If you love drinking gin as much as I do (and I can assure you, that’s a lot) and found something online that said “5 bars | 5 gins | 5 cocktails | gin carriage | gin guardian | like a school trip but only sexier” , it’d be terribly rude not to find out more, right?

And that is where I found myself on Boxing Day morning. I was lazily browsing the internet in the bath to find out more about one of my other gin-related Christmas gifts  when I found myself on the Twitter page of the guys at Gin Journey  and was encouraged to click through to their website from the bio above. A gin soaked school trip? I was completely sold before I’d even read anything else.

And so, I hastily booked two tickets for myself and my Mum before I’d even left the bath. (True story, honestly).

Gin Journey Bermondsey

The Gin Journey is a gin tour with a difference. The basic premise is pretty simple – a tour around an area (in our case Bermondsey in South London) to five different local bars or distilleries finding out not only about amazing gin brands but also some of the history of gin.  You’re led on your tour by a gin guardian, an expert in gin, who will give you a gin education with a smile and five of the tastiest cocktails you’ll ever hope to try. We got a tutored tasting of each gin neat too, which was something a bit different, but also something I’ll definitely being doing more of in future.

And you’ll be ferried around in a mini bus for an entire afternoon. Or, as they like to call it – the ginny-bus.

We’re about to take a dive into the wonderful, diverse world of gin, a liquid art form that is so much more than just a spirit. 

We’re talking about a universe of unique botanicals, extraordinary distilling techniques, and a vast variety of flavors.

London Dry gin

Despite what the name might suggest, it doesn’t have to be made in London. In fact, it can be crafted anywhere in the world! What makes it “London Dry” is the distillation process. 

It’s a super clean, crisp type of gin that gets all of its flavor from the botanicals used during distillation, with nothing added after. 

Notable examples of this style include classics like Tanqueray and Beefeater.

Plymouth Gin

It’s a very specific and geographically designated gin. 

Yep, you guessed it, it’s only made in Plymouth, England! 

It’s similar to London Dry but with a slightly fruitier, earthier flavor profile, which comes from a higher proportion of root ingredients in the botanical mix. 

Sadly, for us gin lovers, there’s currently only one distillery—Black Friar’s—still producing this gem.

London Dry vs Plymouth Gin

  • Flavor: Crisp and dry vs Fruity and earthy
  • Production Location: Anywhere vs Plymouth, England
  • Examples: Tanqueray, Beefeater, vs Black Friar’s Plymouth

Old Tom Gin 

It takes us back in time to the gin craze of the 18th century. 

Old Tom is a little sweeter, and it was the missing link between the first rudimentary gins that were heavy on the juniper and the modern, more refined London Dry style. 

It’s enjoying a bit of a renaissance these days, and you can find some great Old Tom Gins from producers like Hayman’s and Ransom.

The granddaddy of them all It originated in the Netherlands and Belgium, and you could say it’s gin in its earliest form. 

It’s maltier, almost whiskey-like, because of its high percentage of malt wine, and the juniper flavor is more subtle. Some fine Genevers include Bols and Van Wees.

Old Tom vs Genever

  • Flavor: Sweet and light vs Malty and subtle
  • Historical Period: 18th century vs Earliest form of gin
  • Examples: Hayman’s, Ransom vs Bols, Van Wees

New Western

If you’re feeling adventurous, we suggest exploring New Western or international-style gins. 

These defy traditional categories and go wild with the botanicals. 

They’ve downplayed the juniper in favor of other flavors. 

Hendrick’s, with its cucumber and rose infusion, is a perfect example.

Gin is a playground of flavor, with each style offering a unique twist on this beloved spirit. 

Whether you’re a gin connoisseur or a curious newcomer, there’s a gin variety out there that’s sure to tickle your fancy. 

Now that you know your London Dry from your Plymouth, your Old Tom from your Genever, and have a taste of the New Western, your gin exploration will be an informed and exciting journey!

The Blank Canvas: Neutral Base Alcohol

The gin journey begins with the base alcohol, often made from grains like wheat, barley, or corn. 

This alcohol is neutral, which in spirit-speak means it doesn’t have much flavor of its own. kind of like the blank canvas for our gin masterpiece. 

It’s fermented and distilled to high proof, typically around 96% alcohol.

The Flavor Party: Botanical Infusion

This is where the real fun starts: infusing that strong, neutral spirit with botanicals. 

And by botanicals, we mean all sorts of plant-derived goodies: spices, herbs, and, of course, the indispensable juniper berries.

Refinement: Distillation

Once the botanicals have had their party in the spirit, it’s time for distillation. 

The botanical-infused alcohol is heated in a still.

Stills: Two Main Types

Traditional, often used in smaller craft distilleries. Gives a rich, full-bodied flavor.

Column Still

Modern technology allows for continuous distillation. Creates a lighter, cleaner flavor.

Dilution: Making it Drinkable

The spirit coming out of the still, known as the “distillate,” is high-proof and intense. 

To make it more, well, drinkable, it’s cut with water to bring the alcohol content down to a more manageable level, usually around 40% alcohol.

The Final Rest: Let the Flavors Marry

Some gins go through a final step: resting. 

This can take anywhere from a few days to several months, and it allows all the flavors to mellow and marry together.

Gin distillation is truly both a science and an art.

Starting off our star-studded list is Tanqueray, the quintessential London Dry gin. 

Don’t let the fancy green bottle fool you; inside is a classic, no-nonsense gin that’s been around since 1830. 

With its bold juniper-forward flavor and four simple botanicals—juniper, coriander, angelica root, and licorice—Tanqueray is crisp, clean, and perfect for any cocktail calling for gin.

2. Hendrick’s: A Fresh Perspective on Gin

If Tanqueray is the seasoned actor of gin, Hendrick’s is the eccentric indie darling. 

Launched in 1999, this Scottish gin turned the gin world upside down with its unusual addition of Bulgarian Rose and cucumber to the traditional botanical mix.

Ten hand-selected botanicals from around the world are vapor infused during distillation, creating a delicate and nuanced gin. 

It’s easy to sip and mixes well in cocktails, making it a staple in many a home bar.

4. Beefeater: The London Classic

No gin list would be complete without Beefeater. 

This London-born gin has been around since 1863 and is one of the last gins to be distilled in the heart of the city. 

With its strong juniper backbone and a supporting cast of nine botanicals, Beefeater is a robust and reliable choice that shines in a classic gin and tonic .

5. Monkey 47: The Crafty Upstart

From the heart of the Black Forest in Germany comes Monkey 47, a relative newcomer on the gin stage but a showstopper nonetheless. 

This craft gin boasts an impressive 47 botanicals (thus the name), with a unique addition of cranberries. 

It’s a complex and intriguing gin with a price tag to match, but it’s well worth the splurge for any gin enthusiast.

6. Roku: A Taste of Japan

Roku gin is a perfect fusion of traditional gin botanicals and six unique Japanese botanicals such as Sakura flower, Sakura leaf, Yuzu peel, Sencha tea, Gyokuro tea, and Sansho pepper. 

The outcome? 

A gin that is as refined and balanced as a piece of Japanese art 

Packaged in a hexagonal bottle symbolizing its six Japanese botanicals, Roku adds an exotic twist to the gin narrative.

7. Sipsmith: Craft Gin Pioneers

Sipsmith helped pioneer the craft gin boom when it launched in London in 2009. 

They were the first copper-pot-based distillery in London for nearly 200 years, and they’ve used that traditional technique to craft a seriously good gin. 

Featuring classic botanicals with a strong juniper punch, Sipsmith is rich and balanced, making it ideal for a top-notch G&T or a silky-smooth martini .

8. Malfy Gin: La Dolce Vita in a Bottle

Four Pillars is a small Australian distillery with a global reputation. 

Their Rare Dry Gin, steamed distilled with a mix of local and international botanicals, has a bright, fresh character that’s won them fans all over the world. 

It’s as sunny and friendly as Australia itself—a fantastic gin to brighten up your cocktail hour.

Each of these brands has helped shape the gin landscape in its own way, from traditional powerhouses like Tanqueray and Beefeater to newcomers like Monkey 47. 

But this is just the tip of the iceberg; there’s a whole world of gin out there waiting to be explored, each with its own story and flavor profile. 

From The Botanist’s wild foraged botanicals to Four Pillars’ sunny flavors, Malfy’s Italian flair, Sipsmith’s craft heritage, and Roku’s eastern elegance, these global gins each add their own regional twist to this beloved spirit.

Working in the world of spirits for over 20 years, founder Simon Ford realized that the ultimate cocktail gin did not exist. He set out to change this with the leaders of the craft cocktail movement – a small band of bartenders, distillers and professional drinkers. After various versions of a recipe, it was on attempt #83 that they cracked the code for Fords Gin. Today, the same blend of nine botanicals is heralded as The Cocktail Gin.

This nine-botanical blend is expertly crafted for cocktails and recognized by professional and at-home bartenders for its outstanding mixability.

An industry legend in his own right, Charles is an 11th generation distiller whose family started making gin in London in the 17th Century. The nine botanicals that make up Fords Gin are steeped in stills for 15 hours to soften them and bring out more flavour before distillation. The botanicals release most of their oils during this process, giving Fords Gin weight and viscosity, one of its defining characteristics.

Fords Gin is distilled for five hours in copper stills crafted by the legendary John Dore still-making company for the Thames Distillery. Appropriately named Tom Thumb and Thumbelina, these 500-liter stills produce a 200-liter batch of Fords Gin each run.

After the distillation process, Fords Gin is shipped in bulk to Newbridge, Scotland, where the gin is cut with pure spring water, giving it its final layer of quality before bottling at 45% ABV.
