- Balance the flavors: A Thai chef does not serve before taste testing. Thai cuisine is all about balancing sweet, sour, salty, and spicy. Taste and adjust as you go.
- Customize the heat: Some Thai dishes can be rather spicy, but it doesn’t have to be! Simply adjust the number of chilies to suit your family’s taste. If you happen to add a bit too many chilies, try adding some sugar to balance out the spicy flavor.

Fried pork, yellow curry and mackerel rice: Luke Farrell’s recipes to celebrate Thai New Year
Three joyful dishes for a new year: a mild yellow curry, street food-style fried pork and a simple dish of baked mackerel and rice
Songkran , the Thai New Year on 13 April, is a vibrant and joyous celebration marked by a famous water festival that symbolises the cleansing of the past year’s misfortunes through playful water fights and anointing one’s elders with water at the hottest time of year. Traditional Thai dishes play a central role, reflecting the culinary heritage that unites families and communities at this auspicious time.
Fried pork with salt (pictured top)
Variations on this dish are found on street carts throughout Thailand. It’s served for breakfast to smoosh into sticky rice, or late at night with chilli dipping sauce and beer. For the days of the Songkran festivities, it’s a real winner when you start to flag from all the celebrations. Fish sauce does incredible things to good-quality pork, so think of this as a delicious Thai sort-of bacon.
Prep 10 min Marinate 1 hr+ Cook 5 min Serves 3-4
500g pork belly or shoulder , skinned 2 tbsp fish sauce , or 2 tbsp salt 1 pork or chicken stock cube , crumbled 2 tbsp vegetable oil , plus a little extra for frying 4 tbsp tempura flour Chilli dipping sauce , to serve
Cut the pork into 1cm-thick batons – keep them as uniform as you can, so they’ll fry evenly. Put the pork, fish sauce, crumbled stock cube, oil and flour in a large bowl or zip-lock bag, give it all a good (Thai) massage, then set aside for an hour, or put in the fridge overnight.
In a shallow pan, gently stir-fry the pork in a little oil for about five minutes, until golden all over but still juicy. Tip into a bowl and serve immediately with your chilli dipping sauce of choice and ice-cold beer.
Mild yellow curry
Most Bangkok locals would consider this a green curry, but it’s actually yellow, and very mild and fragrant, rather than spicy. It’s normally made with ready-pounded fresh red chillies and garlic, which you can buy alongside the curry pastes in Thai markets, but here I’ve used a tablespoon of red curry paste instead. I’d recommend you eat the wings with your fingers, then mix the noodles into the sauce and slurp away. Prep 10 min Cook 40 min Serves 3-4
400ml tinned full-fat coconut milk 1 tbsp vegetable oil 1 tbsp red curry paste 2 tbsp green curry paste 1 tbsp palm sugar 12 chicken wings 2 tbsp fish sauce 1 tsp ground white peppercorns 1 yellow squash , or 3 yellow courgettes, cut into large chunks 1 small handful Thai basil leaves 200g round rice noodles Sliced mild red and green chillies , to garnish
Open the tin of coconut milk, then use a spoon to lift off the puck of heavy cream on the top. Put two tablespoons of this cream and the vegetable oil in a hot wok and stir to combine on a medium-high heat. When the oil separates, add both curry pastes and fry gently for a couple of minutes, until they start to separate, too. Add the palm sugar, raise the heat and, once the mix thickens, add the chicken wings and fish sauce.
Pour in enough water to half-cover the chicken, add the peppercorns, then leave to bubble on a medium heat for about 20 minutes, stirring occasionally, until the chicken is almost but not fully cooked. Stir in the pieces of squash and simmer for another 10 minutes, until everything is cooked through.
Top up the curry with the coconut milk from the open can, so the sauce is the consistency of thin cream, then check the seasoning and add fish sauce and salt, if necessary.
Cook the rice noodles in boiling water according to the packet instructions, then drain. Festoon the curry with the Thai basil and sliced chillies, and serve with the rice noodles alongside.
Mackerel rice
This dish of cold fish and warm rice is rather affectionately known as “cat’s rice”. While there is excess and fun at Thai New Year, it also marks the start of the Buddhist year, and this rather frugal dish speaks to that, though Thais can’t help but turn something so simple into something so delicious, too.
Prep 15 min Cook 30 min Serves 3-4
Salt 1 mackerel (250-400g), cleaned and gutted 250g cooked Thai jasmine rice , either freshly cooked or leftover 1 red and 1 green bird’s eye chilli , thinly sliced 1 garlic clove , peeled and thinly sliced 5 tbsp fish sauce 1 lime , cut into segments 1 small red shallot , peeled and thinly sliced Fresh coriander leaves , to garnish
Generously salt the mackerel inside and out, then roast in a 200C (180C fan) oven for about 20 minutes, until fully cooked. Remove, leave to cool a little, then pull the flesh off the bones and tear it into shards.
Mix the fish with the rice – if you’re using leftover rice, leave it cold, but the warmth of freshly cooked fish will accentuate the flavours more.
In a small bowl, combine the chillies, garlic and fish sauce.
Divide the fish and rice between three or four bowls, then garnish each portion with a lime wedge, some sliced shallot and a little coriander, and serve, leaving your guests to mix everything together and to anoint it with the chilli fish sauce and lime juice to taste. It should be fragrant, delicate and sustaining.

Radiators fail once more: Moscow suburbs residents appeal to Putin
R esidents across the Moscow suburbs are besieged by a heating problem, for which they plead direct intervention from President Vladimir Putin. These individuals have yet to experience any semblance of home heating since winter started due to a dwindling supply of heating oil. The issue, one largely avoided by local authority communication, has left residents desperate to the point of directly appealing to the president.
While plots have been uncovered to disrupt Ukraine's infrastructure for a second consecutive winter, thus depriving civilians of heating, it seems Russians are now mired in their crisis. Irony drips from the fact that those under Putin's leadership are looking to cause turmoil in Ukraine, yet at home, they face a similar predicament.
Many dwellings within the Moscow agglomeration are presently without heat. The capital's residents are desperate, directly appealing to President Putin due to a perceived lack of alternate avenues for assistance. The absence of suitable heating functionality since winter commenced pushes them towards desperation with no relief in sight.
This seems improbable, but in Russia, it appears that anything can happen.
It remains uncertain if Vladimir Putin is actively addressing the heating crisis. Some experts suggest that Russia's heating oil reserves are depleting, which negatively affects residents' quality of life. Plagued by cold radiators and plummeting winter temperatures, these citizens have directly addressed their pleas to their head of state.
This heating crisis is happening in Elektrostal, a town approximately 71 miles from Moscow.
Ironically, Russia has constantly aimed to destroy the Ukrainian infrastructure since war broke out, deliberately trying to leave Ukrainians without heating during the harsh winters, aiming to break their strong will. It's an irony they now struggle with a domestic heating crisis, particularly near Moscow, their largest and most pivotal city.
Desperate individuals are reaching out to Vladimir Putin. They question his knowledge of the heating infrastructure conditions in the Moscow suburbs and the dire situations residents face there. Sundown brings no relief from the harsh Russian winter and without heating, their houses turn cold. With elections nearing, more and more residents find themselves reaching out directly to their president.
"Since winter's start, we've been without heating. This has been a yearly occurrence for the past three years. Despite paying for heating, we don't have enough. We implore you, help us!" - these are the desperate pleas from the heavily dressed populace dealing with the Russian winter conditions.
Experts attribute the heating oil shortage to international sanctions and surging demands for diesel fuel, pivotal to military operations. Russia now grapples with a dearth of raw materials essential for boiler and heating plant operation. As supplies dwindle, houses grow cold with little hope of any immediate corrective intervention.
It would be adequate if the war ceased, residents were prioritized, and attention accorded to their welfare.

5 of the best L.A. cookbooks for spring

Recently I’ve been exploring Los Angeles through its cookbooks. Spring always means a new crop of books, and several L.A. chefs and authors have released (or are about to release) new titles. From “The SalviSoul Cookbook” to “ Rhett & Link Present: The Mythical Cookbook ,” the city they reflect through food and the way we cook and eat is as moving and wondrous and weird and delicious as you’d expect.
You can dive into some of the L.A. Times Food section’s latest favorite titles in our ode to the joy of cookbooks with many of the authors set to appear at the paper’s Festival of Books April 20 and 21.
We keep adding to our respective cookbook collections (I’m sure I have hundreds) at least partly because each one sheds a different light on how to cook, and I can’t help but think that cooking better must also mean living better. Even if it’s just by adding one recipe to your back pocket of what-to-cook .
Off the top of my head, a few of my go-to recipes are chicken ginger rice from Naoko Takei Moore’s “ Donabe: Classic and Modern Japanese Clay Pot Cooking ”; yogurt panna cotta from “ Bäco: Vivid Recipes From the Heart of Los Angeles ” (full disclosure, I co-wrote that book); and the Sicilian-esque currant and pine nut relish from Nancy Silverton’s “ The Mozza Cookbook: Recipes From Los Angeles’ Favorite Italian Restaurant and Pizzeria .” All of these also happen to be L.A. cookbooks.

Health Nut: A Feel-Good Cookbook by Jess Damuck (Abrams)
Jess Damuck is an ace L.A.-based cookbook writer and recipe developer who formerly worked as an editor for Martha Stewart Living magazine. Prior to that she cooked plenty of lunches as an intern for Stewart. “Everything needed to feel ‘light, fresh and truly delicious,’ which generally translated into lots of greens, nuts for texture, proteins and healthy fats like avocado and wild salmon,” writes Damuck. That experience sparked in her cooking “a new version of what clean eating could look like.” So, “ Health Nut ” (her follow-up to “Salad Freak”) includes recipes for granolas, grains, eggs for breakfast, a pasta dish or soup served with salad for a heartier meal, and veg-heavy main dishes for a “sun-drenched city where everyone seems to glow a bit brighter.”
The Cook Book of All Time: Recipes, Stories and Cooking Advice From a Neighborhood Restaurant by Ashley Bernee Wells and Tyler Jeremy Wells (Harvest)
All Time is the Los Feliz restaurant on Hillhurst with a laid-back patio; great coffee and pastries; a witty wine list from Ashley Bernee Wells; and the “California backyard” cooking of her husband, Tyler J. Wells. Together the Wellses wrote a transportive but also down-to-earth cookbook that puts us at the heart of the restaurant and in the spirit of what it means to make and serve food. “Cooking and eating and feeding and serving are really just loving,” Ashley writes. “That’s yours to roast, to shape, to stir, to bake, to discover.” What you’ll find in “ The Cook Book of All Time ” are approachable, share-with-friends dishes: steaks with piles of pickled peppers, celery and greens; whole roasted fish; corn salad; cobbler with whipped crème fraîche. There’s plenty of heart behind the recipes, while Tyler’s motto is: “We’re just cooking!”
The SalviSoul Cookbook: Salvadoran Recipes and the Women Who Preserve Them by Karla Tatiana Vasquez (Ten Speed Press)
This week, Food reporter Cindy Carcamo dives into why the first Salvadoran cookbook to be released from a major publisher took so long. Karla Tatiana Vasquez’s “The SalviSoul Cookbook” is the first-ever Salvadoran cookbook to appear on a Big Five imprint. It was a nearly decade-long journey, but one that also stretches back to her childhood, listening to stories at the dinner table that fueled a desire to get to know herself and her country of origin. “El Salvador is a small little corner in the world, but it has been the biggest question of my life,” Vasquez said. So she gathered recipes and stories from women “who survived, who loved, who laughed and who made fortifying soul food.”
Rhett & Link Present: The Mythical Cookbook: 10 Simple Rules for Cooking Deliciously, Eating Happ ily and Living Mythically by Josh Scherer and Noah Galuten (Harvest)
Wild, just wild. Food’s Stephanie Breijo writes about the first cookbook from the Rhett & Link team , of “Mythical Good Morning “ and “Mythical Kitchen” fame, with Josh Scherer at the helm. Scherer pulls off Milk Chocolate-Dipped Bacon Ice Cream Sandwiches , pumpkin spice pig’s foot, and peanut butter and jelly fried chicken sandwiches. But at the same time, he’s demystifying a lot of cooking techniques (how to prevent a cheese sauce from breaking, say, or the benefits of resting breaded chicken before it’s fried). “Sometimes you want to wrap a pill in Jell-O, so to speak.” he said.
Kismet: Bright, Fresh, Vegetable-Loving Recipes by Sara Kramer and Sarah Hymanson (Clarkson Potter)
I immediately fell in love with the Breakfast-Lunch-Dinner Soup from “Kismet.” It was eye-opening because though I love miso soup and soupy rice porridge for breakfast (and all kinds of soup in general), I hadn’t really ever thought about vegetable soup for breakfast. This one has an egg stirred in (think egg-drop meets minestrone meets avgolemono). Now it’s all I want (for breakfast — and lunch and dinner, obviously). As I write in my feature on the cookbook for Sunday’s Weekend section, authors Sara Kramer and Sarah Hymanson, the chefs of Kismet in Los Feliz, have an affinity for vegetables , and they’ve managed to make them shine in the most efficient ways (the soup takes 30 minutes to make), with endlessly creative combinations and twists. Another favorite is the Marinated Feta With Spice-Roasted Tomatoes and Grapefruit . Use the marinated feta (see the recipe below) for all kinds of salads or for schmearing on bread. “We’ve riffed on it no fewer than a hundred ways over the years.”

Kismet’s Marinated Feta
This creamy, tangy marinated feta was inspired by those jars of delicious oil-packed cheese from Australian producer Meredith Dairy. Kismet cookbook authors Sarah Hymanson and Sara Kramer show you how to make their version, with a marinade of oil infused with garlic, lemon zest, coriander, bay leaf and black pepper. Get the recipe. Cook time: 1 hour (including marinating time). Makes about 1 cup.
Breakfast-Lunch-Dinner Soup
This is the soup I love to make in all kinds of ways. The Kismet cookbook calls for leeks, squash and spinach. I also made it with garlic, chopped broccolini and thinly sliced new potatoes. I’ve added cooked rice, and another time it was fregola sarda. Squeeze in regular lemon, or Meyer lemon. The recipe calls for stirring in eggs. I’ve also cracked in whole eggs to gently poach in the broth. It’s great with or even without the Parm rind dropped in. Get the recipe. Cook time: 30 minutes. Serves 4.

Salpicón De Res (Salvadoran Minced Beef Salad)
A fresh, herby, crunchy, meaty salad that’s delicious on its own or served with rice and beans. “There is some variety in which vegetables to use or how fine the minced meat and vegetables should be,” “The SalviSoul Cookbook” author Karla Tatiana Vasquez writes, “but for the most part, it should have mint and it should have lime. Its flavors are fresh, like a Saturday morning, and everyone feels pretty good after eating it.” Get the recipe. Cook time: 55 minutes. Serves 4 to 6.
French Onion Ramen
We watched “The Mythical Cookbook” author Josh Scherer make this in the kitchen at the L.A. Times, tasted it and were hooked. What’s not to love about caramelized onions plus ramen? The seasoning packet of instant ramen plus jammy onions makes a convincing French-onion-esque soup. Get the recipe. Cook time: 55 minutes. Serves 1.
