Papua New Guinea

Papua New Guinea is one of the most culturally interesting places on Earth, with many of its tribal people following a traditional lifestyle. This adventure has been designed to experience the villages and people of Papua New Guinea. In order to do this, we visit a number of local villages and we have 2 overnights in one village. There are overnight stays where the accommodation is very basic; it can be dormitory style and have no fans/air conditioning and very limited facilities. As much of the interior of the country has no roads or impassable ones, we maximize our time by flying from location to location and flight schedules frequently change. While we endeavor to do/see everything listed in the itinerary, it is common for changes to occur to the itinerary for things that are beyond our control. Discovery & Cruising

These are our least demanding trips. These journeys of discovery and cruises involve little or no extended activity. The itinerary may take place in remote areas (with basic facilities) and may involve long travel days on various types of transport. Sightseeing may be conducted on foot and all participants should be capable of carrying their own luggage from vehicle to hotel rooms. These adventures do not go above 2500m and rarely involve camping.

Adventure Touring

These adventure tours sometimes involve travel at high altitude (rarely exceeding 4000m, except on certain trips in Tibet, Peru and India) and may visit remote areas of the world where facilities are often basic. Many of these trips sometimes involve some camping or basic lodging. These adventure tours will often involve long journeys and rough roads. Sightseeing and optional day walks are often included and these days may involve up to 5 hours of physical activity.

Up to 5 or 6 hours of physical activity a day at a slow but steady pace.

Introductory activity with several moderate stages.

Up to 5-7 hours of physical activity a day at a steady pace. Terrain may vary and some steep ascents to be expected. Be prepared for variable weather conditions.

Moderate to Challenging

Moderate activity with several challenging stages.

Challenging

Up to 8 to 10 hours+ of physical activity a day, often in remote areas with variable and adverse weather conditions.

Apply only to mountaineering trips and are therefore not shown.

These journeys of discovery and cruises are suitable for people with a basic level of fitness and good health.

Suggested preparation: Once or twice a week, we recommend you walk on undulating terrain for an hour, for at least 2-3 months prior to departure.

To enjoy these adventures we suggest you have a reasonable level of fitness and health, a moderately active lifestyle and a positive attitude.

Suggested preparation: Two or three times a week, we recommend you walk on undulating terrain for an hour or more, for at least 3 months prior to departure.

Our introductory trips are not ‘easy’ trips and you will need a reasonable level of fitness and good health.

Suggested preparation: We recommend 30 minutes of aerobic type exercise three times a week, starting at least two to three months before departure. This can include swimming, jogging, hard walking or cycling. For treks, hill or stair walking with a 5-7kg daypack is also highly recommended at least once a week. For a cycling adventure, road cycling twice a week for three months prior to departure is advised.

On these adventures you will need a reasonable level of fitness and good health.

Suggested preparation: We recommend 45 minutes of aerobic type exercise three times a week, from a minimum of three months period to your departure. These adventures require a good level of fitness and health.

On these challenging adventures, you will need an excellent level of fitness.

Suggested preparation: We recommend one hour of aerobic exercise, four times a week – such as jogging, hard walking, cycling or paddling. Solid preparation is essential in the months leading up to your departure. For trekking, hill walking with a 7kg pack is a must. On the weekends mix in a relatively demanding bushwalk relatively steep ascents and descents. For cycling, regular biking for one to four hours at a time, with as many hills as possible, will help prepare you for your trip.

Our trips are generally more inclusive than others in the market place in line with our philosophy of minimising 'extra payments' displayed outside of the main trip price as well as out of pocket expenses once you reach your destination.

Traveling alone can be intimidating, especially if you’ve reached your 50s and have never traveled alone. I took my first solo trip when I was 35, fell in love with travel, and never looked back.

Planning trips for singles over 50 can be overwhelming. Where do you go? Who do you go with? And what should you be adding to your travel itinerary on a day-to-day basis?

I’m here to help you with ideas on how to plan vacations for singles over 50. If you’re not quite there yet, be sure to check out my travel tips for singles over 40 .

You may be heading abroad by yourself, but there’s no need to feel alone in this venture. I’ve been doing it for years and encountered the most incredible experiences because of it.

Here’s what you need to know about the best trips for singles over 50.

There are a variety of challenges that present themselves when you’re traveling as a single person over the age of 50. Here are a few travel options that could make the whole experience less stressful.

Organizing an entire trip alone can be stressful if you’re not the planning type. But the good news is that you don’t have to do it alone.

You may not have to do it at all. For those who are not great planners, joining already organized travel groups for singles over 50 is a great way to go.

There are plenty of companies that allow you to book all-inclusive trips. Flights, accommodation, activities, and sometimes even your meals are included. This takes all the pressure off of you.

I have traveled solo with G Adventures and Explore several times and always had a great experience. The age range of attendees is very broad but single travelers account for the majority of people who travel with both companies.

G Adventures does not charge a single supplement, makes it easy to get your own room and is particularly focussed on female solo travelers.

Explore has a dedicated section on its website for Over 50s solo holidays that covers everything you need to know about its most popular solo trips for this age group.

Solo Female Travelers Club is a community of more than 90,000, run by the fantastic travel bloggers Meg and Mar. The heart of the community is their Facebook group, which has some great information and is the perfect way to meet other females interested in traveling solo.

Meg and Mar also run female-only small group tours that range from luxury retreats to adventurous expeditions in some awesome locations.

Intrepid Travel has more than 1000 itineraries and covers over 100 countries. They also have different comfort levels for their trips – Basix, Comfort or Original which is a combination of the two.

Again, if you are willing to share your room, there is no single supplement and the cost for a private room is relatively small.

Intrepid says that about half of the people on their trips are traveling solo . Like Explore, they have a dedicated section for solo travelers on their website and versions of their trips designed specifically for singles for popular destinations like Costa Rica and Peru.

Encounters Travel is an Australian based travel company that designs its trips exclusively for solo travelers. One of their key points of difference is that Encounter Travel promises small groups of travelers of similar age groups.

For American solo travelers, Overseas Adventure travel focuses on solo travelers over 50. As you may have guessed from the name, many of their trips are quite adventurous. However, they provide detailed information on the trips and the fitness levels required to ensure you find the trip that works for you.

This company puts aside a certain number of single spaces for each of its tours. These spaces mean that solo travelers either aren’t charged for a single supplement or it is at a discount. Overseas Adventure Travel has a roommate matching service if those spaces are filled.

If you want to travel with other females and have an adventure, check out Wild Women Expeditions . This company focuses on destinations that may be daunting for a female solo traveler such as Tanzania or getting to say Alaska and getting around. The focus of their itineraries is outdoor adventures.

And Just You travel is specifically designed for singles travel.

2. Plan a Group Trip

Being single doesn’t mean you have to travel alone. Plenty of people well into their 50s are keen to explore the world and looking for a travel buddy. If reaching out to your friends proves unsuccessful, venture into an online community.

These often come in the form of Facebook groups that allow you to chat about your travel plans and meet up with others who are planning the same thing. Three that I recommend are:

3. Travel Alone

Traveling alone comes with many perks. The main one is that you never have to compromise. Do what you want to do, when you want to do it. And if you decide you’d like to extend your trip by a week or two, or even a couple of months, you won’t interrupt anyone else’s schedule.

It’s actually one of the most liberating things to do. Whether you decide on a solo spa break or an adventurous year-long globe-trotting trip, you will end it feeling fulfilled.

Where to Travel in Your 50s

With a little extra cash in your pockets than you had in your 20s, traveling in your 50s can be even more exciting than when you were younger. You can finally get to all the places you intended to go to.

After all, your tastes change as you get older. A full moon party in Thailand might not be the epic adventure you once envisioned, but there’s plenty more on offer. So here are some of the best 50s-friendly travel destinations.

2. Antarctica

Antarctica may not be the first place that springs to mind when you think of vacation destinations for your 50s, but that doesn’t mean it’s not a desirable option.

Take a Cruise

Take a voyage through the icy water of the Antarctic to experience what few others have. These voyages are usually all-inclusive, which takes a lot of strain out of the planning. Most of them allow for a stop off at some point, so you won’t just witness the ice, you’ll experience it first hand.

You’re likely to see a myriad of wildlife you won’t find anywhere else in the world and few have ventured to see. The Antarctic holds a variety of unique adventures that, in your 50s, you have to experience.

Some of my favourites are New Brunswick and Nova Scotia in Canada, Medellin in Colombia, Verbier in Switzerland , Iceland , Riga in Latvia , Edinburgh and Glasgow , Bali , Nepal and Melbourne , Sydney and Perth in Australia.

For many of us, the way we travel starts to change around the age of 50.

We enjoy spending longer in a place while discovering its history and culture. We put more emphasis on comfort, more emphasis on a temperate climate, good food, decent infrastructure, and a variety of activities where there is little risk of breaking a bone. Since we’re travelling alone, an affordable and safe destination is a must. And meeting people close to our age is a bonus.

With that in mind, and with over 25 years of experience adventuring solo, here are my top 7 destinations for solo travellers over 50. (It’s worth mentioning that there are so many great destinations out there, but these are my favourite ones!)

Bustling Monastiraki Square in Athens

As the birthplace of western civilisation and democracy, Greece ’s history goes back thousands of years and is best discovered through the archaeological sites and museums dotted around the country. The climate is warm and sunny from April to October, which lets you enjoy the beaches on dozens of islands. Crete is my favourite for hiking and spring flowers.

Despite the lure of the islands, be sure to dedicate a few days to Athens . While the city appeared busy and chaotic during my first visit in 1993, I quite enjoyed strolling around and, more recently, using the expanded metro. Healthy and delicious food, friendly locals, as well as an older population (one person in five is over 65) round off the highlights.

2. Portugal

Exploring the pedestrian village of Óbidos

Often-overlooked,  Portugal will delight you. Travelling around this compact country is quick and easy. For example, you can go between Lisbon and Porto by train in less than three hours. Besides cities, Portugal’s draw cards include charming villages (check out Óbidos), castles and cathedrals, nearly 1,800 kilometres of coastline, and the picturesque Douro valley, famous for its wine. Be sure to catch a fado performance (traditional folk music) at À Capella in Coimbra, my favourite Portuguese town.

Large food portions at restaurants help make the country surprisingly affordable. Always ask for a ‘meia dose’ (half serving) unless you’re starving. Sample the best pastel de nata (egg tart) at Pastéis de Belém , in its namesake suburb of Lisbon. Portugal also has an older population, compounded by the expat retirees who winter in the Algarve where the average temperature is a mild 15°C .

Italy’s Amalfi Coast

Just like Greece, Italy is rich in history and culture, and features one of the best cuisines in the world. By all means, visit the astounding art treasures in Rome and Florence and the canals in Venice , but also visit less well-trodden regions such as Puglia, Basilicata, Umbria, or Le Marche, to see a more authentic glimpse of the country. Italian trains are very affordable, although not always punctual.

If you like day hikes, stay in Cinque Terre for a few days and walk the easy coastal path between its five colourful villages. It may surprise you to learn that Italy has the second oldest population in the world, with 22.4% of people 65 or older. Thank that Mediterranean diet, and the relaxed attitude of its citizens.

4. Argentina

Argentina is huge. I spent 12 weeks there and still haven’t seen everything. You can hike around lakes and up mountains, ride a boat to a glacier, see penguins, taste wines, admire some of the biggest waterfalls in the world, visit museums and churches, and shop until you drop. If you’re fascinated by the tango, spend time in sophisticated Buenos Aires. Catch a free performance on the street, buy a ticket to a show, or even take a lesson. Some schools like DNI Tango match you with different solo partners if you come on your own.

Avoid expensive flights by taking night buses, which are affordable, safe, and comfortable. Or choose to spend your time in one region. Go to Patagonia , the Lake District, and Iguazú Falls for stunning landscapes. Or escape the crowds in the pretty cities of Córdoba and Salta. December to March is summer in Argentina, making it a great winter destination for North Americans.

If you’re solo, head to Mexico ‘s Pacific Coast and the towns of the highlands such as Oaxaca or Guanajuato . These places offer a little more authenticity than the Caribbean coast, which often caters to package tourists and couples (with prices to match). Mexico City is also reinventing itself as quite the cultured capital, with an exploding food scene that I’m a big fan of. Due to its altitude, the city tends to be cool and pleasant to stroll around.

Colourful, sunny, and very affordable, Mexico is home to various indigenous groups with their own foods, customs, handicrafts, and archaeological sites (Aztec, Maya, Mixtec, Zapotec, and more). Mexico is also home to some of the friendliest people I’ve come across. Add to this a large number of North American expats, especially in winter, and it isn’t hard to meet people.

Get away from the hordes of tourists and full-moon parties and visit underrated Laos . The gracious and reserved Lao people, orange-robed monks, and ornate Buddhist temples are reminiscent of Thailand, but without the crowds.

The peaceful town of Luang Prabang in the north makes a visit here especially relaxing. Take a boat trip on the Mekong, visit small villages further afield, or go for a hike in the beautiful countryside. The climate is also cooler and more comfortable than in much of South East Asia.

Laos offers a distinct cuisine based on sticky rice (which you eat with your fingers). Try orlam (a thick soup with buffalo meat) or chicken skewers wrapped in lemongrass. You can eat for a couple of dollars at the street markets, but check out the Tamarind Café in Luang Prabang for something a little more upscale, and consider taking their cooking class.

Where else do taxi drivers wear white gloves and meals can be ordered from a display of plastic food dishes? Japan feels different and exciting, but it’s so clean, safe, and well-organised that you’ll easily find your way around – even if you don’t know a single word of Japanese.

Most hotels charge per person, not per room, meaning that you’re not penalised for travelling solo. Add to this the famous Japanese politeness and the delicious food, and you have a winner. Tokyo and Kyoto are the two cities you absolutely can’t miss. But the speedy and ultra-punctual bullet trains make travelling around the country a breeze.

OAT will not work with your travel agent. You have to make all your own bookings and if there is a problem, you most likely will call and get a different person every time.

I would NOT recommend G Adventures. They cater to a younger crowd, often times the accommodations are like hostels and may be uncomfortable for older people. Also, if one has limited mobility, lots of walking and vehicles driving long distances are not adequate for older people.

Solo travel over 50 and you will find new interests, gain new confidence, and discover new ways to manage a major life transition.

More people over 50 are traveling solo than ever before.

More than a quarter of the respondents to our annual reader survey are over 50. The percentage is similar on Facebook where we host the Solo Travel Society with over 270,000 participants. Dozens, sometimes thousands of people engage with other solo travelers there every day.

Whether you're in a relationship or are fabulously single, solo travel delivers so much more than the typical travel experience. And whether you are traveling independently or with a group, solo travel does not necessarily mean that you are alone. Taking a cooking class, a walking tour, or attending a meetup on a subject you are passionate about are all great activities for solo travelers. They can connect you to people of all ages from all over the world.

But before we get into the best reasons to travel solo over 50, let's look at the major life transition you may be facing, some of the questions that are arising now, and why this might be the perfect time of your life to head out on your own.

Travel Solo to Navigate a Major Life Transition

If you're over 50, you are likely facing a major life transition. As a 50+ you may:

  • be content with your career and no longer looking for challenges there.
  • have adult children who are no longer at home.
  • be part of the sandwich generation with parents and children requiring your attention.
  • have a relationship status that is complicated.

In the many-faceted world of those over 50, life is changing. You are facing a major life transition and it may not be clear what you're transitioning to.

Where will you redirect your energy?

Perhaps you're experiencing one or a number of the situations below. See how solo travel can help.

  • Have you been in the same relationship for decades? Is it getting a little tired? Take separate vacations and return with lots to say to each other.
  • Is your spouse or partner uninterested in travel? Going solo is your answer. See the world and return refreshed to your relationship.
  • Have your kids just left the nest? Then it’s time to find out who you are again. You can’t really do this with a companion who knows you and expects you to act in certain ways. Get away. Travel alone and rediscover yourself.
  • Are you suddenly single, either by divorce or loss? Solo travel is a real confidence builder , a great way to make a comeback.
  • Are you concerned that people at work see you as old? Head out on a solo adventure and people will quickly adjust their attitudes.
  • Is work dull with little hope of things changing? Solo travel over 50 will inject some challenge into life.
  • Is money tight? Solo travel can be inexpensive. It’s much easier to save on hostels, hospitality stays, great deals, and cheap flights when you travel alone.
  • Do you have health problems? Stress is a major contributor to most health problems. Plan a solo holiday where you set the schedule and take a break from the stress in your life.
  • Did you retire early? Do you have time to travel but family and friends don’t? No need to sit around and wait for them. Go solo and enjoy.
  • Is it time for change? Travel alone, reflect, analyze, and explore your possibilities without the influence of others.

Best Reasons to Travel Solo Over 50

Maybe we all need a little time to ourselves, to make decisions, discover our strengths, and experience more autonomy. Maybe we all need to travel solo.

  • Enjoy your freedom.  If you have spent most of your life surrounded by and responsible to others this is your chance to be responsible to no one but yourself. Go to bed when you like. Get up when you like. Eat, drink, wander, explore what you like. It's all up to you.
  • Gain confidence from that independence . Whether you're traveling solo on a tour or independently, there is a confidence-building element to solo travel for having jumped into a somewhat unknown situation on your own.
  • Discover who you are when you’re not meeting the demands of a spouse or children . When responding to everyone else, who has time to get to know oneself? Solo travel over 50 gives you that opportunity. Do what you couldn’t afford or didn’t have time to do when younger.
  • Explore new interests.  Solo travel can be a gateway to new interests. Whether it's music or hiking or discovering like I did last month that I like champagne, try something new. Maybe you wouldn't go to a bar by yourself at home but on the road in a town like Nashville , how could you possibly stay in with all that music around you? Perhaps  hiking is not part of your lifestyle but if you find yourself in the Lake District of England you may just find a new love. Solo travel is a chance to try something new.
  • Model a different kind of aging. I find that many people in their twenties and thirties are really curious about me. They seem to look at me as the kind of person they want to be when they get to my age – which, in their mind is very, very old. They see me as bold and welcome me into their conversations. And they often tell me that I am not like their parents at all. It seems I'm an alternative model for their future.
  • Expand your world with cross-generational conversations . Talking with people younger and older than me breaks me out of my limited world and gives me a better understanding of the issues faced by others. And they amuse me. I remember walking down a street in Italy with an American man in his twenties. He turned to look back at a beautiful young woman who had passed us and said to me, “I love Italian women. They have great junk in the trunk.” Really! Whatever I think about his comment, to have such access to young attitudes is wonderful, if not curious and sometimes disturbing.
  • Enjoy the respect age receives in other countries . My hair is grey. Given the courtesy I receive in some countries I have thought that I present as older than I am. Then I realized that it's actually about age being respected more in other cultures. Traveling on a train in India a young man wouldn't dream of moving me from my seat even though I was willing (insisting) and had, by means of a seat shift, taken his. No, his response was, “but you are our guest.” I suspect someone younger may not have been treated quite so well.
  • Reboot your life that may otherwise be on autopilot . Feeling a bit bored? Need to shake things up a bit? Need new stimulation? Solo travel can give you this. Fulfill lifelong dreams that may not be shared with a partner. Many partners take separate vacations to pursue their personal dreams. Go for it.

Different Options for Traveling Alone

There are two basic ways to travel solo.

  • Independent solo travel
  • Solo travel on a tour

Independent Solo Travel

Independent solo travel is when you plan, navigate, and negotiate everything yourself. The downside is all that work and responsibility if you don't enjoy it. The upside is freedom and independence. Solo Travel on a Tour or Cruise

This is solo travel in a group where the planning and organizing is all taken care of for you. Every day you have a guide and the group heads out to another activity. No fear of being lonely, eating alone, or your safety. The tour takes care of everything.

Most companies organize tours and have a few solos on them. Solo Travel Safety Considerations

Every week, people reach this blog by using the search term “solo travel after 50.” These words are frequently paired with concern for safety. There seems to be some concern about age and solo travel. From my perspective, there shouldn’t be.

Being 65, I think I'm qualified to address this issue. And, as you might imagine, I believe that it is not only safe to travel solo after fifty but also, for all the reasons above, important.

That said, at a certain age we become more aware of safety issues. When we were young, optimism prevailed. Concerns were tossed into the wind. Not so much now. So, here I have a few safety tips specifically for older solo travelers.

  • Get travel insurance . If you're over 65 this can be a problem. It gets more expensive the older you are but it can also save your bacon. Read how travel insurance has saved me a number of times in  A Complete Guide to Travel Insurance for Solo Travelers.
  • Put medications in your carry-on luggage . Eliminate the possibility of being separated from your daily medications should your baggage go astray. Pack all medications in your carry-on. It's always recommended to keep all meications in their original containers from the pharmacy. Read  How to Get Through an Airport by Yourself with Ease
  • Request special services in advance . I've walked more than a kilometer from my plane to the airport exit. For some, this may be too long a trek. Consider your abilities and request any special support you need a few days in advance of your flight.
  • Travel light . There's nothing worse than being in a position where you can't get help and you can't manage your bags on your own. Read  Bare Minimum Packing: Here’s Your Packing List .
  • Wear quality shoes . Balance starts to go after a certain age. It's a subtle process. Not obvious at first but, under the right (or should I say, wrong) circumstances, a twisted ankle, or worse, can easily happen. I gave up my beloved Merrell sandals for my more stable Eccos a couple of years ago.
  • Have back-up glasses . I lost a pair hiking once. It's simple to do. Best to have a backup pair.
  • Keep the bling at home . At this stage of life you may have some beautiful jewelry but that doesn't mean you have to take it traveling. Keep it at home where it's safe and you won't attract attention to yourself.
  • Don't promote the fact that you're away on social media . It may be exciting to be going on a solo adventure but don't announce it to the world. You want your home to be safe as you travel as well.

Great Destination Ideas for 50+ Travelers

In reality, the best destination for any solo traveling boomer (the baby boomer generation is generally defined as people born from 1946 to 1964) is up to them. You might want to climb Mount Everest and if you're up to the challenge, it's a great destination for you. So what can I offer in terms of destinations? How can I generalize? Here are trips that just about anyone can enjoy and they don't involve learning another language.

  • Spectacular Western Canada.  I traveled Western Canada by plane, train, and car a few years ago. The grandeur of the mountains, the friendliness of the people, great hikes, and small towns made it a great trip. It was simple to plan and affordable.   • The United Kingdom.  The UK has so much to offer. The culture is different but the language is the same, making it interesting and easy. London is a top destination for most of us. I find the center of the city to be very safe. I've walked at night and had no problem.   • Road trip!  I love a road trip. I especially love a road trip along the coast and through a rugged landscape and one that drops me into small towns and villages to meet locals. I've taken two such road trips in Canada, one in New Brunswick and the other in Nova Scotia. Both provinces are very accessible by car for those who live on the eastern seaboard of the United States.   • An educational holiday.  I set a goal for myself to become fluent in French. I have improved greatly by using holiday time for French immersion classes in Quebec City and Lyon, France.
  • A river cruise.  A river cruise covers many destinations in one trip with only one unpacking and repacking involved. That makes it easy. Read 12 River Cruise Tips for Solo Travelers: How to Make the Most of Your Journey .
  • Walking trips . I really enjoyed my walking trip on the Isle of Skye . On the path, I would stop, take in the view, and find a huge smile stretching across my face. I smile a lot but smiling just because the air and view and exertion are so wonderful is not part of my regular day. I really suggest walking trips. You can be as adventurous as you like.   • Creative travel . Creative travel is travel for the express purpose of learning something new. It may be cooking or a language, dance or painting. Some Additional Solo Travel Tips

Traveling solo late in your second act (or maybe in your third) is a wonderful experience. Whether you go for luxury or budget travel, it's all available to you. I'd like you to remember a couple of things.

  • Others will welcome the excitement of you . You are, by the mere fact that you're traveling solo, adventurous to many. You liven up an evening for people. I have enjoyed many a coffee or meal with travelers and locals who welcomed me into their conversation. I enrich them as they enrich me.
  • Hostels are not just for the young . Once referred to as youth hostels, today they are just hostels. Some, like the YHA hostels, are still non-profit but others are part of hostel chains. Yes, just like boomers, hostels have grown up. As the hostel clientele of the 60s and 70s has matured, so have hostels. And one final comment:  don't hesitate to return to places you visited when you were younger . One of the great benefits of solo travel over 50 is that the knowledge gained and life lived over the years will take you to a deeper understanding of a destination than you could possibly have had before.

It offers guided itineraries to worldwide destinations, including Africa, Antarctica, Asia, and the South Pacific, with trips ranked by activity level and accompanied by a list of physical requirements to help select an itinerary that is best suited for you. For example, their Japan and South Korea itinerary advise that participants be able to carry their own luggage as the selected hotels do not have porter service.

Some of Overseas Adventure Travel’s most popular trips include 17 days of wending the Adriatic from Croatia to Bosnia and Herzegovina (think a walking tour in Dubrovnik, sampling traditional Bosnian food in Sarajevo, and exploring the countryside near Zagreb). How to Cook Over a Fire, According to a Survival Instructor

Many aspiring campers have romantic visions of meals cooked over a wood-fueled open fire. Then, they try it. The result is often bread with a gooey middle, crunchy rice, charcoal in the pancakes, ash in the cocoa, burnt eggs—heck, burnt everything . Open-fire cooking isn’t advanced mathematics, but it is certainly different from cooking at home, especially if you’re someone with a talent for “burning water.” Here are some pointers to get you started.

Flame is the enemy. Its temperature is well above “high” on a typical stove, and trying to get a pot at just the right height above it is tricky, since a fire fluctuates dramatically depending on when and how you add wood. A thick bed of coals, on the other hand, gives even heat that lasts for an hour or more. Coals are much more forgiving to a burgeoning fire chef. My strategy is to build a fire , burn some wrist-diameter or larger fuel for an hour or so, and then split it into a bed of coals on one side and a small fire on the other. I use the fire itself mostly for light, to create more coals for later, or to keep water warm.

For survival purposes, boiling is the best of all cooking methods. It’s pretty difficult to screw up or burn, the food’s nutrients are reasonably well-retained, and you get some hydration along with your meal. Baking tends to be your next best bet; roasting or grilling over a fire means losing a lot of calorie-rich oil as it drips away. If boiling isn’t feasible or you’re not in survival mode and want to use another method (boiling pancake batter sounds decidedly unappetizing), there are some other options. When cooking over a campfire, always be sure to mind local burn bans, and tend your fire responsibly. 

Boiling over a fire

This requires a container of some kind. There are ways to make water boil without a fireproof container using hot rocks, but a pot comes in very handy. A lid is also helpful to keep inedibles out, hold a steady boil, and keep the inside of the pot moist for easier clean-up. I usually get the water boiling over a flame and then lower things to a simmer by suspending the pot an inch or so above the coals. Add in your ingredients, spices, and more water as needed.

To cook rice, quinoa, pasta, or other grains, get the water boiling as indicated above, then add your starch. Give it a good stir and get it all back to boiling. Then, simmer over coals for two-thirds of the recommended cooking time. Take it off the heat and let it sit, covered and preferably insulated, for the remaining time. The main mistakes folks make with cooking rice in particular is putting in the rice before the water is boiling, keeping the pot over direct flame, and leaving it on the fire for the full recommended cooking time.

Cooking in a Dutch oven over a fire

I’ve made yummy cookies, cakes, lasagna, naan, and more in Dutch ovens. The key to success: Maintain even heat by putting coals on the lid and allowing airflow underneath. Whenever you place a pot directly on coals, you snuff them out. This is why many Dutch ovens have feet to keep them elevated. If your dutch oven doesn’t have feet, hang it or improvise another method to raise it half an inch to an inch above the coals. If your oven is near the fire, rotate it every 5 to 10 minutes so one side doesn’t burn.

Baking with fire

My mom and I used to make “hobo meals” in a fire on the beach when I was a kid. This consisted of at least 2 layers of aluminum foil filled with sliced veggies, meat, spices, and a healthy dollop of butter. We rolled the edges up tight, stabbed the bundle a couple times to let steam escape, and tossed the whole thing into the fire for 30 to 40 minutes. The results were haphazard, sometimes with food half-cooked on one side and burned on the other.

If I’d only known then…. We were doing well until we threw it in the fire. Instead, hollow out a spot in the soil in the middle of the fire about twice the size of the bundle and scrape in some of the hot coals and ash. Place the food in the hole on top of the coals and ash, cover with more coals and ash, and even some hot sand or dirt. Then, build the fire back up on top of it. In 20 to 30 minutes, uncover the foil bundle, flip it over, and re-cover. Wait another 15 to 20 minutes and dinner is served. The insulation of the ash and gentle heat of the coals is conducive to baking. I bake potatoes this way, but skip the aluminum foil. I clean the potatoes well, and then bury them as-is in the dirt or sand an inch or so below the hot fire bed. Then flip them after a half-hour and take them out after a total of an hour or so. Just brush off the ash, sand, and dirt and dig in.

Roasting and grilling over a fire

While visiting with the Hadza , hunter-gatherers in Tanzania, I’ve seen fire used as a primary method for roasting meat. They sharpen some green sticks, weave meat onto it, and then stab the other end in the ground at an angle so the meat roasts just above the coals or a little further from direct flame. As flame licks food, it can deposit a black layer of soot that really isn’t appetizing, so it’s important to maintain distance.

As a S.E.R.E. instructor, I was fond of freaking out students using a roasting technique with one of their few precious tiny steaks they were given for a six-day trip in the woods. I’d throw a steak directly onto coals scraped out from the fire , eliciting gasps of horror. After about three minutes, I’d flip it over and then pull it off the coals after a total of about five minutes. The outside would be perfectly seared, keeping the juices inside and giving the meat a delicious smoky flavor.

Frying over a fire

This is the most similar to cooking at home of any of the methods, though the fire still tends to lend an extra smoky flavor that is really nice. I prep all of my meat and veggies before I head to the woods to make things easier. If you’re car camping or don’t mind packing heavy, a wok is ideal for use over an open fire as it balances easily. Add the items that you want cooked the longest first. I usually start with oil, onion, and whatever meat I’m using, if any, followed a few minutes later by veggies and spices. Stir frequently with a long utensil, keep leather gloves or hotpads handy, keep the handle turned away from any open flames, and adjust the location of the wok and heat of the coals or fire as needed. For pancakes, a griddle or large frying pan will work best; use just the coals to cook over, adjusting your height to get just the right, steady heat for the perfect flapjacks.
