Tuscan history speaks of agriculture and simple living, therefore dishes are based around the use of the ingredients of common people who could not afford luxuries in the kitchen – olive oil replacing lard, vegetables as a base for the soups instead of meat, chestnut flour, and so on.  Everyone will prepare genuine ingredients using ancient culinary traditions and methods, creating delicious Tuscan everything from panzanella, pappa al pomodoro, pici, lasagna, risotto,  roast pork loin, duck, tripe, to  cantuccini  and  tiramisù .

Each class is 2 to 3 hours long.  Following each cooking class, everyone dines together enjoying the foods that were prepared in the class with Signor Francesco’s Tuscan wine included.

Gaiole in Chianti

The village of Gaiole is located approximately 40 km southeast of Florence and 15 km northeast of Siena in the Chianti hills, the most famous region of Tuscany. Gaiole in Chianti, like the whole Chianti region, is famous for its wine, artisan food products, and the unique romantic beauty of its landscapes: beautifully tended vineyards and olive groves, gently rolling hills, restored Medieval villages and farmhouses and characteristic avenues of stately poplar trees. Once a market town on the road from Chianti to Valdarno, Gaiole is still a wonderful place to visit for its wine shops, osterias, and local artisan shops, and perhaps more than any other village, represents the divine Tuscan landscape visitors dream of.

Chianti Accommodations

Imagine a beautifully restored Tuscan villa nestled cozily in the Chianti hillside: this will be your home for the duration of your cooking program. Rooms and suites are marked by distinctive and charming elements; for example, one suite has a bed made completely from antique oak barrels. Floors are made of the traditional terracotta tiles, exposed stones and beams give character to the apartments and furnishings are carefully chosen to reflect the traditional Tuscan style and comfort. Each bedroom has a private bathroom (some equipped with hydromassage), mini bar, TV, air conditioning, some of which boast private living rooms, and others private terraces.

Day 1: arrival, check in, chef’s welcome dinner and wine pairing.

  • Transfer from Chianti Train Station Montevarchi to the estate.
  • Check in, then take time to relax and settle in.
  • Welcome Dinner with a full course Chef’s Tasting Menu featuring local fare and wine pairing included.

Day 2: Cooking Class 1 and Gourmet Tuscan Dinner with Wine Pairing

  • Breakfast is served.
  • Meet in the kitchen for Cooking Class 1. Tie on your aprons for your hands-on cooking class.  You will prepare a three course traditional Tuscan menu.  Following the cooking class, everyone enjoys the food that was prepared in the class with wine included.  
  • Relax in the afternoon at the property and enjoy tennis, swimming in the pool, archery, badminton, darts or biking.
  • Gourmet Tuscan Dinner with full course menu, aperitivo and wine pairing, included.

Day 3: Cooking Class 2 and Traditional Tuscan Dinner with Wine Pairing

  • Time free to relax or walk through the property and hills or relax by the pool.

Day 4: Vineyard Tour and Vertical Wine Tour, and Wine Therapy Spa Relax

  • Meet your host for a tour of the vineyard set in the hills of Chianti.  Tour the vineyard, learn about producing the grapes,  wine making, bottling.  Following the tour, you will enjoy a Vertical Wine Tasting, included
  • Later in the afternoon, enjoy a Wine Therapy Spa Relax, a 50 minutes wine bath in private Jacuzzi.
  • Enjoy dinner on your own at the property or suggestions provided nearby restaurant options.

Day 5: Departure

  • Check out and transfer from the estate to the Chianti Train Station Montevarchi.

The myriad of tiny towns you've never heard of, vineyards, hills, and networks of highways to cross en route to your destination are the region's entire charm, but also are what makes it so complicated to navigate. However, a great hotel (and accommodating concierge) can help smooth out the process—which is why we've rounded up Condé Nast Traveler's highest regarded Tuscany hotels. Read on for 11 of the best hotels in Tuscany.

It’s been eons since a new hotel graced Porto Ercole, a chic but discreet village on the Monte Argentario peninsula that’s home to Caravaggio’s tomb. The newcomer creating ripples on this part of the rock-strewn Maremma coastline is petite La Roqqa, a cliffside retreat whose distinctive coral-orange façade and secluded views of the Tyrrhenian Sea provide a forward-looking alternative to Hotel Il Pellicano, the area’s sine qua non grande dame since 1965. In the 55 rooms and suites, floor-to-ceiling windows let sunshine flood onto walls of sage green or Terra di Siena orange, which pop against crisp white bed linen. Designers Palomba Serafini, Milanese masters of uncluttered contemporary chic, have mixed midcentury pieces and Gaetano Pesce’s iconic Up chairs with ultramodern features, including an eye-catching white central staircase spiraling from the entrance. On the alfresco rooftop, Ferragamo-clad locals sip Negronis gilded by sunset rays in view of the 16th-century Forte Stella and harbor yachts below. Aperitivo hour turns into dinner at the outdoor Scirocco restaurant, where chef Francesco Ferretti knocks up fresh sea bass and other local seafood capped with Venetian grappa. Days spent lounging at the hotel’s smart Isolotto Beach Club are broken up by lunches of avocado and tuna salads paired with a local white. The more casual restaurant, Pelligrill, is considered a classic with the yacht crowd and overlooks the pool and ocean, perfect for sunset; while the 2023 Michelin-starred Restaurant Il Pellicano earned accolades for its creative uses of ingredients from land and sea including pigeon, lobster, and shrimp.

Before they purchased it, the 15th century property was full of historic frescoes—the owners proceeded to hire a restorer who had worked on the Sistine Chapel to make it their own. A cozy breakfast is served to guests in the communal kitchen, featuring fresh apricot jam; and the rooms are works of art, with walls whose historic layers of paint have been scraped into designs.

The location: Montalcino, a hilltop town famed for its production of Brunello di Montalcino wine, made from the town's sangiovese grosso grapes—it's an hour and a half by car from Florence and 45 minutes by car from Siena

We've already listed the terrific amenities—which, yes, include truffle hunting—but if you need more information on Rosewood Castiglion del Bosco, we'll go on. This Tuscan estate is on 5,000 acres and has 42 suites and 11 villas. Travel reporter and Condé Nast Traveler contributor Laura Itzkowitz —who lived in Rome previously and writes often about Italy—describes the bedrooms as “lavish” in her hotel review for the magazine:

“If money were no object,” she writes, “I would check into one of the sumptuous villas and never leave. Each one comes with a private heated pool, though some feature woodburning pizza ovens, a home theater, or tennis court.”

Here's how contributor Sophie Goodwin describes it in her first-person Condé Nast Traveler hotel review: “Ingredients are fresh from the vegetable garden, eggs straight from the chicken coop, and cakes and bread baked every morning. Breakfast is slices of Pecorino with bread, eggs with sunny orange yolks, and strong Italian coffee. Wild boar is breaded and served with a dollop of olive-oily-aioli, the al-dente spaghetti comes with fresh tomato.”

Set within the beautiful hilltop town of Cortona, the hotel offers spectacular views across the Val di Chiana in the heart of Tuscany. An intimate, fairly remote Tuscan getaway, this hotel takes some research to track down. Once there, you'll find everyone from honeymooners to Italian adventure-seekers inspired by Under The Tuscan Sun to retired couples enjoying la dolce vita.” If that isn't inspiring enough, the details she reports—including the two tiny dogs who run around the property, the Tuesday and Thursday chef-hosted dinner parties, and the honesty bar by the pool—really seal the deal.

This dreamy farmhouse-style 16-room boutique hotel emulates the Tuscan experience to a tee. Guests enter a secluded tangle of ivy, rose gardens, stone walls, and wood beams, the stuff of Italian storybooks. The rooms and the dining program alike are top-tier. Bedrooms are full of antiques and rain showers, while the food offered includes fresh ingredients from the on-site garden and olive oil made on-property. The food was the favorite part for reviewer, Bridget Arsenault again, who also highly recommends the bookable cooking class:

“There's daily lunch (poolside or in the whimsical garden) and you can order drinks throughout the day,” she writes. “Dinner is an otherworldly affair. You can also book an on-site cooking class and learn to make Tuscan classics like ribollita and pappa al pomodoro, fresh pastas with ragu, and tiramisu.”

She also reports a romantic vibe, and says that you'll find plenty of honeymooners and couples here.

The tasting of more than 130 top Italian wineries helped kick off the Vinitaly trade fair

Some of Italy’s most amazing wines flowed freely in Verona on April 13 at the 13th edition of OperaWine. The gala tasting spotlighted 131 of Italy’s top names in wine. Created by Wine Spectator in partnership with Vinitaly and Veronafiere, OperaWine has become the unofficial kickoff to Vinitaly, Italy’s largest wine trade fair.

“OperaWine—it’s an institution now. It’s how we start Vinitaly,” said Filippo Mazzei, managing director and co-owner of Mazzei wines, which includes Castello di Fonterutoli and Belguardo estates in Tuscany and Zisola in Sicily. “And of course, for each of us, it’s a show representing what we are doing now.”

 Nearly 1900 wine lovers filled the hall of the Gallerie Mercatali at OperaWine.

Nearly 1,900 people attended the invite-only tasting, held in the spacious Gallerie Mercatali. The crowd included international journalists, sommeliers, wine experts and educators.

“One of our favorite ways to highlight Italian wine each year is at OperaWine, with the tasting of ‘Finest Italian Wines,’” said Wine Spectator senior editor Bruce Sanderson. “The first edition was 2012, and more than a decade later we’ve expanded the tasting from 100 to 130 producers, showcasing the breadth and diversity of high quality Italian wine.” Wineries from all 20 Italian regions poured at the event, selected by Wine Spectator senior editors.

Italy’s Diverse Wine Scene Is the Big Draw

While guests could find top examples of Brunello and Barolo, Soave and Fiano, the wines also represented Italy’s incredible diversity of grapes, regions and styles, from a Sicilian blend of Nero d'Avola and Perricone to Sagrantino from Umbria to a Tintilia from Molise.

The latter was Catabbo’s Tintilia in Anfora, fermented in clay vats. “Our Tintilia in Anfora has attracted the attention of many importers and many, many curious wine lovers,” said Sara Catabbo of Cantine Catabbo. “Maybe for the novelty of the grape or maybe for the use of the amphora. I don't know! Fact is that it was a great success!”

This year’s OperaWine put an additional focus on Sicily , a reflection of the ongoing importance of these wines in the U.S. market as well as the synergy displayed by the region’s producers as they continually strive for greater quality. In total, 16 Sicilian wineries poured at the 2024 tasting, including 11 who had attended before. The five newcomers included estates owned by producers with historic wineries in Piedmont or Tuscany who saw potential in Sicily and found success investing there two or three decades ago.

“We might not have planned to show a Sicilian wine [at OperaWine],” said Mazzei, who usually pours a gran selezione Chianti Classico from his family’s Castello di Fonterutoli estate. “But then we were very happy. It was good and interesting communication [about Sicily.]”

Vinitaly Continues to Grow

At the Vinitaly wine fair, which took place during the four days following OperaWine, approximately 4,600 exhibitors welcomed more than 130,000 visitors from around the world. But for those lucky enough to attend, OperaWine was a highlight.

“It was a great and beautiful impression,” said Isidoro Vajra, winemaker and co-owner of G.D. Vajra in Piedmont alongside his siblings, Giuseppe and Francesca. “When I came back home [from OperaWine], I said to all of my family, ‘If VinItaly is like OperaWine, we will be so happy.’”
