The Drive stops at two different locations where the wine tasting will be accompanied by a carefully curated platter. The experience will culminate with a tasting of The Jem, our award-winning eight-varietal red blend. Bookings are required a week in advance.

Mini Wine Drive Safari 

The Mini Wine Drive Safari is a two-hour trip in our safari vehicle, through the 120-hectare Estate on the beautiful slopes of the Helderberg mountain. The Mini Wine Drive Safari includes one wine tasting stop as well as a curated platter, suited to pair with the individual wines.

The legendary and award-winning Waterford Estate is one of the most sought-after experiences in the world-renowned Stellenbosch region.  Snug in the picturesque Blaawklippen Valley this 120-hectare property owned by Jeremy and Leigh Ord and managed by partner and Cellar Master Kevin Arnold offers no shortage of eye-catching detail and luxury.

  The awe-inspiring winery was styled along the engaging terracotta design and can easily have you thinking you are in the Spanish countryside. The Estate’s lush lawn, citrus groves and aromatic rosemary and lavender beds blend in with the surroundings rather than stand out. This unique South African location offers a rich diversity of flora and fauna.  The magnificent courtyard offers a visual link to a Provence style experience with the centre piece being the Waterford Estate fountain, the feature represents a fundamental component of their philosophy and can even be found on some of their wine labels.

A tasting experience meticulously developed by Cellar Master Kevin Arnold and chocolatier Richard Von Geusau offer a unique flavour experience where guests are guided through the tasting with a description of the flavours encountered in both the wine and chocolate.  One of the stand out pairings is the  Kevin Arnold shiraz with the Masala Chai Dark Chocolate.

The Wine Drive Safari

While it’s tempting to think that if you’ve done one Wine Safari drive you’ve done them all, the Waterford Estate 3-hour trip allows guests to taste award winning estate wines amongst the vineyards of their origin. With a strong sense of place Waterford remains deeply rooted in making this biologically diverse and viticulture unique. Waterford Estate recently welcomed Craig Cormack and Beau du Toit of SALT to the estate.  Craig has been in the restaurant industry for the past 30 years and has worked at most of the Cape’s top 5-star properties, heading places like Ellerman House and Cape Grace.  Beau Du Toit started off his career working with Craig Cormack and Bertus Basson during his studies. He has gained significant experience in a lot of different cuisines, but none more so than Thai cuisine. Together these two are creating incredible gastronomic experiences for those lucky enough to dine at SALT.

The High Tea Experience at Waterford is another foodie’s delight

Waterford Estate will release the 2015 vintage of the iconic flagship blend, named after the owner of Waterford Estate, Jeremy Ord, or “Jem”, as he is affectionately known.  This is a master blend of different red varietals that collectively epitomise the best of the vintage at Waterford Estate. Winemaker Mark Le Roux believes in a very natural, honest approach to winemaking “Our goal with this wine is to truly express the diversity of our terroir, and more specifically our soils”.  The blend is comprised of different grape varietals all grown on the property. Cabernet Sauvignon serves as the base and the blend is completed by different varietals of Mediterranean origin. The Jem 2015 is available for pre-order here .

THE WATERFORD NAME

The estate has been operating since 1998 and is proudly owned by the Ord family. The name Waterford is a combination of the Ord surname as well as the waterfalls from the mountains that surround the estate (WATERF + ORD). The idea was given by the oldest daughter, Ashleigh Ord.

We pride ourselves in making Fine Wine from our carefully selected grapes. Over the past few years, our winemaker, Mark Le Roux and viticulturist, David van Schalkwyk both agree that the vine is a living organism which, in harmony with nature, produces the best grapes and authentic wines. The vine’s resistance and strength depend directly on its symbiosis with its environment. We believe a Fine Wine displays the character of its cultivar and a true sense of place. A Fine Wine should reflect the length on the palate, has a complexity of flavours, internal harmony between aromatics and the palate, and balance between its essential components.

Why choose between a safari and wine tasting? You can combine the two at the Waterford Estate in South Africa’s winemaking capital, Stellenbosch. Founded in 1998, this sustainably focused farm is spread across 120 hectares of the Helderberg Mountain’s slopes, and with only half of that devoted to vines, the rest cultivates natural flora and fauna that you will discover on a three-hour ‘Wine Drive Safari’ adventure. Get even closer to this vegetation on a ‘Porcupine Trail Wine Walk’ (various routes and difficulties available) – in both cases, wine and snacks are provided en route, with a more formal chocolate pairing session back at the winery. Summer months bring open-air concerts featuring local musicians, and candlelit picnicking.

Waterford Estate is situated in the picturesque Blaauwklippen Valley, in the world-renowned Stellenbosch region. We believe in the old adage of ‘less is more’. There is nothing pretentious or ostentatious about the Estate, rather the visual impact is one of a seamless whole, which complements rather than detracts from the surrounding natural beauty.

The Estate offers a relaxing setting where guests can sit and enjoy various tasting options. With the wine cellar built surrounding the courtyard, guests can observe the workings of the winery, and get a true feel for the wine making process without disrupting the tranquillity of their tasting experience.

In addition to our cellar door experiences, we also offer two vineyard experiences: the Wine Drive Safari and Porcupine Trail Walk. At Waterford Estate, we wish to explore all the senses – sight, smell, sound, touch and taste, in order for our guests to experience both what is inside and outside the bottle.

Whether you’re a wine novice or master, a fun-loving traveller or a foodie, there’s a Waterford Estate tasting experience with your name on it. Our range includes the award-winning The Jem, plus Kevin Arnold Shiraz, Cabernet Sauvignon, Grenache, Chardonnay, Chenin Blanc, Pinot Noir, Sauvignon Blanc, Ros é and bubbly Cap Classique.

Our range of tasting experiences make it easy to explore the team’s award-winning wines, right where they’re produced, in a way that suits your preference. We also offer a handcrafted platter of locally cured meats and deli items, for R280 for 2.

Wine Tasting Prices

Waterford Estate’s diverse range of tastings vary with the seasons. In summer expect a tasting of 3 whites and 1 ros é from R75pp, a Wine & Chocolate Experience including 2 reds & a natural sweet wine for R95pp and a Portfolio Tasting of site-specific and Estate wines for R95pp.

They also have a Jem Tasting – an experience of Waterford Estate’s flagship wine – for R115pp, an Estate Experience paired with chocolates for R125pp, a Library Collection Tasting for R295pp and a Salt & Wine Tasting for R125pp.

Waterford Estate Restaurants

Waterford Estate’s flagship restaurant SALT features a curated lunch menu, plus a weekend High Tea experience with a unique progression of savoury and sweet delights. Dining can be enjoyed inside or outside in the Courtyard.

The Estate also offers fully prepared summer picnics on the lawns, on Saturdays and Sundays between October and May only. All you need do is kick off your shoes, relax and enjoy the magnificent views and delicious fare. All picnic spots are shaded – either under our old olive or pin oaks or our generous sized umbrellas.

Menus & Pricing

SALT’S philosophy is “cook with flavour, keep it simple and use your ingredients to their best potential’. Previous menu items have included Heirloom Tomato Salad, Fish Bouillabaisse, Seared Steaks, Tofu Stir Fry and Handmade Pasta. Main courses from R275pp and this includes a glass of wine.

SALT’s weekend High Tea includes a selection of sweet and savoury options including a tea or coffee for R325pp. A wine pairing option or Cap Classique tasting option can be added for R70pp. Pre-booking essential 24 hours in advance.

Classic picnics include options such as rare roast beef with horseradish cream, goats cheese, chicken caeser wrap, pate and chocolate pot. Prices from R540 for 2 excluding drinks. A vegetarian picnic is also available for the same price.

Waterford Estate offer 3 types of vineyard ‘ Drive Safaris’ which take in the beauty of the 120 hectare Estate.

The flagship 3 hour Wine Drive Safari includes tasting of award-winning Estate wines amongst the vineyards of their origin, as guests are expertly guided through all the aspects of what makes this area so viticulturally unique. The tour includes various light snacks and a Wine and Chocolate Tasting back at the winery. Price from R1450pp. Bookings are required 7 days in advance.

The Mini Wine Drive Safari is a shorter 2 hour trip in the safari vehicle, with two wine tasting stops as well as light snacks. Price from R1150pp. Finally, there is a 1 Hour White or Red Wine Drive which includes a 1 hour tour of the Estate in the safari vehicle. Price from R850pp. Please contact the Estate to pre-book.

Waterford Estate also offer a unique Porcupine Trail Walk, exploring the rich diversity of our indigenous fauna and flora over three different routes, offering different levels of intensity. A selection of three wines and a light lunch are included, followed by a Wine and Chocolate Tasting back at the winery. Prices from R650pp and bookings are required 7 days in advance.

Ducks greet us happily as we slowly cross over a small pond, and a dust road lined with citrus trees and lavender takes us further towards the Mediterranean-style villa. We are about to ease into the wine-and-chocolate tasting at Waterford, one of Stellenbosch’s premiere wine estates.

More lavender frames the simple stone stairs that lead up to a Cape-Tuscan designed courtyard. At the centre is a fountain around which seating areas, trees and walkways are symmetrically arranged. Everything seems to be in its place. Orange roses on the tables. Even the sand is perfectly raked, for playing boules. No one is in a hurry at Waterford Estate and our city pulse stayed behind in Cape Town. We opt for the inside seating area, which includes couches next to a fireplace. Hands up if you want to go on a vino and game drive! The Winelands offers a range of wine estates with their very own game reserves. Besides conservation projects, these farms also offer visitors the opportunity to see their incredible flora and fauna on game drives.

Vergelegen  in Somerset West not only produces world-class fine wine but also actively conserves the environment. A WWF Conservation Champion , the estate is home to endangered wildlife and has been cleared of two-thirds of its invasive alien vegetation.

What's more, Vergelegen visitors the opportunity to experience their estate's glorious biodiversity. Their exciting Environmental Tour showcases the culmination of 20 years of ongoing commitment to sustainability and rehabilitation. They start off the excursion through the Vergelegen arboretum and biodiversity nature reserve, with possible sightings of free-range nguni cattle, bonteboks, elands, and Rau quagga . Visitors can also admire the estate's endemic fynbos.

Game drive at Villiera

An environmental leader, Villiera Wines has set aside a portion of their farm as a reserve. At the Villiera Wildlife Sanctuary, conservation efforts for both game and vegetation take place alongside an indigenous tree planting project. The sanctuary houses a variety of game species including elands, gemsboks, kudus, giraffes, and black wildebeests.

During a two-hour game drive visitors are guaranteed fantastic sightings of game and other small mammals plus a huge diversity of birdlife attracted by the 12 dams and marsh areas. The game drive also includes a wine tasting and cellar tour.

Safari at Vredenheim Animal Farm

Vredenheim in Stellenbosch is no ordinary wine farm. It is home to an impressive variety of animals, from livestock to game. Vredenheim Animal Farm offers a short safari on which you'll get to see golden wildebeests, fallow deer, sables, zebras, and more. Bird lovers will appreciate spotting the white pelicans, blue cranes, and spur-winged geese. If you’re lucky, you may even catch a glimpse of the elusive yellow billed kite. 

In addition, Vredenheim also has a big cats sanctuary and an animal park.Their Big Cats Park is home to lions, tigers, leopards, and a black leopard – and the family is still growing! The animal park houses goats, chickens, bunnies, cows and turkeys. It also offers a host of activities kids will love, from a bike track to tractor rides.

Wine safari at Signal Gun

Hooggelegen Farm, home of Signal Gun Wines , invites visitors to join them for a wine safari like no other. This is a scenic drive through their vineyards and up Hoogeberg’s game camp where you will see elands, springboks, zebras, grey rheboks, and ostriches. The camp's birdlife includes hawks, fish eagles, and many more. On a clear day, you’ll have a 360 degree view from the top of Hoogeberg Hill, where you'll be able to see everything from Simon's Town to the Taal Monument in Paarl.

Waterford Estate is situated in one of the world’s most visually arresting pockets of paradise. Nestled in the picturesque Blaauwklippen Valley, in the world renowned Stellenbosch region, this 120 hectare property owned by Jeremy and Leigh Ord and managed by partner and Cellar master Kevin Arnold. The Estate boasts old citrus groves, rolling lawns, water features and fragrant lavender and rosemary beds. You’d be forgiven for thinking you were in the heart of Provence or the Spanish countryside, with your first glimpse of this enchanting realm. However, we are immensely proud of our uniquely South African location and the rich diversity of our indigenous flora and fauna.

The winery was styled along the engaging terracotta design and was the result of winemaker Kevin Arnold and architect Alex Walker teaming up to create the home of Waterford Estate wines. The centre piece of the magnificent courtyard is the Waterford Estate fountain . This feature has been immortalized in the Waterford Estate label and represents a fundamental component of our philosophy.

We believe in the old adage of ‘less is more’ . There is nothing pretentious or ostentatious about the estate, rather the visual impact is one of a seamless whole, which complements rather than detracts from the surrounding natural beauty. Title : Active carbons as nanoporous materials for solving of environmental problems

However, up to now, the main carriers of catalytic additives have been mineral sorbents: silica gels, alumogels. This is obviously due to the fact that they consist of pure homogeneous components SiO2 and Al2O3, respectively. It is generally known that impurities, especially the ash elements, are catalytic poisons that reduce the effectiveness of the catalyst. Therefore, carbon sorbents with 5-15% by weight of ash elements in their composition are not used in the above mentioned technologies. However, in such an important field as a gas-mask technique, carbon sorbents (active carbons) are carriers of catalytic additives, providing effective protection of a person against any types of potent poisonous substances (PPS). In ESPE “JSC "Neorganika" there has been developed the technology of unique ashless spherical carbon carrier-catalysts by the method of liquid forming of furfural copolymers with subsequent gas-vapor activation, brand PAC. Active carbons PAC have 100% qualitative characteristics of the three main properties of carbon sorbents: strength - 100%, the proportion of sorbing pores in the pore space – 100%, purity - 100% (ash content is close to zero). A particularly outstanding feature of active PAC carbons is their uniquely high mechanical compressive strength of 740 ± 40 MPa, which is 3-7 times larger than that of  such materials as granite, quartzite, electric coal, and is comparable to the value for cast iron - 400-1000 MPa. This allows the PAC to operate under severe conditions in moving and fluidized beds.  Obviously, it is time to actively develop catalysts based on PAC sorbents for oil refining, petrochemicals, gas processing and various technologies of organic synthesis.

Victor M. Mukhin was born in 1946 in the town of Orsk, Russia. In 1970 he graduated the Technological Institute in Leningrad. Victor M. Mukhin was directed to work to the scientific-industrial organization "Neorganika" (Elektrostal, Moscow region) where he is working during 47 years, at present as the head of the laboratory of carbon sorbents.     Victor M. Mukhin defended a Ph. D. thesis and a doctoral thesis at the Mendeleev University of Chemical Technology of Russia (in 1979 and 1997 accordingly). Scientific interests: production, investigation and application of active carbons, technological and ecological carbon-adsorptive processes, environmental protection, production of ecologically clean food.
