Peru – ceviche

Ceviche is the unofficial national dish of Peru. It's made by marinating cubes of raw fish and seafood in lime juice, onions, salt and aji amarillo chilli peppers, and is served cold with sweet potato chunks, plantain chips and corn on the cob.

This saffron-flavored rice dish originated in Valencia hundreds of years ago when hungry servants would combine rice with leftovers from Moorish kings' lavish banquets. The dish varies across the regions, but the mixed version with chorizo, mussels and prawns is the most popular internationally.

Struggling to choose just one curry? Fear not. A thali comprises several eye-popping dishes served on a large plate. The dishes typically include grains, lentils, vegetables or meat curries, chutney, raita, pickles and pappadum – creating the perfect balance of sweet, salty, bitter, sour, astringent and spicy flavors.

Balkans – cured meats and cheeses

When traveling through the Balkans, treat your tastebuds to delicious charcuterie boards loaded with traditionally preserved meats, cheeses, vegetables and bread. Some of the most popular Balkan meats to try include cevapi (homemade grilled sausage), njeguši (dry-cured ham) and pljeskavica (Balkan burger).

Israel & Palestinian Territories – falafel

Considered to be Israel’s national dish, these balls of deliciousness (made with ground chickpeas, herbs and spices) are a must-try plant-based dish. They’re usually served on a platter or in a warm pita pocket filled with pickled vegetables, crunchy cabbage salad and generous lashings of creamy tahini sauce.

There’s a whole world of Thai noodle dishes to discover beyond the obvious (and delicious!) pad thai. Khao soi is a chicken and coconut noodle soup from northern Thailand. It’s packed with vibrant aromatics and is served with crispy fried noodles, shallots and fresh lime wedges on top.

Expect to eat the local way. We don't call these trips ‘food adventures’ for nothing. Forget Michelin stars and 20-course degustations – our local leaders will help you get behind the scenes of local food culture, track down the freshest street food, discover the most authentic local restaurants and reveal the traditions and techniques that make these destinations so deliciously mouth-watering. From lining up with locals for fresh tortillas in a Mexican market to hopping between Logrono’s thriving tapas bars, they’ll show you local food from the perspective of those who eat it every day.

How does a Food Adventure differ to a regular Intrepid trip?

All of our food trips have been designed with one thing in mind – experiencing the best local food on the planet. But we all know that there’s much more to food than just eating it – so whether it’s browsing markets for fresh produce, sizzling up a storm in a cooking class or meeting a local street-food legend, we’ve stuffed your plate to the brim. And once you’ve devoured all the local food you can handle, we’ve made sure our Food Adventures are rolled up into a burrito with the lot so you won’t miss out on the iconic sights and authentic cultural experiences that are found on all our Intrepid trips.

Is there any freedom & flexibility in the itineraries?

Like all Intrepid itineraries, we’ve made sure our food trips provide free time between activities, allowing you to digest a destination either with your group or on your own. You might spend the morning exploring a buzzing local market with your guide and cooking a delicious local dish with your group before heading off on your own to wander the marbled halls of a museum or cycling through ancient alleys.

We’ve also left plenty of mealtimes free of organized activities, which gives you the flexibility to ‘get your gourmet on’ at a fine dining restaurant or simply seek out your own ‘real food’ adventure. Needless to say, your leader will be there every step of the way with suggestions and recommendations.

What transport is used?

Sometimes, the best way to eat like a local is to travel like one too. That could mean jumping on a boat to discover the flavors of the Mekong Delta, riding the Tokyo subway to a sake bar or rattling along in a rickshaw in pursuit of Agra’s finest chaats. We love to use local transport because it gives us a chance to experience everyday local life from a new perspective.

What is the accommodation like?

Whether you’re spending the night in an ancient fortress or in the home of a local family, most of our trips include a memorable overnight stay that is designed to make your trip extra memorable. When we do choose to use hotels, all of our accommodation options are in our Original style, which means a mix of 2-3 star establishments that are safe, clean and comfortable.

How do Intrepid's Food Adventures benefit local communities?

We help support local economies by purchasing snacks and meals from street-side vendors, dining in local restaurants, eating seasonal produce from the destination, and using local guides throughout our itineraries. Many of our trips incorporate visits to community projects, and we choose locally-owned accommodation wherever possible. We are committed to a style of travel that is culturally, environmentally and socially responsible.

Why does every Food Adventure include a plant-based meal?

Plant-based foods generally have a much lower carbon footprint than animal-based foods, and incorporating more plant-based eating into our diet is a major opportunity to mitigate and adapt to climate change. As Intrepid continues to innovate in ways that promote and support sustainability, including a delicious meal that showcases local fruit, vegetables, nuts and seeds is just one way that we are investing in the health of our planet.

What about vegan travelers?

We do our best to accommodate dietary requirements (including vegan diets) on all of our trips, and all our Real Food Adventures will include at least one plant-based meal. If you want a more tailored experience, that's where our Tailor-Made team can step in. We can use our 30 years of experience and regional specialists to help you create your perfect vegan food adventure.

I started this company in collaboration with my partner Chef Eric Fraudeau, Chef/Owner of French Cooking School, Cook’n With Class Paris with the dream of taking people on a journey rich with the colorful dishes, tasty tidbits, and skill-building lessons that would enrich their travel experience. Together we designed our very first culinary holiday, Let’s Eat Uzès -Week in Uzès which gave participants the opportunity to dive into the heart of French culture through its very rich culinary history. Our visits were dotted with market tours, hands-on cooking lessons, & wine tastings. But we never forgot the key ingredients that made these tours so popular, the conviviality and the generosity.

With these elements in mind, I’ve shaped our current tours and will continue to build on new programs that will bring you closer to cultural appreciation and understanding through the what units us all, our quest for good food.

While over the top gastronomic experiences were expected and delivered what was most surprising was the laughter and friendships that flowed in even greater quantities that the exceptional wines and will last far longer.

A private trip with La Via Gaia in Piemonte was an adventure I didn't even know I was missing! I was hesitant to go on an expensive trip with my colleagues but after the amazing comradery, wineries with views, a cheese tour/tasting, beautiful balloon ride, truffle hunting, vespa and convertible fiat driving, three Michelin restaurants, chef led cooking classes, shopping in Milan, Turin and Alba, incredible local restaurants, three amazing guides, and lots of fun I deem this trip priceless. The warmth exuded by Jeff and Claudia Michaud, and their guest Sommelier Matteo Donadoni added to a jam-packed itinerary (with some relax time included). Anyone can go to Northern Italy but these three shared their love of Italy with all of us.

La Via Gaia's culinary and wine tour is not to be missed. Chef Jeff Michaud and his beautiful wife sparkle as they share their love of all things Italian. Days are filled with private tours of wineries and a Parmigiano-Reggiano aging cave, a hot air balloon ride, a drive through the gorgeous Piemontese countryside, and a tour of Turin. The meals include simple regional dishes shared by local cooks, dinner made by the group participants during a cooking lesson at a winery, and spectacular dinners prepared by Michelin starred restaurants. Truly fantastico- grazie!

We define culinary travel as discovering a destination's history and culture through its cuisine. It's a unique way to travel and engage with people. And you'll have a story to tell. Culinary travel is experiential. You can forage for berries, hunt for truffles, harvest oysters, make cheese and chocolate or cook a four-course meal with a chef. Itineraries can include visiting organic farms, orchards and vineyards and guided walking & tasting tours of vibrant neighborhoods and colorful markets. Discovery & Cruising

These are our least demanding trips. These journeys of discovery and cruises involve little or no extended activity. The itinerary may take place in remote areas (with basic facilities) and may involve long travel days on various types of transport. Sightseeing may be conducted on foot and all participants should be capable of carrying their own luggage from vehicle to hotel rooms. These adventures do not go above 2500m and rarely involve camping.

These adventure tours sometimes involve travel at high altitude (rarely exceeding 4000m, except on certain trips in Tibet, Peru and India) and may visit remote areas of the world where facilities are often basic. Many of these trips sometimes involve some camping or basic lodging. These adventure tours will often involve long journeys and rough roads. Sightseeing and optional day walks are often included and these days may involve up to 5 hours of physical activity.

Up to 5 or 6 hours of physical activity a day at a slow but steady pace.

Introductory activity with several moderate stages.

Up to 5-7 hours of physical activity a day at a steady pace. Terrain may vary and some steep ascents to be expected. Be prepared for variable weather conditions.

Moderate to Challenging

Moderate activity with several challenging stages.

Up to 8 to 10 hours+ of physical activity a day, often in remote areas with variable and adverse weather conditions.

Apply only to mountaineering trips and are therefore not shown.

These journeys of discovery and cruises are suitable for people with a basic level of fitness and good health.

Suggested preparation: Once or twice a week, we recommend you walk on undulating terrain for an hour, for at least 2-3 months prior to departure.

To enjoy these adventures we suggest you have a reasonable level of fitness and health, a moderately active lifestyle and a positive attitude.

Suggested preparation: Two or three times a week, we recommend you walk on undulating terrain for an hour or more, for at least 3 months prior to departure.

Our introductory trips are not ‘easy’ trips and you will need a reasonable level of fitness and good health.

Suggested preparation: We recommend 30 minutes of aerobic type exercise three times a week, starting at least two to three months before departure. This can include swimming, jogging, hard walking or cycling. For treks, hill or stair walking with a 5-7kg daypack is also highly recommended at least once a week. For a cycling adventure, road cycling twice a week for three months prior to departure is advised.

On these adventures you will need a reasonable level of fitness and good health.

Suggested preparation: We recommend 45 minutes of aerobic type exercise three times a week, from a minimum of three months period to your departure. This can include swimming, jogging, hard walking or cycling - good cardiovascular exercise. For treks, hill or stair walking with a 7kg daypack is also highly recommended at least once a week. These adventures require a good level of fitness and health.

Suggested preparation: We recommend 45-60 minutes of aerobic type exercise, three to four times a week. Hill walking with a pack in variable weather conditions, kayaking or road cycling is also recommended depending upon the activity you plan to undertake.

These adventures require a good level of fitness and excellent health.

Suggested preparation: We recommend one hour of aerobic type exercise, four times a week. Hill walking with a pack in variable weather conditions, kayaking or road cycling is also recommended depending upon the activity you plan to undertake.

On these challenging adventures, you will need an excellent level of fitness.

Suggested preparation: We recommend one hour of aerobic exercise, four times a week – such as jogging, hard walking, cycling or paddling. Solid preparation is essential in the months leading up to your departure. For trekking, hill walking with a 7kg pack is a must. On the weekends mix in a relatively demanding bushwalk relatively steep ascents and descents. For cycling, regular biking for one to four hours at a time, with as many hills as possible, will help prepare you for your trip.

The exact inclusions and equipment for each of our adventures is listed once you've found the trip you want. Our trips are generally more inclusive than others in the market place in line with our philosophy of minimising 'extra payments' displayed outside of the main trip price as well as out of pocket expenses once you reach your destination.

On our first ever program was a river cruise in Russia which had just started opening its doors to western visitors. Sure enough, the sailing along the mighty Volga departed in July of 1993 with 207 passengers on board. Boy, what a trip that was! First time cruisers…first western passengers aboard a Russian ship….crew that spoke no English…food that was limited to cabbage, boiled potatoes and cucumbers… a most memorable experience indeed!

However, as a result, we discovered a new way to explore the world, via the inland waterways of various countries, long before river cruising became a staple that it is today! Building on Russia’s popularity, we started expanding our river cruise offers to include Ukraine in 1995, Danube in 1996, China Yangtze in 1997, Egypt Nile in 2002, Mekong Delta Cruises in 2004 and most recently cruises in India & Myanmar (Burma).

So here we are, twenty eight years later, with more than 70,000 passengers that have traveled with us, some of them as many as 11 times over the years! We have survived wars, famines, bird flues, economic crises and Lord knows what else and yet, older but no wiser, we are still as passionate about our business as the day we started it! And with today’s mergers, acquisitions and big corporate and internet travel marketers, we are most proud of the fact that we are still an independent, family run operation whose customer satisfaction comes way before revenues and profit margins…and with your support, we hope to continue for many years to come!
