Pory of Leith Distillery For a Unique Take

Port of Leith Distillery (11 Whisky Quay) is the UK’s first vertical distillery located in the lively neighbourhood of Leith , which can be reached by foot, bus, and tram.

Leith is steeped in whisky heritage, dating back to 1822 when it received one of only six licences to store whisky.

Today, visitors can join this 1.5-hour tour , which includes visiting the copper stills on the ground floor, a tasting session, and the opportunity to fill your own 10ml bottle of the Port of Leith Distillery spirit.

Be sure to make time for a drink and snacks at the rooftop bar on floors eight and nine, which has floor-to-ceiling windows to the Firth of Forth and Leith skyline – an Ev Ed favourite!

The scotch whisky experience – the city’s first whisky attraction.

The original whisky museum operating since 1988, The Scotch Whisky Experience (354 Castlehill), knows how to educate while entertaining visitors on the Royal Mile.

There are two tour options.

The 50-minute tour is ideal for those looking for a quick introduction to the nation’s drink and features a guided tour with one dram.

The 75-minute tour provides the same tour but with four single-malt whiskies.

The tour includes a ride in a barrel, beautifully shot movies with footage from the five whisky-producing regions, a lesson in the Blenders’ Sample Room, and the cherry on top is a walk through one of the world’s largest collections of Scotch whisky, which has nearly 3,500 individual bottles.

Tour guests also receive a crystal glass to take home; we still use ours!

Johnnie Walker Princes Street For a Multi-Sensory Tour

Even as a non-whisky drinker, I thoroughly enjoyed this 1.5-hour tour in Edinburgh’s West End .

Johnnie Walker Princes Street (145 Princes St) offers a super modern experience starting with a taste test and a narrated story featuring Walker.

A professional and passionate guide then introduces the different stages of the Johnnie Walker whisky process, which is spread out over several diverse rooms, two of which give plenty of scope for trying neat whisky or highball cocktails; the latter was my preference.

If you have time, reserve a table at the rooftop bar, which also has an outside patio with views over Princes Street and Edinburgh Castle.

After doing this tour ourselves, we have purchased gift vouchers for multiple family members, again not all of whom are huge whisky fans.

Will I need a Dewar’s Aberfeldy Distillery ticket, and if so, should I purchase my ticket to Dewar’s Aberfeldy Distillery online now?

You will need to purchase a separate ticket with us, but this is one time when you should not secure your distillery experience online, because the timings of your itinerary with Timberbush and Rabbie’s may need flexibility. We reserve spaces for Rabbie’s and Timberbush visitors, so you are guaranteed a space on one of our tours.

Do I get a full choice from your tours?

On the Rabbie’s Tour, you will be able join our Dewar’s Aberfeldy Experience and add a tasting straight from the cask in our warehouse if you wish. On the Timberbush Tour, you will take part in our Whisky and Chocolate Tasting Tour.

We travel the 15-20 minutes to the Glenkinchie Distillery on the outskirts of Edinburgh.

We enjoy a distillery tour and the lovely whisky skillfully produced at Glenkinchie.

11 am Depart

6 Liquor and Scotch Whisky Distilleries Near Edinburgh

Have you been considering making a trip to Scotland to discover the secrets of Scotch Whisky production, or just to see the land where this venerable drink comes from? There are dozens of Scotch Whisky distilleries you can visit throughout Scotland.

In fact, you can find a number of great distilleries within an hour’s drive of Edinburgh, making it one of the most accessible whisky regions in Scotland for visitors. This whisky region is called the Lowlands. Lowlands whiskies are known to be slightly sweet and malty, mellower than their Highland counterparts, and not peaty like those in Islay.

There actually aren’t many distilleries left in the lowlands. In fact, many of the ones that you can visit today are newly opened (since 2015).

These distilleries are trying to re-establish the lowlands as a top whisky-producing area. They’re putting their heart and soul into their whisky, and you can see that when you tour their facilities. In addition to whisky, a few of the area’s distilleries are making other types of liquor, like gin, eau de vie and aqua vitae.

Edinburgh’s Scotch Whisky Experience

Location: The Royal Mile, 354 Castlehill, Edinburgh EH1 2NE

One of the top destinations in Scotland for tourists is Edinburgh. It’s a fascinating, historical city that captures the hearts and minds of visitors from the second they hit the cobblestone streets in the Old Town. That’s what makes the Scotch Whisky Experience so convenient and relevant for tourists.

If you’re wanting to learn more about the process of making whisky, a visit to the Scotch Whisky Experience is essential. It’s both interesting and educational, if a little silly. After all, you do ride in a whisky barrel through an interactive learning display on your way to the tasting room.

The experience includes a nosing and tasting of a single malt or blended Scotch whisky plus a demonstration of the flavors and smells you can expect from each whisky producing region in Scotland. There are a few different tickets you can buy. The silver tour covers the above experience. The gold tour includes 4 regional single malts, and the platinum tour includes 4 specially selected contrasting regional single malts and 1 deluxe blend.

After the tasting, you can check out the huge museum/library of whisky from around the world. It’s the world’s largest collection of Scotch Whisky, and you can have an additional tasting at the bar.

Kingsbarns Distillery

The founder of Kingsbarns Distillery had a dream to open a distillery as he was caddying at the Kingsbarns Golf Club nearby. He was often asked by golfers where they could go whisky tasting in the area, and since there really weren’t any nearby distilleries, he felt it might be time to open one.

He partnered with the Wemyss family from the area, who were already producing whisky. The visitor’s center and distillery, located just 6 miles south of St. Andrews, were built on a historic farmstead that has been converted and built up into a state of the art facility where tours and tastings take place, and whisky is currently being produced and aged. They opened in 2015, so their first production was bottled in 2018

There is also a gin distillery located on the property. Darnley’s Distillery opened in summer 2017. A cottage located behind the Kingsbarns whisky distillery is the new home to the gin still house.

Tours of Kingsbarns are available 7 days a week from 10am to 5pm and there are three different tours to choose from.

Eden Mill Distillery

There are all kinds of things going on at Eden Mill Distillery. They are Scotland’s first single-site brewery and distillery, and they’re currently making beer, gin and whisky. If you go on a tour at Eden Mill, you’ll be given the option to see the production of your choice.

We visited for a gin tour and tasting, and were able to see the distillery, production rooms, and the tasting room. The tour started with a fantastic gin cocktail and a video, and ended with a tasting of three of their gins. In case you’re wondering, three is hardly the entire lineup.

The whisky Eden Mill makes has not yet been bottled. As you know, it takes at least 3 years to make a whisky that can be bottled and sold. Their first batch was put into the cask in 2015. In 2018, Eden Mill released the first Single Malt whisky to be distilled in St Andrews in over 150 years. 

They have a classic range of beers, including a porter and stout, a red ale, blonde ale, golden ale, and even a whisky barrel aged beer. You can pick some up at the distillery to take home and try.

Visit their website for hours and tours. As of 2021, they are currently closed for visits while their new facility is being build.

Lindores Abbey Distillery

Location: Abbey Rd, Newburgh, Cupar KY14 6HH

Drew McKenzie Smith and his wife Helen always wanted to bring a distillery back to the property of the abbey that was purchased by Smith’s grandfather in 1913.

After many years of planning and research, not to mention extensive archaeological digs, the distillery and visitor center, located in north west Fife, in the small town of Newburgh, opened in 2017, using materials from the original abbey.

Today, the Smith’s are once again making Aqua Vitae (what Scotch Whisky was once known as), which was being made at this location as early as 1494, according to early written records. The Aqua Vitae of that time was said to slow aging and prevent melancholy. It was drank by kings, as well as locals, to cure all ills.

Today, Aqua Vitae is being distilled and blended with herbs and spices that are grown right on the property. You may have heard of some, like lemon verbena, but not others, like sweet cicely. Often drank neat or with an orange twist, the taste is slightly fruity with fresh herbal notes. It’s also great in cocktails.

You can learn about the process and history of making Aqua Vitae during a distillery tour at Lindores Abbey Distillery. The price of a tour is £12.50 and includes a dram of Aqua Vitae. They also offer a special apothecary tour that includes a walk through the distillery as well as blending your own little bottle of Aqua Vitae, alongside the distillery’s Apothecary, Tim Foster.

The blending tour lasts around 2.5 hours. There is a small cafe in the distillery where you can stop for a coffee, cake or one of their delicious soups after your tour.

Summer Tour Times: From 1st April until 30th September, tours will be available at 10:00am, 12:30pm and 2:30pm.  Winter Tour Times: From 1st October until 31st March, tours run at 11.00am and 2.00pm. Bookings are highly recommended. You can call or email to set up a time. Website .

Tayport Distillery

I’m always inspired by female entrepreneurs getting involved in the liquor industry. That’s exactly what Kecia McDougall of Tayport Distillery has done by starting her own micro-distillery in Tayport.

Taking inspiration from her native home of Ohio, and the whisky industry that is growing around her in Scotland, Kecia set out to create a spirit that would incorporate the wonderful fruits and grains of Fife. The resulting liquor is an Eau de Vie, which is a clear, colorless fruit brandy, usually made in a double distillation process, which Kecia has named Never.25.

Changing up the conventional methods, Kecia has developed her own process, which involves four distillations. During the third stage, the base spirit (made with a blend of wheat and barley) is infused with the berries that bring life to the Eau de Vie.

There are currently four different flavors: strawberry, raspberry, apple and blueberry. There is never any artificial coloring or flavoring added, and she only uses fruit from local farms.

Dewar’s World of Whisky

I’m cheating a little here, because Dewar’s Aberfeldy Distillery is actually located in the Highlands and it’s just a smidge further than an hour from Edinburgh. But there’s no need to be exact when you’re whisky tasting!

The distillery is a fun place to visit. They have a great interactive museum, where you can walk around learning about everything you’ve ever wanted to know about Scotch Whisky on an iPad. There’s even a smell wheel where you can test your knowledge of the aromas associated with whisky.

Aberfeldy produces a single-malt whisky that has been around since 1898, when the founder, John Dewar, opened the distillery in his hometown. Dewar’s distillery also makes blended whisky. You can try them on a tour and tasting of the facility.

There are several options for tour types, including a regular tour, a connoisseurs tour, a cask tasting tour and blender’s tour. Which ever you choose also includes some time in the interactive museum and a tasting. The distillery also has a small cafe and bar, so you can stay as long as you like. Whisky has been lovingly distilled in Scotland for centuries, with the earliest reference of the drink coming from 1494 – only two years after the Americas were discovered.

So when you visit Scotland, it almost seems sacrilegious not to sample the local fayre, and where better to do this than in the capital city of Edinburgh?

Holyrood Distillery

Set in a very convenient location, Holyrood Distillery is worryingly easy to stumble into after braving Arthur’s Seat. The difficult part is stumbling out again!

This distillery takes inspiration from the beautiful city it is rooted in, echoing Edinburgh’s energy and spirit (pun intended!) when making their signature drinks. Their tours focus on the city’s compelling distilling history which they argue is not talked about enough, and they even created a smoky cask offering inspired by Edinburgh’s affectionate nickname, Auld Reekie (Old Smoky).

The distillery opened in 2019 so it isn’t steeped in history or shackled by tradition, allowing its owners the creative freedom to create a unique, interactive experience for their visitors.

You’ll be pleased to hear that the Holyrood Distillery offers an abundance of tours. For example, they run daily Gin and Whisky Tours as well as purely Whisky Tours and Tastings if you don’t want to be distracted by gin.

If you would like something a little different, on certain dates they run a walking tour focusing on Edinburgh’s brewing and distilling past and includes tastings.

Scotch Whisky Experience

Located at the top of the historic Royal Mile, the Scotch Whisky Experience takes pride in its ability to bring the story of whisky to life.

Its renowned barrel ride gently guides you from relaxing Gladiator-style fields of barley to the maturation of the whisky in oak casks. Taking you through every step of the process of making whisky, their barrel ride is relaxing, fun and informative – what more could you want?

If you would prefer an experience which isn’t just interactive but immersive, the newly-opened Johnnie Walker Princes Street experience is for you!

The unbridled creativity of their tours creates a self-proclaimed ‘flavour-filled celebration’ which is designed to be memorable. However, the Johnnie Walker Experience may not be the best choice for die-hard whisky connoisseurs who might be put off by the ‘flashy’ presentation of their favourite drink.

Their daily Johnnie Walker Journey of Flavour includes whisky drinks that are personalised to your preferences. This experience is an excellent option for groups with members who don’t enjoy pure whisky, as they can try cocktails instead of drams and the tour itself is quite a spectacle.

As well as tours, they offer events such as ‘Funk, Jazz & Soul Sundays’. Tickets for this event include live music and a two-course lunch paired with drinks. It is always worth checking their website to see what exciting events they have planned next.

Whisky & Folklore Tour

If you would prefer a more sedentary whisky experience, this Whisky and Folklore Tour provides a fun, aural journey through Scotland’s distilling history.

These tours take place in a cosy, historic pub in Edinburgh city centre. Enjoy and compare four different whiskies from different whisky regions of Scotland whilst listening to the fascinating stories your guide entertains you with.

Glenkinchie Distillery

On arrival at Glenkinchie Distillery , whisky-lovers are greeted by relaxing music, honey-coloured wood and gentle, enticing scents. This distillery perfectly walks the line between friendly and professional. You can tell that the tour guides take pride in Glenkinchie’s offering and they are prepared to answer any questions you may have.

This distillery is the Lowland home of Johnnie Walker and tours delve into the rich tradition of creating whisky as visitors learn about the distillery’s history.

Most of the tour is centred around the process of making their whisky. Believe me, when your guide explains how to create such a variety of flavours from the same three ingredients you’ll start to believe that Harry Potter isn’t the only magical thing about Scotland!

Before tasting the whisky, immerse yourself in their sensory theatre whilst you listen to the differences between the spirits made in the five whisky regions of Scotland – Campbeltown, Speyside, Islay, Lowland and Highland.

This is a fully operational distillery and they offer a selection of tours and tastings including a Journey of Flavour Tour, a Flavour and Cask Experience, and a Behind the Scenes Tour and Tasting.

This distillery is a 30-minute drive from the centre of Edinburgh, although we would recommend booking a taxi that will take you directly from the city centre to their doorstep so no one needs to suffer as a designated driver – just remember to book it first!

Perhaps even after reading through our suggestions, you’d prefer to experience whisky the way it was originally meant to be enjoyed – in a pub. In that case, these are some recommendations for our favourite whisky bars around Edinburgh.

  • Whiski Rooms : Here you can appreciate a wide range of whiskies whilst looking out over the city. With over 300 whiskies, even those unconvinced by the spirit will be able to find something they like. This bar also has a shop so if you try anything you like you can take a bottle home with you.
  • Teuchters Landing : Enjoy this bar’s beautiful waterside setting in Leith with a drink in hand as you explore their range of whiskies.
  • The Scottish Malt Whisky Society : Although this is primarily a member’s society, the Scottish Malt Whisky Society’s Kaleidoscope Bar on Queen Street is open to non-members six days a week. This prestigious venue has everything you need for an unforgettable whisky experience. It has even been recognised as the Icons of Whisky Global Bar of the Year in Whisky Magazine’s World Whisky Awards 2022.
  • Usquabae : With well-informed, welcoming staff and a cosy atmosphere, the bartenders at Usquabae are well-equipped to recommend whiskies that will suit you perfectly.

"Construite sur le site de Brown's Court du XVIIe siècle et de plusieurs immeubles importants, l'école Castlehill a ouvert ses portes en 1888. À son apogée, jusqu'à 800 élèves étaient inscrits à l'école – un nombre important si l'on considère la taille du bâtiment. Garçons et filles étaient tous deux présents, mais ne se seraient jamais croisés. Des cages d'escalier séparées dans tout le bâtiment ont rendu tout cela possible. À l'arrière, face à Johnston Terrace, le bâtiment était partiellement ouvert et soutenu par une série de chandeliers. Cela a permis aux enfants de disposer d’une aire de jeux plus grande dans un espace exigu. Le nombre d'élèves est resté assez stable pendant les cinquante premières années, mais a chuté de façon spectaculaire à moins de 350 après la Seconde Guerre mondiale. L'école fut rapidement jugée excédentaire par rapport aux besoins des autorités éducatives et Castlehill Primary ferma ses portes en 1951. Aujourd'hui, le bâtiment est plus connu pour l'alcool que pour l'algèbre, car il abrite la plus grande collection de whisky écossais au monde. Avec environ un demi-million de visiteurs franchissant ses portes chaque année, la Scotch Whisky Experience est l’une des principales attractions touristiques de la capitale. What’s the difference between whisky and Scotch?

There is none! Scotch is a term typically used in North America to refer to whisky made in Scotland. But in Scotland, we just call it whisky!

Water of Life  

The Gaelic term for whisky is uisge beatha , pronounced like ‘oosh-ka bey-ha'. It means the water of life.  

Over time, uisge was adopted into English and evolved into ‘whisky’. In Scotland, we spell this without the ‘e’. In Ireland and the United States, it’s normally spelt ‘whiskey’. 

Underground Operations 

Because taxation was so high on whisky, many distillers ran underground operations—literally. 

The Blair Street Underground Vaults were home to one of these operations. Run by Highlanders, it operated for around 18 months. Likely, others existed as well. 

Cask Flavour 

Most whisky is aged in bourbon casks, but different casks can offer different flavours.  

Bourbon casks add tastes like vanilla, honey, caramel and fruit. Sherry casks provide flavours of cardamon, cinnamon, figs and dates. 

Medieval Origins 

The distillation of spirits comes from the 9th-century Islamicate world, where it was made for medicinal or cosmetic purposes. It migrated west during the crusades. 

It was made by monasteries until their dissolution during the Protestant Reformation. After that, farmers began distilling the spirit from the barley they produced. 

Whisky Regions 

There are six whisky producing regions in Scotland: Highlands, Lowlands, Speyside, Islay, Campbeltown, and the Islands.  

Different regions often have different tastes. For example, Campbeltown might be peaty, sweet and smoky while Lowlands are lighter and more floral.

And on National Geographic’s list of “Best of the World” destinations, only the Highlands gets love.

OK, so the Scottish Lowlands isn’t home to the monstrously legendary Loch Ness, majestic Cairngorms National Park, a historically rich clan culture or the setting of Mel Gibson’s bloody good film, “Braveheart.”

But while that and more causes Scotland’s southern side to bow to its northern neighbor in terms of tourism, the Scottish Lowlands is no plaid-clad red-headed stepchild in a nation that — fun fact — has the world’s highest percentage of redheads with about 13% of the populace. Speaking of numbers, nearly one out of every four overseas visitors to the northernmost country of the United Kingdom arrives from the U.S., according to VisitScotland ( visitscotland.com ).

So, with that in mind and knowing how much we Yankees love an underdog story, let’s ponder highlights of a perfect six days exploring the Lowlands through an American’s eye — taking roads less traveled while taking in rolling hills, gentle valleys, rugged coastline and quaint towns each more gorgeous than the next.

Breezing through Edinburgh Airport, you shuttle to the city’s newest major hotel. The 244 rooms of the W Edinburgh, the first in Scotland for the upscale brand, are spread across three buildings, and yours is in the 12-story tower that sticks out from the traditional architecture around it. Mixed as the opinions are over the building’s “walnut whip” roof, staying at a hotel topped with a giant chocolate swirl comes in handy when finding your way back after a day of sightseeing by foot. Nestled in the heart of the newly trendy St. James Quarter, the W ( marriott.com ) is within walking distance of every must-see in the city center. Refreshed from down time in your gadget-happy suite, you’re ready to see just how perfectly located your hotel is. (Rates for a standard room start at $371 a night.)

Hoofing it to Edinburgh Castle, the city’s most iconic landmark, offers a lesson in 3,000 years of history at the site of ghastly battles dating back to the Iron Age. You could spend an entire day here, but an afternoon date with some bottles of booze have you leaving the castle for a quick visit to the nearby National Museum of Scotland and its countless artifacts.

A time check of 3:30 p.m. has you scurrying to the Scotch Whisky Experience ( scotchwhiskyexperience.co.uk ) for a pre-purchased tour that explains how single-malt Scotch whisky is made, but, oddly, not in the setting of a working distillery. It’s a trade-off because what you do get being in a purpose-built facility is the world’s largest collection of Scotch whisky, a breathtaking visual for the core audience, and a store with a whopping 450 types of the signature stuff. Nearly as impressive is that the prices are actually fair, but you know when to say when with your purchase of potent potables. Plus, there’s more walking to do and those bottles are heavy.

Window shopping along famous Princes Street leads to a short hike up Calton Hill for stunning sunset views. Being a Harry Potter fan, you check off Victoria Street, J.K. Rowling’s inspiration for Diagon Alley, and other sights around town believed to be connected to the global sensation.

Meandering in the direction of the W, you pop into one of many intriguing restaurants for dinner. It’s a quick one as the jet lag you’ve been fighting since seeing the “Welcome to Scotland” sign at baggage claim is finally winning.

Of course, you order the “Scottish Breakfast” at the W’s Sushisamba restaurant, which by night serves up a fusion of Japanese, Brazilian and Peruvian flavors. Your cardiac-challenging platter comes with haggis, Lorne sausage, grilled back bacon, fried eggs and black pudding, which you know as blood pudding. You also are aware that haggis is banned in the States as the USDA frowns upon ingesting stomach fluids from slaughtered livestock. Despite sheep lungs being a key ingredient in haggis, you give it a nibble and realize that this Scottish staple isn’t half baaaad.

After check-out, you walk with your luggage to busy Edinburgh Waverley Train Station. A comfortable, hour-long ride on the Borders Railway terminates at Tweedbank, and you take the public bus to Abbotsford ( scottsabbotsford.com ), former home of 19th century novelist and poet Sir Walter Scott. The estate is so extraordinary, you add “Ivanhoe” and “Rob Roy” to your reading list.

Relying on mostly taxis and hired drivers for the rest of the trip — the countless roundabouts, alone, make driving on the left side not worth the risk — you transfer to Schloss Roxburghe ( schlosshotel-roxburghe.com ) for two fairy-tale-like nights at this luxury countryside escape in the heart of scenic Scottish Borders. A tasty welcome with champagne and canapes is followed by a stroll around the historic property. On the sprawling resort surrounded by rolling hills and flowing rivers are 130 units (52 of them cottages), a championship golf course and other sporty activities, a Finnish-inspired spa, and nooks aplenty to enjoy libations made with the handmade gin created from botanicals sourced on the estate.

Wisely deciding to spend the day here, just as the Duke of Roxburghe often did in a past life of the picture-perfect property once owned by him, you book fishing, archery, croquet and clay shooting with the resort’s country sports manager. A few minutes later you pinch yourself in disbelief you’re staying where someone actually has the title of country sports manager.

A full day of activities and therapeutic R&R has you hungry for a night topped with “Scottish bistronomy” at the new, on-site Charlie’s. From the venison and pigeon to the scallops and ham hocks, the restaurant’s estate-to-plate approach pleases the senses.

A yummy buffet breakfast at Charlie’s coupled with an early checkout and on-time hired driver, found on VisitScotland’s website, make for a great start to what promises to be a long, but great day. Appropriately, the first stop is The Great Tapestry of Scotland ( greattapestryofscotland.com ) in the Borders town of Galashiels. On permanent display here since 2021 is the story of Scotland’s history, heritage and culture as told through 160 linen panels hand-stitched by over 1,000 nimble-fingered volunteers.

Leaving the 155 miles of driving to someone else today allows you to make a pitstop at the Moffat Distillery ( moffatdistillery.com ), where an American-born proprietor and her English husband are making a go making wood-fired whisky and gin. Tours and tastings — their blended-malt scotch is a winner — are conducted daily.

After traveling along what motor enthusiasts deem as the most drivable roads in the U.K., passing adorable villages and where ferries to Northern Ireland run back and forth day and night, you come up to the electronically gated entrance of your five-star home for the next two nights. One mile beyond — and one mile off Scotland’s western coast — is Glenapp Castle ( glenappcastle.com ) in the bonny Ayrshire countryside. Built in 1870, this prime example of Scots baronial, an architectural style of 19th-century Gothic Revival, has 17 luxury units (as low as $419 a night) and a 4,500-square-foot, four-bedroom penthouse that sleeps eight and starts at $4,000 a night. The 36 acres of perfectly manicured gardens, lush woodland and stately structures have hosted dignitaries from Churchill to Eisenhower, and since you’re sleeping like a VIP and got a classy bagpiper welcome, you might as well eat like one, too; dining at Glenapp is an experience fit for royalty.

Leaving the castle for a day of sightseeing had better be worth it, and it is at the very start thanks to the adorable namesake animals at Kitchen Coos & Ewes ( www.kitchencoosandewes.com ). Getting up-close and personal with the iconic Highland coos and their sheepish pals is a treat, as are the traditional homemade breakfast and lunch that come with the more in-depth tours of this working farm. Next on the schedule is a much different tour up the coast in Alloway; Robert Burns Birthplace Museum pays tribute to Scotland’s favorite son, whose poetry and songs are beloved worldwide. That includes one sung every New Year’s Eve, at least in days of auld lang syne. Despite the museum’s name, Burns’ actual birthplace is a tiny room in a cottage located at another site a 10-minute walk away.

Dinner is in nearby Troon, specifically at The Rabbit restaurant inside the new, 89-room Marine Troon ( marineandlawn.com/marinetroon ), a destination hotel that prides itself as “representing the nexus between land and sea, sport and soil, and man and nature.” Burns might have done better, but one thing that can’t be improved is the Old Course of the adjacent Royal Troon Golf Club. Perhaps one day you’ll return to play 18 here, but for now you behold what you can of links that will host the 152nd Open Championship in July, the 10th time the hallowed course will have this honor.

You’ve had fun storming the castle for two exquisite days, and now it’s time to return to reality — but not through Edinburgh this time. On the way to Glasgow Airport, a more hectic, but closer option from the west, the art lover in you prompts a visit to The Burrell Collection ( burrellcollection.com ). This Glascow gem houses more than 9,000 pieces spanning 6,000 years of history, and if it weren’t for a plane to catch, you could see yourself spending more than the two hours already given.

But the Burrell Collection isn’t the only place you didn’t get your fill over these six amazing days in the Scottish Lowlands. With luck and a replenished travel budget, you hope to return, and soon. Or as the old Scottish saying goes, “haste ye back!”

Serving classics such as avocado toast, pancakes and smoothie bowls, Hula Juice Bar is popular among locals and tourists alike. It's a must if you’re craving a great smoothie, juice or a healthy brunch.

Find a snack at Edinburgh’s favourite market

While Scotland may have a bad reputation for its bright orange Irn-Bru soft drink and deep-fried Mars bars, the country also has a wide range of healthy and organic food. Edinburgh does this particularly well with farmers markets scattered across the city, as well as its cheesemongers ( I.J. Mellis is a must visit) and delis ( Valvona and Crolla is the best and is also Scotland’s oldest deli).

Head to Stockbridge market on a Sunday to find an assorted variety of fresh produce and international cuisines. Pick up a coffee or tea from the Bearded Barista or Betea to sip while you browse the stalls. Make sure you admire the fresh pasta, try a sample of jam or chutney, then wander over to one of the stalls selling hot food, including paella and Japanese food. You can also pick up bread, cheese, fish and meat for a light dinner or lunch.

A cozy lunch at Fettle

A spot popular with students thanks to its location right next to the University of Edinburgh, Fettle serves delicious, warming soup and huge sandwiches made with freshly baked focaccia.

The staff are friendly and helpful and will help you decide on your sandwich from their wide selection, including vegan and vegetarian options. They also serve a range of salad bowls, baked goods and smoothies. Take a seat in the window to people watch or if you manage to catch a rare moment of sun, enjoy your lunch outside.

Stop for a drink at a Scottish pub

For a drink at a typical Scottish pub, head down to Leith, a port district to the north of Edinburgh. Of the pubs in Leith, Teuchters Landing is a cut above the rest. It serves traditional Scottish food, including haggis and neeps and tatties (rutabagas and potatoes), as well as locally brewed beer and whisky. If you venture through pub's tightly packed rooms, you can reach a floating pontoon on the port outside, the perfect spot to sit on a sunny day.

If you’re more of the wine and cocktail type, Jackson the Tailor is a speakeasy cocktail bar that isn’t as popular and crowded. They serve a range of interesting and fun cocktails, made by the helpful and friendly staff who will be more than happy to advise you on what cocktail will suit your tastes.

Enjoy dinner at the Wee Greek Kitchen, a local favorite

Edinburgh has no end of delicious options for dinner, and when I was first brainstorming this list I had five that I just couldn’t decide between. Edinburgh is a great place to visit for its array of international foods . While there are good restaurants that serve Scottish classics, the internationality of the city means it also offers brilliant Indian, Italian, Thai and Mediterranean options.

In the end, I've picked what I think is one of the best off-the-beaten track restaurants in Edinburgh. Nestled to the south of the city, in a mainly residential area, is the Wee Greek Kitchen . Owned and run by Spiros, who is also an artist, the restaurant is small and cozy with only about 10 tables, making it perfect for an intimate meal.

The food is delicious and includes classics such as prawn saganaki, moussaka and baklava served alongside Greek wine and perfectly made Greek style coffee. The menu is small, but that just means that each dish is perfect. The food is also always served with a smile from a friendly face. The restaurant also hosts events including Greek music nights and art exhibitions.

A trip to Edinburgh calls for a glass of Scotland's drink of choice. Scotch whisky is a malt or grain whisky and has to be made in Scotland to be called "scotch whisky." The first knownmention of the drink was in 1494, and it has been Scotland’s favorite since.

Visiting a distillery is a great experience regardless of whether you try whisky or not!

Must-try activity

Edinburgh, and Scotland, is well known for its whisky . There are whisky tours and tasting sessions scattered across the city. Some better than others, but if you head down to Leith, you’ll find the Port of Leith Distillery . The UK's first vertical whisky distillery, it has only been open since October 2023 and occupies a spot right by the sea.

With an aim to make whisky more accessible, it provides 90 minute long tours for just £26 which cover the history of the company, how whisky is made and even include a tasting. If you need more whisky after your tour, the top floor of the striking nine-story building hosts a bar which serves up an array of whisky, cocktails and small plates, all with the backdrop of a panoramic view of the city and sea.

In Scotland, we spell this without the 'e'.
