Join us on a coach trip to Tiptree, Colchester!

Today we make our way to Tiptree for a Farm Tour followed by a cream tea.

Tiptree Jam Farm Tour: A 40-minute guided tractor tour around the Tiptree Fruit Farms where they have been farming since 1757 and making quality preserves since 1885. During the tour you will see traditional methods combined with cutting edge new technologies in fruit farming. During your visit you will be seated in the Tiptree Tea Room ‘Tiptree Secret Tea Garden’ under our marquee where you will be served a Tiptree Cream Tea with a tea or coffee*.

Tiptree Jam Museum: You can visit our Tiptree Jam Museum which holds the John Wilkin Collection. It is a great place to trace the history of Wilkin & Sons and Tiptree preserves, find out more about village life in Essex, and of course to find out all about jam-making. We also have our Jam Shop for all of your Tiptree favourites as well as a range of carefully selected giftware.

A lifetime ago, J.S. Wilkin began collecting the paraphernalia of preserve making and Essex village life. In quiet corners of the preserve factory he carefully stored away pictures, documents and redundant machines. Then, as the business approached its Centenary celebrations, ‘Mr. John’, as he is known, asked for room to display some of his hoard.

At first, the collection was displayed in a private room within the factory. Mr. John’s wife Daphne worked tirelessly to record each artefact and document, producing notices to explain and help visitors understand the history of the jam-making business and indeed that of the village itself.

Later, with the opening of the museum in a renovated farm building at Tiptree, Mr. John’s foresight was at last rewarded. Today, visitors can see how village life used to be and how the art of preserve-making has advanced over the years at Tiptree.

When we stayed at Potters Resort in Five Lakes in Essex , we realised that the Tiptree Jam Museum was just a couple of minutes away – and so decided to visit after checking out as a nice little excursion before heading home.

What is the Tiptree Jam Museum?

The Tiptree Museum showcases how the art of preserve-making has advanced over the years at Tiptree. It’s an iconic British brand with a rich history that spans hundreds of years and the museum was created at the home of Tiptree to allow visitors the chance to learn more about such a lovely part of British history.

The history of Tiptree jam

You need to visit the museum for the full Tiptree history, so here’s just a short overview for you. Started in the early 1700s, Trewlands farm was originally an arable farm but by 1865 they had moved to fruit farming and by 1885 The Britannia Fruit Preserving Company was formed and the very first Tiptree preserves were made. The rest, as they say, is history.

Tiptree have been working to update the museum to give visitors an insight into village life and jam making. It’s free to visit and we spent about an hour there, learning about farming, jam making and how the processes and industry has changed over the years.

The Tiptree museum also has a tea room. – and there are other Tiptree tea rooms across the country. They have great breakfast and lunch menus, a dedicated children’s menu and plenty of hot drinks and sweet treats on offer – including great afternoon tea options!

Our last port of call was the Tiptree shop which sells so much Tiptree produce as well as gift ideas. I can guarantee that when you visit you won’t leave empty handed. We both went home with bags of jam!

We really enjoyed visiting the Tiptree Museum and it was a great way to finish a lovely weekend away. If you are in the area it’s well worth popping in and if you feel like visiting for afternoon tea, make sure you visit the museum at the same time.

Tiptree Jam Farm Tour : a 40 minute guided tractor tour around the Tiptree Fruit Farms where we have been farming since 1757 and making quality preserves since 1885. During the tour you will see traditional methods combined with cutting edge new technologies in fruit farming. During your visit you will be seated in the Tiptree Tea Room ‘Tiptree Secret Tea Garden’ under our marquee where you will be served a Tiptree Cream Tea with a tea or coffee*.

It is a great place to trace the history of Wilkin & Sons and Tiptree preserves, find out more about village life in Essex, and of course to find out all about jam-making. We also have our Jam Shop for all of your Tiptree favourites as well as a range of carefully selected giftware.

At first, the collection was displayed in a private room within the factory. Mr. John’s wife Daphne worked tirelessly to record each artefact and document, producing notices to explain and help visitors understand the history of the jam-making business and indeed that of the village itself.

Later, with the opening of the museum in a renovated farm building at Tiptree , Mr. John’s foresight was at last rewarded. Today, visitors can see how village life used to be and how the art of preserve-making has advanced over the years at Tiptree.

In recent years we have been making some changes to the museum to bring it back to life, including the opportunity to dress up like one of our jam makers from 1885.

A lifetime ago, Mr J.S. Wilkin began collecting the paraphernalia of preserve making and Essex village life. In quiet corners of the preserve factory he carefully stored away pictures, documents and redundant machines. Then, as the business approached its Centenary celebrations, ‘Mr. John’, as he is known, asked for room to display some of his hoard.

At first, the collection was displayed in a private room within the factory. Mr. John’s wife Daphne worked tirelessly to record each artefact and document, producing notices to explain and help visitors understand the history of the jam-making business and indeed that of the village itself.

Later, with the opening of the museum in a renovated farm building at Tiptree, Mr. John’s foresight was at last rewarded. Today, visitors can see how the art of preserve-making has advanced over the years at Tiptree.

In recent years we have been making some changes to the museum to bring it back to life and to give visitors an insight into village life and jam making.

Entry to the Tiptree museum is free.

For your guidance, a quick visit may take just fifteen minutes, but it’s more usual to allow 30-45 minutes with perhaps an extra 10 minutes to watch the video display that explains how the fruit is grown and illustrates how traditional preserve making continues to this day in Tiptree.

Millions of people have heard of Tiptree Jam Factory, but very few have been inside.

Wilkin & Sons has been based in the village since 1885 and has been producing jam and other fruit preserves ever since.

The company is now recognised globally with its products sold in more than 60 countries worldwide, and it even has a Royal Warrant to provide preserves for the royal family.

But besides the management and staff, very few people have had the privilege of venturing inside to see what happens behind the scenes at the famous factory.

We got invited along to find out exactly what goes into producing the products enjoyed by millions of people around the world.

The famous landmark that defines a village

Situated on the aptly-named Factory Hill, Tiptree Jam Factory is the stand out landmark in the village.

The residents have come to know and love the three 'Tiptree Jam' towers, the factory hooters and the smell of the cooking preserves which provide a real feeling of home.

Wilkin & Sons currently produces around 70 different preserves , along with a variety of other modern products that have served to expand the company's appeal even further.

Marmalade is one of its most popular products, and the company produces no fewer than 17 different varieties of the delicious spread.

As January is prime marmalade season for the factory, we got the chance to see the entire marmalade-making process, from peeling the oranges to putting the product on the shelf.

All the way from sunny Spain to Tiptree

Seville oranges are some of the best in the world, and you'd expect nothing less for a company with such a global appeal.

In January, the factory ships in the oranges all the way from Spain as they begin to ramp up their marmalade production.

Mark Smith is the factory manager and has worked for Wilkin & Sons for 40 years. He talked us through the process of producing the famous product.

“We have two main methods of making marmalades at Tiptree , the traditional way and the jelly based method,” he said.

Both processes were going on when we were there.

"For the traditional method we simmer whole oranges in large vats for four hours and when they are cold the workers set about splitting them and separating the peel from the fruit and seeds. 

"There are about half a dozen people dedicated to sorting through the oranges and splitting them.

"The pulp is sieved to remove the pips while the peel is sent along to be cut. The peel and fruit pulp are brought together with sugar syrup and cooked ready to be potted into jars.

The weird and wonderful products of Wilkin & Sons

It's no secret that the first thing most people associate with Wilkin & Sons is strawberry jam. It's the company's most successful and popular product, but it's by no means their only one.

From jams to fruit juice, and from steamed puddings to tea, there's something for everyone.

While the company has introduced a variety of new products during its 134-year history, some of its trademark conserves remain at the heart of production.

They may not be as well known to the average customer, but these Wilkin & Sons products are by no means any less tasty.

The new creations:

The company is always introducing new lines, and these are some the latest you need to try.

One thing that stood out at this stage of the tour was the smell.

With so many freshly peeled oranges around the room, it was quite incredible.

A team of around 12 people go about cutting the peel into 'chips' - the fine shreds you'll find in your jar of marmalade.

This part of the process takes place in the 'Crate Room', named after the wooden packing cases that would have held the oranges in the past.

The team then puts the chips of peel into trays before shipping them to the next part of the process.

Mark said: "The chips are then cooked in a syrup.

"The thick peel, which is used for our Tawny marmalade , is actually cooked three times.

"Once when the whole oranges are simmered, then it is cooked when mixed with sugar and made into marmalade and then the next day this marmalade is cooked again.

"That's where it gets its rich, dark colour and caramelised flavour.

"We are the only company that produces this type of marmalade, and once the peel has been cooked and then drained we can freeze it. This means we can use it all year round."

"At that time we cook the orange juice, sugar and chips to make a popular fine jelly based marmalade. "

Boiling enough to fill 50,000 jars every day

And that's just large jars.

Once the oranges have been peeled, sorted, soaked and cooked, they are then brought up to the boiling room.

It was a fascinating part of the factory. Huge mechanical buckets bring the product round to one of the many boilers where a member of staff is on hand to load them up.

Each boiler, which can hold 200 jars-worth of preserve, then boils the product for around 15 minutes until it reaches the right temperature.

Despite the sheer size of the place, it was still incredible to hear that more than 50,000 large jars of various preserves can be filled each day, along with a further 50,000 small jars.

With such a widespread reach and a growing appeal, it's a number the factory has to hit in order to keep up with the demand.

"After 28 years I still love coming to work"

Tracy Warren has worked at the factory for 28 years.

Now production group leader, she has been part of the company's major development over the past three decades.

"I've worked here more than half of my life," she said. "When I first started my mum and two sisters also worked here as well as my sister-in-law. They left but after 21 years I got one of my sisters back.

"I oversee several departments, including the section for Christmas pudding which is made here on site. I also oversee the sorting room, the boiling prep room and the administration office.

Wilkin & Sons: The history of Tiptree jam

Arthur Charles Wilkin decided to bring fruit preserving to the people of Tiptree.

In 1885, the Britannia Fruit Preserving Company was formed and the very first 'Tiptree' preserves were made, all to be sold to a merchant who would ship them to Australia.

Within ten years, more than 200 tons of fruit was being produced.

Records show that 400 fruit pickers were employed as part of the Tiptree jam-making project, earning between 12p and 40p a day.

Factory workers were also busy making the jam with a wage of £1 per week.

The early 20th century

By this time, the company was known as Wilkin & Sons.

In 1906, the company owned 800 acres of land, yielding 300 tons of fruit each season.

Wilkin & Sons also became the proud holder of a Royal Warrant from the reigning monarch in 1911, and has produced preserves for the royal family ever since.

However, the First World War brought business to a standstill and there was much unemployment within the company.

With the war over, things improved and by 1922 the company owned 100 houses, eight farms, a windmill, a blacksmith's forge, the Factory Club, the Salvation Army Hall, the factory and 1,000 acres of land.

The population of Tiptree had grown to more than 1,400 people, encouraged largely by the jam-making.

As the village changed and the population continued to increase, the Tiptree preserves business experienced a long period of steady growth.

Going from strength to strength, the company renewed its focus on home-grown fruits which helped the farm to flourish.

In 1990, the Tiptree Shop was opened, followed later in the decade by the tea room and the museum. Recorded visitors soon exceeded 50,000.

The factory continued to modernise as state of the art packing and filling machinery went hand in hand with the company's skilled labourers.

The company's 125th anniversary was marked by all-time record sales, despite the global recession.

In a year of celebration, 2010 also saw a visit from Her Majesty The Queen.

Today, Wilkin & Sons also has a flourishing fresh fruit business and multiple tea rooms across Essex.

Thursday Cottage, a hand-filled preserves maker, is now owned by Wilkin & Sons and based in Tiptree.

Part of the farm has also been opened up to the community by means of Permissive Ways and each year up to 4,000 visitors are shown around the farm on Open Farm Sunday.

Community remains very much at the heart of the business.

"The company's grown considerably. We've outgrown the factory premises for sure with new lines and new products so it really has made an impact internally.

"We're looking into new things all the time. We do unusual fruits, like quince jelly and pineapple, we even used to make a kiwi jam but not anymore.

"We also make mulberry. It's quite expensive but we have our own mulberry orchard."

Tracy is born and bred in Tiptree and has lived there her whole life, but the excitement of going to work every morning has never left.

"After 28 years, I still love coming to work, and it's because of the people," she said. "It's knowing you're making a good product and when you go around the world on holidays you see them on the shelves and it's fantastic.

"The Queen even eats our products and I'm sure she enjoys them.

"When you say to somebody that you work in Tiptree, they say 'oh that's where they make the jam', so it's known to people everywhere.

"Wilkin & Sons put Tiptree on the map. It's one of the first products people turn to, not just because of the local appeal but because of the quality."

The filling room is a sight to behold

Any doubts over the possibility of filling 50,000 jars a day were blown away when we walked into the filling room.

It really was quite incredible. Conveyor belts everywhere you look, each running in a different direction but each working in perfect unison to put everything together.

Thousands of jars, or 180 large jars per minute to be precise, are sent along the conveyor, each being filled with the appropriate product in less than a second.

Sent straight from the boiler room, the preserve is then poured into the jars at around 90 degrees Celcius.

The lids are then applied as they make their way round, before being collected on a large belt where water is sprayed to cool the product down.

Once cool enough, the jars are sent to be labelled up and packaged away.

It's something like this.

With more than 70 types of preserve and with dozens of countries to cater for around the world, it was no surprise to see so many jars packaged up and ready to be sent away.

All the jars are stored in one big warehouse ready to be taken to the company's distribution centre in Tolleshunt Major, just four miles down the road.

East Anglian strawberry, green gooseberry, wild blueberry, sweet tip raspberry, black cherry, you name it. They were all there, somewhere, waiting to be sent.

Where do they all go?

On a local level, the jam is shipped to a variety of supermarkets and shops across the county, and then nationwide.

There are also 11 Tiptree Tea Rooms located across the county, including Tiptree, Chelmsford , Writtle, Saffron Walden, Billericay , Heybridge Basin, Osea, Dedham, Cressing Temple and Colchester , which has two.

These unique and cosy cafés are situated in some of the most charming areas of Essex, making them the perfect places to enjoy some fresh Wilkin & Sons produce.

Our History

A POTTED HISTORY

The ‘Tiptree’ story begins around the early 1700s with Trewlands, the farm that was later to become the main site for jam-making in the Essex village of Tiptree. Today, there are some 11,000 inhabitants in what may well be the largest village in the country. To save you valuable time online, the definition of a village is generally accepted as “a group of houses and associated buildings, larger than a hamlet and smaller than a town, situated in a rural area.” By the time the Wilkin family had begun to move from arable to fruit farming in 1865, the village’s population was 850. People continued to choose Tiptree as a place to live and the 1961 Census recorded 3,018 inhabitants.

THE BRITANNIA FRUIT PRESERVING COMPANY

Fruit farming in Tiptree involved growing the fruit, then taking it by horse and cart to Kelvedon railway station and from there on to London for sale at the markets. When Gladstone, Prime Minister of the day commended fruit preserving to the population at large, Arthur Charles Wilkin leapt on this idea as a way to finally make a success of farming in Tiptree. In 1885, The Britannia Fruit Preserving Company was formed and the very first ‘Tiptree’ preserves were made, all to be sold to a merchant who would ship them to Australia. Within ten years, more than 200 tons of fruit was being produced, half of that used for making jam. The success of Tiptree’s jam-making project was good news for the village and records show that in 1891, four hundred pickers were employed, earning between 12p and 40p per day. Factory workers in the meantime were busy making the jam and earned up to £1 per week.

THINGS WEREN’T ALWAYS EASY

The opening of a rail link between Kelvedon and Tollesbury via Tiptree did much to help the business and also encouraged population growth as travel became accessible to more and more people. Over the years, Wilkin and Sons (as the Company had by now become known) bought and farmed much of the land surrounding the village and even strayed as far as Dagenham and Suffolk. Today, the ‘Tiptree’ estate includes farms in Tiptree, Tollesbury and Goldhanger. Things weren’t always easy and in one memorable note, Mr. Wilkin records having to sell a horse to pay the men’s wages. Despite that, village records also show that by 1900 an Old Age Relief Fund was helping the poorer people of the district and Arthur Charles Wilkin was active in setting up and helping to run that Fund. About that time he gave the Congregational Church one acre of land, helped fund the building of the Salvation Army Hall and gave employment to the Salvation Army Cadets.

By 1906, the Company owned 800 acres of land yielding some 300 tons of fruit each season. In 1914 The Essex Telegraph reported: “During Monday, over ten tons of strawberries including a large proportion of the famous ‘Little Scarlet’ were made into jam.” 1914 brought the First World War and Wilkin records from November 1914 state “Business at a standstill. Large works closed. Much unemployment.” Again in 1918: “Acute shortage of wheat, sugar and other important foods. Went to see Government Jam Controller in London. Turned out to be a barrister. Very difficult to convince that 1lb of sugar and 1lb of fruit would not make 2lb of jam.” The war over, things improved once more and by 1922, the Company owned over 100 houses, eight farms, the windmill, the blacksmith’s forge, the Factory Club, The Salvation Army Hall, the factory and 1,000 acres of land. The village had grown to over 1,400 inhabitants, encouraged by the growth of jam-making and the Anchor Press which had become a major employer in the area. During World War Two, Wilkin and Sons came under the control of the Ministry of Food but somehow Mr. Wilkin managed to get special dispensation to keep to the original recipes with their high fruit content.

STEADY GROWTH FROM THE 1950’S

During the 1950s, the village changed significantly as the population continued to grow and other businesses moved to Tiptree. An official guide to Tiptree from 1957 lists a shopping centre, two banks, two churches, a wide variety of sports and social clubs, six public houses, a playing field (Windmill Green had been a disused gravel pit) and two primary schools. The Tiptree preserves business has seen good times and difficult times throughout its history but from the 1950s, there was a long period of steady growth. More recently, as the traditional market has declined and British manufacturing has become almost a thing of the past, the Tiptree business has gone from strength to strength. A renewed focus on home-grown fruits has helped the farm to flourish and today, it grows more fruit than ever, in stark contrast to much of the country’s fruit farming enterprises.

125 YEARS OF MANUFACTURING

2010, the 125th year of jam making at Tiptree, signalled all-time record sales, despite global recession. A year of celebration, 2010 was marked by a visit from Her Majesty The Queen. The Company staged a play in the mulberry orchard, specially commissioned to relate the life of John Joseph Mechi, silversmith, inventor and experimental farmer at Tiptree Hall, now part of the ‘Tiptree’ estate. A Tiptree garden was created by Writtle College for the Chelsea flower show, it too reflected on the life of Mechi. The business recorded its best ever sales.

LOOKING FORWARD

Today, Wilkin and Sons not only makes ‘Tiptree’ preserves, it has a flourishing fresh fruit business and multiple tea rooms in Essex. Thursday Cottage, a hand-filled preserves maker is now owned by Wilkin and Sons and based at Tiptree; Passionately Cakes was bought and later merged with Raven Catering to form Tiptree Patisserie, a successful high quality food producer based nearby in Witham. Tiptree Patisserie bought Daizylake cakes and moved that business to Witham. Cole’s Puddings (premium Christmas pudding producers) have also become part of the Wilkin & Sons food family. Many of the staff live in Company-owned accommodation on the estate surrounding the factory. Around 850 acres of Essex farmland produce Grade I fruits, including medlars, mulberries and quinces. Wilkin and Sons is best known for its Little Scarlet strawberries, grown only on the ‘Tiptree’ estate. Adoption of the most up-to-date farming techniques ensure the farm is more successful than ever at growing exactly the right varieties of high quality fruit for ‘the jam factory’. The aim is to retain the flavour of the fresh fruit in the finished product.

ROYAL WARRANT

Proud holders of a Royal Warrant from the reigning monarch since 1911, Wilkin and Sons is a business that plans for the long-term: One target is financial, the other, perhaps more important target is: ‘To do everything better than we did before; to be a remarkable business’. One third of production is destined for any of sixty regular overseas markets. Through a trust, the employees control almost half the company’s shares. Trading profits are used to buy back shares for the employee trust so that everyone involved can truly claim to be a stakeholder. This also offers some protection for the independence of the business.

The company has always been an integral part of the local community - it is the largest employer in Tiptree and takes its social responsibilities seriously. Profits are used to support local sports and arts organisations and to improve the environment. Each year the Tiptree Strawberry Race takes place in June and all funds raised are donated to a charity, usually one with local roots. Tiptree’s Youth Club has the use of our Factory Hall and we provide our local dramatic society & Rotary with storage facilities.. Local sponsorship helps the business in a commercial sense too: there’s a ‘Tiptree’ stand at the Essex County Cricket Club in Chelmsford and support for annual events such as the Essex Life Food & Drink Awards, and Aldeburgh's Food & Drink Festival. To celebrate The Queen’s Diamond Jubilee year in 2012, five years beforehand 2,012 very special over-sized jars of a unique marmalade were made and ‘laid down’ in the Tiptree warehouse. Sold during spring 2012, all proceeds were earmarked for local community projects, with around £5,000 being raised.

The company has provided homes for employees for generations and in 2011 the chairman, Peter Wilkin, cut the ribbon to new bungalows at Gate House Mews which now provide practical homes for retired members of staff.

Each year about 4,000 visitors are shown around the farm on Open Farm Sunday and during school visits. In 2012 the company was recognised as a Linking the Environment And Farming (LEAF) Demonstration Farm, an event marked by the planting of a mulberry tree.

OUR PRODUCTS 

Many new products have been introduced over the years and the first range of Tiptree Fruit Gin Liqueurs was released in 2016, they have proved so popular that the alcohol range has been extended to vodkas and rums and special RAF Spitfire, Hurricane and Lancaster spirits.

NEW GROWING SYSTEM

Strawberries have always been the key crop on the farm and the innovations over the last twenty years have lifted the plants grown in open fields onto tabletop trays often grown under Spanish tunnels. In 2016 this was taken a stage further with the introduction of the first New Growing System (NGS) in the UK for strawberries. The NGS offers a sustainable controlled environment for the fruit, the system doubles the amount of plants that can be grown per hectare and it is much easier for the pickers. Farming in the driest part of the driest county in the country is a challenge so the construction of two new winter fill reservoirs was a great relief. The need for innovation and sustainability was reflected in the opening of a new Resource Centre where two efficient boilers “Arthur” and “Charles” were revealed, named after the founder.

THE QUEEN'S 90TH BIRTHDAY

HM The Queen’s 90th birthday was marked with a special lunch for local pensioners in the village hall and the cutting of a delicious cake. The highlight of 2020 was the visit from TRH The Earl and Countess of Wessex, (Edward and Sophie), who spent an afternoon meeting staff on the farm, in the factory and in the tearoom – they had a cheerful farewell from a hundred local school children. Celebrities spotting at Tiptree during television filming has revealed welcome visits by: Stephanie Flanders, Ade Edmundson, Michael Portillo, Antonio Fuoco, Martin Newell, Gloria Hunniford, Jimmy Doherty, Babs Powell, (Rachel Hey-Hoe Flint), Hannah Waterman, Carrie Gracie, Adam Henson, Phil Vickery and several new presenters.

    The success of Tiptree's jam-making project was good news for the village and records show that in 1891, four hundred pickers were employed, earning between 12p and 40p per day. Factory workers in the meantime were busy making the jam and earned up to £1 per week.
