Tsuruko Hanzawa: the Japanese tea ceremony master living like a single flower

It all started with an NHK documentary titled “Tsuruko’s Tea Journey,” a 50-minute program I watched on YouTube one weary evening when I just wanted something frivolous. The documentary followed Tsuruko Hanzawa, a chaji (tea ceremony) caterer in her 70s who took a road trip around Japan serving ceremonial food and tea to people she met along the way.

“What great skin she has,” I thought to myself when Tsuruko first appears on screen tending to her garden like a gentle Mother Nature.

But as the program chronicles the highs and lows of her personal pilgrimage, I begin to see a woman who is not just a poster girl for graceful ageing. She is also incredibly authentic and present with every person that she meets. One scene in particular stuck. Tsuruko visits a Buddhist high priest after being discouraged by her physical limitations doing this form of “travelling chaji, ” and tearfully confides to the priest that she is “a complete wreck.” She wonders how she would do chaji in the spirit of Sen no Rikyu (an influential 16 th century Japanese tea master), and the priest gently tells her, “You can learn from Rikyu’s life, but think more about how you should live your own life. Think of being a single flower and live like that. Embrace what each situation, what each place, has to offer.”

Tsuruko beams at his advice. It is a light bulb moment for her, and as for me, a viewer who was initially more interested in just admiring aesthetically-pleasing footage of food and tea.

“If I think how beautiful a flower is, just as it is, I should be able to travel with a light heart,” she muses.

After the show, I promptly share the link to “Tsuruko’s Tea Journey” on my Facebook page.

“What a lovely documentary ruminating on life and nature. You don’t have to be a tea drinker for this!” I write in the post.

A few months later, a friend who had clicked on that Facebook link told me that he was so moved by the documentary that he and another friend had actually gone to Japan to ask her to come to Singapore to hold two chaji events here.

“Would you like to meet her?” he asked.

This is how I end up accompanying Tsuruko Hanzawa around Singapore for a week last month.

Singapore is the first Asian country that Tsuruko has traveled to and everything to her is something to be savored. Every meal is full of her declarations of “Oishi!” (delicious), but not before she astutely dissects all the ingredients used in the dish and the preparation method.

While going around Singapore to shop for ingredients for the chaji events, she walks briskly and purposefully, nodding her head every so often. While at a local wet market, however, she lingers at the fish stall, cooing over the rows of fish laid out on ice.

“I prefer fish to men. They call out lovingly to me,” and then she winks.

There are other endearing moments, like when she advises us in the Ladies to reapply lipstick after every meal (“Don’t give up looking pretty even when your skin is drooping!”), or when she wants to show off how she can balance a water bottle on her head standing on one leg. After a fishmonger of a Japanese supermarket tells her he can supply her the sashimi cuts she has requested for, she clasps both his hands and gleefully jumps up and down like a little girl. And whenever someone gives her a present, she bows to receive it, and wipes away tears of joy. Her heart is like an open book, and I wonder if it’s this unquestioning child-like delight that keeps her so energetic and youthful.

As the chaji events near, Tsuruko’s mood shifts. She still smiles and slaps us playfully, but often whips out her notebook to quietly scribble. Though it is just two dinners with 15 guests per session, the elaborate nature of chaji means that there is much to consider when it comes to ingredients and equipment. She is constantly adjusting the menu as she comes to term with Singapore’s hot and humid weather. Tsuruko does not know how rapidly certain foods go bad here and about 20% of what she and her team buy at the markets has to be trashed just a day before the events. She holds early morning meetings with her staff and students to present new menu ideas and tells us they are complaining to her about these last-minute changes.

“But you have to be flexible with chaji . Accidents are not something you should be upset or sad about. They are challenges given by the gods, and these experiences make us more knowledgeable. It is, in a way, a blessing in disguise,” she says.

I attend Tsuruko’s second chaji dinner in Singapore. The eight-course meal is a resplendent affair with delicate Japanese autumn cuisine fused with local ingredients served on ornate lacquerware from her personal collection.

The highlight of the evening, however, is the tea ceremony itself, and it is here where Tsuruko, though slightly worn at this point after several long days and sleepless nights of preparation, truly shines.

“All the food you’ve had before this is just meant to pass the time while waiting for the water for the tea to heat up. It is the tea that is the most important part of the chaji ,” she explains as she elegantly lifts the long wooden ladle to scoop water into her tea bowl. From there, she whisks up koi cha – thick green tea – into a rich emerald froth before serving it to the guests.

“The most important part about tea is the water,” she continues, “and without water, there would be no life. Tea reminds us of this miracle about being able to live in this moment, and how we are all connected and should take nothing for granted. Through tea, we are thankful.”

On her last day in Singapore Tsuruko is busy packing with her team but because a documentary crew is also filming her during this trip to Singapore, she politely obliges with an interview which I sit in for. When asked about her thoughts about the chaji events in Singapore, she becomes serious and talks in detail about the many ways she feel she could have done better.

“There were new challenges I faced doing chaji in Singapore. But I cannot make excuses. Perhaps this is why I have been doing chaji for over thirty years – it always reveals my imperfections. I am always humbled.”

Likewise, I am humbled to have been able to witness this remarkable 75-year-old woman working so joyously and diligently at her craft. It’s not often that someone who touches you on screen is actually someone you meet in real life who leaves a transformative touch. The week with Tsuruko may have been a fleeting moment in time, but she remains, to me, an unforgettable blossom.

Nice of you to share this latest kicks-tarter magazine Tea Journey; I recognized noted tea figure James Norwood-Pratt; where I live when I walk downtown there is a Norwood insurance place adjacent to where we bank; so at times I am reminded of that name in two different ways; as a city in Massachusetts and as the last name of a famed tea person. Again, lovely news Sarah. Long may Tea Happiness thrive.

I am also amazed with those people who has great knowledge about tea. I read a blog about tea, where in it significantly discuss the importance of the mountain height of where tea being farmed.

Start Your Tea Journey: Making Tea Personal

There is an old Chinese proverb that states: ‘Even if one studies tea until old age, one can never know all of the possibilities’. Initially this saying can be interpreted that tea as a plant can never be mastered; it is a product that has so many facets that you might never get to experience it fully. While this may be true, it is not a solemn statement; the nature of the plant is that it is not meant to be mastered but to be experienced and enjoyed. This proverb describes the expansive nature of the tea plant and gives a glimpse of all of the variations that currently exist and will continue to grow over time. Camellia Sinensis , the Tea Plant, has thousands of variations created through the cross breeding of seeds and the myriad effects environmental conditions play in the growth of the plant. When starting your exploration of tea, instead of letting the variety overwhelm your process, let the endless possibilities excite you.

In the exploration of the current world of tea, there will be lots of information provided by manufacturers, tea sellers, the internet, and even self-identified tea masters who teach classes on the product and its benefits. As the proverb states, throughout a lifetime you will come across many possibilities; options of where to buy your tea, which cultivars to try, the season of production, and of course the process you utilize to prepare and consume your tea leaves.

All of these things will have options within themselves, especially when it comes to preparation. Most companies will provide instructions on how to prepare specific teas based on their knowledge and experimentation with the product. As long as you are purchasing from a trusted and credible source, there is nothing wrong with trying their recommendations, and you will want to at first until you get to know the product.

However, with a product so mysteriously complicated, why would you want to stop there? This is the essence of a Tea Journey: the exploration of the product beyond what is recommended, and attending to it in a way that allows you to discover your own preferred tastes, concoctions and a process that truly brings you joy. 

In your Tea Journey process, keep in mind three important points;

Tea is a plant that can never be mastered; it must be enjoyed and experienced.

Utilize the recommendations and knowledge of your sources as a reliable way of initially testing the product

Korean Jeju Island Citron Tea Recipe: A Zesty Journey

Embark on a sensory voyage to the picturesque Jeju Island with each sip of this vibrant Korean citrus tea. My fascination with this elixir began after a friend, who had just returned from a trip to Korea, shared a jar of the original Jeju citrus preserve with me. The first time I tried to recreate it, I underestimated the importance of balancing sweetness with the inherent tartness of the citrus. It's a delicate dance, one that I've since mastered through trial and error. This recipe is my homage to the traditional Korean Yuja-cha, using the unique Jeju citrus fruits for an authentic taste of the island's natural bounty.

My initial attempts were clumsy, resulting in either an overly sweet concoction or a brew so tart it made my eyes water. But as I refined the process, I discovered the secret lay in the gentle simmering of the fruit and the precise ratio of honey to citrus. Now, after numerous tastings and adjustments, I've perfected this Jeju Island citrus tea recipe, a soothing, honeyed beverage that warms you from the inside out. Let's create this comforting tea together, a perfect blend of tangy and sweet, with a whisper of ginger's warmth.

Ingredients

The main ingredients for the recipe, fresh Hallabong and Cheonhyehyang citrus fruits, raw honey, ginger, and water, are arranged

  • Jeju Island citrus fruits (Hallabong and Cheonhyehyang) — 3 of each, thoroughly washed
  • Raw honey — 1 to 1 ½ cups, depending on desired sweetness
  • Fresh ginger — 3-inch piece, peeled and thinly sliced
  • Water — 4 cups
  • Pine nuts — a handful for garnish (optional)

  • Begin by slicing the Jeju citrus fruits into thin rounds, discarding any seeds you encounter. The beauty of this tea lies in the visual appeal of the citrus slices suspended in the honeyed liquid, so aim for consistency in thickness. I learned that slicing too thick can result in an underwhelming infusion of flavors, while too thin can make the fruit disintegrate during the preservation process.
  • In a large pot, combine the water and ginger slices. Bring to a gentle boil, then reduce the heat and simmer for about 10 minutes. This step is crucial as it allows the ginger to impart its warmth and subtle spice to the water, creating a base that complements the citrus without overpowering it. In my early trials, I added the ginger directly to the preserve, which resulted in an overly pungent ginger flavor that dominated the delicate citrus notes.
  • After simmering, remove the pot from the heat and let it cool slightly. Strain out the ginger pieces and return the ginger-infused water to the pot. The straining is a step I once overlooked, leaving me with a tea that was texturally unpleasant. The goal is a smooth, comforting drink where the citrus can shine.
  • Add the honey to the ginger water, stirring gently until it dissolves completely. The amount of honey you use can be adjusted to taste, but remember that the citrus will also contribute its natural sugars. I've found that starting with less honey and adding more as needed allows for greater control over the sweetness level.
  • Now, carefully place the citrus slices into the honey and ginger mixture. Over medium-low heat, let the mixture come to a gentle simmer. The key here is not to boil the fruit, as high heat can cause bitterness and destroy the fresh, zesty flavor we're after. Simmer for about 20 minutes, or until the citrus peels become slightly translucent. This slow infusion is a technique I refined over time, ensuring that the citrus releases its essential oils and juices into the syrup, creating a harmonious blend.
  • Once the citrus slices are poached to perfection, remove the pot from the heat and allow it to cool completely. The cooling process is as important as the simmering, as it gives time for the flavors to meld together. I've rushed this step before, only to find the flavors hadn't fully developed.
  • Transfer the cooled citrus tea into a sterilized jar, ensuring the slices are submerged in the syrup. Seal the jar and refrigerate for at least 24 hours before using. This resting period allows the citrus to further infuse the syrup, and I've noticed that the longer it sits, the more pronounced the flavors become.
  • To serve, spoon 2-3 slices of the citrus along with the syrup into a cup and pour hot water over them. Stir gently to combine. If desired, garnish with a few pine nuts for a traditional Korean touch. The pine nuts float on the surface, adding a textural contrast and a hint of nuttiness that complements the citrus beautifully.
  • Jeju Island citrus fruits — If you can't find Hallabong or Cheonhyehyang, you can substitute with a combination of oranges and Meyer lemons. The flavor will be slightly different, but still delicious. I've used this substitution when Jeju fruits were out of season and was pleased with the results.
  • Raw honey — For a vegan option, agave syrup or maple syrup can be used in place of honey. These alternatives bring their own unique flavors that can add an interesting twist to the tea.
  • Spiced citrus tea — Add a cinnamon stick and a few cloves to the ginger water for a spiced version. The warm spices introduce a cozy complexity that's especially welcome during the colder months.
  • Herbal infusion — A sprig of fresh rosemary or thyme added to the simmering citrus can impart an aromatic herbal note that's surprisingly refreshing.

  • Sugar-free — For those avoiding sugar, a sugar-free sweetener like stevia or erythritol can be used. Keep in mind that the consistency and flavor will be altered, so adjust the quantities to your preference.
  • Sharp knife and cutting board
  • Fine mesh strainer
  • Sterilized glass jar with lid
  • Measuring cups and spoons
  • The citrus tea preserve can be stored in the refrigerator for up to 2-3 weeks. The flavors will intensify over time, so each cup of tea will be a new experience. I've found that the preserve never lasts long in my house, as it becomes a daily indulgence.
  • To enjoy the tea warm, simply add hot water to your desired amount of citrus preserve. There's no need to reheat the preserve itself, as the hot water will warm the citrus slices and meld the flavors perfectly.
  • Preserve texture — To maintain the best texture of the citrus slices in the preserve, avoid boiling them vigorously. A gentle simmer is all that's needed to infuse the honey syrup with the essence of the fruit.
  • Slice uniformity — Use a mandoline slicer for perfectly even citrus slices. Uniform slices not only look more appealing but also ensure that each piece of fruit infuses the syrup at the same rate.
  • Sterilization — To prevent any bacterial growth and to extend the shelf life of your citrus tea preserve, make sure to use a sterilized jar. You can sterilize jars by boiling them in water for 10 minutes or by using a dishwasher with a sterilize setting.

  • 1 to 1 ½ cups Raw honey depending on desired sweetness
  • 3-inch piece Fresh ginger peeled and thinly sliced
  • 4 cups Water
  • 1 handful Pine nuts for garnish (optional)

  • Begin by slicing the Jeju citrus fruits into thin rounds, discarding any seeds you encounter.
  • In a large pot, combine the water and ginger slices. Bring to a gentle boil, then reduce the heat and simmer for about 10 minutes.
  • After simmering, remove the pot from the heat and let it cool slightly. Strain out the ginger pieces and return the ginger-infused water to the pot.
  • Add the honey to the ginger water, stirring gently until it dissolves completely.
  • Carefully place the citrus slices into the honey and ginger mixture and simmer over medium-low heat for about 20 minutes, or until the citrus peels become slightly translucent.

Buddies Cafe in Ooty. This cafe is the largest tea room in India, which features over 220 varieties of tea: artisanal and hand-crafted single-origin teas, orthodox blends, tisanes, and CTC dust. When I first entered the cafe, Nirmal Raj stood next to a wall of transparent glass tea canisters and opened them enthusiastically to allow customers to inhale as he spoke animatedly about each tea. After leaving my non-heated hostel, I chanced upon the cafe, searching for a warmer place to write from. As a shoestring budget backpacker, I had traveled to the Nilgiris tea-growing region on an overnight bus from Bengaluru, India, and soon found myself returning daily to Buddies Cafe.

More than 900 Black women and nonbinary actors have condemned the racist backlash targeting actress Francesca Amewudah-Rivers, who is set to star in a London West End production of “Romeo & Juliet.”

Following the announcement of Amewudah-Rivers being cast as Juliet opposite actor Tom Holland’s Romeo, she was quickly met with online hate and an outpouring of racist comments. In response to the online harassment, hundreds of Black performers signed a letter of solidarity this week criticizing the digital abuse and extending their support to Amewudah-Rivers and other Black female performers who have endured harsh criticisms . 

“The racist and misogynistic abuse directed at such a sweet soul has been too much to bear,” the letter said. “For a casting announcement of a play to ignite such twisted, ugly abuse is truly embarrassing for those so empty and barren in their own lives that they must meddle in hateful abuse. Too many times, Black performers – particularly Black actresses – are left to face the storm of online abuse after committing the crime of getting a job on their own.”

Actress Susan Wokoma (from “Enola Holmes”) and playwright Somalia Nonyé Seaton (“Crowning Glory”) spearheaded the creation of the open letter, which has nearly 900 signatures from distinguished entertainers. Lashana Lynch (“No Time to Die”), Sheila Atim (“The Woman King”), Marianne Jean-Baptiste (“Secrets & Lies”), Lolly Adefope (“Ghosts”) and Freema Agyeman (“Doctor Who”) are among those who signed the agreement.

Last week, the “Romeo & Juliet” producer, Jamie Lloyd Company, released a statement responding to the negative reactions, pleading for the critiques to end. At that time, the company statement did not name Amewudah-Rivers as the subject.

“Following the announcement of our ‘Romeo & Juliet’ cast, there has been a barrage of deplorable racial abuse online directed towards a member of our company,” the statement read. “This must stop.”

Amewudah-Rivers’ past credits include appearing in the BBC series “Bad Education” and three short films. Her theater experience consists of “Macbeth,” “Antigone,” “Othello,” “Animal Farm” and “Ordinary Miracle.”
