MENU: Le Voyage Specialty Restaurant on Celebrity Beyond

Celebrity Cruises’ Edge-class ships are extremely similar in most ways. First came the class’ namesake ship Celebrity Edge , then Celebrity Apex and Celebrity Beyond. The cruise line amped up its game a bit with Beyond, including a brand-new specialty restaurant: Le Voyage by acclaimed chef and Celebrity’s Culinary Ambassador Daniel Boulud. The intimate, upscale venue features warm lighting, soft tones, and a globally-inspired menu.

For a three-course meal at Le Voyage — one appetizer, one entrée, and one dessert — it costs $75 per person.

With the beginning of its newest ship, the Beyond, Celebrity Cruises is adding a specialty restaurant to its already extensive offering on board Edge Class ships. This is a French restaurant on the theme of travel: its creator, the Michelin-starred Chef Daniel Boulud, has designed a menu made up of dishes inspired by his many travels around the world.

At the crossroads of a gourmet restaurant and a “fooding” trend, this restaurant offers 3 ways to discover the dishes:

The first is the most classic: à la carte. From a wide selection, you have to choose a starter, a main course and a dessert. To this will be added an amuse-bouche as well as sweets. The price is then $75 per person.

You can also let yourself be carried away by a 5-course menu, with an alternative at each stage. In this case, the meal is $125 per person.

Finally, it is possible to register for the “Chef’s Table” dinner, which will take place one evening of the cruise in a specific room inside the restaurant. Animated and commented by a Chef as the dishes are served, the meal is also a 5-course menu with a few more surprises. And it will be $139 per person. The wine pairing is in addition, at $60.

On the menu, à la carte, the dishes I was able to taste were all excellent, clearly marked by their origin, such as a Tunisian beef tartare or prawns with tamarind and peanuts… just like the lobster risotto, very generous.

I decided to try the Chef’s Table as well. It’s actually the equivalent of the 5-course menu, with the participation of the Chef in charge of the restaurant who, in addition to a few dishes borrowed from the standard menu of the restaurant, allows himself to bring a personal touch (during my dinner, an Italian-inspired dish in addition to what was on the menu).

Again, everything was very good. Undoubtedly one of the best “Chef’s Table” that I have tried, if not the best. The only downside I will bring is that the menu is largely modeled on the restaurant menu, which differs from the other Chef’s Tables that I had been able to test on other companies, since these meals were then completely independent from any restaurant on board.

The service is worthy of a great restaurant and everyone takes great care of the guests. And at least some servers spoke French, which is generally not the case in so-called “French” restaurants on most companies.

It should be noted that to the various prices announced (rates for the month of June 2022), the service (18%) and the tax (in the Mediterranean, for cruises departing from Spain in any case), of 10% must be added. Pay attention to the addition, then!

Un an avant sa livraison, Celebrity Cruises a dévoilé les secrets de son prochain paquebot de luxe baptisé Celebrity Beyond. Actuellement en construction aux Chantiers de l’Atlantique à Saint-Nazaire, son voyage inaugural est prévu en Europe au printemps 2022. Découvrez les nouveaux aménagements et les prestations haut de gamme du nouveau navire de la flotte Celebrity Cruises.

Le Celebrity Beyond a été livré le 6 avril 2022.

Présentation du navire

Nouveaux aménagements et points forts, restauration à bord, cafés, bars et salons, divertissements et activités, ponts et cabines, the retreat.

Les premiers passagers à embarquer pour une croisière sur le Celebrity Beyond découvriront un paquebot de grand standing. Attendu pour avril 2022, le Celebrity Beyond sera le troisième navire de classe Edge à sillonner les mers du globe.

Sister-ship du Celebrity Edge et du Celebrity Apex, il sera néanmoins plus long (20 m) et plus haut (1 pont) que ses deux aînés. Il pourra également accueillir un plus grand nombre de passagers, avec 179 cabines supplémentaires.

Long de 327 mètres et large de 39 mètres, il pourra héberger un total de 3 260 passagers dans 1646 cabines et Suites. Il embarquera également 1430 membres d’équipage.

Ce paquebot, qui pourra naviguer à une vitesse de 22 nœuds, comptera 16 ponts. Quinze seront accessibles à ses passagers.

À terme, la compagnie possédera en tout 5 paquebots de classe Edge. Par rapport à ses jumeaux, le Celebrity Beyond sera non seulement plus grand, mais présentera également de nombreuses nouveautés.

En présentant son prochain navire, la compagnie américaine a dévoilé de nouveaux espaces, au design moderne et innovant.

Les extérieurs ont été réaménagés et améliorés :

Le pont principal et le Rooftop Garden

Le pont principal a été agrandi. Il est 40 % plus grand que sur les autres navires de classe Edge. Il abrite un grand jardin suspendu, le Rooftop Garden. Avec une végétation luxuriante et à l’abri du vent, c’est un lieu dédié à la promenade et à la détente. Vous pourrez vous asseoir à l’ombre et profiter de la vue ou prendre un repas en plein air au Rooftop Grill Bar. Dans ce cadre idyllique, vous trouverez également 2 piscines aux parois de verre, qui donnent sur la mer.

Le Sunset Bar

Situé à l’arrière du pont 15, le Sunset Bar est un salon extérieur chic, d’inspiration marocaine. Presque deux fois plus grand que sur les précédents navires de classe Edge, il rappelle la captivante Casablanca. Terrasses en cascade, pergola, céramiques, carreaux de terre cuite… ce bar, qui s’étend sur deux ponts, est un véritable lieu d’évasion.

Le pont piscine a également été réaménagé. Comme le pont principal, il est 40 % plus grand que sur les autres navires de classe Edge. Vous pourrez nager dans la piscine longue de 25 mètres, prendre un bain de soleil sur l’un des confortables transats de sa vaste terrasse, ou vous détendre dans l’un des bains à remous en forme de verre à Martini. Une statue d’éléphant grandeur nature trône à l’extrémité du bassin.

Tout comme les espaces extérieurs, l’intérieur du navire a également eu droit à un relooking : 

Le Grand Plaza

Situé au cœur du navire, l’atrium du Celebrity Beyond, qui s’étend du pont 3 au pont 5, est lui aussi plus grand que sur le Celebrity Edge et sur le Celebrity Apex.

Cet agrandissement a permis de déplacer le Martini Bar au centre de ce vaste espace commun et d’en faire un bar circulaire. Véritable œuvre d’art, un impressionnant lustre de 7 tonnes et composé de centaines de lumières LED qui changent de couleur au cours de la journée a été installé au-dessus Martini Bar.

Vous apprécierez déambuler ou prendre un verre dans cet espace ouvert et plus aéré, inspiré de l’époque des mythiques paquebots transatlantiques.

Le Luminae et le Retreat Sundeck

Sur le Celebrity Beyond le Luminae, restaurant privé réservé aux passagers des Suites a été repensé afin d’accueillir ses invités dans un cadre encore plus élégant.

Le Retreat Sundeck (solarium), également réservé aux personnes qui voyagent en Suite, a lui aussi été remis en valeur et étendu sur deux étages.

Les hébergements de l’espace The Retreat

Le Celebrity Beyond propose des Suites encore plus confortables et plus luxueuses que sur les navires précédents. Les villas Edge à deux étages, qui disposent de piscines extérieures privées ont été redessinées.

Par ailleurs, le Celebrity Beyond sera le premier navire à abriter des Suites AquaClass Sky, avec accès privilégié au Spa, pour un séjour dédié au bien-être et à la relaxation.

La mise en service du Celebrity Beyond marquera également le début d’un nouveau partenariat avec l’actrice Gwyneth Paltrow. Les passagers qui choisissent une cabine AquaClass bénéficieront de prestations bien-être exclusives et se verront remettre des kits de remise en forme à l’effigie de sa marque, Goop.

En plus de ces réaménagements, vous trouverez sur le navire quelques nouveautés. Par exemple, le tout nouveau restaurant Le Voyage, imaginé par Daniel Boulud, chef cuisinier français installé aux États-Unis et parmi les meilleurs restaurateurs de New York. Ce restaurant de 50 places, décoré avec des couleurs douces, vous accueillera dans une ambiance intime et cosy pour un dîner gastronomique.

Espace emblématique des navires de classe Edge, vous retrouverez bien sûr le Salon Eden. Sur une surface de près de 1200 m2 et 3 ponts, cet espace grandiose, végétalisé et orienté vers l’extérieur vous accueillera le temps d’un repas, d’un verre entre amis, d’une conférence ou autres événements exceptionnels.

Enfin, vous serez impressionnés par l’incroyable Magic Carpet. Originalité proposée par Celebrity Cruises, cette plateforme placée sur le côté du navire vous réserve des moments inoubliables : dîners, cocktails ou concerts suspendus plusieurs étages au-dessus du niveau de la mer.

Celebrity Cruises a repensé son offre de restauration afin de vous permettre de découvrir de nouvelles saveurs et de vous embarquer, chaque jour, dans un véritable voyage culinaire.

Vous trouverez sur le navire 4 salles à manger principales, des restaurants de spécialités ainsi que de nombreux bars et salons.

Restauration principale

Le nouveau paquebot de la compagnie américaine compte quatre restaurants principaux gratuits : le Normandie, le Toscan, le Cosmopolitan et le Cyprus.

Chaque restaurant propose une décoration et une ambiance différente. Tous les soirs, vous vous régalerez de nouveaux plats, inspirés par votre itinéraire et par les régions visitées. Ils seront préparés à partir d’ingrédients frais et locaux. Chaque restaurant propose également des vins régionaux.

Sauf si vous voyagez en Suite, une place vous sera affectée dans l’un de ces 4 restaurants. Sur demande, vous pouvez cependant dîner dans n’importe lequel des 3 autres.

En plus de ces 4 restaurants, il existe de nombreux lieux de restauration gratuite, tels que :

  • L’Oceanview Café : un café qui ressemble à un marché et qui abrite une boulangerie
  • Le Mast Grill : pour vous restaurer au bord de la piscine
  • Le Spa Café & Juice Bar : pour une collation saine ou un jus vitaminé
  • L’Eden Café : vous y trouverez un grand choix de produits, pour le petit-déjeuner ou le déjeuner

Les restaurants de spécialités

Le Celebrity Beyond accueille un tout nouvel établissement : Le Voyage. Il s’agit du premier restaurant en mer du chef étoilé, Daniel Boulud. Vous y découvrirez un menu d’inspiration internationale, élaboré par ce cuisinier de renommée mondiale. Avec votre repas, vous dégusterez une sélection de vins haut de gamme. Des serveurs aux petits soins, des couleurs douces et une ambiance cosy vous donneront l’impression de dîner dans un cocon.

L'entrée luxueuse du restaurant Le Voyage

Celebrity Cruises nous propose un concept original avec le Grand Bistro. C’est une pâtisserie et une cafétéria française en journée. Le soir, l’enseigne devient « Le Petit Chef » et allie restauration et divertissement. Vous assisterez à des animations étonnantes avec des personnages 3D projetés sur les tables et dans les assiettes.

Vous pourrez également choisir de vous restaurer dans l’un des nombreux autres restaurants de spécialités tels que :

  • Le Qsine, restaurant connecté : vous commanderez votre repas sur un iPad
  • Le Tuscan Grill : steakhouse italien
  • Le Murano : restaurant français
  • Le Lawn Club Grill, qui vous proposera de délicieuses grillades
  • Le Porch : sandwichs et paninis pour le petit-déjeuner et le déjeuner
  • Ou le Fine Cut Steakhouse et le Raw, dans le Grand Plaza

Les restaurants privés

Comme sur tous les paquebots de la compagnie, certains restaurants sont réservés aux passagers ayant opté pour certaines catégories de cabines.

Les hôtes qui séjournent dans les cabines ou les Suites AquaClass ont accès au restaurant Blu. Ils peuvent y déguster une cuisine légère et saine.

Les personnes qui voyagent en Suite sont reçues au Luminae. Ce restaurant, qui fait partie du complexe privé « The Retreat », propose une restauration gastronomique haut de gamme. Les vins servis avec chaque plat sont sélectionnés par le chef étoilé Daniel Boulud.

Le Celebrity Beyond compte 11 bars et salons, mais aussi plusieurs cafés. À bord, vous retrouverez des enseignes emblématiques de la compagnie ou de la classe Edge, mais aussi quelques nouveautés.

Au Grand Plaza, vous trouverez le Grand Bistro, le Cafe al Bacio, le Grand Plaza Café, mais aussi l’incontournable Martini Bar qui se trouve au milieu du pont 3.

À l’arrière des ponts 4, 5 et 6, l’Eden vous servira repas, en-cas ou boissons, dans un cadre fabuleux, en intérieur ou en plein air.

Dépaysement garanti au Sunset Bar, pont 15. Il s’agit d’un salon extérieur d’inspiration marocaine. Il communique directement avec l’Oceanview Café, qui se trouve en contrebas. Dans ces deux espaces, soigneusement décorés et confortablement aménagés, vous pourrez prendre un verre ou un café en plein air, en profitant du soleil ou d’une légère brise marine.

Au Craft Social Bar, vous découvrirez une sélection de vins haut de gamme, des cocktails et plus de 50 variétés de bières artisanales. L’AquaSpa Cafe quant à lui, vous propose des collations saines et équilibrées.

D’autres enseignes vous accueilleront pour votre petit café du matin, une pause gourmande, un apéro ou un verre de fin de soirée : le Club, le Theatre Bar, le Casino Bar, le Pool Bar ou Il Secondo Bacio.

Les clients des Suites pourront également se rendre à l’espace qui leur est réservé, le Retreat Lounge. En-cas et boissons leur seront servis à toute heure, dans un cadre élégant et paisible.

Les nombreux bars et salons du Celebrity Beyond vous accueilleront dans une ambiance chaleureuse. Dans ces lieux de convivialité, vous assisterez également à des concerts, animations, conférences ou spectacles.

Les navires de classe Edge disposent d’un théâtre dernier cri qui permet de programmer des spectacles incroyables : 7 scènes, des plateformes rotatives qui s’élèvent à plus de 2 m au-dessus de la scène principale, plusieurs écrans et projecteurs laser, mais aussi les installations nécessaires à l’organisation de spectacles aériens !

Au grand théâtre du Celebrity Beyond, vous assisterez à des spectacles modernes et époustouflants.

Même en dehors du théâtre, vous profiterez de nombreuses prestations musicales ou de divertissement, tout au long de votre séjour et partout sur le bateau.

Pour ne citer que quelques exemples : au Rooftop Garden, un écran géant vous permettra de regarder films, séries ou spectacles en plein air et sous les étoiles, le Sky Observation Lounge propose de la musique live au coucher du soleil et les barmen du Grand Plaza vous étonneront avec une performance inédite, le Flash Flair Fusion.

Lieu original, le Club est un espace dédié au jeu le jour (avec un labyrinthe, un parcours d’obstacles laser ou des jeux de société) et le soir, une discothèque sur le thème de la Prohibition américaine qui propose des cocktails typiques des années 20.

Le salon-bar-restaurant Eden n’est pas qu’un lieu de restauration. Vous pourrez vous y rendre pour assister à des concerts ou des conférences. Mais surtout, en fin de journée le salon devient le « Eve at Eden » et propose des shows étonnants, mêlant arts du spectacle, arts culinaires et plaisirs de la vie nocturne.

Côté tribord, le Magic Carpet offre une vue imprenable sur l’océan. Cette plateforme, accrochée sur le côté du navire, surplombe la mer et fonctionne comme un ascenseur géant. Elle peut monter du pont 2 au pont 16. En changeant d’emplacement, elle change de fonction ou de thème : musique live, point de vue, restaurant ou bar… 

Au Celebrity iLounge, vous pourrez suivre des cours d’initiation à l’informatique et aux nouvelles technologies.  

De nombreuses autres installations sportives ou de divertissement sont à votre disposition pour faire de votre voyage un moment unique : le Fortune’s Casino, un vaste espace shopping, des piscines et bains à remous, une piste de course, une salle de sport ou encore, un espace bien-être.

Au club enfant, vos bambins et adolescents pourront choisir parmi plus de 500 activités gratuites adaptées à leur âge. 2 espaces ont spécialement été aménagés pour eux.  

Le nouveau paquebot de Celebrity Cruises compte 16 ponts. Quinze sont accessibles aux passagers. Vous circulerez entre les différents étages du navire en empruntant l’un des 12 ascenseurs ou l’un des 4 groupes d’escaliers.

L’atrium, baptisé « Grand Plaza » se trouve au centre des ponts 3, 4 et 5. L’incroyable Salon Eden quant à lui, occupe également 3 étages, à l’arrière des ponts 4, 5 et 6.

Sur les ponts supérieurs, vous trouverez les piscines, le spa ou encore le solarium.

Les 1646 cabines que compte le navire sont réparties sur 10 ponts. La plus petite a une surface de 20 m2, et la plus grande fait plus de 170 m2 (sans compter la terrasse). 90 % des cabines du Celebrity Beyond ont vue sur mer et parmi elles, 80 % sont dotées d’un balcon ou une véranda.

En fonction de vos envies, mais aussi de votre budget, vous ferez votre choix entre les cabines intérieures, vue mer, avec véranda ou Infinite Veranda, mais aussi des cabines de classe supérieure : Concierge Class (avec services supplémentaires) et AquaClass, pour un voyage sous le signe du bien-être et de la relaxation. 

Sur le Celebrity Beyond, les cabines Infinite Veranda sont 23% plus grandes que sur les navires de classe Solstice. Leurs larges baies vitrées permettent de faire disparaître la frontière entre l’espace intérieur et l’extérieur. Votre cabine tout entière devient une large terrasse pour vous permettre de profiter au maximum de l’air marin et des paysages grandioses.

Sur ce navire, vous trouverez également des cabines réservées aux voyageurs solo.

Toutes les chambres du paquebot sont accessibles avec des clés numériques (sur carte ou smartphone) et grâce à une tablette tactile, vous pouvez contrôler, à distance et d’une simple pression, l’éclairage, la climatisation ou les stores. The Retreat est un espace exclusif situé à l’avant du navire et réservé aux passagers des Suites.

Réparti sur 3 ponts, il comprend des Suites luxueuses, un restaurant privé (le Luminae), une terrasse (The Retreat Sundeck) et un lounge (The Retreat Lounge).

  • Le Luminae est un restaurant gastronomique réservé aux passagers qui séjournent dans l’espace The Retreat. Son chef étoilé propose des menus exclusifs et des plats signatures que l’on ne peut déguster dans aucun autre restaurant du navire.
  • The Retreat Sundeck est un espace avec solarium et piscine, réservé aux adultes. Dans une ambiance chic et apaisante, vous y trouverez des bains à remous, des cabanas et un bar. Pour votre confort, l’ensemble est aménagé avec du mobilier de grande qualité signé Kelly Hoppen : chaises longues, canapés d’extérieur et daybeds. Un toit de verre recouvre la piscine du Solarium.
  • The Retreat Lounge est un salon chaleureux accessible tous les jours, 24 heures sur 24. I liked it better.  We did the dinner menu not the tasting menu and loved every dish, service was excellent.  For us they would rank 1. Le Voyage, 2 Fine Cut 3. Eden

We didn’t do the pairing because we had the premium drink package.  The sommelier recommended wines to go with each course and they were all the excellent.

Great restaurant on Beyond. Can't go wrong. We do a tasting menu and a la carte with one of their great bottles of champagne each time. Very special evenings.

For an upcoming 11-night cruise, we have Le Voyage booked three nights, then Eden for three nights (I believe 2nd best restaurant), Raw on 5 for three nights (IMO, 3rd best restaurant as their seafood tower plus a few sides that my S.O. and I like make for a great, slow dining event), then LPC booked for two nights (not so much for the show, but my S.O. loves the food).

We tried Fine Cut once on prior cruise. Not to our liking, when compared to steakhouses in Dallas, San Francisco, or Chicago.

Though we are in the Retreat and our stateroom includes the unlimited dining, we feel the specialties are much better than Luminae.

I cruised aboard the Celebrity Beyond in February 2023 and greatly enjoyed my dinner at Le Voyage. This is a small and attractive venue with outstanding food and service. In fact, I have booked dinner at Le Voyage for my cruise on the Celebrity Ascent for February 2024. I also really like Eden.

I ate in Eden on night 1 and 3 on my Beyond cruise in January. I also ate at Le Voyage on night 5. I enjoyed the food and service much more in Eden. I enjoyed Eden so much I ended up booking Eden for night 7 as well.

I wasn't feeling the greatest the night I went to Le Voyage so that my have clouded my opinion of it. It's worth a try at least once if the menu looks appealing to you.  The service is very formal in Le Voyage, much more so than in Eden. The food was good but Eden just matched my palate much better.

I was so excited to try Le Voyage.  It was good not great.  My husband and I couldn’t decide if we wanted to do the tasting menu.  So we did regular.  Food was ok.  Not super good.  No windows and no view.  Rather dark.  Eden was nice.  We sat and saw the wake at the back of the ship.

I have an upcoming Transatlantic cruise on Ascent. I've already booked Eden for five nights, Le Voyage no nights so my $$ show where I think I'll enjoy the food most.  I hope the new ship meets or exceeds the high standards I received in Beyond.

I agree that Le Voyage felt cave-like with no windows or views and dim lighting.

We did a B3B on Beyond in February and went to Le Voyage 5 times……We loved it and gave it a slight edge, food and service wise, over Eden. (Eden does have a spectacular view) Food and service was great and it is a very intimate dining experience in a very small venue, that they only half full at a time because kitchen is small we were told.

I did the wine pairing.  They went through the list and said, "we have this wine but not this other wine, so we'll substitute".  I think out of 7 courses (?) they substituted 3-4 wines. 

I thought the food and wine was good.  I wish the ambience was better.  On Beyond you're in a large windowless rather dark room.

I'm sailing on Beyond in August and can't see where to make reservations for Le Voyage on the app. Does this mean it is sold out? As a retreat guest, should I be able to make a reservation via the concierge upon boarding or are we screwed and need to stalk the app looking for cancellations?

I am likewise in the Retreat on the Beyond in August and the shoreside team reached out to me for all requests, dining among them.

The shoreside team has been quite responsive. 

I should think as a Retreat guest that you would receive communication, as well. Perhaps verify that your email/telephone number details are accurate?

This forum has a good amount of experience with Celebrity. You are likely to hear other helpful responses.

If you sailing next month I think you may be too late . Le Voyage sells out very early (unless you are in a top suite and then anything is possible ) . Check on board for cancellations

I would call the Retreat desk before, which I think is 1-877-RETREAT or talk to your butler on boarding the ship.

Agree, for me Le Voyage was a one and done.

I also preferred the ambiance in Eden and Fine Cut.

What It Takes to Feed Thousands of Passengers On Board a Mega Cruise Ship

Forget the midnight buffets and trays of pre-mixed poolside cocktails melting in the sun. Today’s cruise ships have evolved into floating foodie havens with celebrity restaurants, food halls, more sustainably sourced ingredients, and craft cocktail bars.

With the debut last month of Celebrity Beyond , the newest Edge-class ship for Celebrity Cruises, the cruise line is taking on board food and drink one step further with the launch of Le Voyage by Daniel Boulud, the celebrity chef’s first restaurant at sea. Boulud’s dining room, which features menus inspired from his personal travels around the world, is a game changer: It’s the first Michelin-starred chef partnership for the cruise line.

Guests pay $75 (or $125 with wine pairing) to indulge in his tasting menu prepared by chefs who studied under his tutelage. It’s not just the food, but the space that is unique. It was designed by the same team responsible for the Jules Verne restaurant in the Eiffel Tower . Boulud and his team were on board to make every decision, from the staff uniforms to the table settings, to simulate his on-land dining venues. 

But it's just one of 32 food and beverage options on Celebrity Beyond, which are tailored for different preferences and palates, from sushi bars serving up rare delicacies like fugu, the Japanese blowfish that is poisonous if not prepared properly, to craft cocktails at Mediterranean-inspired beach clubs, to the Magic Carpet restaurant that ascends the side of the ship. They, like many other mega ships, manage to serve a wide variety, and volume, of food, while at sea.

It all begs the question: How do mega cruise ships pull off premium dining experiences at such scale—on a moving vessel? On board the Beyond , we got an idea. 

The logistics of pulling it off

On a cruise ship, space is at a premium, and it is a logistical feat that so many dining concepts can be executed flawlessly. How does a line actually get all that food to so many people, with flawless execution at every step of the process? Does everything come from a central kitchen? How do they know how much of each ingredient or food item to order for each sailing? Does it all get loaded from the same port?

It’s a science cruise staffers have mastered following years of experience, according to Cornelius Gallagher, vice president of food and beverage and a Michelin-starred chef himself who once worked under Boulud. Computer systems help monitor the consumption of each item, right down to the lemons squeezed into your drink, to know how much to order for each sailing. Based on the location of the ship, the quantity of certain items may vary from sailing to sailing. For example, Alaska sailings always see a higher demand for salmon, Gallagher says.

Provisioning a ship operates like clockwork. The process is planned around specific ports of call (often the home port of a ship where passengers embark and disembark) that have the ability to supply large quantities all at once. You may see them loading goods on board in large crates, which eventually turn into tasty meals later. The limited shelf life of fresh ingredients and demands on particular storage temperatures mean the loading process and the schedule for onboard use must be managed meticulously.

When it comes to drinks, Americans are huge consumers of Bud Light, which might mean stocking more on routes popular with U.S. travelers, whereas British guests prefer Guinness. Recent supply chain issues have complicated things, too. Gallagher notes that some of the craft and specialty beer for its newest bar has been delayed, but is on the way.

Each of the ship’s specialty restaurants has its own kitchen, but things like bread may come from a central kitchen, according to Gallagher. Using one main kitchen or having individual galleys varies by the size of the ship and the space available.

Carrying all of that food uses a lot of energy, but Celebrity’s new-build ships are each more energy efficient than the last. Beyond actually releases bubbles beneath the ship’s hull that helps to reduce the friction as it moves through the water to reduce energy use. Celebrity Beyond is 20 percent more efficient than the line’s other ships. It has also reduced its single-use plastic consumption by 90 percent and is working with its shore excursion partners to continue that trend on land.

Beyond is the first ship in the fleet to be commissioned for shore power, which allows it to be more eco-friendly while in port. When it comes to sourcing food, Celebrity is working with sustainable sourcing providers where possible. With fewer buffets overall and switching to staff-served portions, food waste is significantly reduced.

The next time you tuck into a cheesy slice of pizza, carve that tender bite of filet, or twirl that freshly made pasta, consider the logistics that assured the right amount got there at the right time to meet the preferences of passengers on that sailing. The evolution of cruise dining has brought new styles of cuisine and choice, making it a vacation for the senses from start to finish.

More great dining experiences at sea

Other cruise lines are not floating idly by when it comes to their food and beverage concepts—in fact, there's a number of innovative new offerings. Virgin Voyages made its own splash when Scarlet Lady set sail with the first Korean barbecue venue at sea with staff-led drinking games and tableside cooking. It also has a dedicated vegetarian restaurant swapping plant-based alternatives for popular American dishes. Its food hall concept includes ramen and sushi bars, a taco shack, and 24-hour made-to-order breakfast options. The ship has takeaway bento boxes that guests can bring back to their cabin or enjoy by the pool. There’s even a feature on the line’s app that allows you to shake your phone for a glass of champagne to be delivered wherever you are.

Celebrity’s sibling company Royal Caribbean has the Mad Hatter-themed Wonderland, a restaurant that uses costumes and character portrayal to enliven the experience, aboard many of its ships. There’s also a barbecue restaurant complete with a resident country music singer and guitarist as well as a southern cuisine-themed restaurant aboard its largest ship, Wonder of the Seas . There, passengers can choose from regional dishes as well as a collection of 19 American whiskeys while a country music trio performs.

Norwegian Prima , which will make her maiden voyage under the guidance of Godmother Katy Perry this fall, is overhauling its culinary concept. A new food hall will have a Texas-style barbecue smokehouse, tapas food truck, noodle bar, seaside rotisserie and even a Starbucks. The brand is known for firsts when it comes to dining: In 2000, it launched freestyle dining, eliminating the need to choose specific dinner reservation times, thus allowing guests to show up when they prefer. It was also the first company to open specialty dining venues. Other lines have since followed.

5 things to love about Celebrity Beyond

It's a risky move to name a ship Beyond, but Celebrity Cruises ' third Edge-class ship goes above and beyond in ways both expected and not.

The ship is the line's biggest yet , one deck higher and 20 meters longer than the two other ships in Celebrity's newest class, Celebrity Edge (which launched the line's new ship design concept in 2018) and Celebrity Apex (which debuted after a pandemic delay in 2021). The extra space allows for expanded and enhanced onboard venues as compared to Beyond's sister ships.

The detail and design that went into both public spaces and accommodations go beyond what I've seen on other cruise ships. And, hopefully, with an April launch, the ship will take cruisers past the limits of pandemic-era travel and into a new heyday for post-COVID-19 travel.

I was beyond thrilled to experience my first Edge-class ship during a two-night preview cruise to introduce Celebrity Beyond before its official debut cruise on April 27.

It's a ship targeted at Gen Xers, said Lisa Lutoff-Perlo, Celebrity Cruises' president and CEO, but with appeal for all. That's my generation, and I admit I fell hard for the ship's design-forward looks, inviting conversational nooks and cabins that are both modern and functional.

A short sailing was not enough time to truly experience all Celebrity Beyond has to offer and to learn where it shines and where it could still use some polish. Still, based on my intense two-day bonding session with the ship, here are five things to love about Celebrity Beyond.

Grand Plaza

The Grand Plaza is Celebrity's three-deck atrium area that the line has smartly designed to become the social heart of the ship. It's not a new concept for Celebrity or even its Edge class, but Beyond's version might just be the best because it was expanded to include one new restaurant (Daniel Boulud's Le Voyage) and one new-to-Edge-class bar (World Class Bar, previously found only on Solstice-class ships).

On older cruise ships across cruise lines, the atrium area can be dominated by shops, guest services and uninspiring lobby bars that are more convenience stops than destinations. Celebrity places those outlets elsewhere, anchors the Grand Plaza with its renowned Martini Bar and surrounds it with its top restaurants, coffee shop and bars. Not only is the Grand Plaza a key destination on the ship, but it's easy to get sucked into its lively scene when you're passing by on the way to or from dinner or the theater.

By day, everyone pops round to Cafe al Bacio for a coffee or a complimentary pastry or to grab a beer and check the scores at Craft Social Bar. At night, the atrium is all abuzz with cruisers grabbing a pre- or post-dinner cocktail, watching the juggling martini bartenders compete with the LED chandelier for best show and grabbing a table at the terraced landings for a quick catch-up.

Dining venues like Raw on 5 and Fine Cut Steakhouse have lattice-style walls facing the plaza for diners who want to feel a part of the social hub, with seats along the windows as well for those who prefer sea views and quiet chats during mealtime. Only Le Voyage is hidden away behind sliding opaque doors, but the music and laughter leak in every time a new party comes through to dinner.

Sunset Bar and Rooftop Garden

Celebrity took some of Beyond's extra length and used it to expand the Rooftop Garden and Sunset Bar area of its top deck. The cruise line also let its design ambassador, Nate Berkus, have his way with the bar area. The result is an alfresco lounge area that feels like a chic resort hangout rather than simply another poolside bar.

The Rooftop Garden has gained two plunge pools cantilevered over the side of the ship. (Note: They're pools, not hot tubs.) You encounter them first as you make your way into the garden where patio seating sits between a large LED screen and the alfresco Rooftop Grill.

If you don't get distracted here by a meal or a movie, keep heading aft to the Sunset Bar. You'll be tempted to grab a seat at one of the inviting conversation nooks, but make your way first to the tropical-resort-style bar inspired by Berkus' travels. Here you can pick up a cool cocktail to sip while preening in your designer shades and sarong. You'll feel like an old-time movie star living it up in Miami, Havana, Singapore ... or wherever Beyond is currently sailing.

Cabin design

Celebrity put a lot of thought into designing accommodations for its Edge-class ships, and I instantly felt the difference when entering my AquaClass cabin. Not only does the room feel more spacious than your average cruise room, it was more functional as well.

Storage is always a tricky spot for cruise ship cabins, and I often complain about a lack of usable drawer space . Not on Celebrity Beyond. The closet is small, yes – especially with two giant spa bathrobes taking up half the space – but it's sectioned into one full-length hanging section and a shorter hanging section with three drawers underneath, perfectly sized for underwear, socks and swimsuits.

Built into the wall next to it was additional hidden shelf storage. Out in the room, instead of a desk-style vanity with shallow drawers suitable only for small knick-knacks, Celebrity gave a nod to clean, Scandinavian design and paired a simple desktop with no shelves and a full-length mirror with an Ikea-style three-drawer bureau and hidden minifridge. All the drawers I needed, none of the ones I didn't.

You don't spend much time sitting side by side on a cruise ship couch, especially when the TV is across from the bed. So Celebrity ditched the traditional love seat for a chaise lounge-style sofa, where mostly I dumped my daypacks, but also I could lay back with my legs up and Wi-Fi call my family.

Celebrity Beyond, like its Edge-class sister ships, sports the line's controversial "infinite verandas." Instead of adding balconies externally to each cabin, Celebrity added a seating area and a wall of windows, where the top half comes down, like a car window, with the push of a button. Close the folding shutters behind the sitting area and you get a makeshift balcony. Leave them open and fresh air floods into the room.

I've heard that this concept isn't great in the hot, humid tropics. However, with cool, spring temperatures off the coast of England, it was amazing to lie on the bed with a book in the middle of the day and have the fresh air flow in. It does take more time to open and close the electric window and blinds, as well as the folding doors, than it does to draw drapes with a pull cord and open a door onto your private veranda.

The Retreat

If you can afford the suite life, Celebrity has taken its suite area a step beyond with this new ship. The suites and the suite spaces, designed by Kelly Hoppen, are gorgeous and have been regularly selling out, even with the ship not sailing full due to the pandemic.

Celebrity Beyond offers 22 more suites than its Edge-class siblings. That includes a new category of AquaClass Sky suites, which combine traditional Retreat suite perks and cabin size with AquaClass amenities, such as free passes to the thermal suite and breakfast and lunch at Blu, the AquaClass-only "clean cuisine" restaurant. The Iconic Suite is the largest in Celebrity's fleet, with an expansive private sun deck with hot tub and even a Peloton bike in the living room. Two-story Edge villas also impress with a private plunge pool and living wall.

All of the 216 suites come with access to the Retreat Lounge, two-level sun deck (now 40% larger) with pool and Jacuzzi, and Luminae, the suite-only restaurant, with dishes created by chef Cornelius Gallagher and the line's culinary ambassador, Daniel Boulud. Cruisers also receive the services of a Personal Retreat Host (read: butler), 24-hour complimentary room service, premium Wi-Fi and drinks package, onboard and shore excursion credits, and priority everything, from boarding to theater seating.

Dining choices

I can't rate all of Beyond's dining after less than 48 hours on board, but the onboard dining concept deserves a shoutout. With the Edge class, Celebrity has taken both its complimentary and extra-charge restaurants to the next level.

On the included front, I loved the sleek and airy Oceanview Cafe buffet restaurant that actually feels inviting and spacious, rather than cramped with low ceilings, like on some cruise lines. Shoutouts to dedicated Indian food and gluten-free stations, not to mention a lunchtime cake display that put my own wedding cake to shame. The assortment of made-from-scratch breads and baked goods was always impressive.

Celebrity ditched the traditional main dining room for four themed restaurants that feel more intimate than banquet hall. The menus rotate nightly and are 75% the same, with the remaining quarter dedicated to exclusive dishes based on the theme of the venue (American, French, Italian and Mediterranean). You don't have to pay extra to eat in a different restaurant every night.

Among the extra-fee specialty venues, Celebrity Beyond boasts the first-ever Daniel Boulud restaurant at sea, Le Voyage, where he blends global flavors with his French cooking techniques. Honestly, I'd love to sample more of the buttery, warm brioche, but my meal in general was fine but didn't wow. I heard that the menu is still being fine-tuned as this was only Le Voyage's first week hosting guests, so perhaps in a few months meals will live up to Boulud's reputation and the $75 price tag to eat there.

The small venue can seat only 50 diners; a tasting menu ($125 cover charge) will soon roll out to accompany the current a la carte menu. Le Voyage is located just off the atrium, so grab a drink at the Martini Bar or World Class Bar before moseying on down for your two-hour dinner.

I was thoroughly wowed by my meal at Eden Restaurant, the back-of-ship dining and entertainment space filled with plants, views from a three-deck-high glass wall and more than a touch of whimsy. My halibut was beautifully crispy on top and moist inside, and the lemon berry tart was one of the better desserts I've eaten on a cruise ship. A meal here costs $55 per person.

Diners will also find numerous restaurant choices around the Grand Plaza, like a buzzy city neighborhood where something's always going on. These include Raw on 5, Fine Cut Steakhouse and Le Grand Bistro, which serves French bakery-style sandwiches and entrees at lunch and the animated Le Petit Chef menu in the evening.
