I am not restricted to any cuisine or dish when it comes to learning. I am always open to learning new techniques or old. I'm very interested right now in learning about molecular cuisine and how that can be applied to Indian dishes. I'm a huge fan of Gaggan Anand and his restaurant Gaggan and seeing what he's done has inspired me to try some of these things myself. I just purchased some equipment for my culinary experiments so we'll see what happens. That is my main interest. I am mainly a vegetarian/vegan , though I do eat a bit of fish on occasion since my husband now eats no meat but does eat fish. Punjab and North India
Meat and Indian bread are the main features of north Indian food. It's hearty and commonly cooked in a tandoor (clay oven fired by charcoal). North Indian curries usually have thick, moderately spicy and creamy gravies.
Popular dishes: Roti, naan, seekh kebab (minced meat on iron skewers), chicken tikka (small chunks of marinated and grilled chicken), butter chicken, tandoori chicken, aloo muttar (curry made with potatoes and peas), rajma (curry made with red kidney beans), chana masala (curry made with chickpeas), samosa, daal makhani (daal made with butter).
Many migrants from Kashmir have moved to Delhi and other north Indian cities. There you can sample their cuisine, usually consisting of hearty meat cooked in curd or milk.

South India
South Indians can't do without rice. It's the staple in their diet. In Kerala, most dishes are coconut-based and seafood is a specialty. In Tamil Nadu , watch out for Chettinad cuisine, perhaps the most fiery of all Indian food. Cuisine from Andhra Pradesh is also hot and spicy. Hyderabad is famous for its biryani. And, the Udupi region of Karnataka is renowned for its simple but vast vegetarian fare.
Popular dishes: No South Indian meal is complete without rice in some form or other -- either boiled rice or idlis (steamed cakes made from rice batter), or dosas or uttapams (pancakes made from a batter of rice and lentil flour). Perhaps the south Indian food that's most enjoyed by travelers is the masala dosa . It's a thin crispy pancake filled with spicy potato and onion. Cheap and tasty!

Rajasthan's cuisine has evolved to suit the state's harsh dry climate. Dishes are often made to be stored for several days and served without heating. Dairy products are used extensively due to scarcity of water, and liberal dousing of food with ghee (clarified butter) is regarded as a sign of prosperity. Unrefined regional grains such as millet and jowar (sorghum) are common as well.
Popular dishes: You can't visit Rajasthan and not sample d aal-baati-churma . This hearty and iconic dish consists of daal (lentil preparation), baked round baati (bread), and baati crushed and fried in ghee and jaggery. It's also widely consumed in Madhya Pradesh and Uttar Pradesh.
The food in Goa is dominated by seafood (of course, being a coastal state) and pork. The Portuguese influence shows up more obviously at dinner in the evenings, when roast beef may even be served (most Goans are Catholic, and as a result eat beef). Goan food also features elaborate puddings and cakes. Xacutti (coconut-based curry), cafreal (marinated and fried/grilled), sorpotel (stew), recheado (stuffed), ambot tik (sour and spicy), and vindaloo (fiery curry marinated with garlic and vinegar or wine) are common types of dishes. And of course, Goan chourico (sausages) and Goan pao (bread).

Gujarat and West India
Gujarat's cuisine is known for its slight sweet touch (at least a pinch of sugar is added to most dishes!) and is traditionally entirely vegetarian. This makes it a delight for those who don't like to eat meat. Rest assured you don't have to go to Gujarat to get lip-smacking Gujarati food. It's widely available in Mumbai .

Bengal and Odisha
Bengalis and Odias LOVE fish! It's fried, stewed lightly with vegetables, or made into jhol (curry with thin consistency). Hilsa (ilish) is the most savored variety of fish in Bengal. Equally adored when it comes to food are sweets, usually milk-based. The most renowned item in Odia cuisine is perhaps dalma -- a hearty stew made out of lentils and vegetables.
Popular dishes: Maacher jhol (fish curry), sorshe maacher jhol (curry with mustard paste), daab chingri (coconut prawn curry), sandesh (sweet made with condensed milk and sugar) rasgulla , (sweet made from balls of Indian cottage cheese cooked in light sugar syrup), mishti doi (sweet made from curd and jaggery and served in an earthen pot).

Ladakh, Sikkim, Himachal Pradesh
You'll find a significant Tibetan and Nepali influence in the cuisine of the mountainous areas of northern India, due to migration and proximity to the borders of these countries.
Popular dishes: Thukpa (hearty noodle soup), momos (steamed or fried stuffed dumplings), gyakho (stew). In Sikkim, try tongba (famous Himalayan millet beer).

North East India
Also very different to typical Indian cuisine, food in North East India is largely devoid of oil and masalas . However, it is hot and spicy! Rice, vegetables and meat stew make up most meals. Pork is very popular and beef is not forbidden. You'll also come across some rather usual ingredients, such as ant eggs, dog meat and hornet larvae.
Popular dishes: Pork stew with bamboo shoots in Nagaland. Masor tenga (sour fish curry from Assam), dawlrep bai (spicy beef or pork curry from Mizoram), chamthong (vegetable stew from Manipur), pasa (spicy soup with raw fish from Arunachal Pradesh)

India Travel Tips for First-Time Visitors
I’ve never been to India. I know. Crazy, right? It’s not that I don’t want to go but life has just always gotten in the way. However, India is a place a lot of people visit and, since I can’t write about it, I want to bring in someone who can: my friend Mariellen Ward. She’d a travel writer who has been going to India since 2005 and runs the website Breathedreamgo . We’ve known each other since 2010. Today, she’s going to share some tips on how to visit India for first-time visitors.
I will never forget my first time visiting India. My first car trip in Delhi felt like a roller-coaster ride. Cars and trucks of every size, overloaded bicycles and motorcycles, and even the occasional bullock cart, seemed to be coming at me from every direction. No one was paying any attention to lanes or the rules of the road. Vehicles were driving the wrong way. I couldn’t make sense of what was happening.
I had heard about the “sensory overload” travelers feel in India, and now I was experiencing it. It was exciting and nerve-wracking in equal measure. And just a taste of things to come.
I spent six months crisscrossing the subcontinent on my first trip, back in 2005 and was often overwhelmed by the huge crowds, the foreign traditions, the perplexing bureaucracy, the mind-boggling complexity, and the bewildering culture shock.
These things combined make India a challenging — though very exciting and rewarding —destination.
However, if you read and follow these travel tips for first-time visitors, they could help smooth out some of the more disorienting bumps.
1. Slow down
It takes time and some know-how to successfully navigate in India. This is not a place for hurried travel. Don’t try and see as much as you can; that is not the right approach. It’s tiring to travel in India, and the object should be to experience it, not to check things off a list.
As a general rule, for every two weeks you are in India, pick one region. For a one-month trip, just pick two regions — say, two weeks in Rajasthan and two weeks in Kerala . You can even sit in one place and still not miss anything. No matter what, if you are in India, you will experience India.
2. Adjust your attitude
Likewise, accept that things will not go as planned. Cultivate the philosophy that things happen the way they are supposed to, not the way they are planned. This attitude can lead to the most marvelous adventures.
3. Be careful who you trust
Having said that it’s a good idea to be open, a healthy level of skepticism also comes in really handy in India. There are many con men there, especially in the travel and hospitality sector. They have a sixth sense for first-time visitors and will try and take advantage.
So, learn the prices by asking locals and other travelers before negotiating with auto-rickshaw drivers and market vendors. Don’t believe drivers — or random people you come across at airports, train stations, and tourist attractions — who tell you things such as your hotel burned down, or the train you want was canceled.
Often, an opportunity to make money off of you will spur creative tactics, and some of these scams can easily catch you off guard. Once, I was looking for a new iPhone case and the vendor showed me one and told me it was made by Apple. But a close look revealed four spelling mistakes in one short sentence engraved inside the case.
4. Practice safe travel
There are also anecdotal reports of women being molested, especially in busy, crowded places. Follow basic precautions and safe travel strategies, and use common sense in India.
Here are several safety travel tips (please read my top tips for women traveling in India for more details):
- Buy a local SIM card so that you can make local calls and stay in touch.
- Research carefully where you want to go, ensuring it is an area frequented by other travelers, with good infrastructure and hotels.
- Plan your travel so you don’t arrive late at night; travel during daylight hours only.
- Be careful when posting to social media, so that you are not revealing your current location.
- Stay alert to your surroundings, and keep a close eye on your handbag and luggage.
- Keep the Tourist Helpline number handy and call if you need any assistance: 1-800-111363.
5. Try a small group tour
For your first time in India, try taking a small group or custom tour to help you get your feet wet. My company, India for Beginners , was founded to help women travel safely and well in India. 6. Take the train
Taking a train in India is a great experience and should not be missed. However, you need some basic knowledge about the classes and the trains. You may not want to dive into sleeper class or general class immediately; I would recommend 2AC (second class with air conditioning) or CC (chair car). Or even 1AC (first class with air conditioning) or EC (executive chair car).
Shatabdi and Rajdhani trains are among the best in India, so try and book one of these. Overnight trains can be a problem because they don’t clean the toilets at night, so keep that in mind when you book.
7. Eat the food
India is one of the world’s great culinary destinations, and first-time visitors should not shy away from trying all the delicious cuisine on offer, even street food. Some of the famous Indian items you shouldn’t miss are masala chai, sweet lassi, biryani, pakoras, dosas, and sweets such as gulab jamun and kheer.
It’s hard to avoid getting sick in India, though, because you never know when a tainted item will cross your plate. It could be at a street stall or a five-star restaurant. However, you can reduce the chances of getting sick by following these basic rules:
- Drink filtered or bottled water only.
- Watch for undistilled water in ice or sauces.
- Avoid salad and other raw food unless you can peel it (such as an orange or banana).
- Eat only food that is freshly cooked.
- Look for busy stalls and restaurants with high turnover.
8. Get a local SIM card
Everything in India runs on WhatsApp, one-time password (OTP) verification, and text messages. Because of this, you need a local number. To do so, get a local SIM at the airport when you arrive. Still, you may have trouble paying for things online with a foreign credit card, as India requires OTP verification, and getting registered with Indian Railways so you buy train tickets online is nearly impossible.
9. Remember where you are
For example, unless you’re on the beach in Goa, it’s wise to wear modest clothing in India . Long, loose, and flowing are key for dressing for the climate and the culture.
It’s also best to be very respectful, especially with regard to the myriad religions. And be aware that genders relate differently in India, and overfriendliness can be misconstrued. Be polite, but with strangers, and especially those working in the hospitality sector, it’s usually best to dial back effusive friendliness.
10. Follow the seasons
Weather and the season matter in India. It’s incredibly hot almost everywhere in May and June, the monsoon season is July to August, and it’s surprisingly cold in north India in winter, December to February. Do some research and find out the best places to visit in India by season .
So, when it’s cold in north India, head down to tropical Kerala or Goa and hit the beach. In the heat of summer, check out Ladakh, a high desert plateau that sometimes seems otherworldly. Note: Fall is festival season, so you can experience Durga Puja in Kolkata, Diwali in Jaipur, or the Camel Fair in Pushkar.
11. Visit attractions in the morning
(However, this rule does not apply to shopping. Stores, and even restaurants, tend not to open until 10 or even 11 am. Urban Indians tend to do everything late. Breakfast and lunch are late, and dinner can be very late indeed.)
12. Head into the countryside
You can go trekking in the mountains, take a tiger safari , visit one of the many national parks, camp out overnight on a sand dune in Rajasthan, or take a boat cruise on the Brahmaputra River.
And don’t forget the rural areas. Most Indians still live in villages. It’s really worthwhile to meander through the quaint villages of Rajasthan, Madhya Pradesh, Himachal Pradesh, or Uttarakhand.
India is not an easy place to travel. It’s not a relaxing vacation destination. It is, though, an experience — often a life-changing experience. Start by doing research, read books about India , watch movies about the country, learn about the cultures and various destinations, and get ready for a transformative travel experience.

Indian Travel Food Recipes | 300 Indian Travel Food for International Trip | Homemade Vegetarian Travel Food Ideas | We asked our cooking fans which is the Indian foods they travel with and we got response for travel foods like idli, thepla, paratha, sandwiches etc. Here are a a few recipes which are easy to pack while travelling. Some of these foods like ildi, paratha etc stay fresh for 5 to 6 hours, while food items like thepla and pickle stay fresh for a day. On the other hand, the dry food items can stary fresh for more than a day.

Idlis and tomato chutney prepared without adding any water is one of the best dish to carry along during travel. Idli is a very popular South Indian breakfast which is also a favourite Mumbai Street Food . Fluffy as cotton balls, white as the moon’ - every South Indian remembers those fond descriptions of Idli that mom used to convince them to eat breakfast when they were kids. You can enjoy them at any time of the day during your journey.

Tava idli recipe is what the name means, leftover idlis cooked on a tava in butter with Indian spices and vegetables. Hence they are also called South Indian tava vegetable idlis due to the presence of onions and tomatoes. Watch your leftover idlis transform into a scrumptious spicy tava idli as you toss them with crunchy onions, tangy tomatoes and peppy spice powders. The master stroke in this spicy tava idli recipe is the use of pav bhaji masala, a very popular flavour that is loved by young and old alike and it stays fresh for 6 to 8 hours while travelling.
Dosa is also a good travel food. The dosas cooked with ghee, oil or butter, get a special flavour and texture as they cool, which is quite different from how they taste when hot and fresh.
When preparing dosas for travel, it is important to make them slightly thicker than usual and also a little moist. If you ask elderly women in South India, they will share with you the secret of making ‘travel dosas’ . You need to spread the dosa on the tava. After it cooks on one side, take very little water and sprinkle it on the dosa before turning around to cook the other side.
Try the Tuppa Dosa . Tuppa in Kannada means ghee, and that makes the highlight of this recipe obvious! This dosa is a special one, which is often made when there are guests. You can actually smell the ghee from outside the house, and it will make you drool! Since the batter for this dosa uses more urad than usual dosas, the Tuppa Dosa also turns out soft and fluffy, which makes it doubly delightful.
You can also carry milagai podi , coconut chutney and tomato chutney as accomapniments to idlis and dosas.

Methi paratha recipe is a sumptuous and satiating fare often served with a bowl of curd and pickle. Learn how to make methi paratha for travel. Who can resist the lure of hot, tava-cooked Punjabi methi ka paratha.
