A small blue cow with a line running through it indicates a lactose-free option. If a dish has both vegetarian and lactose-free symbols, it is most likely vegan. What are my late-night options?

On a cruise with Celebrity Cruises, you’ll enjoy extended room service to quell your late-night cravings. Below, we’ve vetted each cruise line’s food based on many factors, including customer reviews. And as you know, customers usually don’t hold back when reviewing a meal! This list should help you narrow down your options and choose the cruise with the best food for both your palate and budget.

The Cruise Lines with the Best Cuisine

The cruise lines on this list not only have the best cuisine, but their service and atmosphere are top-notch as well. Combined, you have every element you need to make your dining experience onboard an unforgettable part of your trip.

Carnival Cruise Line

Carnival Cruise Line is one of the highest-ranked cruise lines overall, providing excellent customer service and giving passengers a ton of value for their money.

It makes sense, then, that the restaurants aboard their ships are plentiful and staffed with super-friendly servers. The cruise line boasts a whopping 42 different dining options , over half of which are included in the passage cost.

Each ship houses between 20 and 30 of these food establishments, with a range of included and additional options. Whether you’re looking for a casual place to grab a quick bite or a more formal sit-down affair, Carnival has got you covered.

Regular vacationers know that one of the largest expenses on any trip can be the food, but on Carnival ships, you’ve got many included options to choose from; the following is just a small sampling:

Shaq’s Big Chicken: fried chicken, sides, breakfast
Lucky Bowl: casual healthy Asian fusion
Guy’s Burger Joint: burgers and fries

Naturally, their restaurants are first-rate as well, with a mix of classic and contemporary dishes served in classy settings.

Celebrity doesn’t stand up to Carnival as far as the number of options goes, with only two dozen restaurants in total, and up to a dozen per ship. But each one features menus crafted by Michelin-starred chef Cornelius Gallagher, so you’re definitely not going to go hungry.

In fact, only two restaurants on Crystal’s dining list incur additional fees, and even those offer each passenger one initial complimentary meal.

Known for providing a luxurious cruise experience with minimal passenger crowding, Crystal knows how to take care of their passengers.

The Classic Dining Room: a variety of options cooked in the French style

3. Seabourn

This luxury line’s small ship size means stellar service is always just a snap away (figuratively speaking, of course - you shouldn’t actually snap at servers). What’s more, Seabourn offers intimate and exclusive market tours in select ports with the chef, called Shopping With the Chef, where interested passengers can get an inside glimpse on the market process and even walk away with some scrumptious recipes. Seabourn’s collaboration with Michelin chef Thomas Keller has led to some deliciously revamped American cuisine at The Grill ( Seabourn Ovation ), and the Restaurant 2 also receives consistently high praise.

Where to eat onboard: Restaurant 2 is a must-try mainstay, where discerning foodies can sample foie gras creme brulee, lobster ravioli, and duck confit.

2. Silversea Cruises

While this luxury cruise line’s Relais & Chateaux L’Ecole des Chefs cooking cruises are honestly enough to warrant a solid second place alone, Silversea offers even more. The renowned cooking school at sea is offered on around 10 select sailings a year, with passengers able to partake in knife skill courses, baking lessons, and sauce preparation, as well as market tours and 6-course onboard meals complete with wine pairings. Plus, despite the small size of these intimate ships, there are around six to eight specialty restaurants onboard - all included in the fare. Feel like staying in? Order room service to be butler-served course by course.

Where to eat onboard: Le Champagne’s chic French fare is accompanied by white-glove service, and is a must for francophile foodies.

1. Crystal Cruises

Crystal Serenity and Crystal Symphony outshine the competition in large part because of the vast variety available to foodies on any Crystal cruise. Even the main dining room, Crystal Dining Room, is a mealtime masterpiece, with elegant decor and an innovative and indomitable menu.

Are you going on a cruise and wondering what food is included with your cruise fare? With the rise of specialty restaurants and different dining options on cruise ships, it can be confusing to know what to expect.

When I was new to cruising especially, I wanted to know what food was free on a cruise and what wasn’t, so I could plan and budget. Since dining is one of the best parts of cruising, this is something I still research before every cruise.

In this post I share what meals are included on a cruise and answer some frequently asked questions about cruise ship food. I also let you know what drinks are included on a cruise, as well as which drinks have an extra cost.

Is Food Included on a Cruise?

Most food is free or included on a cruise. This includes breakfast, lunch and dinner in the main dining room, buffet and some casual restaurants on the cruise ship. Alternative dining in specialty restaurants often has an additional charge and is not included in the cost of a cruise.

What Meals Are Included on a Cruise?

While every cruise line is different, all major cruise lines include a good variety of food. Breakfast, lunch, dinner, and even afternoon tea are offered daily.

You can opt to eat your meals in the main dining room, buffet, poolside grill and pizzerias on most cruise ships. In other words, you have sit down restaurant type options for dining, as well as very casual choices all free on a cruise.

There are some dining venues and specific foods not included on a cruise. I’ll share more information below.

Main Dining Room

The main dining room is open for breakfast, lunch and dinner on most days of your cruise. However, hours may vary, especially on port days.

Similar to a restaurant, the main dining room will have a variety of food on the daily or nightly menu. You can expect to find popular dishes, as well as vegetarian, vegan and low fat or healthier meal options.

If you have an allergy or food preference, it’s important to let the cruise line or your travel agent know when you’re booking. While cruise lines are very good at accommodating food related allergies and diets, knowing in advance will help them to ensure you are well cared for.

Cruise Ship Buffet

If you love a good buffet, cruises are known to have some of the best! Most cruise lines have a self serve buffet, while a few offer a full serve buffet.

Either way, there are a lot of choices for breakfast, lunch, dinner and snacks throughout the day at the buffet. You can expect to find roast meats and potato dishes, pasta dishes, indian food, vegetarian and vegan options, fruits and salads.

Casual Restaurants and Snacks

Most large cruise ships have at least a couple of casual restaurants and snack counters which are included. Some will be indoors in the atrium or promenade, while others will outdoors on the Lido Deck .

You can find pizza, burgers and hot dogs, tacos and other casual grab and go food included on a cruise. Cookies, pastries, soft ice cream and desserts are also available freely.

Many of these venues will be open during certain hours of the day.

Room Service

Room service is available on all cruise lines, however it’s not always free. While a few years ago most cruise lines offered free room service on a cruise, it now differs by cruise line.

Some contemporary cruise lines have a room service delivery charge at all times (about $5-8), while others offer free continental breakfast room service delivery in the mornings.

On premium cruise lines, such as Princess Cruises , Holland America and Celebrity, room service is available free or with a small charge when food is ordered during the late night.

What Food Is Not Included on a Cruise

While there are a lot of food and dining options that are included on a cruise, there are some meals that cost extra. In some cases there are extra charges for an additional lobster tail in the main dining room.

Most cruise ships have 2 or more specialty dining restaurants, which are not included.

As well, there are some foods that have an extra charge elsewhere on the ship. These may include chocolate covered strawberries and other “special” snacks, as well as some menu options in the main dining room.

Specialty restaurants tend to book up quickly, so if you do want to have a more intimate dinner, it’s best to make reservations early.

While there are some dining experiences that are offered at an additional charge, there is a great selection of food included on a cruise for both meals and snacks.

Can You Bring Food Back to Your Cabin?

If you don’t want to eat in the buffet or public area, you can take food back to your cabin and eat it there. At the buffet, you can make a plate with snacks or even a larger meal.

If you have kids, you may want to bring small milk cartons to keep in your cabin mini-fridge, along with some cookies for an occasional snack.

Most major cruiselines include water, unsweetened ice tea, lemonade or flavored punch, coffee and tea in the cost of a cruise.

Soda or pop, with the exception of Disney Cruise Lines and all-inclusive cruises, has an additional charge. Specialty coffee and premium teas have an extra charge, and alcohol is not included on a cruise.

Soda and other beverage packages are available and may be worth it on a cruise.

It’s full steam ahead for the cruise ship industry after Royal Caribbean hiked its full-year profit guidance on Thursday, saying it expects 60% growth from last year following record bookings during the first quarter.

Travelers are paying “record ticket prices,” according to Royal Caribbean — despite a recent spate of high-sea deaths and missing passengers reports, including a Florida 20-year-old who jumped off a Royal Caribbean cruise this month.

Soaring demand for vacations at sea has given cruise operators ample room to raise ticket prices as the industry looks to close the pricing gap between more expensive land-based holidays and give their profits a lift.

Royal Caribbean, which operates the Celebrity Cruises, now expects annual profits of between $10.70 and $10.90 per share, compared with its earlier forecast of $9.90 to $10.10.

“Our existing fleet along with our new ships continue to perform exceptionally well, highlighted by the market response to the launch of Icon of the Seas,” CEO Jason Liberty said.

Royal Caribbean’s shares — which have spiked 126% in the past year, were up 2% on Thursday morning, to $139.32.

“I remember owning the stock in 2022 and every client was giving me grief about it,” said Peter Ahluwalia, manager at Belinvest Global Equity Fund that holds Royal Caribbean stocks and chief investment officer at Swiss Partners Group. “We’re turning almost 45% return on equity at the moment, which is quite incredible.”

Overall, the industry which was among the hardest hit during the pandemic, is expected to grow to 39.4 million passengers in 2027 from 31.7 million last year, according to Statista.

The surge in demand comes amid major publicity blows from incidents at sea involving passengers who have gone missing, including the Florida man who jumped overboard on April 4 in front of his brother and father after a night of drinking.

Last December, a 41-year-old Royal Caribbean passenger went overboard on a cruise to the Bahamas. That followed an incident last August involving a 64 year-old woman sailing from Singapore to Malaysia on Royal Caribbean who is presumed to have jumped to her death .

On average, 19 people go overboard on cruise ships every year — and of those, only about four are rescued, according to a 2020 study commissioned by the industry trade group Cruise Lines International Association.

Royal Caribbean invited me to spend three complimentary nights on its new Icon of the Seas in January.
My eight favorite amenities included the waterpark and jazz bar.
I've yet to see most of the amenities on my list on other cruise ships.

There's a reason Royal Caribbean's new mega-cruise ship is only operating seven-night sailings .

The 1,196-foot-long, 20-deck Icon of the Seas is packed with bars, restaurants, and things to do. Any shorter of an itinerary, and you might not have time to experience all it has to offer.

If you're a frequent cruiser — especially with Royal Caribbean — amenities like the mini-golf course and water playground may not seem exciting.

But of all the activities the new world's largest cruise ship has to offer, my eight favorites are, for the most part, ones I've yet to see on another vessel.

Take a look at what made the cut.

<p>The twisting slides hang overhead like bright tree vines while children rapidly zig-zag around the course like their afternoon fun depends on it (it does).</p>

1. The six-slide waterpark

It wouldn't be a roundup of Icon of the Seas' best amenities without a mention of its waterpark.

Plenty of family-friendly cruise ships have waterslides, but few have six — or even one that requires a multi-person raft.

However, if you don't like the feeling of your stomach dropping, I'd advise skipping the 46-foot-tall drop slide.

<p>The adult-only suspended infinity pool has beds, in-water loungers, and unobstructed ocean views — perfect for your obligatory "hot dogs or legs" photo.</p><p>Even I couldn't resist sneaking a shot of the beach club-like alcove.</p>

2. The adult-only suspended infinity pool

The 7,600-guest Icon of the Seas has seven pools and nine hot tubs. As a kid-fearing adult, I loved the grown-ups-only suspended infinity pool.

I spent my time there perched at one of its in-water loungers, contently splashing my legs around the water, wondering if I actually hated cruises.

While I would've preferred a quieter atmosphere (the DJ did not, in fact, play smooth jazz), the pool's views, day beds, and lack of screaming children were hard to beat.

<p>While there, guests can step into a harness to traverse one of the ship's most adrenaline-pumping activities: Crown's Edge. Expect to dangle 154 feet above the ocean when the floor unexpectedly drops from under your feet.</p>

3. The Crown’s Edge thrill 'ride'

There's no need to grab coffee before harnessing up for the part-zipling, part-agility Crown's Edge course. You'll be jolted awake when the floor drops from beneath your feet, leaving you dangling 154 feet above the ocean before the zipline kicks in.

Unfortunately, it comes with two costs: $49 and a spike of anxiety.

4. The 'Wizard of Oz' and 'Aqua Action!' shows

If you hate cruise shows, Icon of the Seas could make you change your mind.

The ship's riff on Broadway-approved "Wizard of Oz" — 16-piece live orchestra and flying bed included — delighted me, a hater of most musicals.

For something less traditional, the semi-circle AquaDome theater hosts a compelling multi-disciplinary swim, dive, and aerial show reminiscent of Cirque du Soleil.

It's the first show-at-sea I've seen with a waterfall and nine-foot-tall robotic arms, and so far, it's one of my favorites.

5. The live jazz bar

Ya like jazz? So do I.

Icon of the Seas has plenty of live music venues — including rowdy karaoke and dueling pianos bars, if that counts. But if you're a jazz fan or looking for a peaceful nightcap, none of these options will top the live music at Lou's Jazz 'n Blues.

<p>The mega-ship's food hall wasn't nearly as diverse or exciting as the one on <a href="https://www.businessinsider.com/photos-review-new-11-billion-norwegian-prima-cruise-ship-2022-10">Norwegian Prima</a>.</p><p>But compared to the rest of my mediocre <a href="https://www.businessinsider.com/royal-caribbean-icon-of-the-seas-cruise-budget-upgrades-lobster-2024-4">meals on Icon of the Seas</a> — including dinner at a specialty restaurant — my complimentary pork pita wrap from the food hall's Mediterranean-inspired stall was admittedly pretty decent.</p><p>The <a href="https://www.businessinsider.com/cava-vs-chipotle-taste-test-comparison-2023-10">Cava</a>-like meal was balanced, succulent, and filling. Ending it with a strawberry nutella crepe from one of the vendors didn't hurt either.</p>

6. The customizable Mediterranean-style wrap at the five-stall food hall

The mega-ship's food hall wasn't nearly as diverse or exciting as the one on Norwegian Prima .

But compared to the rest of my mediocre meals on Icon of the Seas — including dinner at a specialty restaurant — my complimentary pork pita wrap from the food hall's Mediterranean-inspired stall was admittedly pretty decent.

I ate my way through a luxury cruise ship. There are 5 dishes I'm still thinking about months later.

I spent seven days eating on a luxury Virgin Voyages cruise ship.

The cruise ship offered over 20 eateries with menus crafted by Michelin-starred chefs.

My favorite dishes came from Pink Agave, Extra Virgin, and The Pizza Place.

Last summer, I sailed the Mediterranean Sea for seven days on a luxury Virgin Voyages cruise ship . The food was the best I've ever had on a cruise.

Every Virgin Voyages ship has the same 20 restaurants and eateries on board with menus designed by Michelin-starred chefs, according to the cruise line's website .

While some menus had special dishes for an additional fee, most of the food on board — and everything I ate — was included in the $5,900 ticket price.

Here are the best dishes I ate during the journey, from tacos and pizza to fresh pasta and doughnuts.

Living in NYC, I didn't expect to be impressed by the pizza during my cruise. But I was mistaken.

For lunch one day, I went to The Pizza Place, where you can build your own pie or select from their menu.

I went with the "Pretty Fly for a White Pie," which had mozzarella and ricotta cheeses, fresh garlic, and oregano.

It was just as good as the pizza back home, with a thin and crispy crust, gooey cheese, and fresh-tasting ingredients.

At Pink Agave, the pork tacos were so good I had them twice.

According to the cruise line, Pink Agave's menu was inspired by Mexico.

For dinner one night, I ordered the Cochinita Pibil , a traditional Mayan dish that originated in the Yucatán Peninsula in 400 AD, as Business Insider previously reported.

The dish was smoked pork marinated in achiote and topped with a sour orange habanero pico de gallo. It came with a side of corn tortillas for a build-your-own taco experience.

I hadn't heard of Cochinita Pibil before my cruise, but now, it's one of my favorite Mexican dishes. The pork seemed to melt in my mouth, and the pico de gallo was a refreshing touch to the otherwise hearty entrée.

I was so wowed by the flavor that I returned to Pink Agave once more to have them again before the end of my trip.

At the same restaurant, I loved the chocolate, caramel tacos.

Pink Agave was also home to my favorite dessert on the ship, Taco de Chocolate.

The shell was a Mexican chocolate cookie, and inside was dulce de leche cream. The caramel cut the bitterness of the chocolate, and the contrasting textures had me craving more.

So, when I returned to Pink Agave, I ordered them again.

At Extra Virgin, I had fresh pasta.

Extra Virgin is an elegant, Italian-inspired Virgin Voyages restaurant.

I ordered pappardelle al ragù with pork and beef bolognese. I've had this popular dish at various restaurants, but this rendition stood out because it was made with fresh pasta .

The pappardelle was lighter and chewier than my previous experiences, which I preferred. And there was just the right amount of sauce not to overpower the flavor of the pasta itself. I didn't feel overstuffed after my meal, as I often do when eating pasta.

At the same restaurant, I had fancy doughnuts for dessert.

For dessert, I ordered the ricotta bomboloni. It came with four sugar-topped doughnut holes made with ricotta and two dipping sauces — vanilla mascarpone and a black currant compote.

With a dollop of each sauce, the doughnuts tasted like fried cheesecake. It was the perfect combination of sweet, creamy, and tart. And the sugar crystals on top added an extra layer of texture.

Carnival's buffet on the Lido Deck has all the staple stations to keep you fed from morning until night. Try the deli counter, barbecue spot, pasta bar or Asian noodle station. Don't miss the always-essential salad bar or pizza station. Finish up with soft serve ice cream, frozen yogurt or an enormous cake slice and other goodies from the dessert station.

No cruise experience is complete without on-demand soft serve. Open on the Lido Deck until midnight, the Swirls station serves up frozen yogurt and soft serve ice cream in the classic flavors of vanilla, chocolate and strawberry, or you can enjoy your own combo swirl. The best part is it's self-serve, so no one can judge you for how often you come back for another cone.

The Chef's Table

Fixed price; dinner

This exclusive multicourse dining experience hosted by the ship's master executive chef takes place in untraditional spaces like the galley or library to give you a behind-the-scenes VIP feel. (Some newer ships even have a dedicated Chef's Table dining room with a window into the galley.) You'll be part of a group of only 14 to 16 guests, and the evening kicks off with cocktails, hors d'oeuvres and a tour of the galley. The dinner menu itself changes based on what's in season or local to the port, but it always includes wine pairings and, of course, dessert.

24-hour room service

A la carte; all-day dining

When hunger calls at odd hours of the night or you're craving a meal from the comfort of your balcony, you can access 24-hour room service on your Carnival cruise ship. Just pick up your cabin's phone and place your order. While room service is generally only available for a cost, Carnival does offer free continental breakfast delivery to your room from 6 to 10 a.m.

Pizza delivery

You can order pizza on the Carnival Hub app to wherever you are on the ship, any time of day, for a delivery fee of $5 per pie. Pro tip: Take a picture of yourself showing where you're located on board to help the pizza delivery staff find you.

Pizzeria del Capitano or Pizza Pirate

The all-day pizza station is going to be your go-to option when you get back from a day at port and the lunch buffet is already closed or when you're hungry after a late night of partying. Choose from five prepared pizza options, ranging from classics like margherita and pepperoni to other delicious Italian favorites like funghi and prosciutto. Order a slice or get a whole pie delivered through the Carnival Hub app.

On Carnival Jubilee , Cucina Del Capitano is free for the whole sailing. On Carnival Celebration and Mardi Gras, your first meal is included, with additional visits at a cost of $8 per person. The other ships with this venue currently charge a fixed price of $24 per adult.

The crispy chicken sandwich is a food fad that isn't going away anytime soon, and Carnival's chief fun officer Shaquille O'Neal is the face behind this new chicken spot on the latest Carnival ships. Here, you can find everything chicken — chicken sandwiches, crispy chicken strips and fried chicken baskets (even chicken biscuits at breakfast!) — plus essential sides like potato salad and jalapeno slaw.

Bonsai Teppanyaki

This Japanese hibachi-style restaurant is part meal and part performance, as your chef prepares your lunch or dinner at the griddle-top table in front of you. A modern Chinese-Mexican fusion concept, Chibang! is a specialty restaurant without the specialty prices. That's right, dining at Chibang! is free all sailing long for guests on Carnival Jubilee; on Carnival Celebration and Mardi Gras, your first meal at Chibang is included and additional visits are only $8 per person. At lunchtime, you can order your own noodle bowl or burrito bowl (which makes it a great spot if your group has separate cravings), or at dinner, mix and match between cuisines and choose shareable plates for the table or order classic Mexican and Chinese mains.

How do seating times work in the main dining room?

Before sailing, you must choose your preferred dining format for the main dining room — either set dining times with assigned seating or a flexible option called Your Time Dining with open seating. If you prefer a preset dining time and a guaranteed table with the same server every night, you can choose early dining at 5:30 p.m. or late dining at 7:45 p.m.

With Your Time Dining, you can go to the main dining room anytime between 5:15 p.m. and 9 p.m. to be seated on a first-come, first-served basis. Just alert the dining room that you're coming on the Carnival Hub app so your table will be ready sooner. You can request a specific waiter, but more likely, you'll sit at a different table with a new waiter each evening. You might have to wait for a table at peak dinner times, but Carnival says the average wait time is usually less than 20 minutes, depending on your party size.

Either way, there's no need to make a reservation for the main dining room.

Do you need reservations for specialty dining restaurants?

Reservations are highly recommended for specialty restaurants, as these locations can book up in advance. You can make reservations online up to 48 hours before your cruise by visiting the "Manage My Booking/Cruise Manager" section of Carnival.com, at which time you'll also pay the cover charge for the restaurant.

Once you get on board, look for staff set up at booths to help you make specialty dining reservations. You can also call or visit the restaurant yourself to make a reservation, but seating times might be limited. Walk-ins are allowed but will get seated based on availability. If you don't make a reservation, be prepared for a wait or the possibility of being turned away if the restaurant is booked.

Can you enjoy unlimited food on your Carnival cruise?

It depends on where you eat! There are no limits on most of the included food options, and you can pretty much find free food on your cruise from the crack of dawn to late into the night. You can always eat as much as you want at the buffet in Lido Marketplace and other included food stations across the ship during their operating hours. In the main dining room, however, guests are limited to two free entrees (which, let's be honest, is still plenty!) before having to pay for additional entrees.

Is there a fee for room service?

Room service isn't free on Carnival anymore, except during breakfast. Instead, menu items are available to order a la carte. Complimentary continental breakfast can be delivered to your room between the hours of 6 and 10 a.m. For more details, check out our complete cruise ship room service guide .

Are kids menus available?

Most dining venues offer kids menus with plenty of safe options for picky eaters (think: chicken nuggets, macaroni and cheese, and spaghetti and meatballs). If you're dining at one of the specialty restaurants with a cover charge, there's a reduced fee for kids under 11.

Does Carnival still offer a Lobster Night?

Lobster is available for dinner nightly in the main dining room for a surcharge, but on cruise sailings of six nights or longer, Carnival offers one night per sailing (typically one of the formal nights) where a lobster tail is included as a complimentary entree option on the three-course menu. But don't expect to scarf down all the lobster you can eat. In line with Carnival's two-entree limit in the main dining room, guests now have to pay for any additional lobster past the first two entrees.

A company is turning former cruise ships into floating hotels — see inside its largest 'floatel'

Bridgemans ServicesGroup operates a fleet of former cruise ships turned into hotels.
Its "floatels" are designed to house workers during long-term projects.
See its largest 652-cabin floatel with a game room and buffet.

Some old and unwanted cruise ships meet their demise at ship-breaking yards , where they are disassembled and sold for scrap.

Other vessels find a more fortunate fate, receiving a second chance to do what they already do best: serve as floating hotels.

Canada-based Bridgemans Services Group buys and charters former cruise ships to turn into "floatels," outfitted with standard cruise amenities like daily housekeeping, buffets, and relaxing lounges.

But the ships aren't designed to transport tourists from one destination to another anymore. Instead, companies turn to Bridgeman when they need to house workers for a long-term project, whether it be the construction of an offshore wind farm in Europe or the shooting of a major film in a remote destination.

Floatels can accommodate workers in remote destinations where hotels might not be an option.

In more metropolitan areas, Bridgemans says its ships could lessen the stress an inundation of workers might have on the local housing market.

And once they are no longer needed, the vessels depart and "leave no trace behind," the company said.

Over the last decade, Bridgemans has deployed its ships for 15 projects on every continent, Brian Grange, the company's president, told Business Insider.

Grange said that its deployments — most often for liquified natural gas companies — last for an average of two years.

In the past, it has also provided accommodations for MSC Cruises at its Ocean Cay private island and housing for more than 1,000 workers in the Philippines' on a project for the Manila International Airport during the COVID-19 pandemic.

The company's three ships range from 150 to 652 cabins.

The floatel operator acquired its largest ship, the 561-foot-long MV Isabelle X, in 2023.

In its past life, the 35-year-old vessel sailed around the Baltic Sea as one of Estonia-based Tallink Gruipp's cruise ships.

But gone are its days of leisurely cruising. The 35,000 gross-ton ship is now on its first deployment in Howe Sound, just north of Vancouver, where it's housing more than 600 workers who are building Woodfibre LNG's "net zero" LNG export facility.

Isabelle X underwent a six-month retrofit before it was sent to Howe Sound.

The process included updating the ship's cabins and adding amenities like a game room and an 8,000-square-foot gym.

The latter two are especially important: "We need to make sure we delineate between work and home," Grange told BI. "We have to create a social environment on board these vessels that makes it attractive for workforces around the world."

During their free time, workers can play billiards, relax in the outdoor lounge, or use the ship’s WiFi to catch up on social media.

The sports lounge has large television screens, while the games lounge has darts, ping pong tables, and air hockey.

The 'quiet lounges' are the go-to space for people who need to unwind after a long work day.

Or, they could recharge and catch up on the latest shows in their cabins, which all come with desks, storage, and 32-inch televisions.

Like a typical cruise ship, Bridgemans' vessels have buffets with live cooking stations, a dessert bar, and the occasional themed night.

The ships' chefs tailor their menus to the demographic and dietary restrictions of the workers on board, the company's president told BI.

Residents can expect at least four protein options, plenty of veggies, and handmade bread and desserts.

Unlike most cruise lines, Bridgemans can pre-purchase all the food it needs before deployment.

Grange says this allows the ships to maintain food quality and consistency in remote locations.

Remember that deployment in the Philippines during COVID-19? He said the ship had packed almost 800 tons of food ahead of the project.

He wouldn’t disclose the cost to rent one of Bridgemans’ floatels.

But he did note that the cost of a cabin on the Woodfibre LNG project in Howe Sound is comparable to a hotel room in nearby Vancouver, as is the case with most of its projects near major cities.

The company’s most recent acquisition, the 150-cabin Diamond XI, is currently being retrofitted and would be ready for deployment this year.

According to the company's president, the vessel is small and high-end, likely to be used for sporting events and movie shoots.

It could also be the start of a greater expansion: He hopes to add two or three more vessels to its fleet in the next five years.

"The world has opened up to this as a valued alternative to housing," Grange told BI.

Who knows, the next time you see a cruise ship off the coast, there's a slim but possible chance it could be housing workers — not vacationers.

Norwegian Cruise Line offers this category on nine of the 19 ships in its fleet, including the newest ship, Norwegian Viva. These cabins, at an average size of 100 square feet, are designed and priced with the solo traveler in mind. MSC Cruises offers interior and balcony solo cabins for single cruisers on its Meraviglia-class ships: the MSC Meraviglia, Bellissima, Grandiosa, Virtuosa and the newest vessel in the fleet, MSC Euribia. The second-newest ship, MSC World Europa, has 28 cabins – 10 Studio Interior and 18 Studio Ocean View staterooms – designed specifically for solo travelers. Three of Holland America Line's newest ships each offer 12 solo cabins to accommodate single travelers: the Pinnacle-class Nieuw Amsterdam, Rotterdam and Konigsdam. These ocean view staterooms range in size from 127 to 172 square feet and feature the same amenities as the double occupancy cabins but with a double bed. The cruise line's Single Staterooms are priced for one person. If a guest chooses to book a different stateroom, single supplements for double occupancy cabins are as much as 100% over the standard fare, depending on the voyage and the cabin category.

Long committed to solo travelers, the line offers many activities where guests can meet other singles such as wine tastings, cocktail mixers, exercise classes, daily quizzes, sports challenges and more. About 80% of the staterooms are Panorama Suites, which have 200 feet of living space, beds with a view and the river cruise industry's only open-air balcony. With Avalon excursions, solo cruisers have opportunities to meet like-minded guests during immersive tours, cooking classes, wine tastings, yoga or fitness classes, biking or hiking trips, and more. Amenities included in the cruise fare include most meals; standard spirits, wines and beers; bottled water, soft drinks, and specialty teas and coffees; shuttle service in port; gratuities; and complimentary AzAmazing Evenings ashore or Destination Celebration experiences on the ship. For a little "me time" pampering while on board, solos will appreciate 24-hour room service, complimentary Penhaligon's toiletries and a chilled bottle of sparkling wine. A far cry from the buffets of old: Cruises are catering to foodies

Lunch at Veranda, one of the restaurants aboard Star Legend, featured a bountiful charcuterie table, filled with local market finds.

“I’m changing the menu for tomorrow,” Joseph Kalynuik, executive chef of Windstar Star Legend, said as we walked through the Mercato delle Vettovaglie in Livorno, Italy. “I’m looking for local charcuterie, cheeses, truffles, lavender, limoncello. Look at all this!”

We were on the “Market Tour with the Chef,” a popular excursion offered on Windstar cruises. The market is beautiful, located in an historic 19th-century building, designed by the Italian architect Angiolo Badaloni, and modeled after Les Halles, the central market in Paris.

But this was more than a look-see through the historic 1894 market. Chef Kalynuik was on a buying mission, looking for the best local ingredients to include in the ship’s restaurant dishes.

“Va bene!,” a cheese vendor said to our small group, offering us slivers of pecorino sardo al tartufo. It was aged, firm and salty, laced with the earthy taste of truffles. Kalynuik bought a kilo of the cheese, along with links of local sausages.

We trailed Kalynuik through the market, tasting and buying along the way: disks of creamy camembert, bags of fresh Meyer lemons, a variety of salumi, marinated peppers, olives and anchovies, truffle chips, and honey.

The next day the fruits of our labor were in full view. Lunch at Veranda, one of the restaurants aboard Star Legend, featured a bountiful charcuterie table, filled with the market finds. Also, on the menu were sausages with peppers and onions, truffle risotto, Bolognese fettuccine flavored with local meats and spices, and a shrimp and crab dish in a limoncello-flavored beurre blanc. Later that evening at Windstar’s Amphora restaurant, we enjoyed a warm camembert appetizer, topped with a lemon-flavored fig jam, drizzled with honey.

“Our guests are keen on trying new and adventurous dishes, predominantly local, authentic foods,” Kalynuik said. “It’s about experiencing the local culture through food.”

We’d joined a recent seven-day Barcelona to Rome Mediterranean cruise aboard Windstar’s Star Legend to check out its updated culinary offerings. Windstar is the official cruise line of the James Beard Foundation , and the official cruise line for the National Health Association. On our cruise, we not only went to market with Kalynuik, but also joined his cooking class to learn how to make chicken and mushroom vol-au-vent (“Remember to coddle the cream!” Kalynuik advised) and Italian seafood chowder. We had lunch at the Star Grill by Steven Raichlen, cookbook author, TV host, and founder of Barbecue University, where we dined on bourbon-brined turkey breast, tender smoked pork shoulder, and burnt ends.

Lunch and dinner menus in the main restaurants included dishes from James Beard-winning chefs, like Annie Pettry’s glazed wild shrimp and Spanish chorizo dish, Paul Berglund’s roasted rack of lamb with preserved green and red tomatoes, Duskie Estes’s prosciutto and watermelon salad, Amy Brandwein’s grilled filet of branzino, and Irene Li’s coconut dashi clam chowder. A James Beard award-winning chef was not aboard our cruise, but Windstar has already hosted 48 James Beard award-winning chefs on board, and will host chefs Omar Anani, Tanya Holland, and Loryn Nalic on upcoming 2024 culinary cruises. They’ll conduct on-board cooking demonstrations, lead market tours, host a special multicourse dinner, and provide multiple recipes to be featured on Windstar’s menus on all its cruises.

It’s not all about food on a Windstar cruise. Excursions include trips to pretty sights, like Jardin botanique d'Èze, shown here and known for its collection of plants, sculptures, and panoramic views.

“Not only will you get to eat their food — you’ll get to know them,” says Windstar president Christopher Prelog. “You may even learn a few tips and tricks for being a better cook yourself, and you’ll definitely have a richer and deeper travel experience because of it.”

If we were on a gluten-free diet or committed to only healthy eating (sadly, we’re not!), there were plenty of options. Windstar, in partnership with the National Health Association, offers whole foods, plant-based, SOS (salt, oil, and sugar free) and gluten-free appetizers, soups, entrees, and desserts in all its main dining venues.

Windstar showcases what’s happening throughout the cruise industry: an across-the-board effort to upgrade culinary offerings.

“Cruise clients, particularly more seasoned and discerning sailors, are seeking a more personalized experience and elevated culinary excellence, delivered in a more comfortable ‘country club’ atmosphere,” says Elizabeth Cincotta, founder and luxury travel designer of Rising Tide Travel, which specializes in luxury cruises.

Kristin Karst, cofounder and executive vice president of AmaWaterways, agrees, “Delving into regional food and wine specialties has become an important part of how travelers experience a destination,” she says. “A heightened culinary focus enables our guests to develop a deeper and more nuanced appreciation for a country, its history, culture, and people.”

Major cruise lines have responded in a big way to the demands of a more discerning and food-wise clientele. Today, it’s not uncommon for cruise lines to offer celebrity chef tie-ins, cooking classes, local market excursions, specialty restaurants, and a variety of healthy options. For example, Silversea has a new culinary program called S.A.L.T. (sea and land tours), that includes food excursions, cooking classes, chef’s tables, and an evolving restaurant that adapts to each port. Oceania, with celebrity chef Jacques Pepin as its executive culinary director, has a state-of-the-art Culinary Center, offering classes from international master chefs, immersive culinary tours (e.g., an Argentine dinner at a local’s residence, traditional Irish bread making in Belfast, or a Paella workshop in Alicante), and a host of specialty restaurants, including Toscana’s serving authentic Italian dishes, Polo Grill’s steakhouse fare, Red Ginger’s Asian flavors, French country cuisine at Jacques, and the Dom Perignon Experience at La Reserve. Regent Seven Seas has introduced its new Epicurean Perfection programming, including specialty restaurants, special tastings, deck-top regional barbecues, on-shore culinary, wine, and spirits tours, hands-on cooking classes in its state-of-the-art Culinary Arts Kitchen, and specially curated Spotlight Voyages designed around specific culinary interests. AmaWaterways, the first river cruise line member of the La Chaîne des Rôtisseurs, offers at least one wine or culinary-focused excursion on all its itineraries, while others, like Essence of Burgundy & Provence and Taste of Bordeaux, include six tours designed to showcase the culinary experiences in these regions. In 2024, the cruise line will offer more than 70 wine-focused cruises.

Our winter Mediterranean cruise began in Barcelona. But it wasn’t until the final day onboard, docked in Rome, that we were able to snag a seat at Cuadro 44 by Anthony Sasso, touted as one of the world’s youngest Michelin-starred chefs. It’s an intimate, 40-person-or-so restaurant with an open kitchen and warm, inviting vibe. We enjoyed glasses of house-made sangria and plates of Jamón Ibérico, Cantabrian anchovies and marinated olives, poached cod, and romesco pork belly. It was a far cry from the grand ballroom dinners and buffets of old.
