Diving Trips -- There are more dive outfits in Southeast Asia than we could possibly list. Be sure to choose a PADI-accredited dive company and ask lots of questions before any trip: What is the ratio of diver to instructor? Does the company have its own boat?

In Thailand, look under Phuket or Ko Tao; in Vietnam, try Nha Trang; in Cambodia, Sihanoukville; in Malaysia, Langkawi.

Cooking Schools -- The varied cuisine of the countries of Southeast Asia is a veritable banquet for the gourmet or the fearless eater, and there's no better way to learn about and participate in a culture than to take a cooking class. Opportunities abound.

In Thailand, a favorite option is the upscale Blue Elephant Restaurant and Cooking School (233 S. Sathorn Rd., Bangkok; tel. 02673-9353; www.blueelephant.com), set in an old mansion in the heart of the city. The restaurant is a popular luxury chain from Europe that has returned to its roots and set up shop in the Thai capital. It's not to be missed. In the north of Thailand, try the Chiang Mai Cookery School (47/2 Moonmuang Rd., Chiang Mai; tel. 05320-6388; www.thaicookeryschool.com). In the far south, there are lots of small resorts with cooking schools attached.

In northern Laos, enjoy a fun and informative day at Tamnak Lao Restaurant and Cooking School (Sakhalin Rd., Ban Wat Sene, Luang Prabang; tel. 071/252-525 ), where you'll not only get the dish on Lao specialties and some unique derivations, but also learn a good bit about local culture, history, and language.

Gourmands in Singapore shouldn't miss a chance to take a quick course at the Raffles Culinary Academy (tel. 65/6412-1256; www.raffles.com). Whole-day courses on Asian and Western haute cuisine are led by chefs from the grand hotel's acclaimed restaurants.

In Bali, try Bumbu Bali (tel. 361/774502 ) in the south for Heinz von Holzen's informative cooking classes. The Alila Manggis' Sea Salt restaurant (tel. 363/41011 ) holds cooking classes with chef Penny Williams. Executive chef Chris Salans gives gourmet French-Indonesian cooking classes at his restaurant Mosaic (tel. 361/975768 ), which is also well worth a trip for a meal.

When it comes to an itinerary, Travel + Leisure readers want more than a string of photo opportunities — and the right tour operator makes all the difference in creating a trip of a lifetime versus one that simply checks off a list of sights. This year, our readers were especially drawn to companies that utilize local expertise and experience to thoughtfully design trips that will entertain as well as inspire.

Every year for our World's Best Awards survey , T+L asks readers to weigh in on travel experiences around the globe — to share their opinions on the top hotels, resorts, cities, islands, cruise ships, spas, airlines, and more. Readers rated tour operators and safari outfitters based on their staff and guides, itineraries and destinations, activities, accommodations, food, and overall value.

The top picks were noted for their deep knowledge of destinations and guides who "go the extra mile." One reader who has been traveling for more than five decades said a trip with Classic Journeys (No. 2) was the "very best" they had experienced. Others noted attention to pandemic safety details, while one who went to Norway was charmed by a "wonderful surprise dinner in Bergen out on the water that was fantastic."

Tour operators that seamlessly navigated the logistics of a trip also came out on top. Quasar Expeditions (No. 9) was noted "for really planning out every detail" so that "all you have to do is show up and have a great time." Meanwhile, of TCS World Travel (No. 10), a guest said: "You never lift a finger and just spend your time actually exploring the destination." They even added that they "learned so much" along the way.

Among the five companies on this year's list that weren't on last year's were two women-only tour operators that cater to travelers of all ages. AdventureWomen (No. 14) has multiday tours designed by women from Bhutan to Yellowstone National Park, while Explorer Chick (No. 15) has everything from day trips — like glassblowing in Baltimore and cave rappelling in St. Louis — to full itineraries in Machu Picchu and the Galápagos. One reader said her Everest Base Camp trip with AdventureWomen was filled with "like-minded women" who "bonded so well," while another said she felt it was a "safe tour group for women."

Prosecutors began laying out their case against Trump

In an opening statement, the prosecution gave a sweeping synopsis of the case against Donald Trump — a pivotal moment in the first criminal prosecution of a former American president.

A Manhattan prosecutor told the 12 jurors that the case was about “a criminal conspiracy and a cover-up” of sex scandals that threatened his 2016 election win. He described how Trump, his counsel Michael Cohen, and David Pecker , the publisher of The National Enquirer tabloid, engaged in a strategy to “ catch and kill ” negative stories.

Trump, who faces up to four years in prison if convicted, watched from the defense table. Occasionally, he shook his head.

In his opening statement, Trump’s lawyer insisted that his client had done nothing wrong. “President Trump is innocent,” he told the jury.

Then, Pecker was called to the stand as the first witness in the trial. In his testimony, Pecker explained how The National Enquirer paid for stories, a practice he called “checkbook journalism.” He is expected to return to the stand today.

Background: The case centers on a $130,000 payment that Cohen made to a porn star, Stormy Daniels, to buy her silence as the 2016 campaign was winding down. Prosecutors say he was reimbursed by Trump, who falsified business records to conceal his conduct.

The head of Israeli intelligence resigned

Maj. Gen. Aharon Haliva yesterday became the highest-ranking Israeli official to step down since the Hamas attack on Oct. 7. Haliva, the head of military intelligence, had emerged as a symbol of the Israeli establishment’s failure to prevent the deadliest attack in Israel’s history.

His resignation suggests that a bitter reckoning about the failures is gaining momentum in Israel, now that the pace of the war in Gaza has ebbed.

Although Haliva’s resignation was long expected, it is still expected to heighten pressure on other senior figures, including Prime Minister Benjamin Netanyahu, to take greater responsibility for their role in the October failure.

Modi insulted India’s Muslims

During a campaign event, Prime Minister Narendra Modi called Muslims “infiltrators” who would take India’s wealth if his opponents were to gain power. His statement was unusually divisive and direct.

Modi was referring to a remark once made by Manmohan Singh, his predecessor from the opposition Indian National Congress Party. Singh, Modi claimed, had “said that Muslims have the first right to the wealth of the nation. This means they will distribute this wealth to those who have more children, to infiltrators.”

Modi’s use of such language as he campaigns for a third term raised alarms that it could inflame right-wing vigilantes who target Muslims.

Our tour leader, Ant was such a star. she tried to ensure that we were all happy at all times and there was never a logistical issue. there was a great mix of organised activities and enough free time. ant always had excellent ideas for optional activities. Ant always suggested great restaurants, which often ended up being our favourite places. the long distance public buses were unpleasant mainly due to the drivers and the weather and should be changed to private coaches. Will definately recommend this tour to everyone i know.

Most hotels where a little iffy leaving much to be desired. The guide was excellent and facilitated easy border crossing access. The locations we explored were nothing short of spectacular, offering us a diverse palette of experiences that ranged from the serenity of lush jungles to the vibrant nightlife on picturesque islands. The balance between exhilarating hikes and lively parties was just right, ensuring that every day was filled with new adventures and opportunities to create lasting memories. A significant part of this trip's charm was the fantastic group of fellow travelers I had the fortune to journey with. It's rare to find such a harmonious blend of personalities and backgrounds, but we clicked instantly, transforming a group of strangers into lifelong friends. The camaraderie that developed amongst us added a whole new layer of enjoyment to the experience. A special shoutout is deserved for our CEO, Fon, whose expertise, passion, and warm personality made her not just a guide, but a true friend. Her dedication to ensuring that we all had an incredible time was evident in every aspect of the trip. Fon, you are a gem, and your efforts were genuinely appreciated by all of us! However, no adventure is without its lessons. The pace of the tour, while exhilarating, sometimes felt a bit rushed. Extending the itinerary by a day or two could provide a more relaxed pace, allowing for some much-needed rest days amidst the action-packed schedule. For travelers like myself, towering over 185cm, be prepared for a squeeze, especially on the night trains which proved to be quite the challenge. An additional note for future adventurers: consider booking an extra night in Singapore to fully explore the wonders this city has to offer. The tour's conclusion in Singapore feels like just the beginning of another adventure waiting to be discovered. In summary, the "Jungle Hikes & Island Nights" trip from Bangkok to Singapore was an unforgettable journey filled with incredible sights, sounds, and experiences. While there's room for minor adjustments, the overall experience was profoundly impactful, leaving us with memories to cherish for a lifetime.
