy pepper stuffed with ground beef, vegetables and cheese), pastel de papa (think potatoes au gratin), solterito (cold corn and cheese salad), a creamy Peruvian-style shrimp soup known as chupe de camarones and adobo, a marinated pork soup.

Where to stay in Arequipa

As the second largest city in Peru, Arequipa has varied hospitality options to fit any type of traveler’s budget.

Recommended standard hotels include Hotel San Agustin Posada Del Monasterio , housed in a traditional sillar building from the 18th century; L a Maison D’elise , located in the charming Yanahuara neighborhood; and the strategically located Hotel Casona Plaza .

Medium-range hotels include Casa Andina Select Arequipa , Sonesta Hotel Hotel El Cabildo (which, of the three, has the most local feel).

If your standards for comfort are set a bit higher, or if you’re looking to splurge, consider Casa Andina Premium or the incomparable CIRQA , a relatively new addition to the city that has already gained international attention.

10. Eat at a Picantería

Try the local dishes at the so-called Picanterias. These are incredibly popular with local families, so make sure to be on time or book a table in advance. We had a delicious lunch at La Nueva Palomino, on our way back from the Yanahuara Viewpoint.

Behind the small entrance door is a huge garden, with possibly the tastiest meals in town. The vegetarian options are limited, so we tried the local river prawns, which were absolutely mouth-watering. Picanterias are famous for their corn beer, made from fermented corn, and we highly recommend trying this! Yummmm.

I love your guide & your pics are absolutely gorgeous! I found your blog post before visiting & definitely followed many of your suggestions. Thank you for them! The one tiny thing that I dislike is that the images of the monastery show the walls to be turquoise when they’re very much a royal blue in real life. :P

Hi Lacy, love to read that, thank you! I had a quick look at my phone photos and videos but they are not that different from the turquoise in the photos so I’m wondering if they repainted it? Our visit was over two and a half year ago.

Arequipa has it all. Yes, absolutely everything you can imagine can be found in the territory of the 'White City.' History, adventure, fabulous landscapes, wildlife, gastronomy, art, and much more are hidden in the Villa of Our Lady of La Asunta of Arequipa - the name with which it was founded in 1540 - which is firmly guarded by its most imposing natural attraction: the Misti volcano.

If you want to break away from the city routine and breathe in some nature, Arequipa is what you need. The campiña awaits you, so you can appreciate the modern city from its outskirts -where traditions and ancient locations are still preserved- surrounded by beautiful green landscapes. From the viewpoints of Yanahuara, Sachaca, or Carmen Alto, you can enjoy the fabulous scenery that Arequipa offers.

Pure adrenaline

If you are looking for more adventure, you can go trekking, mountaineering, rafting, or mountain biking in the Colca Valley. The ultimate destination will always be the majestic Colca Canyon , one of the deepest in the world, which welcomes tourists alert to admire the king of the Peruvian Andean skies: the majestic condor.

In the historic center , you can travel back in time with the more than 500 European-Andean colonial mansions that make up the city, adorned with white vaults and arches made of sillar, too.

Delicious gastronomy

Are you a lover of seafood and crustaceans? You must try a delicious Shrimp Chupe, a soup that combines the flavors of the region with Western ingredients. Likewise, the options to satisfy your culinary cravings are countless.

For example, the Ocopa arequipeña, an emblematic dish of the city, is usually served as an appetizer. Due to its versatile and pleasant flavor, it can be combined with any main course. Another popular appetizer in Arequipa is the solterito de queso, which is a kind of fresh and light salad that combines fava beans, corn, onion, cheese, diced tomato, and olives.

But if you want to taste the city's signature dishes, you must try these three options: Adobo arequipeño, Pastel de papa con rocoto relleno, and fried guinea pig (also known as Chactado). Any of these mentioned dishes will leave you completely satisfied, as they are hearty and usually served in generous portions.

Other attractions

To complement the adventure, a leisurely walk. Arequipa also has areas to stimulate your intellect and thirst for knowledge. These are architectural and archaeological sanctuaries in the city, as mystical as ancient: you can take a tour in the Sillar Quarries or the Toro Muerto Petroglyphs. In the former, you will find a spectacular route to discover how they work with sillar, a white volcanic stone, from its extraction, carving, and sculpting phases. This rock is also the foundation of Arequipa's architecture. In the latter, you will find a place related to cave art: Toro Muerto Petroglyphs, where you will appreciate engravings of zoomorphic, anthropomorphic, and geometric figures dating from 500 to 1300 AD.

Undoubtedly, Arequipa has a series of activities and locations that capture the attention of any adventurer. Have you already decided to visit it?

More Information

Arequipa, a legendary and historic white stone city, is a UNESCO World Heritage Site. Watched over by its beautiful volcanoes in Ampato, Chachani and especially the El Misti Volcano.

With its streets, buildings and churches of a spectacular colonial construction; with a wonderful geography that gives us a fertile valley and deep canyons among them, Cotahuasi and Colca, whose beauty and impact are impressive.

Arequipa is situated at an altitude of 2325 m in the desert mountains of the Andes. This beautiful city is built almost entirely of sillar, a kind of white volcanic stone. This is why Arequipa is called the White City. With its one million inhabitants, Arequipa is the second largest city of Peru.

The main location, the Plaza de Armas is the most beautiful in the country. The Cathedral is magnificent and the shopping arcades are in colonial style.

Monastery of Santa Catalina

The Monastery of Santa Catalina de Siena, or also known as the Convent of Santa Catalina, is a religious tourist complex located in the historic centre of Arequipa. What makes the visit especially interesting is that the monastery itself is a small city, 20,000m2 surrounded by a 4-metre high wall that separated the life of the cloistered nuns from that of the rest of the inhabitants of Arequipa.

How to get to the Monastery of Santa Catalina?

The Monastery of Santa Catalina is located just a few blocks from the imposing Plaza de Armas of the city, so you can get there from anywhere in the historic centre of Arequipa.

Dreamy Tours, we offer a City Tour in Arequipa that includes a guided visit to the monastery of Santa Catalina, as well as other tourist attractions of the city.

Get To Colca Canyon

The Colca Canyon is located about 4 hours from the city of Arequipa. The best way to get there is to take a tour or hike that includes transportation to and from Arequipa.

What is the best season to visit the Colca Valley?

You can visit the Colca all year round, however the best time to visit is between April and May as the rainy season is coming to an end and these are the months that show the greenery of the Colca Valley and all its landscapes.

Did you know that, if you want to make a direct connection between the city of Puno and Lake Titicaca after the Colca Canyon, you also have the option of 2 days in the Colca with transfer to Puno, perfect for not having to return to the city of Arequipa!

We can also make the connection to the city of Cusco. The city of Cusco is rich, for the amount of tourist resources that it presents, and for the history that precedes it. Among the tourist attractions found in Cusco, there are places like the Historic Centre of Cusco, which includes more than seven catholic churches of colonial origin.

How to travel from Arequipa to Cusco?

Direct travel: You can travel directly from Arequipa to Cusco. Buses leave Arequipa at 8:00pm and 8:30pm.

Travel time is approximately 9 hours.

Sacred Valley

Hidden beneath the tawny foothills of formidable hills, the beautiful Urubamba River Valley, known as the Sacred Valley.

It lies about 15km north of Cuzco as the condor flies, along a narrow road of hairpin bends.

It is well worth exploring this quiet and attractive corner of the Andes with attractive colonial towns and isolated woven villages. The star attractions are the markets and towering Inca citadels of Pisac and Ollantaytambo, but they are also packed with other Inca sites.

Its countless hiking trails are deservedly gaining in popularity. Adrenaline activities range from rafting to rock climbing.

If you wish to visit the Sacred Valley, the first thing you should do is buy the Cusco Tourist Ticket, with which you will have access to various attractions in the city and the Sacred Valley.

Main citadels in the Sacred Valley to visit:

Pisac – Pisac is located 33 kilometers from the city of Cusco (and is known as the gateway to the Sacred Valley). It is world renowned for its handicraft market and its impressive archaeological remains, located in the upper part of the town. This town is valuable for its location and fertile land. Its Inca and colonial constructions are admirable. Also, Pisac is famous for being an ideal place for spiritual retreats.

Urubamba – Urubamba is one of the most remarkable cities of the Sacred Valley of the Incas. It was born during the colony and is considered the corn capital of the world, thanks to the fact that it is watered by numerous rivers that rise in the peaks of the glacial mountains.

All this territory was appreciated by the Incas because of the fertility of its lands. It is one of the best places to relax. There you will see many foreigners who decided to leave their countries and stay there.

Ollantaytambo: is localized 97 km, in the northwest of the city of Cusco. In the Incas times, was fortress city, with temples, walls,

is located 97 kilometres northeast of the city of Cusco. During the Inca period it was a fortified city with temples, defence walls as well as urban and agricultural sectors. It is known to have served as an administrative checkpoint. It is believed to be one of the most important archaeological sites in Peru and South America.

Chinchero – Chinchero is located 28 kilometres from the city of Cusco. It is one of the highest points in the valley: 3,772 metres above sea level (12,375 ft), where the palace of the emperor Tupac Yupanqui once stood, but which was destroyed by the Spaniards.

In its place they built the colonial church of Nuestra Señora de Monserrat. This church, built in the 17th century, includes canvases of the ‘Cusco School’. The town is also famous for its handicraft market where bartering is still practised.

Maras – Maras is famous for its proximity to hundreds of salt wells that form a spectacular landscape. In Maras you can see more than 5 thousand salt extraction wells built during the Inca period. The salt mines of Maras are one of the four places in the world where pink salt can be obtained. The villagers sell this salt in the main markets of Cusco.

Moray – Moray is located 74 kilometres from the city of Cusco and is home to the famous Inca circular terraces. This set of concentric circular terraces gives the sensation of being an artificial crater. Moray was one of the main ‘agricultural research centres’ of the Inca empire. It was dedicated to the experimentation and sowing of crops from different places.

The different climates and altitudinal levels were constructed with the intention of making it possible to grow crops from the coast and jungle in cold climates.

History of the Citadel of Machu Picchu – Machupicchu

This ancient Inca city known as Machu Picchu or Machupicchu, is one of Peru’s most precious treasures. It was built in the middle of the 15th century and it is believed that it was one of the residences of the ninth Inca of the Tahuantinsuyo, Pachacutec,

(considered the great transformer of the Inca empire), although in it there are also the remains of a great Sanctuary (Sacred Place where they worshipped their diverse gods, especially the Sun God), with diverse temples such as: temple of the sun, temple of the 3 windows, temple of the Pachamama, the Inti Huatana, the royal Mausoleum, among others,

Its name means old mountain – Machu Picchu, and refers to the place where it is located, at about 2453 m.a.s.l., on a rocky premonitory between Machu Picchu and Huayna Picchu. Machu Picchu is divided into 3 sectors: agricultural sector, religious sector, urban sector.

Today, this Inca jewel is one of the country’s tourist attractions. Travellers come to (Aguas Calientes-Machupicchu village) to start the Inca trail made popular by Hiram Bingham at the beginning of the 20th century.

The historic sanctuary of Machu Picchu is considered one of the New Seven Wonders of the Modern World and was declared a World Heritage Site in 1983. Machu Picchu Peru.

Arequipa might be Peru’s next great food city

Sure, Lima is delicious. But the country’s second city serves up hearty stews, llama steaks, and pisco sours. Here’s where travelers can try them.

PREHISPANIC CHUPE SHRIMP, NATIVE POTATOES, CORN, HUATACAY, EGG from Victoria Picanteria Democratica.

In 2023, when the World’s 50 Best Restaurants list of top global dining spots was announced, the city with the most entries—including the No. 1 pick—was Lima, Perú . The culinary capital is known for pisco sour bars, ceviche spots, and Chino-Latino restaurants. But if you ask Peruvians where they’d travel for a memorable meal, many would choose the nation’s second largest city, Arequipa.

This high-altitude agricultural hub, 630 miles southeast of Lima and sprawled beneath three fertile volcanoes, has a unique mestizo gastronomy merging Indigenous and Spanish influences. Its cuisine is wholly dissimilar from that of Lima. In Arequipa, instead of ceviche, causa , and lomo saltado , you find alpaca steaks, chupe de camarones (river shrimp chowder), and ocopa   (potatoes in chile sauce).

If Limeños prize innovation, Arequipeños honor tradition. In fact, UNESCO named Arequipa a Creative City for Gastronomy in 2019 (its baroque Spanish-colonial core, built from white volcanic stones, is also a UNESCO World Heritage site ).

Many cooks in this growing city of one million people prepare dishes over open fires and grind ingredients with outsized mortars and pestles. Arequipa is also known for picanterías , traditional restaurants—typically located on the edge of town—and mostly run by women who inherit them from their mothers and grandmothers.

This explains why travelers rarely find Arequipeño cuisine in Lima—much less abroad. It’s also why this intangible cultural heritage is threatened. There were about 3,200 picanterías in Arequipa in the 1800s and 2,000 in 1900. Today, there are only about 80 left.

Here’s how to experience the city’s culinary heritage—and taste what’s next.

Arequipa’s rustic taverns

Picanterías trace their origins to the 17th century, when rustic taverns called chicherías poured chicha de güiñapo , a pre-Columbian alcoholic beverage made from fermented corn. The Spanish colonial government forced the watering holes to serve small plates, akin to Spanish tapas, to prevent customers from overindulging. To keep clients thirsty, owners spiked dishes with spicy rocoto and ají panca peppers.

By the 19th century, the snacks were more popular than the booze, so the taverns became known as picanterías .   Early on, they drew (mostly male) musicians, writers, and intellectuals. Now, people of all sorts gather around their long, communal tables. “You eat in a picantería to feel Arequipeño,” says Sergio Salas, who led Arequipa’s Creative Cities project with UNESCO. “It has a soul, an essence, and a history.”

( Where to find ceviche, pisco sours, and fusion food in Lima, Peru .)

Dishes speak to Arequipa’s location on an ancient trade route between the Pacific Coast and Amazon Basin, featuring seafood from the former, fruits from the latter, and products like quinoa, corn, potatoes, and peppers from surrounding Andean valleys. The Spaniards introduced beef, garlic, onions, lima beans, and dairy, creating mestizo dishes such as rocoto   relleno (hot peppers stuffed with beef and cheese).

Alcoholic chicha de güiñapo, served in a 1.4-liter (around six cup) glass, called el caporal   (“the chief”), still accompanies picantería dishes including traditional stews specific to each day of the week. The atmosphere continues to lean rustic—guests might sit near an outdoor pen of squealing guinea pigs, a staple meat that’s usually on the menu.

Salas says UNESCO recognition has fortified the city’s restaurant industry, which supports thousands of jobs, and accounts a significant chunk of the city’s GDP. It’s also brought the women of the picanterías into the spotlight.

Why women rule Arequipa’s restaurant scene

Female restaurateurs, known as picanteras , have kept picanterías alive. “To become a picantera was not a decision but rather an imposition,” recalls Mónica Huerta, owner of Picantería La Nueva Palomino . “You were practically obliged to take over from your mother.”

Huerta resisted joining the family business at first, knowing how tough the work was on her mother and grandmother. “Society often didn’t forgive them for being in charge of their own lives, for being economically independent from men,” she says. Even now, Huerta estimates that 90 percent of her colleagues have never married.

Yet, increasingly, picanteras are seen as symbols of female empowerment and upward mobility. “You have to be strong, intelligent, and capable of commanding a big team,” says Saida Villanueva, owner of Picantería La Cau Cau II . “A picantera innately becomes a leader in her community.”

( From a Tokyo sushi temple to a Valencia food hall, here are the best spots to eat in 2024 .)

Villanueva’s four sisters are also picanteras, but she worries that younger generations won’t continue the legacy. Huerta’s concerned, too. “Our mothers and grandmothers were conferrers of culture who, through their plates, could tell the history of our region, and of our mixed race,” Huerta says. “If this culture is not continued, we will lose a great part of the story of Arequipa.”

What’s new with food in Arequipa

One member of the younger generation who has stepped up is Roger Falcón, owner of Victoria Picantería Democrática , open since 2018. Falcón is one of just five local men who’ve followed their mothers into the business. He sees Victoria as “a picantería 2.0.” It’s located on Plaza San Francisco in Arequipa’s historic center, not on the outskirts, and serves an “anthropological menu” inspired by everything from pre-Columbian cuisine to modern trends. Falcón uses dishes and ingredients pegged to specific historical dates, like a 18th-century-style pork adobo in a vinegary chicha sauce.

The food in this city has always changed with the times, and it’s now morphing again, particularly in the historic center, with Lima-based stars (like Gastón Acurio’s Chicha ) alongside picantería-inspired restaurants ( Salon at CIRQA ), and other fusion food hotpots like Indigo and Mumis , the latter of which turns an Arequipa icon, rocoto   relleno , into rocoto pepper-infused cappelletti.

At Victoria, in addition to chicha, guests sip pisco sours blended with sancayo cactus fruit, Peruvian wines, and mojitos with medicinal Andean herbs like muña . “I think we can look toward the future, and back at traditions, at the same time,” says Falcón.   “If we don’t put picanterías harmoniously in the modern context, then they’re at risk of dying out.”
