Scott Wiener loves pizza . He loves pizza so much he gave up having a regular job to found a tour of pie hotspots in New York. He's so obsessed with it that he has collected over 1,300 pizza boxes from around the US.

“Pizza is delicious, customisable, portable, and inexpensive,” the 35-year-old obsessive tells The Independent . “It’s the perfect food!”

The New Yorker’s love affair with the Italian staple started in New Jersey, where he gradually began buying pizza weekly as a teenager. When he left to study at Syacruse University and toured the US with rock bands he was amazed by how many different combinations of flat bread and toppings there could be. Realising Scott was addicted to pizza, a friend gifted him a pizza journal so he could document every bite.

After he graduated, Scott worked a range of jobs from performing as costumed characters at birthday parties, working on TV shoots and fashion shows, to helping to run a now defunct record label. When he took off six months from working as an evenings co-ordinator, his love for pizza became his career almost by mistake. He started rounding up friends in his car to head out for pizza-tasting sessions around New York. After he rented out a bus for his birthday, he had a light-bulb moment, and Scott’s Pizza Tours was founded. That was nine years ago. Since then, Scott’s Pizza Tours have run 3,500 trips for over 46,000 people.

Naturally, Scott, also pens a column for Pizza Today Magazine, and judges pizza contests across the US. The Independent caught up with him to talk about what makes the perfect pizza and his second-favourite food.

Hi Scott, tell us a little about yourself

I’m 35 years on the planet, originally from New Jersey but currently living in Brooklyn. Job title is president and founder of Scott’s Pizza Tours on Slice Out Hunger.

What is the formula for mind-blowing pizza?

It’s all about balance. Great cheese is nothing without great crust. Great crust is nothing if not topped with delicious ingredients.

Thinking back on all the different pizzas you have eaten, which was the best and why?

I’ve had a lot of pizzas that changed my life, but the pizza marinara at Pizzeria Da Michele was one of the big moments for me. It’s the simplest pizza you can get, with just tomato and garlic and oil, and no cheese. It was divine. I ate it in Feb 2009 and still remember the taste.

What is the worst pizza you have ever eaten?

The only pizza I ever tried that I couldn’t even swallow was at a kosher place in Brooklyn. I won’t name names, but just trust your instincts when approaching a pizzeria. I should have trusted mine.

How can a person check if a pizza shop is good before testing the pizza? Are there warning signs in the menu?

There are very few warning signs but take a look on other people’s tables and eyeball the goods. Sometimes a pizza could look good and taste bad but it rarely looks bad and tastes good.

After pizza, what is your favourite food?

I love ice cream. It's the same idea. you can have a simple basic flavour and toppings and or mix-ins could either enhance or distract. It’s also all over the world, so I like that everyone has a shared experience with it.

Tell me about your collection of pizza boxes

I currently have over 1,300 pizza boxes in my collection. They’re from over 65 different countries and all of them are amazing in their own way.

I haven’t been to most of these places, but people ship boxes to me in Brooklyn and I really love that. I wrote a book about the collection, called Viva La Pizza! The Art of the Pizza Box , and we’ve even done art gallery shows of the best boxes in the collection.

How can a person make a delicious pizza at home? What is the most important ingredient?

Dough is the most important ingredient. If you don’t feel comfortable making your own, buy some from a local pizzeria. But making dough is so easy, I almost hate giving you that cheat step. Be careful with the dough. You don’t want to handle it wrong or it will lost its ability to stretch. Once you get the dough and the stretch, the rest is just knowing how much topping to use.

What are your thoughts on tomato puree and its role in pizza?

I’m not a fan of puree, I prefer either crushed tomato or whole peeled tomatoes that get crushed at the pizzeria.

What are some the most memorable experiences you have had when running the pizza tours?

Amazing things happen every day on the tour. We’ve had marriage proposals, an actual wedding, crazy run-ins with famous pizza makers. There’s really something new all the time but I forget about them all when someone asks me to name one.

What are some of the most exciting pizza trends at the moment?

There’ a big push lately for long fermentation, high hydration dough that’s really exciting. People are getting more focused on the dough and that’s really the most important component. I even know some people who are milling their own flour!

What sort of pizza do you refuse to eat? For example frozen pizza?

I don’t refuse pizza. I don’t eat a lot of frozen pizza or chain pizza, but I would never ever refuse it.

What do you usually eat in a day for breakfast, lunch and dinner?

Breakfast is almost always oatmeal. I have a couple slices throughout the day on tours. If I’m cooking at home, I’d roast some veggies and maybe have a piece of fish. I try to eat carefully because pizza can get rough on the body if left unchecked. But I have a routine and so far it’s working out fine.

What are your plans for the future?

I’m doing more research to get the bank of information we discuss on the tours to be as accurate as possible. Most of the time we’re talking about things in a way that are not readily available online, so we’re doing the research ourselves. It’s a lot of fun but it’s hard work. We’re also pushing our nonprofit, Slice Out Hunge r, which does hunger relief fundraising via the pizza community. That’s a huge project right now but it’s a really important one.

You may be surprised to know that the majority of our tour guests are locals! Since we’re deeply embedded in the pizza scene, we get special access to the pizzerias and pizza makers you’ve only read about. This isn’t just a restaurant crawl, it’s an experience that takes you deep into the heart of pizza culture. 

We’ll do our best to accommodate guests with dietary restrictions. Just let us know in advance if possible so we can plan our route accordingly. While we can’t guarantee that every stop will have pizza options for guests with heavy restrictions, we can always allow you to order other dishes from the menu. Tour pricing includes standard pizzas, so we’ll add any additional food costs to your final invoice. 

No matter how far your team is spread, we make everyone feel like they’re in the same room with our unique pizza making classes. Our instructors will help you and your team make the best pizza out of your home ovens without the need for any special equipment. We use proven techniques that unlock the power of your kitchen and we do it in a super fun way. We can even ship everyone ingredient kits so they don’t have to pick up supplies! We take care of it all!

Every tour we do is customized to the group. For private tours, we route the tour based on your group size, pickup location, tour date, and tour time. We can set up a call once you book your tour if you’d like to discuss pizza preferences, but we never announce our route in advance.

Frequently Asked Questions

For most groups, we use a fancy mini-coach bus. It has heat in the winter and air conditioning in the summer. For smaller groups, we use a Sprinter Van. For larger groups, we may use a classic yellow school bus that has heat, air conditioning, and a rockin’ sound system!

For bus tours, you are welcome to bring beverages aboard the bus for a $150  BYOB on the Bus fee . We also have options to add wine pairings at each pizzeria on our private bus tours (DELUXE and SUPREME tours). Wine and beer are fine, but no hard liquor please. If you’re planning to pour beverages into cups, those cups need to have lids. Drinks will have to stay on the bus for most pizzeria stops. 

No! We organize our tours to avoid long lines and cold slices. All pizzas are ordered based on their respective bake times, so we’re never waiting more than a few minutes for a fresh pie.

YES! We can arrange for the bus to pick you up at a central location in Manhattan or Brooklyn. You can also have your group assemble at our first pizzeria of the day. If that’s the case, just let us know if you prefer to tour in Manhattan or Brooklyn and we’ll send you a meeting location that’s easy to get to.

Our stops change every time. We route the tour based on your pickup location, group size, and whether or not you choose a tour with wine pairings or additional food. Our guides often adjust the route as they go, so every tour is customized. That’s why we don’t announce our itinerary in advance — it’s always in flux!

YES! When we stop at restaurant, we get a table. When we stop a slice shops, we stand up and eat the way nature intended.

Yes, and you’ll be surprised how time flies when you’re visiting pizzerias! If it’s too long for you, just let us know in advance and we can trim it down. Don’t worry, we’ll still eat the same amount of pizza. There is no pricing difference for shorter tours.

Let us know in advance and we’ll do our best to accommodate your gluten free, vegan, vegetarian pizza buddy. We can’t guarantee we’ll have pizza for them at every single stop, but we’ll make sure they’re well fed. The cost of pizza for those with dietary restrictions is not included in your tour’s pricing so we’ll add those charges to your final invoice.

Absolutely! We call this a “Hop-On” tour because our guide hops on your vehicle. This is a great option if you’re coming into NYC from Long Island, Connecticut, or New Jersey or traveling with a school group. Pricing is different for these groups so just let us know if that’s your plan.

We’ve done tons of corporate outings and team-building events and the response has been incredible. Rather than sit for a long meal at a single restaurant, a pizza tour lets your colleagues, family, or friends mix and mingle at multiple pizzerias. Pizza is the ultimate conversation starter so you’ll learn more about your colleagues than you ever have before!

WALKING TOURS

We like touring in neighborhoods that are pizza-dense and pizza-diverse. That means we’re usually in the East Village, West Village, Downtown Brooklyn, or Williamsburg. We select the appropriate neighborhood based on group size, tour date, and tour time. Some neighborhoods work better than others at certain times of day. We’ll let you know exactly where to meet us a few days before your tour. 

While we don’t offer a walking tour that comes with alcohol pairings at each stop, we can do our best to route you to pizzerias with liquor licenses. You’ll be able to add alcoholic drinks along the way, which we can add to your final invoice. The reason we don’t offer a walking tour with alcoholic beverage pairings is that we can’t guarantee all stops within a walkable area have both excellent pizza AND worthy wine lists. With bus tours, we have much more flexibility.

If you’re doing a bus tour, we have options that come with wine pairings — our DELUXE and SUPREME tours.

This all depends on the neighborhood in which we tour. We choose neighborhoods for walking tours based on pizza density, pizza diversity, and pizza deliciousness. Our route changes every time based on the size of the group and their specific pizza needs. We never announce our itinerary in advance because it’s always in flux.

Walking tours max out at about 1 mile. All the pizzerias we visit will be within a short walk of one another. We adjust based on weather and on the needs of our group.

Let us know in advance and we’ll do our best to accommodate your gluten free, vegan, vegetarian pizza buddies. We can’t guarantee we’ll have pizza for them at every stop, but we’ll do our best to make sure they’re well fed. Food for those with dietary restrictions is not included in your tour’s base cost so we’ll add those charges to your final invoice.

We like to keep our walking tours to a maximum of 16 people. If your group is slightly larger than that, please let us know and we may be able to figure out a solution. 

ONLINE CLASSES

We can use any platform that works for you. Most of our classes run on Zoom and we do prefer that platform, but if you have another system we can easily adapt. 

YES! We have a fantastic supplier who customized an ingredient kit for us. We’ll ship you dough, sauce, cheese, and toppings so you can play along at home during your class. 

Online pizza making classes are 90 minutes and lecture classes are 60 minutes.

We think so! These aren’t typical lectures, they’re interactive conversations. You’ll learn more than you ever thought you wanted to know, all because pizza perfectly combines history, science, culture, and culinary. 

Probably not. We’re pretty deep into pizza making and find that there’s always new things to learn about stretching, topping, and baking pizzas. Bring all your deep pizza questions and we’ll do our best to answer them.

Nope! We teach all levels at the same time. The concepts are very very simple and we’ll make sure you understand exactly why you’re doing all the things you’re doing in the pizza kitchen.

You bet they are! All our pizza making classes and lecture classes are interactive. We encourage students to get involved by asking questions.

Interview with Scott Wiener, of Scott’s Pizza Tours

 Note from Peter:  Scott Wiener is a regular guest columnist here on Pizza Quest but, if you haven’t been on one of his legendary New York City pizza tours, you might not know much about him or about his impressive collection of pizza boxes from around the world. So, here’s a closer look from my recent conversation with Scott.  There are some links at the end if you want to follow up and, for anyone who has been on Scott’s tours, or if you go on one later, feel free to add your comments below. PQ : Scott, a number of our Pizza Quest followers have commented on how much they love your guest columns. Can you tell us a little about your own journey and personal quest that has led you to become a leading voice in the pizza world?

I’m so honored to contribute to Pizza Quest because my own entrée into the pizza world happened through books like American Pie . I always loved pizza in the normal way any kid loves pizza. It was the celebratory dish of every birthday party, every soccer game we won, every baseball game we lost, and every time our third grade class scored well on a test. If you asked me to describe pizza, I would have given you a pretty short response: it’s cheese, sauce, and toppings on bread. Simple. All pizza was pretty much the same, with the only variation being whether it was good or great. That all lasted until just after college. My first slice at Grimaldi’s (under the Brooklyn Bridge) completely blew my mind and expanded my pizza paradigm. This wasn’t the same pizza I grew up with. It was much more mature, more refined, yet still accessible. I knew this couldn’t be the only upper level pizza out there, so I started paying more attention to food media and followed recommendations to New York’s best, oldest, and most classic pizzerias. Not only did I find great pizza, I also found some great stories about these family businesses.

I started going out on crawls to multiple pizzerias, dragging my friends along for the ride. Our voyages became regular occurrences and my friends’ friends started asking if they could tag along. It wasn’t long before I realized my tiny car wasn’t big enough to fit all the people who wanted in, so I rented a school bus for my 26 th birthday and invited thirty friends and family to join for the ultimate pizza adventure. That transformed into the sun of my pizza solar system: Scott’s Pizza Tours . Now I have a team of pizza enthusiasts who help me run daily tours of incredible New York pizzerias.

I never set out to be an expert or an industry voice, but my constant curiosity and unique business have given me the opportunity to do the research and development that make this bizarre career more of a passion than a job. My tour guests always ask, “So, what do you do for a real job?” and it’s the greatest question I could ever get. The truth is, I don’t really have a job, I have a lifestyle . That lifestyle happens to involve running tours of great pizzerias, writing for pizza publications, consulting pizza businesses, judging pizza competitions, and just about anything else you can think of that’s cheesy, saucy, and crusty. It’s totally weird, but I wouldn’t have it any other way.

PQ: You’ve written a lot about pizza boxes. What is this fascination about?

When I tell people I collect pizza boxes, they immediately assume I have a stack of dirty boxes that all say the same phrase “Hot and Fresh” or “You’ve Tried the Rest, Now Try the Best.” They’re completely blown away when I show them pictures of the 1,200+ unique boxes I’ve collected from 70 countries over the years. Pizza boxes are fascinating because we perceive them to be completely unremarkable. The average person doesn’t really notice the box, it blends into the routine. That’s mostly because we tend to order from the same pizzerias every time and the box design rarely changes. But if you see enough pizza boxes, you start to notice their differences. Their artwork often reflects the local culture, so a box from South Africa is very different from one in Scotland. Seeing these boxes side-by-side reveals another level of pizza’s incredible ability to adapt to its surroundings. Pizza is everywhere, as is the packaging with which we transport it. That makes the pizza box a tangential witness to the globalization of our favorite food.

PQ: You’ve probably been to as many or more pizzerias than anyone I know. Without burning any bridges, can you tell us about some of your personal favorite pizzas, pizzerias, and pizza personalities, and how they made your top tier?

I have so many favorites; choosing one top pick is really impossible. It’s easier to talk about pizzerias that have altered my perspective on the dish. Totonno’s in Coney Island is one of my absolute favorites. It’s so simple and frill-free, yet so incredibly delicious – especially the white pizza. I’ve only been to Pizzeria Bianco in Phoenix once but it was the most complete dining experience I’ve ever had. Both the food and the space were absolutely beautiful. Sam’s Restaurant in Brooklyn is a perfect time capsule that makes me feel warm and cozy inside. New Park Pizza is a great slice that’s sadly inconvenient unless I’m out near JFK airport. Di Fara is a true specimen of pizza heritage. Luigi’s in Park Slope is a classic slice shop that often gets forgotten because it’s not in the middle of Manhattan. As for pizza personalities, I’ve learned so much from pizza makers like Roberto Caporuscio, Giulio Adriani, Tony Gemigniani, John Arena, Jonathan Goldsmith, Norma Knepp, and everyone else I’ve met in my travels. I’m learning Italian so I can continue to learn from my Neapolitan pizza heroes. There are so many amazing people who have opened themselves to me in my research, I’m just incredibly grateful. Then, there are pizza obsessives like Adam Kuban, Ed Levine and Paul Giannone whose pizza pontifications make me love the food even more.

PQ: Your pizza tours in New York City are legendary. How much of your time is dedicated to these and how do you foresee growing this business? What do you think makes your tours so popular and interesting, and what are some of the challenges that the casual viewer might not be aware of to make these tours possible?

I spend most of my time working on pizza tours, leading anywhere from 5-10 every week. I have an amazing team of pizza enthusiasts leading tours as well, but beyond them I don’t really see myself expanding the business much more. I don’t want to dilute the quality of the tour by overloading pizzerias or pushing into other cities (besides one-offs). The tour is popular because it gives our guests a unique look at pizzerias by bringing them behind the counter and into the kitchens to understand what makes each pizzeria and style so different from the others. My goal is for guests to become more educated pizza consumers and we accomplish that by giving them as much information as humanly possible while allowing them to uncover the unique characteristics of each pizzeria by tasting and visiting the places where each style was born. The response has been incredible and I think it’s just because we’re accomplishing that mission.

From the very first days of its existence, the Moscow Metro was the object of civil defense, used as a bomb shelter, and designed as a defense for a possible attack on the Soviet Union.

At a depth of 50 to 120 meters lies the second, the coded system of Metro-2 of Moscow subway, which is equipped with everything you need, from food storage to the nuclear button.

According to some sources, the total length of Metro-2 reaches over 150 kilometers.

The Museum was opened on Sportivnaya metro station on November 6, 1967. It features the most interesting models of trains and stations.
