More than fancy water: What you need to know about visiting the town of Evian, France

Mountains over Lake Geneva

Since the discovery of the purity and healing qualities of its mineral water more than two centuries ago, Évian-les-Bains, France, has been a go-to destination for rejuvenation and relaxation for Europe's elite.

While the Evian water -- now known throughout the world -- is still a draw to this picturesque area of the Haute-Savoie region of the Alps along the south shores of Lake Geneva, today you'll find modern conveniences mixed with the old-world Belle Epoque glam. A destination that is charming enough for romance, busy enough for families and with the opportunity to sample delicious regional food and wine while enjoying natural beauty.

Summer is the high season with festivals, music and loads of sport from boating to zip-lining, but like the water, fun flows year-round with skiing, hiking and mountain biking in the cooler months.

How to get there

Evian is less than a one-hour drive from Geneva (GVA) airport with direct flights from more than 20 U.K. airports. From London, British Airways offers up to 20 flights per day and it's a wise usage of Avios, thanks to Reward Flight Savers.

We found lots of availability starting at 7,500 Avios plus $.65 one-way in economy. It is easy to bag a cheap cash fare as well -- currently, there are flights for as little as $50 return with EasyJet . For the eco-conscious, it is possible to get to Geneva from London by train in around six hours with a change in Paris, with prices starting at less than $130 one-way for dates in March.

Where to stay

Though the town of Évian-les-Bains has a storied past as a retreat for Europe's moneyed class, there's now a good mix of accommodation from historic luxury resorts and modern chain properties to quaint lakeside inns as well as more modest holiday rentals. The Evian Resort , now owned by French conglomerate Danone, sits on 47 acres stretching up from the lake and town center and includes two luxury hotels: the five-star Palace Hôtel Royal and four-star Hôtel Ermitage , two spas, an 18-hole golf course and training center and a children's club and a casino.

Five-star: Palace Hôtel Royal

Located in the hills above Evian-les-Bains, the five-star Hôtel Royal is a unique and luxurious resort, offering incredible views of Lake Geneva amid manicured gardens complete with topiaries. Commissioned by the Evian Water Company in 1905 in honor of King Edward VII (though he died before visiting), the hotel has hosted royalty, celebrities and even the G-8 Summit in 2003. Following a complete and meticulous two-year renovation, Hôtel Royal reopened in 2015 with 150 rooms including 32 suites. The new look combines the palace's Belle Epoque grandeur (think mosaic floors and neo-Baroque frescoes) with state-of-the-art amenities and contemporary furnishings by Paris-based interior designer François Champsaur.

In the 1,200 square meter Spa Evian Source, treatments, using products by Biologique Recherche, are focused on "health through water." Despite all this splendor, the vibe is relaxed and comfortable, with a good mix of couples and children. Part of both Leading Hotels of the World and the American Express Fine Hotels & Resorts Program , depending on how you book, you can possibly score benefits such as a room upgrade, breakfast, late checkout and a $100 food and beverage credit.

Prices start at 228 euro ($247) for a sejour park view room in March.

Four-star: Hôtel Ermitage

Just a two-minute walk up the hill from Hôtel Royal is the four-star 80-room Hôtel Ermitage. The décor is warm with modern furnishings influenced by nature, lots of wood, leather greens and blues and the guest rooms offering more amazing lake views. The scene is relaxed with table football in the lobby and games at the bar and a children's club, which accepts babies from 4 months to kids aged 12, plus teens.

Summer is high season — about 70 to 80 children a day (from babies to teenagers) will be entertained in the spacious clubhouse with activities like cooking, arts and crafts, acting and games -- plus there are billiards and Xbox for the teens. Meanwhile, parents can relax at the spa with nine treatment rooms. For dining options, there's rustic French cuisine at La Table, plus two bars and a terrace restaurant in summer.

Prices start at 152 euro ($165) for a standard double room in March.

Four-star: Hilton Évian-les-Bains

Located on the edge of Lake Geneva, a few minutes walk from the center of town, the 170-room Hilton Évian-les-Bains is a well-positioned option for enjoying Evian, especially if you have Hilton Honors points. The hotel has a big outdoor pool (in summer), a spa with Hammam and seven treatment rooms.

Prices start at 35,000 Hilton Honors points per night or 150 euro ($163) for a king guest room in March.

Three-star: Hôtel Les Cygnes

On the other side of town, literally sitting right on the lake 50 meters from the marina, is the quaint 39-room Hotel Les Cygnes. While not as modern as the others, the property built in 1926 oozes charm with a dining terrace under a century-old trellis, a private beach with pontoons and boat moorings, a swimming pool, mini-golf and games for kids. It offers a good variety of rooms including a family room that sleeps four, a triple and romantic options for couples.

Prices start at 80 euro ($87) for a double room in March.

Apartments and villas

There's a good selection of apartments and villas for groups and families, and you can find options in the town center and a bit further out on popular sites like Airbnb and Booking.com -- ranging from economical studio apartments in town to luxury six-bedroom villas on the golf course.

Where to eat

French fare is what you want to eat in the Haute-Savoie, so expect hearty dishes influenced by the products from the lake (perch and whitefish) and the mountains: meat, pork, game and lots of dairy -- famous local cheeses to try are Abondance, Reblochon and Tomme -- and of course, the wines. In this region of France, 70% of the locally produced wine is white. Grape varieties include Jacquère, Altesse and Roussanne and go well with the local cuisine, and if you're a fan of red, Mondeuse and Persan are your best bet.

Les Fresques

For a splurge, try Michelin-starred Les Fresques at Hôtel Royal where Chef Patrice Vander prepares gorgeous dishes with local foie gras, crayfish and blue lobster in a beautiful room with views of the lake. One of the most incredible meals we've ever had. Open for dinner only, booking is essential.

Less formal (and less expensive) but with an equally delicious menu featuring local products and produce is La Table at Hôtel Ermitage . It's open all day and has a great Sunday brunch.

Au Jardin d'Eden

In town, try Au Jardin d'Eden , for hearty local French dishes in an elegant corner cafe.

Le Muratore

Or Le Muratore , which has been in business since 1870. Try fresh fish or the "Alpine dish of the day" -- and in summer ask to sit on the gorgeous terrace.

There's a local farmers' market in the village on Tuesdays and Fridays where you can sample many of the local products. This is a tasty way to spend a morning and buy some food to pack a picnic to enjoy along the waterfront at sunset. Stop at the stellar village cheese shop, La Ferme du Noyer, where they will shrink wrap cheeses and meat for travel.

The compact town has a lakeside promenade, cobblestone pedestrian streets, a working funicular (summer only), a marina, beaches and historic sites like the Villa Lumière -- the former summer residence of the Lumière family (the brothers famous for inventing the cinema).

This became the town hall in 1927, and is now known as the Palais Lumière. It was a former thermal spa and is now a cultural center.

There's also a casino. Casino Evian , built in 1911 in neo-Byzantine style, is still busy with gaming tables, slot machines, four bars and restaurants and nightly entertainment. Past the casino, along the waterfront is Le Fabuleux Village des Flottins, a series of wooden sculptures made from local driftwood.

Water, water everywhere... in town, see locals filling their bottles for free at the Cachat spring, which sits underneath a pink and white neoclassical archway built in 1903. This is the most famous of the many sources of the renowned water that emerges as if by magic after a 15-year natural purification journey.

Naturally, you can bathe in Evian water. At the 380 square meter Evian Les Thermes in town you can choose from a series of hydro-treatments using Evian water, from a double-jetted tub, various heated table and shower scrubs, Hammams, steam rooms, to a Japanese-style Iyashi dome for weight loss.

For even more on the water theme, in summer you can visit Les Jardins de l'eau du Pre Curieux (the curious water garden) by boat and learn about the different ecosystems related to water: pond, stream, marsh, wet meadow and delta. It is also possible to tour the Evian bottling facility which is three miles outside of town.

With Lake Geneva and mountains all around (yes, these are the snow-capped ones pictured on the Evian bottles), lots of sporting activities are on offer. In summer, water sports on the lake, golf, and tennis and nearby there's river rafting, hiking, mountain biking, zip-lining, and even hang-gliding in the mountains.

The golf course is the site of the Evian Championship, the only women's golf major in Continental Europe, with 18 challenging holes overlooking Lake Geneva, plus a top-rated golf academy offering instruction for kids and adults on seven practice holes, driving, putting and pitching ranges, plus a high-tech swing analyzer.

In winter, skiing is about 15 minutes away by car in Bernex with a ski school for children -- or for more expert slopes, Les Portes du Soleil (13 resorts between Mont Blanc in France and Lake Geneva) is a one-hour drive away.

Bottom line

Easily accessible from the U.K. via Geneva, Évian-les-Bains offers a good mix of stunning natural beauty, Belle Epoque glamour and history, sport and delicious food and wine from the Haute-Savoie, making for a fun and easy getaway for either romance, groups or families.

Évian-les-Bains: A Town in a Bottle

Évian-les-Bains may be famous for its mineral water , but it’s also a destination in its own right, a town revelling in its Belle Époque glory that continues to attract those with refined taste. The namesake mineral water is the best-selling bottled variety in the world. But not so many people know that Évian is also a rather glamorous town.

For a start, Évian town occupies a sensational spot beside Lac Léman, or Lake Geneva, as it’s called much more commonly in English. Its prime lakeside location helped make it so popular with high society during the Belle Époque. It still draws a wealthy, cosmopolitan crowd. Visiting Évian, your gaze will be drawn time and again to the gorgeous views across the immense waters to Switzerland. Here, you find yourself beside the largest lake in Western Europe.

Most of Lac Léman’s southern shore is French, forming the northern boundary of mountainous Savoie. The simplest way to appreciate Léman’s beauty from Évian is to take the appreciably flat, lakeside promenade. You’re accompanied along the way by immaculately dressed flowerbeds. I stopped for lunch recently at a lake-side restaurant, Au Cabestan, for a sunny meal and the entertainment of grebes bobbing and diving between the boats. I was eating lake a fish myself. The chatty restaurateur explained how he much prefers Lac Léman to the Côte d’Azur, and praised Évian’s peace, also claiming the town to have the lowest unemployment rate in France, ‘thanks to big firm across the water’, as he referred to Switzerland.

L’eau de vie

I’d thoroughly encourage you to get out on the lake for a cruise. The Swiss CNG company has the monopoly on boat trips across this inland sea, taken by many commuters as well as tourists. The rich get out in their yachts – Évian and neighbouring Thonon boasting big swanky marinas. You may also see La Savoie in action certain days, a former working sailing boat provided with huge sails to catch Léman’s capricious winds. For a shorter, easier lake trip, board the little solar boat (the first of its kind in France) that carries you along Léman’s edge to the Jardins de l’Eau du Pré Curieux. On the lovely, silent journey, you see the town unfold, while the glorious triangular peaks of the Chablais, Savoie’s most northerly mountains, emerge behind. You’re first accompanied inside the gracious pink villa, now converted into an ecological centre, explaining the importance of wetland habitats across the world and of Lac Léman in particular.

This great lake was treated for far too long like a giant dustbin, alarming numbers of disused cars and fridges even ending up drowned in its waters. Fortunately, it has undergone a major clean-up in recent years. Nowadays, you can easily enjoy swimming around Évian. I took a dip on my last visit. Being a person who likes their bathing water as warm as their bath, I was delighted by the temperature, although the odd cold current can surprise you. Back with the Pré Curieux, leaving the house, a guide takes you around the grounds, where the different wetland habitats created here in miniature – including enchanting lily pond and flower meadow – are well presented. Our guide also explained how huge quantities of water filtering down from the Chablais are captured naturally under the plain on the south side of Léman – hence the immense amount of Évian mineral water available.

In the centre of town, people often queue to fill up on free mineral water at the Cachat spring, where the success of the local spring water really took off, at the time of the French Revolution, when a certain marquis claimed the waters had relieved the pain of his kidney stones. An older tale refers to a lord whose beautiful daughter was courted by many noble suitors, although she and the stable-keeper had fallen in love. When the lord fell ill, he promised his daughter’s hand to the person who could cure him. The stable-keeper consulted a wise hermit, who revealed the secret of Évian’s magical eau , and so the lovers were allowed to marry.

Ebb and flow

The bottling of the water on a major scale began in 1826, and the public baths were opened in 1827. The clever people who set up Société des Eaux d’Évian in 1869 knew how to make Évian doubly popular, finding not just new springs to exploit, but also building refreshment pavilions, hotels, a theatre, and the casino. Évian was put firmly on Europe’s map for well-being breaks. The Cachat spring has been dressed up quite elegantly, a statue of a naked lady thrown in gratuitously. Just below, the splendid Art Deco dome of the Buvette Thermale signals the most central home of the Évian water company. Inside are displays on its origins, designer bottles, and a boutique selling branded gifts. You also sign up here for a tour of the massive water-bottling factory located outside town, at Amphion.

Back in the centre, Évian has undergone a much-needed make-over. Nowhere are the transformations more evident than in the line of grandiose buildings just behind the promenade. The massive Palais Lumière, too long neglected, has had its splendid glass crown restored to its former glory; the sparkling palace hosts major art exhibitions, as well as conferences.  If visitors in Victorian times loved combining health treatments with a fashionable break, so can you today. The Hilton Hotel behind the promenade may not sound like everyone’s cup of tea, but this is no ordinary chain hotel. It’s a wonderful hideaway, with interesting contemporary architecture, and it contains a luxury Buddha Bar Spa , among the largest of such pampering centres in Europe, an outpost of the popular Buddha Bar brand that got its start in Paris. Also behind the promenade, in more discreet contemporary glass architecture, lies the entirely renovated Évian’s Thermes, or thermal spa. It’s on a friendly, manageable scale, a gentle place for a brief, relaxing visit.

Pulling in far more crowds behind the promenade stands the very popular casino. It’s a brash place, built in the style of a Greek church. Beside the real church nearby, a plaque recalls how a number of Jews were hidden from the Nazis in the presbytery during the Second World War.

Watery Past

In the history books, Évian is best known for the accords forged at high-level state meetings here. The 1962 Évian Accord saw the French government officially recognise Algerian independence after the appallingly bitter war there. The town still hosts major political gatherings; the G8 held here in 2003 drew many protesters, although most were forced to stay in Swiss territory. Évian town hall received a very minor external wound; it’s well worth popping in to look inside – the extravagant Belle Époque interiors were ordered by the Lumière family on the proceeds of their film wealth. Upliftingly, as part of Évian’s recent revamp, the cable car up the very steep slope behind the centre has been reopened for the first time in decades, and it’s free. Enjoy the gentle ride to the Auditorium – a striking, wood-clad cultural centre designed by Patrick Bouchain in the 1990s in honour of the late maestro cellist Rostropovich. Look out for the cultural programme here and elsewhere – Évian puts on many major events, both musical and sporting, golf being a great speciality. You could also use the cable-car to visit one of the extremely smart slope-side hotels, great places simply to take tea, with fabulous views on Lac Léman. I headed up to the Ermitage, with its gorgeous grounds, beautiful pool and bucolic lake views. You don’t have to be mega rich to enjoy many of Évian’s delights though. Return to the lakeside for a free dip. Or try your hand at one of the many lake sports on offer. What is sure is that Évian can offer a host of watery attractions for all tastes.

GETTING THERE

The rapid TGV trains go as far as Évian direct from Paris during weekends in peak holiday seasons, otherwise the final leg slows somewhat beyond Bellegarde to the west. By air the nearest major international airport is Geneva, 50km away at the western end of Lac Léman, served by a large number of airlines.

WHERE TO STAY

The Hilton (Quai Paul Léger; +33 4 50 84 60 00) , with all sorts of stylish facilities including the major Buddha Spa, a fine restaurant, Cannelle, and a brasserie.

Royal Palace and Ermitage (+33 4 50 26 85 00; www.evianroyalresort.com) are ultra-glamorous sister hotels competing for the attention of the wealthy. They both lie close to each other up the slope from the lake, in locations with sensational views, and offer all sorts of pampering and sporting facilities as well as superb dining. Prices vary a great deal according to season.

Hôtel des Cygnes (8 Ave Grande Rive; +33 4 50 75 01 01; www.hotellescygnes.com) is a more affordable place to stay but one which can boast the exclusivity of being the only Évian hotel right on the waterfront. It lies east beyond the marina and has a nice traditional waterside restaurant. Note that restaurant is reservation only.

With this ticket you can travel by boat from Lausanne to Evian and back. The ticket is valid for all departure times of the selected day

Your boat will be waiting for you at the port of Lausanne-Ouchy. During the whole trip you can enjoy the view of Lake Geneva and afterwards you can discover the cozy town of Evian on your own. Take a look back on the way to Evian. Then you'll see the UNESCO World Heritage Site of the Lavaux vineyards from a whole new perspective.

Stroll along the beautiful lakeside promenade in Evian and discover the city center with its narrow streets and world-famous water spring. Follow the signs to the Cachat spring, the first source of the world famous Evian mineral water. Here you can fill your water bottle with Evian water for free

If time permits, you can take the historic Funiculaire to the heights of Evian, where you will enjoy a wonderful view of Lake Geneva and the Swiss shore. When you are ready to leave Evian, the boat will take you back to Lausanne.

If time permits, you can take the historic Funiculaire to the heights of Evian, from where you can enjoy a unique view of Lake Geneva and the Swiss shore.

The funicular is a listed monument and one of three rare pieces of European railroad heritage. It has 6 stops and is an ideal means of transportation to discover Evian. You can go directly from the port, via the Buvette-Cachat up to the viewpoint and hotels.

Evian factory tours.

Touring the Evian mineral water factory is an absolute must when in Evian les Bains. You are obliged to book in advance from the information centre in town at the ‘Buvette’ or by calling 00 33 4 50 84 80 29 / 0 33 4 50 84 86 54. There is a minimal 2€ charge for the transport by bus from the meeting point, as the modern factory facility is in nearby Amphion les Bains. You’ll see the production line that churns out five million bottles of Evian per day. Please note: tours are suspended until October 2017.

You’ve probably heard of the water, but did you know that Evian is about more than just its most famous export?

Evian-les-Bains has long been the wellness escape of choice for the well-to-do. And, indeed, water played a big part in this. When its crystalline, mineral waters were bottled for the first time, the town found its fortune. Along with its breathtaking mountain scenery and fresh air, Evian-les-Bains’ water brought with it wealth, glamour and relaxation.

You’ll still feel the chic appeal of the so called ‘golden age of water’ here. There’s Belle Epoque charm at every turn. Not to mention, it’s practically illegal to serve anything other than Evian water alongside it’s unanimously beautiful lake!

Then, there’s Evian Resort. Comprising two luxury hotels, a world-renowned golf course, a casino and the sought-after Evian les Thermes spa, it really is the crowning glory of the town and a must-visit for your next holiday.

So, let’s start with the basics.

Evian-les-Bains sits on the shores of the breathtaking Lake Geneva, the largest lake in the region. While the town of Evian is in France and overlooked by the Alps, the water shares boundaries with Switzerland, which you can spot in the distance.

Evian-les-Bains itself is part of France’s Haute-Savoie region, which you may have heard of thanks to its reputation for ski resorts and exceptional cheese – so, bring your appetite, especially for fondue!

How far away is Evian-les-Bains and how do you get there?

Evian-les-Bains is a wonderful short-haul destination to visit from the UK – ideal for a long weekend break. If you’re looking for a longer luxury holiday in France , you could consider combining it with a stay in the French Riviera for a glamorous getaway.

To get to Evian, you’d typically fly to Geneva airport, which takes less than two hours. Then, it’s around an hour’s drive from Geneva to the resort. Generally, there are no stops at the border between Switzerland and France, so you can seamlessly drive straight through.

What’s Evian-les-Bains known for?

Naturally, the water is still a big draw. It’s here that the mineral-rich water emerges from the Alps, which has become almost mythological. It’s said that the water is so pure, it once even cured a French marquis of his kidney stones – true or not, people still queue up to sample it straight from the springs.

Beyond this, Evian-les-Bains is also known for its beautiful mountain scenery, top championship golf course and fun ski opportunities. The food is exceptional, the spas are sumptuous and there are numerous nearby towns and areas to explore – overall, there’s plenty on offer.

Where to Stay in Evian-les-Bains

The best place to stay in Evian-les-Bains is without a doubt the Hotel Royal, which is one of France’s coveted palace hotels. This 5-star retreat has a prime location overlooking the lake, with 60 percent of rooms offering beautiful views across the water. Each has a balcony too, making the perfect spot for breakfast in your room or a glass of Champagne in the afternoon.

Hotel Royal is part of the Evian Resort, so if you stay here, you’ll also be able to make use of the facilities at sister hotel, Hotel Ermitage.

The Hotel Royal certainly captures the sense of grandeur Evian is known for. Fittingly, the original hotel was built for King Edward VII when he asked for the most beautiful hotel property to be built for him. Sadly, he passed away before it was completed, though the Edward VII suite pays tribute to him with its incredible panoramic balcony.

The hotel is a trove of luxuries. You can dine in the excellent Michelin-starred restaurant, relax in the stunning infinity-edged pool that gazes out over the lake, or unwind in the spa with a massage and a visit to the sauna, steam room and bubbling hot tubs. One of the best things about the spa is that it’s open until 11pm, so it’s never too late for a spot of pampering.

Nearby, the resort’s Evian championship golf course is a huge draw, attracting players from across the world to play the 18 holes with stunning views.

What things to do are there in Evian-les-Bains?

While it might be a small town, there’s plenty to see and do when visiting Evian-les-Bains…

Skiing in winter

Sitting on the hem of the Alps, it’s no surprise that Evian-les-Bains is a great base for winter activities.

During the ski holiday season, you’ll have a choice of slopes nearby. Just 15 minutes from the Hotel Royal is the closest ski resort of Thollon-les-Mémises – make sure you stop by the slopeside restaurant for some fondue and a glass of kir while you soak in those incredible lake views.

If you drive out a little further, you’ll reach the largest ski area in Europe – Les Portes du Soleil – which offers runs for all abilities, ideal for more experienced skiers.

It’s not just about skiing, though. Snow permitting, you can also head out for a scenic snow-shoe hike or a dog sledding adventure – you can always warm up in the sauna back at the resort afterwards.

If you stay at Hotel Royal, you can stop by the ski shop to borrow any equipment you need, including skis, clothing, boots and snowshoes.

Summer activities

When the snow has melted, there’s still plenty to do in Evian-les-bains.

The lake itself offers numerous watersports, including waterskiing, kayaking and stand-up paddle boarding. Hotel Royal can arrange a motorboat trip for you too, so you can cruise the shores of Lake Geneva and stop to see some sights.

When the snow has melted , you can still head out to the mountains in summer for a hike. With clear bright skies, there’s stunning scenery to admire. For something a little different, Hotel Royal can take you on a guided night hike, where you can walk through the gentle moonlight. For a really memorable day, you could even paraglide out over the surface of the lake.

If you fancy a wander around Evian town centre, Hotel Royal has a funicular railway that runs straight down for hotel guests during summer. Evian-les-Bains is a wonderful base for venturing further afield.

In the summer, take a boat over to Lausanne on the Swiss shores of Lake Geneva. Home to the International Olympic Committee, you can visit the popular Olympic Museum. If that doesn’t interest you, there are over 20 further museums to take your pick from. Alternatively, wander the cobbled streets in search of cheese and wine to taste, or climb the bell tower of the Cathedral of Notre Dame.

A little further around the lake, you could stop by Montreux for the day. The town is known for its mild micro-climate, picturesque promenade and charming Belle Epoque buildings. For music fans, it’s worth visiting Montreux in July to enjoy the famed jazz festival.

Finally, I highly recommend a trip to the medieval town of Yvoire. Officially one of France’s prettiest villages, you’ll be delighted at every turn. For foodies, there’s a Michelin-starred restaurant, or you can simply relax over a coffee or glass of wine for the afternoon and potter around the shops.

Golf is huge in Evian-les-Bains. The Evian Resort Golf Club offers one of the world’s most prestigious courses, with players travelling across the world to tee-off on the Champions course. It hosts the only major tournament in continental Europe, The Amundi Evian Championship and, of course, has more stunning lake views.

If you’re looking to learn new skills or improve your technique there’s also the Lake Course. You’ll be able to make use of The Academy, which has all the state-of-the-art technology you could need to perfect your swing – whether you’re a seasoned golfer or a total beginner.

It might attract throngs of skiers come winter, but summer is the most popular period for Evian-les-Bains. The summer months are warm and sunny, with temperatures reaching around 28°C at their peak.

Visit Evian (Auvergne Rhône-Alpes, France)

Evian-les-Bains is a lovely town on the edge of Lake Leman in the French Alps, north-east of Geneva and with Switzerland on the opposite shore of the lake.. A few years ago Evian won the award for the best resort in France in the World Travel Awards and is also, of course, famous for its spring water which is sold worldwide.

The town first became known to visitors with the discovery of its famous mineral water, and the first baths were built here in Evian in 1824. With its position on the edge of Lac Leman, the biggest lake in Europe, its proximity to the mountains, and the building of some fabulous buildings in the early 19th century when spa baths were all the rage in Europe, Evian has a great deal for visitors to enjoy

France This Way review: below we mention some of the most important highlights to see in Evian, but it is the town as a whole and its lakeside setting that creates the lasting impression on you rather than any particular monument.

Your first stop should be at Evian-les-Bains tourist office which can give you a useful map with a walking route of the town which takes in the key buildings.

The walk along the lakeside is particularly nice with the lake and views across to Switzerland on one side and some fabulous buildings including the Palais Lumiere, the Casino and the Theatre on the other. You can almost imagine the gentry of the early 19th century promenading up and down along Evian's quays.

The Palais Lumiere is a lovely building with views out to the lake that was built by a Parisian architect at the begining of the 19th century. Its facade is a lovely yellow and white and on its roof is a wonderful square tower and glass dome. Walk up the stairs and in the large entrance lobby you can see paintings of nymphs. The palace is also used as an art gallery.

Inside, the large hall is a beautiful airy space with coloured light entering through the large stained glass windows. This area was the pump room and water flowed into the red marble basins beneath each of the four statues in the room. Take a look at the floor which is a beautiful wooden polished floor laid out in a star pattern. Upstairs were treatment rooms but these are now function rooms.

Evian's theatre was built in the late 19th century and has a neo-classical facade. Inside it still has its original polychrome and gilded decoration and is still open as a theatre.

The Casino dominates the water-front promenade in Evian-les-Bains. Any spa town worth its salt had a Casino in the early 1900s and Evian was no exception. In 1877 Evian was bequeathed a 17th century castle which was turned into a Casino. In 1911 this was destroyed and the new casino built. It is dominated by its cupola which was inspired by the Neo-Byzantine style.

The Villa Lumiere has been the Town Hall for Evian since 1927. It too is built in neo-classical style. It belonged to Antoine Lumiere whose sons Louis and Auguste who invented the cinematograph: their work is celebrated in the Museum of Lumiere at Lyon .

Inside the Villa Lumiere, the hall and the gilded drawing room (now the wedding room) are open to the public during office hours.

The Cachat pump room is a fabulous building and has a wonderful entrance with a cupola of glazed tiles and a huge semi-circular glass window. This was the centre of spa-based social life and contains a reading room and a lounge with the water fountain at the centre. This building is the best Art Nouveau building in Evian and is considered one of the best examples of spa resort architecture in France.

The Cachat spring is the most famous of the numerous springs in Evian and is opposite the Cachat pump room. Its fame began when it cured a mysterious illness suffered by the Baron of La Rochette, and the waters of Evian are now famous throughout the world.

Also worth seeing in Evian

Behind the lake front area is the main town where you can explore lots of attractive medieval streets, often opening up to give a view over the lake. The market square was the centre of commerce when the lake was a commercial harbour.

Don't miss the musical fountain on Quai Paul Leger next to the marina. A spectacle of water and music that takes about half an hour, the musical fountain is free and operates between May and October.

Evian still has a working funicular railway, originally built to take guests between the Cachat spring and the Splendide and Royal hotels. It is now open in the summer season for tourists.

Of course Evian is also still popular for its spa treatments and Les Thermes d'Evian occupy a lovely position opposite the lake.

Attractions lose to Evian les Bains

There are a good number of places of interest to visit during your stay in or near Evian. Among our favourites:

- If you are interested in the bottling process of Evian you can visit Evian's bottling plant at their factory between Thonon and Evian.

- There is a water garden on the edge of Lac Leman at Evina. The Jardins de L'eau du pré curieux are set in 3.5 hectares and show various water-based ecosystems. Access is by boat from the Quai Baron de Blonay (the main quay in Evian).

- Boats also leave Evian to take you on a 35 minute boat trip across the lake to the Swiss 'riviera' town of Lausanne. From here you can also take boat trips all along the Swiss lake edge and visit the beautiful towns of Montreux and Vevey and Chillon.

- Ripaille castle is 8km from Evian and as well as visiting the 15th century castle and its arboretum you can sample and buy wine from the estate.

- There are several picturesque villages along the lake near Evian, with Yvoire to the west being one of our favourite villages in France.

A Users Guide to Bottled Water

One write made the ultimate hydration tour, visiting the sources of the world's best waters to find out once and for all what's inside all those bottles.

The summer before last, during a brutal Colorado heat wave, I drove from Boulder up a dusty road to Eldorado Springs, the source of the water that had been named the best-tasting in the country at the Berkeley Springs International Water Tasting of 2016. Next to a stream flowing under a bridge decorated with flower boxes, I parked by a squat stone pumphouse, put a quarter in a water dispensing machine, filled a bottle, and chugged. In that beautiful setting the clear, cold purity of the water, consumed so close to its source, was the best drinking experience of my life.

Back at my Long Island summer home, it was the opposite. The tap water, which comes from local aquifers (not the reservoirs that supply New York City with its world class water), tasted like chlorine. The talk at parties was about a toxic plume from a landfill, dioxane, and contaminants in the soil from a nearby nuclear laboratory. Before I could stop myself, I became a bottled water user, stocking our house with San Pellegrino, Evian, O, and Perrier.

Never mind the environmental issue of all those bottles, a Times article debunking the need to drink eight glasses a day, or the healthier “raw water” trend; I savored each sip of the old European classics. But when I looked at the bottles on my table, I realized I knew nothing about them. That simply would not do in a source-crazy society in which connoisseurship is all.

What if I were to take a trip to see where my bottled waters came from—sourcing the sources, as it were? After all, obsessive oenophiles travel to learn about the terroir and blending of the wines they consume, so why not take a water tour? Plus, with the poisoned water disaster in Flint, the latest concerns about drought in California and Cape Town, and the EPA’s recent suspension of President Obama’s clean water regulations, what could be more relevant?

DAY 1: PERRIER

On a hot October morning I wake up in the tiny village of Vergèze, in the south of France, to drive through miles of sun-drenched farmland, hungover and thirsty from a lonely night of drinking more than the Perrier placed on my table. I am not far from Nîmes, and the land is flat, arid, and not at all what I expected when I imagined the place where Perrier is bottled.

After passing a factory as big as an airport, I end up in a cavernous underground space at one of the earliest cachements (water-sheds) used by Dr. Louis-Eugene Perrier when he started his bottling business in 1898. When Perrier first perfected gas and water “capture,” the technique was novel. But harvesting water from its gurgling source, Les Bouillens in Vergèze, dates back to the Romans. The water I’m looking at now, bubbling under walkways and giant copper cones that capture the natural gas (to be re-added later in the factory), tells only part of the story.

“Perrier is an expression of the terroir,” the company’s communications director Fabio Brusa tells me. It begins with rainwater entering the distant Massif Central mountains through fissures in the limestone rock, mingling with gas that has volcanic origins, and traveling hundreds of miles through silt, stone, and sand to be pumped from four highly secured company wells. “Our water has the same mineral content it has had for hundreds of years.”

To preserve its environment, Perrier subsidizes local olive, grape, and saffron growers in using the best organic techniques—in other words, going to great lengths to protect the water supply in ways that the EPA may not.

I walk through a garden to take a tour of a museum in a stately old stone mansion, where newspaper clippings tell the story of how Perrier (its source having been authorized by Napoleon III in 1863) started exporting to England and the U.S. and grew to the present nearly 1 billion bottles a year shipped to 140 countries. In a tasting room I try the Perrier Blue, which is not available in the U.S. and has delightful, smaller bubbles (to compete with Badoit), and a bracing Perrier Menthe, which isn’t available in the states either.

“I had too much red wine last night, so I’m dehydrated,” I tell Brusa. He reminds me that Perrier has always allied itself with bars and drinking more than with health and food. “Between every two alcoholic drinks you need to pause with a water,” he says. I tell him I’ll drink to that and grab several bottles for the road.

Although bottled water existed even before Louis XIV declared his love for Chateldon (with its discreet, naturally occurring little bubbles), its popularity in the U.S. came later. Some link it to the health craze of the late 1970s, others to New York Fashion Week in the early 1990s, when Evian, looking to move beyond its presence in the sports world, became a sponsor.

The trickle-down from paparazzi photos of models with bottles was immediate. Hydrating became a thing. Bottlers started misleading us into thinking that drinking lots of water was key for good health. Soon, and especially when Nestlé’s Poland Spring in Maine became a market force, environmentalists began to decry the privatization of a natural resource. Politics followed, along with questions about all those bottles and whether they were being efficiently recycled.

And, yet, despite whistleblowing books like Bottlemania and Bottled and Sold, the thirst has continued. These days everybody has a preferred water, whether bottled, boxed, or canned. “It’s about choice: taste, bubbles, bottle shape, and the narrative romance of where the water comes from,” says Dana Cowin, former editor in chief of Food & Wine . She remembers when Alain Ducasse opened his first New York restaurant, in 2000, with a selection of waters that drew mockery. “And there will always be waters that are trendier than others.”

Right now the trendy ones seem to include the upmarket Lurisia, from northern Italy; the extremely popular La Croix, from Wisconsin; and Essentia, for health obsessives. When I call Michael Mascha, the founder of Finewaters.com, for tips about visiting the sources of the old-school waters I drink, he pushes lesser-known brands in “the superpremium category.” These include one from a glacier in Antarctica and another with high mineral content from Slovenia.

Many get this indoctrination at the Ray’s & Stark water bar in Los Angeles. I had mine at the water bar at Colette, the Paris department store, before it closed last year. “Water is a way of life for us,” Guillaume Salmon, the store’s spokesman, told me. For an impromptu tasting he moved me from the mildest of waters to the strongest. But the Elsenham, from a pure “confined aquifer” in England, while rich in calcium, was distinct only for its square glass bottle.

The Hydroxydase, from the Auvergne, was without taste to my unknowing senses but so rich in minerals that it is sold in pharmacies. Mineral water, to be clear, is sold more for health than taste—since we all need minerals and not all waters have them. Calcium is good for bones, magnesium for cardiac health, sulfates for cholesterol, and bicarbonate for digestion.

“We’ve taken the waters at thermal baths here for centuries, so we know locations,” Salmon said. “Americans really don’t get to see where their water comes from the way we do.”

I like being the exception. But before going on with my water log, so to speak, some definitions: Purified or filtered water (Dasani, Aquafina) is tap water that has been distilled, deionized, or put through reverse osmosis. Water snobs eschew it. And those “ionized” waters with an added electrical charge that supposedly increases antioxidants? Not much there, and it turns out that the tap water in many cities has enough antioxidants anyway.

Alkaline waters, also dubious, increase pH to supposedly spare the body having to produce extra bicarbonate, giving the organs a holiday—but for no real reason. Hydrogen water is purified, then infused with hydrogen, which is reputedly good for inflammation and pain but without clinical proof. And those waters with added electrolytes? It turns out the tap water in many cities has more.

Spring water is bottled water that can be a mixture from various sources—including the economical Poland Spring from Maine and the much older Mountain Valley Spring from Arkansas. The trendiest new raw “live” waters—untreated, unfiltered, and unsterilized (and somewhat controversial because they can have bacteria and other contaminants)—come from springs or sometimes from systems installed on rooftops to collect rainwater. Mineral waters, my trip’s focus, come from single underground sources and contain at least 250 parts per million of total dissolved solids. They are very strictly regulated. And, like all the most interesting people, extremely complex.

DAY 2: AIX-LES-BAINS

On the second day of my European water tour, I pull into a small factory at Aix-les-Bains (like Perrier, the bottled water is named after the town), a beautiful, historic village with a massive hillside thermal spa. I’m north of the Perrier factory and south of Geneva.

Phillippe Germaneau, the affable manager, gives me the tour, showing bottles blown like glass but from plastic cubes. He takes me to a lab where water chemists test samples. He drives me uphill past woods and fields to an “impluvium” and points out the limestone rock ledges where rainwater seeps underground until, after some years, it reaches a locked well in town, where a pipe brings it to storage tanks.

Like the water from nearby Evian, Aix-les-Bains water (also sold as a facial spray) is said to flush out the kidneys. Patients at the town spa come to treat rheumatism and phlebitis. Over dinner Germaneau looks proud as a waiter presents a striking triangular plastic bottle. We take sips, but there’s no taste, just a softness.

“Tasting water is like tasting wine,” he says. “The one that is good is the one you like.”

DAY 3: EVIAN-LES-BAINS

I think about this as I drive to Geneva to pick up my brother, a wine connoisseur. On our first night in Evian-les-Bains, east of Geneva, he charts the mineral content of various waters. Evian, at 345, has a small amount. Perrier, at 475, has more, and San Pellegrino, at 940, is so mineralized that it is not recommended for babies. We sample and try to critique. Although I’ve heard that magnesium tastes chalky, and I have friends who believe one water is sweet, another acidic, we can’t tell much difference beyond bubble size and the impact of carbonation. “Does TDS stand for Total Dissolved Solids or Too Damn Specific?” my brother asks.

In the middle of the 19th century the wealthy traveled by train(as they did to spa towns all over the continent) to Evian-les-Bains, a pretty little city with Alps rising around Lake Geneva. They stayed in the magnificent Hôtel Royal (host to Marcel Proust, Greta Garbo, and Maurice Chevalier, it was recently honored with a Palace award) and, on doctors’ orders, drank from a town spigot to flush urinary tracts, rid kidneys of stones, and treat other ailments.

“That clock tower was for patients timing their drinking,” Patrick Lachassagne tells us about the defunct Belle Epoque spa next to the original Evian factory, which has been replaced by a vast one outside town. Lachassagne is Evian’s hydrologist, and he has started our tour at Source Cachat, where the same Evian we drink at home comes out of a bronze faucet for public use. I wait for locals to fill their giant bottles before filling mine. This is the same easily absorbed pH-neutral water discovered by the Count of Lazier, a man of science, in 1789.

“There are other sources, but Evian tastes the best,” says Lachassagne, whose brand won a tasting contest judged by his hydrologist peers. I can’t say I would be able to agree or disagree, but one fact is indisputable: Evian is recognized by the World Health Organization for having pH and mineral content that come close to the natural levels in our bodies.

Lachassagne, a rugged and lean man, is excited to take us up into the green hills, past cows and woodlands, to step onto a plateau that looks out over the mountains and lake. It’s not exactly the Alpine meadow I’d envisioned from the bottle, but it’s lush and green. “This is the real factory,” he says. Stewardship of this land keeps Evian’s water pure. A stainless steel pipe brings it down to town and factory.

The company (owned by Danone) has no conflict with environmentalists. Like all French bottlers, it pays a tax for harvesting the water, which flows in such abundance that most ends up in the lake. Some also ends up in the pool at Evian’s modern, state-of-the-art spa in town, where my brother and I take a swim that feels more salubrious than decadent.

If a pool filled with Evian is nice, it’s nothing compared with QC Termal Spa in San Pellegrino Terme, an Art Nouveau palazzo above town in the Bergamo area northeast of Milan. While the original San Pellegrino Spa (the word spa is sometimes said to come from the Latin salus per aquam , “health from water”) was a birthplace of modern wellness practices that drew celebrities and royals, QC’s business model was inspired by the ancient Romans, who socialized heavily in their public baths.

In hooded white bathrobes, we climb a marble staircase and pass into bathing areas that feature everything from shoulder-pounding waterfalls to therapeutic underwater music. We bathe in the waters for hours while young Italians around us smoke and drink espresso.

After a waterlogged sleep in a small hotel by the roaring Brembo River, I arrive at the San Pellegrino factory, my last stop. Immense steel tanks full of the highly mineralized water, which collects nearby, at around 3,500 feet in the Alps, overshadow the parking lot.

The San Pellegrino company, started in 1899, can make 40,000 bottles an hour in a factory from the 1960s that is soon to be replaced by one designed by a world class architect. “We always look to improve,” says Antonella Stefanelli, the communications officer who is giving me a tour. A citrus smell fills the building because today they’re making Aranciata, San Pellegrino’s first soda, invented in 1932.

Water is never just about water.

In a gallery overlooking the factory, Stefanelli points out newspaper pages from a century ago that chronicle the elite who visited the town spa, hotel, and casino. After a day of healthy pursuits they would spend nights drinking, smoking, and gambling. Many old ads are set in restaurants. The brand still promotes pairing its products with food, and it holds a chefs competition.“Water,” Stefanelli says, “is never just about water.”

I learn more as the tour winds down. For one thing, Italy, the world’s largest consumer of bottled water, is rich in thermal areas. And yet a brand famous for bubbles is not naturally sparkling. Over a century ago, when carbon dioxide was first added to preserve San Pellegrino for shipping abroad, the result was so pleasing that the product stayed that way. The other thing I learn is that pellegrino means pilgrim—the perfect factoid for the end of a water tour.

On the flight home I wake up parched to find a flight attendant offering a lowbrow bottled water that any connoisseur would eschew. But I’m so thirsty I don’t think about its low minerality or whether it is filtered or distilled. I just chug it down and feel quenched. Sometimes water is only about water, isn’t it?
