Essential Ingredients to Pack for Road Trip Breakfasts

Remember, a great road trip breakfast doesn’t just happen; it requires a bit of planning . If you want to minimize gas station or fast food, and save money, bringing some of your own food is a good idea.

Especially if you or your loved ones have dietary restrictions.  Which is where a holiday meal plan comes. in.

You can replenish your supplies at a local grocery store along the way. Just be sure to bring your own water bottles, ice packs , extra air tight containers and a cooler.

With these basics in mind, you’ll be well on your way to starting each day of your family road trip adventure on a deliciously high note!

So, here are the essential ingredients to pack :

  • Protein-packed foods : Think about hard-boiled eggs, nut butters, protein bars, or even a pack of almonds. These will keep you feeling full and focused.
  • Fruits: Apples, oranges, and berries travel well and can be eaten as is. Plus, they give you a boost of essential vitamins.
  • Breads and Grains : Whole grain bread, wraps, or bagels are perfect for making quick sandwiches. Granola or muesli can also be a healthy, convenient breakfast option.
  • Dairy or Dairy Alternatives: Single-serving yogurts or cheeses are excellent sources of protein. If you’re plant-based, there are plenty of dairy-alternative options like almond or soy yogurts.
  • Drinks: Don’t forget your beverages! Pre-made smoothies, bottled water, and travel-sized coffee or tea can help keep you hydrated and caffeinated.
  • Snacks: Healthy snacks like popcorn, trail mix, or homemade energy balls can come in handy for quick breakfasts on the go, or  those moments in between meals.

But let’s get practical. When packing for your long road trip, you’ll want to consider foods that are portable and easy to eat on-the-go.

And if you have kids, not overly messy. I know…..it’s not always easy, and I’ve learned to just expect a bit (ALOT) of crumbs in the car on our road trips with kids.

Easy Breakfast Ideas for Hotel Rooms

  • Pinterest 929
  • Facebook 122

Plan one or two of these easy breakfast ideas for hotel rooms to help your family save money on your upcoming vacation. Grocery items to order or breakfasts to pack from home, either way you’ll start your day well.

A photo collage shows a sample of easy recipes that make great breakfast ideas for hotel rooms.

There’s a big difference between our current family vacations and the adult romantic getaways we used to take. One of them is definitely breakfast.

Where my husband and I used to enjoy a leisurely hotel breakfast off the lobby to start our day or expensive room service if we were feeling lazy, once we had kids breakfast became a more practical concern for both our budget and the timing of our day.

Especially when we travel to Disney, breakfast is not something I want to “waste” any time on and it isn’t a high priority for the family budget. We’re much more interested in eating well and eating quickly so we can hustle the kids out the door and onto the real fun.

After several road trips to Orlando and our annual road trips to the beach, I’ve learned several fantastic easy breakfast ideas for eating in our hotel and they are always top of my list of what to pack for a hotel room !

Why Make Your Own Breakfast in the Hotel?

Buy from the local grocery store, easy breakfast ideas to pack from home.

  • Supplies You’ll Need

More Easy Ways to Eat on Vacation

There are many reasons you may wish to plan your own breakfast at the hotel:

  • Your hotel doesn’t have onsite breakfast service
  • The breakfast they serve is super expensive for your family budget
  • The food they offer is unappealing
  • You want to save time eating so you can get to the real fun of your vacation
  • You want to have healthier options to choose from
  • Your kids are picky eaters and you need to start the day right
  • You prefer to wake up slowly and want a quiet breakfast

Whatever your reasons are, with a little bit of forethought, you can have a totally vacation-ready breakfast right in your own hotel room.

If you’re traveling by plane or you just simply do not have room in your car to squeeze one more thing, you might want to make time to stop at the local grocery store for some easy breakfast supplies.

Many areas have drive-thru pick up or delivery for grocery orders. Check with the grocery store web site before you go and if they don’t have it available, check Instacart.

Easy things you can buy from the local grocery for breakfast include:

  • Milk and Cereal: One container of each and you’re ready to go for several days!
  • Yogurt and Fresh Fruit: Easier to customize for just how much you’ll need.
  • Protein Bars, Cereal Bars, or Granola Bars: Great for keeping on hand for snacks, too.
  • Hardboiled Eggs: You can often find these ready to go in the fridge section.
  • Fresh Raw Veggies with Dip: A bag of baby carrots and a container of cherry tomatoes to enjoy with your eggs add some fiber to the meal. You could add a container of hummus or peanut butter to go with celery.
  • Cream Cheese and Bagels: A tub of flavored cream cheese and a package of store-bought bagels is a very portable breakfast to grab.
  • Bakery Muffins or Coffee Cake: You are on vacation, after all. A package of muffins from the store is likely to be a lot more budget-friendly and tastier than what you mind find in the hotel’s continental breakfast.
  • English Muffins and Freezer Sausages: Make your own breakfast sandwiches with sausage patties you can microwave.
  • Frozen Pancakes: Even if your hotel does not have a toaster, most come with a microwave. Pancakes work much better than toaster waffles for a hotel breakfast. Add syrup or jam or a spread of Nutella on top with fresh strawberries.
  • Bottled Smoothies: You may be able to find smoothie cubes in the freezer section or prepared smoothies in the yogurt section.

If you're heading out on a road trip with the kids, it is really easy to prep these easy breakfast recipes ahead of time and just pack them in a tote bag or cooler as needed.

You can pop them right into the hotel's kitchenette or mini fridge if you want to keep them cold.

easy travel breakfast

Strawberry Mango Salsa

Prewash and chop fresh strawberries and mango and use this salsa to top yogurt or serve on the side alongside a breakfast pastry. This helps ensure you don't need a knife in the supply bag.

Supplies You’ll Need

Once you’ve picked out your breakfast recipes and have a plan, don’t forget to stock up on a few items that will make eating breakfast in your hotel room so much more comfortable:

  • Dishes: Either bring reusable dishes from home or stock up on some paper plates and/or bowls depending on your items. We love to use paper bowls with the kids even when we’re serving something like muffins because they do a better job of catching crumbs and keeping the hotel room clean.
  • Napkins: Reusable or paper, you won’t find much that helps stocked in a hotel room. For road trips, I like to pack a roll of paper towel with the smaller portioned squares.
  • Utensils: Reusable or disposable. Forks and spoons come in the most handy.
  • Cups: Reusable or disposable. These can work for drinking or for serving some foods more easily. You can eat cereal and milk or yogurt and fruit out of a cup and that will save you from buying bowls.

Trying to save money on your family trip? Don’t miss these other budget-friendly ways to save money on your food expenses:

Saving money on food when traveling

Two ways that we try to save money on road trips is by looking for accommodations that offer free breakfast and also packing our own breakfast, lunch, and snacks to eat on the road instead of stopping for fast food. Not only does eating our own food cost less, it is also more nutritious than fast food.

Read more: Save money on food when traveling

Travel breakfasts can be a little tricky, but it is totally doable to still eat a good breakfast on the road if you have portable easy recipes as well as a way to pack and re-heat if necessary.

Packing and re-heating breakfast foods

I like to pack a variety of make ahead options, no cook breakfasts, fresh food, and food that requires refrigeration.

easy travel breakfast

When re-heating one of the make-ahead foods, I have had a lot of luck with the Hot Logic Portable Oven .

easy travel breakfast

When we went to Florida last year, I made egg casserole the night before, cut it into squares, and packed it in a container in our cooler. We hit the road at 4am when we weren't ready to eat. Then about an hour before we were ready for breakfast, I put it in the hot logic and an hour later we had a hot breakfast. It worked great!

Don't skip the most important meal of the day even on the road! Here are my favorite road trip breakfast ideas to spark some creativity for your next travel adventure.

Make-ahead options

Oatmeal muffins in a muffin tray

Oatmeal muffins

Muffins are a great option for the road because they require no refrigeration or heating. They are an excellent portable food and one that I make every single vacation.

Granola spilled on parchment paper

This granola is a favorite at my house. Kids love to snack on it on its own but it is also excellent on top of yogurt or even in milk. The best part is that it can be kept at room temperature.

brown eggs in a cardboard carton

Hard-boiled eggs

Make a big batch of hard boiled eggs the day before leaving. Then you have portable protein at your fingertips, no re-heating required.

easy travel breakfast

3-ingredient peanut butter oatmeal balls

These are easy to make and don't require refrigeration. They are also a kid favorite and contain a mix of carbs, protein, and healthy fat.

Stuffed biscuits

Stuffed biscuit muffins

If you like a savory hearty breakfast but prefer a portable form, try these stuffed biscuit muffins. Biscuits are rolled out, stuffed with scrambled eggs, bacon and cheese, and then folded up and baked in a muffin tin. So delicious!

breakfast sandwiches

Make-ahead breakfast sandwiches via Tastes Better from Scratch

You can customize these in so many different ways. Add vegetables, change the meat, use mini bagels, switch the cheese, and more. It's the perfect portable breakfast.

Breakfast casserole. A great make ahead breakfast.

Egg casserole

This egg casserole is my go-to breakfast for any occasion. After baking, cut into squares for individual portions. Can be eaten hot or cold. I prefer reheated.

Baked apple oatmeal

Baked oatmeal

Baked oatmeal is great for the road. Cut into squares for individual servings after baking and reheat or eat cold. I prefer reheating.

sausage balls in a paper towel lined basket surrounded by a red and white plaid towel

Sausage balls

Another great portable protein, these sausage balls without Bisquick are delicious and fun to eat!

breakfast burritos

Breakfast burritos

Scramble eggs and fill a tortilla with any toppings of your choice. Cheese, sausage or bacon, peppers, onions, salsa, hot sauce, etc. Roll your burritos and wrap them in parchment paper and then foil. If reheating in the microwave, first remove the foil.

overnight oats in four varieties

Overnight oats via Feel Good Foodie

The night before, everyone can customize their own overnight oats, refrigerate, and then enjoy them the next morning on the road for breakfast. Try one of these fun varieties.

chocolate chia seed pudding in glass jars

Chocolate chia pudding via Minimalist Baker

These little puddings made from chia seeds are so easy to whip up the night before to grab and go for the road the next day. Plus they are a chocolatey treat! Win!

If you are in a hurry and don't want to cook at all, stop by the grocery store and pick up some easy breakfast ideas that don't require any cooking at all.

  • English muffins with peanut butter
  • English muffins with avocado
  • bagels topped with cream cheese, ham, or smoked salmon
  • store-bought hard boiled eggs
  • peanut butter or almond butter and apples or rice cakes
  • yogurt with fruit and store bought granola: I find pre-portioning at home in small plastic containers or small mason jars is easier than doing this on the road. Another alternative is store-bought individual yogurt cups and adding fruit on top.
  • fresh fruit: Fresh berries, bananas, apples, oranges, and grapes all make great travel food.
  • applesauce cups or pouches
  • beef sticks
  • string cheese
  • nuts and seeds/trail mix: almonds, cashews, peanuts, pumpkin seeds, sunflower seeds, chocolate chips, coconut chips, raisins, etc.

  • cottage cheese with fruit: Pre-portion ahead of time in individual containers.
  • store bought breakfast bars

Easy Healthy Breakfast Ideas when Traveling

Breakfast is the most important meal of the day. However, with ever-evolving world, our eating habits also change almost at lightning speed. While some people take time to enjoy their breakfasts every morning, others tend to skip them altogether. Despite all controversial and anodyne opinions, I believe that healthy breakfast sets you up for the day especially when traveling.

Green smoothies, juices and fresh fruits and berries are usual components of our healthy breakfast at home in sunny California. Moreover, from time to time we like to try different kinds of acai bowl in Los Angeles . On the road though, it’s not always easy to find these breakfast options. Additionally, colder weather affects our healthy breakfast choices when traveling and asks for hearty food. So, when Western Europe was melting from heat this summer, Eastern Europe was far from ideal summer temperatures. And thus, instead of light summer breakfasts, warm porridges often appeared on our breakfast table. With that being said, here are some of our healthy breakfast alternatives when traveling.

EASY HEALTHY BREAKFAST IDEAS WHEN TRAVELING:

Oatmeal porridge.

Oatmeal porridge is one of our easiest and favorite breakfast options when traveling. It’s hearty, delicious and gives you energy for a long time. It takes a few minutes to cook oatmeal. Add to it soaked chia seeds or hemp seeds, fresh berries or raisin and a spoon of your favorite nut butter. Voila, your healthy breakfast when traveling is ready. When you don’t have a stove, make overnight oatmeal instead.

Chia Pudding

Chia pudding can serve you well as healthy breakfast not only when traveling but at home as well. On top of that, it asks for no more than a few minutes of your time. Soak chia seeds in almond milk or any other milk of your choice and let it sit in refrigerator until morning. When ready to eat, add some fresh fruits or berries and enjoy. It’s certainly one of the easiest, healthiest and delicious breakfast options when traveling that doesn’t raise your blood sugar level.

Easy Healthy Breakfast Ideas when Traveling - roadsanddestinations.com

Avocado Toast

For those travelers who prefer the fastest breakfast possible, avocado toast is undoubtedly a winner. Just slice bread, spread mashed avocado over it, add some salt and pepper and enjoy your hearty healthy breakfast.

Millet Porridge

Millet porridge is a great substitute for all-too-familiar oatmeal breakfast. Cook soaked overnight millet (for better digestion and faster cooking) with plant milk and some cinnamon for about 10 – 15 minutes. Once ready, add some flesh or dried fruits, berries, nuts or even dark chocolate.

Breakfast Quinoa

For this healthy breakfast you can stash a small bag of quinoa in your traveling bag if grocery shopping is not your favorite pastime. In the morning cook quinoa with coconut milk or water, top with fruits, cinnamon, nuts or seeds. Optionally, you can add extra milk on top and indulge in your easy healthy breakfast on the road.

Flaxseed “Oatmeal”

Flaxseed is one of best foods for beautiful skin. It also one of the best options for a healthy breakfast when traveling for a long time and having access to blender. The ease of preparing this breakfast also speaks for itself. All it takes a few spoons of soaked overnight flaxseeds, a couple of apples, pinch of cinnamon and a little bit of water to blend. Serve and enjoy.

Why Do This

Ingredients to Keep on Hand

The following are some basic ingrdients to stock as well as some ideas what to do with each. Be sure to scroll down for our favorite make-ahead breakfast recipes.

one half of a breakfast burrito leaning on the other half with cup of pico nearby.

eggs – Even though eggs have gone up in price, they’re still affordable compared to other proteins and they cook up so easily. They are a great make ahead breakfast when you prep them into  hard cooked eggs , breakfast casserole, quiches, egg muffins, and  bite-sized frittata .

oats – High on my Budget Grocery List , oats are a fantastic player for breakfast. Make them into homemade granola, baked oatmeal, or overnight oats. You can even cook a batch of slow cooker steel cut oats and freeze them in single servings.

breakfast meats – Typically you might see bacon, ham, sausage at breakfast, but don’t rule out sausage balls, salami, or sliced turkey to include in breakfast bento boxes. Remember you can freeze ham you might have leftover from the holidays and work it into breakfasts.

yogurt – Yogurt is great to keep on hand for smoothies,  yogurt parfaits , and plain eating. It’s also a great way to add protein to baked goods. Sub instead of buttermilk. For best value, buy the bulk tub; there are so many ways to dress up plain yogurt .

fresh fruit – There are so many great ways to serve “nature’s candy” with breakfast. Apple slices with a nut or seed butter, fruit kabobs, fruit salad, pre-cut  grapefruit sections ,  apple compote  or applesauce are all good options.

overnight oats with water and berries in clear container on checked cloth.

protein powder – This is a great item to keep on hand for quick protein. You can include it in smoothies, overnight oats, and baked goods.

baking ingredients – With flour, sugar, and a few other key ingredients, you can bake up all kinds of make ahead breakfasts, including  scones ,  breakfast cookies ,  muffins ,  banana bread , waffles, pancakes, breakfast, coffee cake , cinnamon rolls, donuts, and energy bars. All of these can be baked, cooled, and frozen.

oats – Oats are a key breakfast ingredient! There are so many great oat recipes for you to try for your morning meal.

breads – Sandwich bread, english muffins, baguette, and bagels are all great to keep on hand. Make breakfast sandwiches, French toast casserole, or Bagel boxes .

vegetables – Potatoes, sweet potatoes, spinach, muchrooms, and onions are all great to include in your savory breakfast dishes. Making a sweet potato hash at the beginning of the week is a great make-ahead breakfast idea.

cheese – Cream cheese, especially Flavored Cream Cheese or Sweet Cream Cheese is a breakfast staple, but don’t forget cheddar or Swiss to add to egg casseroles or breakfast sandwiches.

sauces and spreads – Peanut butter, butter, jam, honey, maple syrup, and Nutella are all fun toppings to add to your sweet breakfast items.

Check out our Pancakes Recipes for more make-ahead tips.

Anything that you can make in advance as well as make in bulk is a good option for feeding a large group. Think about bulk batches of egg casserole, sweet french toast that can be reheated in the oven, or even a pancake breakfast cooked on several large electric griddles.

Foods that can be eaten out of hand are ideal for travel breakfasts. Things such as muffins, breakfast sandwiches, quick breads, and breakfast bento boxes all work well.

You can do make ahead eggs. Just be sure not to overcook them as they will cook further on reheat. This is a great meal prep to get a start on the day.

We do alot of breakfast burritos, banana and pumpkin bread and muffins. There are almost always cheese sticks, hard boiled eggs, single serve applesauce cups, yogurt in the fridge and bananas and or cantaloupe. There is always cereal, oatmeal packets and crackers in the pantry. The older grandsons think it’s great.

This easy fruit smoothie recipe calls for just three ingredients: yogurt, fruit juice and frozen fruit. Mix up your fruit combinations from day to day for a healthy breakfast or snack that never gets boring.

Broccoli & Cheese Omelet

This bright-green omelet is a perfect way to get kids to eat their veggies. Finely chopping the broccoli and spinach not only helps them cook faster, but also makes them easier--and safer--for toddlers to eat. Have all your ingredients ready next to the stove because this omelet cooks up fast. Read more about the story behind this omelet:  Cooking with Juliet .

Anti-Inflammatory Breakfast Smoothie

This mango green smoothie gets bright tart flavor from frozen passion fruit, and inflammation-fighting benefits from fresh kale. Dates add natural sweetness without added sugar. While cilantro may not be a typical smoothie ingredient, we love the herbal notes it adds to this smoothie. Feel free to leave it out if that's not your thing—it's just as delicious without.

Breakfast Naan Pizza

Give your morning eggs a tasty spin by building an easy individual pizza on a prepared naan.

Chocolate-Peanut Butter Protein Shake

This creamy high-protein shake will keep you satisfied for hours and tastes like a chocolate-peanut butter banana milkshake. You don't even need to add protein powder, thanks to the naturally occurring protein in the soymilk, Greek yogurt and peanut butter.

Scrambled Egg with Tofu

Even when you are cooking for one, it's worth taking a few minutes to make a hot, protein-rich breakfast. By stretching an egg with a little tofu, you reduce the cholesterol and saturated fat. Try tucking it into a whole-wheat pita pocket for a simple and satisfying breakfast sandwich-and a healthful alternative to fast-food fare.

Rice Cakes with Peanut Butter

Top multigrain rice cakes with creamy peanut butter for a nutritious snack with protein and fiber to keep you feeling full.

Best Breakfast Foods To Eat When You're Traveling, And Why It Matters

On Assignment For HuffPost

easy travel breakfast

Spring is here, which means we’re coming out of hibernation mode to soak up the sun and maybe take some warm-weather trips. If there’s ever a time for culinary indulgence, it’s vacation. After all, what good is visiting a new place if you can’t appreciate the local cuisine?

But when your stomach starts to hurt and you feel tired all the time because you’re eating too much heavy, sugar-filled food, it can start to cramp your vacation style.

An easy solution to this common travel problem may be to eat a healthy breakfast.

“Prioritizing a good breakfast while on vacation can set your whole day up for success in terms of blood sugar management, and fuel you up for adventures and exploring,” explained Maggie Michalczyk, a registered dietitian and founder of Once Upon a Pumpkin .

A balanced breakfast that contains protein and fiber will ensure that you don’t experience a huge blood sugar spike, and that you’ll feel fueled up until lunchtime, Michalczyk said. It could also encourage you to make healthier food choices throughout the day, since you won’t have to deal with a blood sugar surge that leaves you craving even more sugar and unhealthy fats.

“With a little pre-planning or a simple game plan, I think there are some easy options that you can bring with you or look for at airport kiosks or stores to help build a healthy travel breakfast that can help ensure you’re feeling good on vacation,” Michalczyk said.

From pre-planned breakfasts that are easy to assemble in your hotel room or Airbnb to options at chain restaurants, here are the best breakfasts to eat on vacation that won’t spike your blood sugar.

Starbucks egg white bites or oatmeal

For better or worse, there are very few towns or cities that don’t have a Starbucks. And fortunately, Starbucks has some excellent healthy (and delicious!) breakfast options.

“I’m a big fan of their fluffy egg bites, as they’re a good source of protein and contain veggies,” Michalczyk said. “I like Starbucks oatmeal, too, because their oats are a good source of fiber. I would ask them to hold the brown sugar on the oatmeal or ask for it on the side so you can control the amount of sugar added.”

Whether you get it at Starbucks or Panera, oatmeal is a great item to order that you can customize to suit your health needs.

Head to the breakfast buffet

Yes, really! If you’re staying at a hotel, there are usually some solid options at the breakfast buffet that will leave you feeling full and energized. “ Make sure your breakfast contains a source of fiber (fruit, veggies, oats or whole-grain toast), protein (eggs, yogurt or scrambled tofu) and healthy fats (avocado, nuts or seeds),” suggested Jenn LaVardera, a registered dietitian and nutritionist for Daily Harvest.

If you have a toaster in your Airbnb or hotel room, avocado toast can be a great option. “Avocado is a good source of healthy fats that increase satiety,” Michalczyk said. “Grab whole-grain bread if available, as it contains more fiber, and top it with an egg if you can for more protein.”

Panera oatmeal

If you’re vacationing somewhere with a Panera outlet, take advantage of the oatmeal. “Oatmeal is a great breakfast starter, but it can be boring if you don’t spice it up. Panera has a tasty cinnamon-spiced steel-cut oatmeal with strawberries and pecans,” said Kim Rose, a registered dietitian with Lose It! “To accentuate the flavor profile even more, sprinkle on a touch of cardamom. Cardamom pairs well with cinnamon, rendering a warm, citrusy flavor that’s pleasing to the tastebuds.”

Overnight oats

All you need for this easy travel breakfast is a fridge, since you can assemble the ingredients ahead of time. “Protein-packed overnight oatmeal is a great option,” Abby Grimm, registered dietitian for FWDFuel , said . “Combine rolled oats, your favorite protein powder, eight ounces of almond milk, almond butter, and chia seeds, and mix together.”

Hard-boiled eggs

A smelly option, sure, but you can pre-boil some eggs and keep them in the fridge of your hotel or Airbnb, then grab a few for breakfast every day. “Eggs contain high-quality protein at 6 grams of protein per egg,” Michalczyk said. “I’ve also seen them pre-packaged at some airport kiosks.”

Find a local cafe

Often, the breakfast options at a cafe will be healthier than what’s available at chain restaurants — and less expensive. “Exploring coffee shops is the way to go when you’re out and about,” Rose said. “You can enjoy their unique culinary expertise and still indulge in your favorite breakfast dishes while making healthy choices. For example, seasonal fruit, egg white or veggie omelets, and any type of herbal, spiced or green tea are nutritious and delicious additions.”

Bring a few packets of oatmeal

Michalczyk noted that packets of plain oatmeal are great to have on hand “because you can quickly make them with just water in your room and can almost always find a piece of fruit at the airport and nuts to add on top for a balanced breakfast.”

As the saying goes, breakfast is the most important meal of the day — and making an effort to start your day on a healthy note might just make your vacation.

We’ve challenged ourselves to come up with the easiest dishes to prepare on a trip. You’ll love these no-cook meals for traveling!

easy travel breakfast

Let’s be real … nobody wants to cook on their vacation. However, it isn’t economical to eat out every meal, and if you are off the grid camping, then you can’t anyway. Luckily, there are lots of great no-cook meals for traveling out there! They might take a bit of preparation beforehand, and you’ll definitely need a cooler or refrigerator of some sort, but it can be done!

While the options for minimal-cook or prepare-before-hand meals are endless, we are going to challenge ourselves today. For this guide, we will only use only recipes that you need absolutely no heat source for, once you’re on the road.  That’s not to say, you couldn’t modify some of them to make even better meals cooked over a campfire or stove—like s’mores!

No-Cook Breakfast Meals for Traveling

Breakfast is the most important meal of the day right? It certainly is if you plan on taking a long hike or spending the day in one of the blazing hot national parks of the Western United States. While packaged doughnuts are totally an option, let’s what else we can find!

1. Overnight Oats

Overnight oats are a simple and nutritious way to start the day. All you need is something to keep them cold. There are a million ways to make overnight oats.  Most recipes call for milk of some sort, your favorite nut butter, and then embellishments. For a banana bread flavor, try oats, almond butter, milk, cinnamon, and maple syrup. Mix, and allow to sit in the refrigerator or cooler overnight. You want your mixture to be fluid and runny, as the oats will absorb the milk overnight. Add cut bananas in the morning and enjoy! Many people choose to add flax seeds, yogurt, or chia seeds for extra protein. There’s no wrong way to do it, whatever ingredients you have on hand will do!

2. Peanut Butter Protein Balls

Chilled peanut butter balls are not only an amazing-tasting snack but they’re also packed with protein and all the sugar you need for a long hike. You can make them before you leave the house, and just throw them in the cooler. Five easy ingredients of chocolate chips, ground flaxseed, peanut butter or other nut butter, honey, and oats are all it takes for this perfect camping trip power breakfast.

3. British Bean Bites

Sounds weird to Americans, but the brits eat cold beans and bread for breakfast all the time. Open a can of baked beans and served atop crunchy french or focaccia bread! The British version would be more akin to Showboat Pork and Beans than saucy baked beans. They’re usually in a thin, tomato sauce, not a sweet, thick BBQ sauce.

4. Yogurt Parfaits

Low-sugar yogurt is packed with healthy protein. Add a little granola and fresh fruit for a complete breakfast. We love this one because the ingredients are available at pretty much any grocery store and can be used for other quick meals as well. A large can of rolled oats and a big tub of original Greek yogurt should be on everyone’s packing list for a road trip or camping trip.

5. Boiled Eggs

This is the one cheater on the list. You’ll have to cook them before you leave, but boiled eggs are valuable to have around. You can at them on their own, or use them in several of the recipes on our list. Boil a batch of 12 before you leave the house, and they will keep for a few days in the cooler. Eggs will keep you full for a while, have healthy protein, and pack easily. Just peel and eat! Plus, you can use them for several of the other recipes on our list.

6. Bagels and Cream Cheese

Don’t know about you, but there’s nothing much better than an “everything bagel.” Pack a brick of cream cheese or goat cheese in your cooler, and you are good to go. You can top with blueberries for some extra anti-oxidants, or sprinkle with un-salted sunflower seeds for a little extra belly-filling protein.

7. Banana and Peanut Butter

It’s simple, but it’s effective. Just beware with this one if you are sensitive to sugars. Bananas are a high sugar item, so you might consider pairing them with organic nut butter with no extra sugar added. Add a glass of your favorite milk, and you are good to go!

Better yet …

8. Banana Cereal

Nope, we don’t mean put bananas on your cereal, we mean make banana cereal. This was grandma’s specialty. We loved it, and your kids will love it, assuming they like bananas. Cut up the banana in thin slices, sprinkle with a bit of cinnamon and douse in milk. Eat up!

9. Avocado toast

There’s nothing you can’t do with the superfood avocado. Breakfast, lunch, or dinner, it will show up everywhere on this list. It’s easy to pack, easy to find in most stores, and works to eat by itself, as a garnish, or as a spread or dip. It truly is a superfood. Since you likely won’t have a toaster, and it’s not as good on untoasted bread, consider grabbing some English muffins from the store. Mash your avocado a bit, making it soft. Spread over your muffin. Shred some of your boiled egg over the top and add a few diced tomatoes or spicy salsa … breakfast of champs!

10. Muffins

One of our favorite road trip treats is Otis Spunkmeyer Chocolate Chocolate Chip muffins. There is just something about them that screams wreckless vacation abandon!

11. Chia Pudding

Like overnight oats, chia pudding can be made beforehand and kept in the refrigerator. A good chia pudding base only needs 3 ingredients: Chia seeds, milk, and something sweet. For a little extra flair, combine chia seeds, your favorite milk, pureed strawberries, or another berry, and a bit of yogurt. Let it sit in the fridge overnight, and the chia seeds will suck up all the liquid, expand, and turn into a kind of gelatinous pudding. Top with almonds and coconut shreds or cacao nibs for the perfect treat! Add a bit of honey if you need some sweetness.

12. Just be gross, you’re on vacation

When all else fails, Poptarts are tasty. It’s not ideal on the health front, but there is no shame in having some easy, premade stuff on your vacation. While you certainly don’t want to eat 5 Little Debbies a day (well, you might want to, but you probably shouldn’t) it never hurts to have one. There’s nothing better to celebrate conquering that beast of a hike than a Cosmic Brownie. You earned it. If you are absolutely against big-brand packaged foods and all their harmful grossness, there are some stellar organic options out there for granola bars, breakfast bars, and even brownies.

No-Cook Lunchtime Meals for Traveling

Lunch on a trip needs to be quick, easy, and filling. If you are traveling alone, that’s super easy, but if you need to please a whole picky family, we don’t envy you. That job is much harder. Good luck to you! Hopefully, you’ll find something below that your clan will enjoy.

13. Charcuterie board

You’ll be the fanciest road-trippers at the RV park with this one. Cold cuts, salami, fresh cucumbers, cubed cheese, an assortment of nuts, grapes, and some tomato slices, and you have a lunch that not only fuels your body but looks super pretty! We love charcuterie boards because they’re easy to feed a lot of people with, and littles can come by and pick up a healthy bite as they play. It can be stuck in the fridge and pulled out later too, so it just works great.

14. Egg Salad Sandwiches

You still have those boiled eggs right? Turn them into yummy egg salad and slap it on a sandwich. Pair with some potato chips, and get back on the trail!

15. Good Old Peanut Butter and Jelly

Hey, don’t knock it. It’s an American classic, and it is tasty whether you are 3 or 93.

16. Tuna salad

Tuna salad is another protein-packed option that is easy to carry on the road. Buy some packets or cans, or better yet fresh tuna if you live somewhere you can get it. Add your favorite fixings. This tuna salad recipe with red onion, dijon mustard, and celery is super tasty! Serve with crackers or as a sandwich. It doesn’t get much easier. Tuna is handy to have around, as you can also add it to pre-bought pasta salads for a little extra protein or make tuna-stuffed avocados for dinner (later).

17. Chicken Caesar Wraps

Chicken Caesar wraps are one of the best backpacking recipes. Whether you choose to grab a rotisserie chicken at the store before you leave or go with canned chicken, either way, it makes for a delicious meal. This chicken Caesar recipe with whole wheat tortillas , parmesan cheese, and cherry tomatoes is simple and yummy!

18. Crab Salad

The grainy mustard and sharp cheddar in this creamy crab salad recipe make it extra delicious! However, like tuna or chicken salad, you can pretty much throw everything but the kitchen sink in a crab salad or put nothing but mayo, and it will be just fine in a pinch. Plop it in a pita bread pocket, and pair it with some fresh veggies, and you have the perfect lunch.

19. Berry Salad

Add a little extra beauty to your boring salad with some colorful berries.  Romaine lettuce topped with strawberries, blueberries, shaved almonds, and feta cheese or goat cheese is a quick, healthy camper lunch. Throw on your favorite dressing, we love this Brianna’s blueberry balsamic vinaigrette .

20. Pimento Cheese Sandwiches

Pimento cheese is one of those things that we rarely eat unless we are traveling. Grab a tub at the store and use it on sandwiches, crackers, or as a spread for fresh veggies. It also makes a good addition to veggie tortilla wraps, lettuce wraps, or pinwheels.

21. Chicken Salad Sandwiches

Here’s where those ten cans of shredded chicken you bought are going to come in handy. Chicken salad can be very plain or really fancy. We love this cranberry pecan chicken salad recipe ! For a healthier option, omit the bread and serve as a lettuce wrap!

22. Smoked Salmon Stacks

A few packets of pre-cooked salmon are also nice to have around for fish tacos, to throw on your salad for a little extra filler, or to make this tasty lunch treat. This flatbread salmon stack is an easy option that requires just a bit of meal prep, so you might want to start the night before. If that is too much work, just load up some Ritz crackers with a bit of salmon, a slice of avocado, and a dash of salt and pepper for a quick and easy lunch.

No-Cook Dinnertime Meals for Traveling

Dinner is probably the hardest category on the list, at least for Americans. We tend to save our largest meal for the end of the day, and we generally want something warm. So, a completely no-cook dinner is out of the normal for many of us (though sandwich or cereal night is certainly not unheard of in our house)!

23. Greek Salad

A traditional Greek salad is not only healthy and tasty, but goodness it is pretty. While recipes vary all over the Mediterranean and the Balkans, they generally consist of fresh diced tomatoes, olives, feta cheese, and sometimes bell peppers, red onions, and cucumbers. You can make it any way you want, with whatever you have. Toss in a little olive oil or vinaigrette and a pinch of salt. Magnifique!

24. Stuffed Avocados

This is one of our favorite no-cook camping meals. Split an avocado, and remove the pit. Fill the center with a plop of your favorite meat salad. Sprinkle with salt and pepper or paprika. You can use any of the meat you have, salmon, chicken, tuna. Use the leftover tuna salad from yesterday’s lunch. Another option is to make taco-stuffed avocados . All you need is a taco-seasoning packet to add to the meat and veg you already have on hand!

25. Crab Ceviche

Ceviche is a cold seafood dish, popular all over Central America. It is traditionally made with fresh fish, lime juice, peppers, red onion, and whatever else you have on hand at the time! You can use any of the packaged or prebought fish you have to create “ camping ceviche .” For a side dish, whip up some 7-layer dip and tortilla chips for a complete no-cook dinner!

26. Veggie Gyros

These vegetable gyros feature our favorite item-avocadoes, plus chickpeas and yummy tzatziki spread. Chickpeas are packed with protein and all these veggies will get you to your daily allotment of vitamins and fiber. For the meat lovers in the group, you can easily add chicken you have on hand!

27. Mexican 3-bean salad with guacamole

… Oh, sorry! Just dreaming about this Mexican 3-bean salad ! It might be a favorite meal idea on this list. Hiking and exploring make you hungry, and all the beans in this baby give you the fiber you need for a good night’s sleep! Pair it with fresh guacamole for the ultimate easy camping meal.

28. Layered Taco Salad

Take some of that chicken you brought and mix in some taco seasoning. In a large bowl, layer it with cheese, beans, lettuce, and crushed Nacho Cheese Doritos. Alternate your layers of each until the bowl is full. Let everyone choose their own toppings of guacamole, sour cream, and salsa.

Mexican food is the easiest no-cook dinner to make. Layer nachos with shredded canned meat, beans, and all the veggies and toppings you like! If you can warm your meat and beans, that’s great, but it is just as good cold!

Snack Ideas or Side Dishes

You’ll likely be more active on your vacation than you are in normal daily life. It seems most of us need a vacation from our vacation by the time we get home. So, you are going to need more fuel than usual. Plus, if you have kids in tow, then snacks are a primary food group (maybe the only food group)! Make sure you have some good ones on board!

30. Veggies and Hummus

Nothing super inventive here, but it’s easy and effective. Plus, you might get your picky ones to eat a carrot or bell pepper stick if it is slathered in yummy hummus or guacamole. You could make a big batch of homemade hummus before your trip, or make it easy on yourself and buy some tasty flavors at the store.

31. Trail Mix

No surprise here, trail mix is a great idea to have on hand. It fits easily in the backpack for long hikes. You can throw the bag at a kid in the backseat when needed, and it is filled with tummy-filling protein. Make your own trail mix , or snag a giant premade bag from Amazon before your trip!

32. Fresh-Fruit Salad

Nothing screams summer like a bowl of fresh fruit. This fruit salad with citrus dressing is delightful and is the perfect anecdote for that summer heat! You might even convince your kids to eat something healthy today.

33. Beef Jerky

Beef jerky just belongs in a backpack. They go hand in hand.

34. Pesto Pinwheels

Pinwheels are a classic party appetizer, but they also make a great one-bite snack. We love these pinwheels , but there are many great ones out there, so use what you have on hand! It does take a little bit of meal prep time as they need to sit in the refrigerator or cooler for several hours to set up.

35. Deli Rolls

Don’t know about you, but to us, there isn’t anything better than a slice of your favorite cheese, rolled up inside of a piece of deli meat. Admit it, you have done it. You can make it fancy with a hummus spread or olive-decorated toothpick! It’s quick, easy, filling, and budget-friendly. We love it!

No-Cook Snacks for Traveling

36. s’mores.

Okay, so the best s’mores require a little smoking on a campfire, but technically you can make them with uncooked marshmallows. They’re still super tasty!

37. To-Go Banana Pudding

The banana version is the best, but you can try this treat with any premade pudding cup of your liking. Crush a bag of Vanilla wafers. Add it to your pudding cup. Slice up a banana for garnish and plop a dollop of Cool Whip on top. Yummm.

38. No-Bake Lemon Tarts

Lemon pudding snack packs can easily be turned into a tart. Line a small bowl, or just make a pile of finely crushed Graham crackers. Slather on a healthy slab of cold lemon pudding, and top with your favorite whipped topping. Sprinkle on nuts or coconut shavings to taste!

39. Cottage Cheese and Dried Fruit

This one won’t please everyone, but if you love it, you love it! Cottage cheese has healthy fat and is a good source of protein. It will keep you full, and if you top it with some sweet dried pineapple, it’s pretty tasty!

40. Fresh Strawberries and Whipped Topping

Strawberries topped with a little sugar take on a totally different flavor! If you don’t use granulated sugar, honey works just as well. Slice them up, add your honey or sugar, and allow them to sit in a cold environment for at least 4 hours. If you want a lush dessert, stock up on some pre-made angel food cakes or make one at home before your trip. The decadent strawberry mixture on top of some food cake with whipped topping is a fantastic dessert any day of the week!

41. Fruit Pizza

Pizza! Create this delectable treat with granola, nut butter, cinnamon, and chopped almonds. Combine together to make a delicious crust. You can add honey if you use unsweetened nut butter. Press into a pie pan or dish, or just press flat on parchment paper. Let chill in the refrigerator or ice chest for at least an hour. Cover in yogurt or softened cream cheese, then sprinkle with your favorite fresh fruits, cacao nibs, or drizzle with chocolate syrup!

Other Staples To Keep On Hand

If you tried to make everything on this list, your entire camper would be full of food and ingredients. Instead, try to group your choices by recipes that use and reuse a smaller number of ingredients. Remember you can always repurpose your leftovers from day 1 lunch for day 2 dinner. Get creative. With this sample shopping list, you’ll be able to create several dishes.

  • Canned or packed meats: tuna, salmon, and chicken
  • Canned beans of several varieties
  • Boiled eggs
  • Lots of fresh fruit and veggies
  • A tub of your favorite “crumbled” cheese – Feta or goat.
  • A jar of nut butter
  • A large bag of mixed nuts and seeds
  • Your favorite multi-purpose bread
  • Mayonnaise and brown mustard
  • Granola or oats
  • Olive oil and lemon juice or a vinaigrette dressing
  • Salt, pepper, garlic powder

Closing Thoughts

Just because you don’t want to cook doesn’t mean you can’t eat like a king on your vacation. With a little forethought, some smart shopping, and perhaps a small amount of meal planning before you leave, you can ensure that you have everything you need to whip up fast, easy meals on the go.

Touring the Top 10 Moscow Metro Stations

By Claudia Looi 2 Comments

Komsomolskaya metro station

Komsomolskaya metro station looks like a museum. It has vaulted ceilings and baroque decor.

Hidden underground, in the heart of Moscow, are historical and architectural treasures of Russia. These are Soviet-era creations – the metro stations of Moscow.

Our guide Maria introduced these elaborate metro stations as “the palaces for the people.” Built between 1937 and 1955, each station holds its own history and stories. Stalin had the idea of building beautiful underground spaces that the masses could enjoy. They would look like museums, art centers, concert halls, palaces and churches. Each would have a different theme. None would be alike.

The two-hour private tour was with a former Intourist tour guide named Maria. Maria lived in Moscow all her life and through the communist era of 60s to 90s. She has been a tour guide for more than 30 years. Being in her 60s, she moved rather quickly for her age. We traveled and crammed with Maria and other Muscovites on the metro to visit 10 different metro stations.

To Maria, every street, metro and building told a story. I couldn’t keep up with her stories. I don’t remember most of what she said because I was just thrilled being in Moscow.   Added to that, she spilled out so many Russian words and names, which to one who can’t read Cyrillic, sounded so foreign and could be easily forgotten.

The metro tour was the first part of our all day tour of Moscow with Maria. Here are the stations we visited:

1. Komsomolskaya Metro Station  is the most beautiful of them all. Painted yellow and decorated with chandeliers, gold leaves and semi precious stones, the station looks like a stately museum. And possibly decorated like a palace. I saw Komsomolskaya first, before the rest of the stations upon arrival in Moscow by train from St. Petersburg.

2. Revolution Square Metro Station (Ploshchad Revolyutsii) has marble arches and 72 bronze sculptures designed by Alexey Dushkin. The marble arches are flanked by the bronze sculptures. If you look closely you will see passersby touching the bronze dog's nose. Legend has it that good luck comes to those who touch the dog's nose.

7. Kurskaya Metro Station was one of the first few to be built in Moscow in 1938. It has ceiling panels and artwork showing Soviet leadership, Soviet lifestyle and political power. It has a dome with patriotic slogans decorated with red stars representing the Soviet's World War II Hall of Fame. Kurskaya Metro Station is a must-visit station in Moscow.
