Beer is deeply intertwined into the foundations of Tasmanian history. The Cascade Brewery, located at the base of Mount Wellington in Hobart, was established in 1832 and is the oldest continually operating brewery in all of Australia. The art of brewing golden nectar has been practiced since the early days of Hobart’s settlement.

Nowadays, Tasmanian beer is exported internationally and is an iconic cut of Tasmania’s culture. Tasmanian beer is represented by brewing heavyweights Cascade Brewery (from the south of the island) and James Boags Brewery (from the north of the island) alongside smaller breweries that, like wine and whisky, are putting Tasmania on the map.

Tasmania’s clean water sources, quality hops and passionate brewers are the ideal catalyst for our award winning brews. From the iconic Cascade and Boags breweries through to smaller but equally as pleasing contemporary craft beers, Tasmania’s beer and brewery scene is thriving .

Cascade Brewery

Cascade Brewery is one of the island’s largest breweries and is located at the base of Mount Wellington, Hobart. Situated in an iconic sandstone building, the brewery’s guided tour is a ‘must-do’ experience when visiting southern Tasmania — visitors learn the history of Australia’s oldest brewery, taste some of their most iconic beers and witness first-hand the brewery’s manufacturing process.

The grounds at the brewery also includes a private function centre, a retail outlet, a three acre heritage garden, a bar and café. Cascade also produces a variety of non-alcoholic products.

Established in 1832, Cascade is the oldest continually operating brewery in all of Australia. The history of Cascade varies from story to story but undeniably involves two legendary men: Hugh Macintosh and his brother-in-law Peter Degraves.

Ten years prior, Peter Degraves claimed the area at the base of Mount Wellington for his mill however two years later was imprisoned for unpaid debts to the Empire. Hugh Macintosh and his two nephews, Henry and Charles Degraves, began construction of the brewery in 1831 and opened operations the following year.

Shortly after opening, Hugh Macintosh passed away and Peter Degraves took all rights and ownership as soon as his prison sentence was terminated. The brewery flourished in the 1850’s due to the Victorian Gold Rush. The Cascades provided flour, timber and most importantly, beer to the miners which generated large profits for the Degraves family.

Cascade is a one of a kind brewery worldwide, as operates completely on its own maltings and produces malt for its own mainstream beers such as their Pale Ale and Premium Lager. A few exceptions do exist: for specialty malts (for dark and seasonal beers) the brewery imports malt from abroad and mainland Australia.

The brewery is open seven days a week from 10am to 4pm. Visitors of the Cascade Brewery tour must be 16 years old or older. Visitors get to hear the truths about the origins of the brewery on this tour and get to hear and see how over almost 2 centuries the Cascade Brewery has developed, prospered and provided beer to many.

Tickets are $25 AUD for adults and $20 AUD for students, which also includes three drink tickets per guest. The tours run twice a day, every day.

Boag’s Brewery

Also known as J.Boag & Son, Boag’s Brewery is the fourth largest brewery in all of Australia and is similar to Cascade Brewery in regards to popularity and size. The brewery is located next to the Esk River in Launceston which provides the pure Tasmanian water used to produce their beers.

Similar to the Cascade Brewery, Boag’s produces iconic Tasmanian draught and bottled beers using locally grown ingredients.

James Boag and his son, who also was named James, founded Boag’s Brewery in 1883. James Boag came to Australia with his wife, Janet and four children in 1853 for the Victorian Gold Rush. The brewery originally started off as the Cornwall Brewery , which transitioned to the Esk Brewery (for the nearby river), then later Boag’s Brewery as we know it today.

James Boag I passed away in 1890 and left management to his son James Boag II. He installed a new malt house and increased production greatly. James II also grew their staff immensely to steer their brewery on the path to success. He passed away in 1919 and was succeeded by his son, James III. Years later he was succeeded by his son, George Boag, who ultimately was the last Boag to work at Boag’s Brewery in 1976.

From the beginning the Boag’s took immense pride in their ingredients, water source, equipment and subsequently, their beer. They quickly grew a strong reputation for crafting extraordinary beers on a consistent basis. To this day they insist on only using the finest hops and barley, and only locally sourced Tasmanian water.

The brewery is currently owned by Lion Nathan Ltd., is a subsidiary of the Japanese Beverage Corporation, Kirin. Although owned by a Japanese company, every bottle and keg of beer from Boag’s Brewery is produced in Launceston, Tasmania.

The brewery is open seven days a week and offers guided tours followed by beer tasting for guests aged eighteen years and older. Tours start at 11am, 1pm and 3pm. The cost is $30 AUD per adult, $25 AUD for seniors and $15 AUD for children ages 5-18. Visitors touring the brewery have a chance to hear all the rich history of the brewery, and of course, to sample the product itself!

Visit Boags Brewery

Moo Brew is a microbrewery located in the suburb of Berriedale, twelve kilometres north of the city’s capital, Hobart.

Part of the Moorilla Estate, an Italian-Australian winery, Moo Brew is owned by David Walsh and is the site of the MONA (Museum of Old and New Art) Gallery. The estate often hosts live music and theatre productions at the site.

Visitors can enjoy a tasting at the Cellar Door, the Wine Bar, Museum Café, Void Bar or the Source Restaurant six days a week between 10am and 4pm at the MONA (closed Tuesdays).

Guided brewery tours start at 12:45pm every Friday and last for an hour. The price is $30 AUD per person, and tours are located an 11-minute car ride away at their Bridgewater location.

June 2005 was a big month for Moo Brew, as their first keg was sold! Five years after their first sale, Moo Brew expanded and opened up their second brewery at Bridgewater, Tasmania. Now all of the brewing happens at the Bridgewater site. They are a small microbrewery with a creative edge: their bottles feature exclusive artwork by Australian artist John Kelly.

Two Metre Tall Brewing Company

Two Metre Tall Brewing Company is a quaint farmhouse brewery located in Hayes, about 40 minutes north of Hobart.

Two Metre Tall is brewed on the Charlemont farm, located in the Derwent Valley. The area only averages about twenty inches of rain annually, which provides significant farming challenges. Owners Ashley and Jane Huntington pride themselves on sustainability and grow the hops and grains that go directly into their beer. They also raise their own Wagyu cattle.

The brewery is open every Friday from 12pm until 10pm and every Sunday from 12pm until 5pm. They are closed from May until July for the winter season.

IronHouse Brewery

The IronHouse Brewery is named after the first iron-clad roof house on the East Coast. The brewery opened in 2007, brewing all of their beers with naturally filtered spring water and all-natural ingredients. The talented team at IronHouse pride themselves on their full-flavoured craft beers.

IronHouse beers can be found throughout Tasmania, both in bottles and on tap. They brew over twenty different beers ranging from pale ale, to stout, to lager, to wheat beer.

Devils Brewery

Devils Brewery is one of Australia’s newest craft breweries, located in southern Tasmania. Owner, David Tottle, recently relocated from Sydney to Tasmania and turned his passion for home brewing into something more.

Devils Brewery offers exclusive beers with names to match. Kiss Me Hardy (an English style Pale Ale), RIPa (fruit and floral double hopped rye IPA), Smokey Moll and Tassie Pale Ale are just a few examples of their selection. They make small, limited-edition productions, on average just 600-1000 litres before moving on to their next flavour.

Seven Sheds Brewery

Seven Sheds is a microbrewery located in Railton, in the north west of the state. Owned and operated by Beer Bible author Willie Simpson, and beer enthusiast Catherine Stark, Seven Sheds produces Kentish Ale, seasonal beers and honey wines. They opened their doors in 2008 are also a meadery and hop garden.

The tasting room is open between Wednesday and Sunday from 11am – 5pm.

Brewery tours available at 12pm. Visitors must book and confirm tours at least 48 hours prior. The tour guides are well versed and visitors will learn about hops, barley and how beer is made, while sipping on a glass of Seven Sheds Beer.

Van Dieman Brewery

Van Dieman Brewery is a microbrewery located in White Hills, Tasmania. The brewery sits in the countryside amongst beautiful 100-year-old oak trees that are also displayed on Van Dieman’s labels.

Owner Will Tatchel came to Australia in 2006 after travelling and faced the choice of working for another brewery or starting his own. He chose the latter. He sticks with a British theme and you’ll often see his Mum, Dad and son lending a hand with the brewing process.

The Tasmanian Chilli Beer Company

The Tasmanian Chili Beer Company is located in Oyster Cove, Hobart and produces handcrafted non-alcoholic and alcoholic drinks. They are a locally owned, micro-brewery that only utilises organic and spray-free fruit, and locally sourced ingredients.

The brewery produces the Local Mule (alcoholic ginger beer), Spicy Mule (alcoholic ginger beer distilled with Tasmanian vodka), Red Devil (raspberry and vodka mix) among tasty others.

They have a stand at the Salamanca Market on Saturdays from 8:30am to 3pm right in scenic Hobart. Visitors should look for them near the Lion Gates of St. David’s Park.

Taverner’s Boutique Brewery

Taverner’s Brewery creates a distinctive, stand out range of honey mead Pale Ales, Ales, Strong Mead Ale, Honey Porter and delicious Dessert Honey Mead. These products have the ability to mellow out over time to their peak drinkability, typically 2-5 years after bottling, much like wine.

Taverner’s labels feature a Celtic design, which showcases both the origins of the products and the Irish/Cornish heritage of the maker.

Wineglass Bay Brewing

Wineglass Bay Brewing was established in 1996, founded by Claudio Radenti, a Freycinet Vineyard winemaker. They focused on creating ‘Hazards Ale’ beer, which is a remarkable unpasteurised, unfiltered, and preservative and additive free.

The company’s facilities are not open to the public but followers can purchase Wineglass Bay Hazards Ale at their location or via their website .

Cascade Brewery - best brewery tour in Hobart

The best brewery tour in Tasmania

Whilst several mainstream breweries exist here, I think the best brewery tour in Tasmania is at the Cascade Brewery.  Visiting the Cascade Brewery during our visit to Hobart was just too good an opportunity to miss.  Sampling the local beers is something we’ve become quite accustomed to, and learning more about the brewing process seems to lend some extra authority to the whole drinking process.  Well, that’s our story anyway and we’re sticking to it.

The Cascade Brewery is a short distance out of Hobart and is easily accessible if you have a car.  For once, we had kept ourselves car free, so on this occasion, the public bus was the best way of getting there.  The bonus of course in taking the bus is that we didn’t need to worry about a designated driver!  I’d actually go so far as recommending the bus option, unless you have a non drinker in your group, as this will allow you to take full advantage of the suite of Cascade products.

The first thing you will notice on approach to the brewery is the beautiful building.  Dating back to the early 1800’s, it remains the hub of beer production for the Cascade label.

The second thing you will notice is the stunning gardens that surround the buildings across from the brewery.

On a warm day, grabbing some food from inside the restaurant and sitting outside on these tables would be just perfect.  With the mountains in the background, and the Cascade buildings, it’s the best backdrop for a brunch or lunch.  On the day we were here, the wind was quite literally howling, hence why all tables were empty.

History of Cascade

On the front of the building, two dates intrigued us.  The first was 1824, the second 1927.  Before I had even commenced the tour, I had a question for the guide.  Whilst it is usual practice to see a year of origin on the front of a building, it is a different matter to see two dates.

1824 was the year in which the Cascade Brewing Co was formed.  In somewhat typical Australian fashion, it operated as a sawmilling business, despite its name.  Later in 1831, an English man, Peter Degraves, saw value in using the crisp clean waters flowing down from Mt Wellington and used it to brew beer.  The first beer under the Cascade Brewing Co label was produced in 1832, making this the oldest working brewery in Australia today.

To assist with more modern technology, three levels were further added to the brewery, in keeping with its heritage and style, in 1927.  This is where the second date on the building originated from.

A rough life

The brewery had its ups and downs over time.  With the death of Peter Degraves, his sons took over the ownership and later sold to private enterprise.

In 1967, a raging bushfire swept down Mt Wellington and through southern Tasmania, taking everything in its path, including the brewery.  Despite being extensively damaged, the owners vowed to rebuild, and with the help of the workers (none of whom had to be made redundant) and other Tasmanian brewing companies, Cascade was back on its feet in three months.

Today, Cascade is the premier brand in southern Tasmania.  Only some of its beer is exported out of Tasmania, meaning that a visit here (and to Tasmania) allows you to get a taste of a beer not readily found in the market.  It’s a shame in a way as the beers I loved the most are the ones I can’t get at home, but at the same time, it makes it a little special.  Despite higher demand, Cascade limits the production of its own brew and uses excess production capacity to produce for other labels including Matilda Bay (Fat Yak, Wild Yak etc)

Quirky fact

Did you know the X reference to beer relates to the alcoholic strength?  So, for example, a beer with one X is relatively low in strength as compared to one with XXXX.  This process of identification was all that was used before technology and improvements in science meant it could be measured more accurately.  Having been a Queenslander all my life, it was a little embarrassing to learn this is why our local beer called XXXX (Fourex) is so named.

An interesting work culture

Tasmanians love their beer and those who worked at the brewery loved it even more.  Right up until the early 1990s (if you can believe that !), workers were allowed to drink on the job.  In the very early years, workers drank as much as they liked all day.  As the years moved on and the brewery fell into more corporate ownership, the rules were modified.  However, with a workforce that was used to drinking all day, it wasn’t an easy change to make.

Today, stringent health and safety legislation prevents any of this from happening however free beers are still put on for the workers every Friday.

The brewery tour

If you love beer and are interested in the production process then this tour is for you.  With only an hour of your time required, it could be suggested that even if beer wasn’t your thing (but history and old buildings were), then this would still be a great tour to be part of.

Such is the demand for these tours, they are run every day (except Christmas Day and Good Friday), from 10 am until 5 pm.

The tour starts at the front of the building where a short history of the brewery is provided.  From there, the tour moves inside the building and through the various stages of production.  Upon completion of the tour, the group moves back across to the Visitor Centre for the final part of the tour, the tasting.

The tasting is generous.  I thought, pre-tour, that the tasting would see us standing at the bar having a few sips of beer from the draft taps.  Not so.  Each person receives a beer flight, containing four 7oz glasses of any beer or cider of your choice.  We mixed it up so that we could spread our taste buds across as many of their beers as possible.  The lager, draught and pale ale all came up trumps for me.

  • If seeing the brewery in full production is important, book the tours during the week.  On the weekend there is no production.  This does change the dynamic of the tour.
  • For reasons of workers’ privacy, the taking of photos is not permitted inside the brewery.
  • Wear shoes that are compatible with climbing industrial mesh stairs (large gaps in them).  Remember you are in a busy production area so leave your fancy shoes and high heels for another time.
  • Limit the wearing of flowing clothing and jewellery.  You will be asked to take jewellery off if you do wear it.  Secure lockers are provided for storage of such items.
  • The tour is not physically onerous although there are quite a few stairs.
  • It’s a good idea to book online, especially if you wish to secure a specific time slot.  Demand in peak time can be high.
  • Safety is the number one priority so ensure you understand all the safety rules and be in a position where you can hear the tour guide at all times.
  • If you want to hang around for a while in the bar, restaurant or gardens,  I recommend taking a tour earlier in the day.  Going late into the day pushes you closer to the restaurant and bar closing time.
  • Catch public transport out here.  It’s easy and everyone can have a drink if they wish without worrying about driving.
  • Tour attendees must be over 16 and over 18 for the tasting.

Restaurant and bar

Inside the restaurant, copper pipes reach from the floor up and over the bar, carrying the Cascade liquid gold to the glasses of patrons.  The bar and restaurant have been designed to let the outside in.  It’s a great way of seeing the chilly wind whip through the trees whilst being tucked up inside in the warm, drinking frosty beers.  Sounds like heaven, right?

I’m thinking I really need to get to Tasmania now! I love the history of this brewery, tragic that it burnt down in the fire but awesome to hear of the commitment to rebuild and not lose the original tour. I’m not a big beer drinker but I do love visiting breweries, fascinating process to go through. But i can’t believe that up until the 90s the staff were able to drink on the job! Crazy now when you think about health and safety standards. Great piece!

First off, the grounds and building are incredibly appealing! I am not a beer drinker myself, but I love tours such as this. I think the history behind the lace is as interesting as the product at the end. (That said, I am always up for a good tasting of almost anything!) What a long and interesting history for a brewery. The grounds look magnificent and I an sure add to the atmosphere of the historic place. So fortunate that the business was able to survive a wildfire and continue on to this day. Maybe it was motivation for workers to help rebuild knowing if they lost the brewery they would lose the only job they could ever drink at.

Good thing you took the bus with that much tastings available. I am not a fan of any beer, but I think the x would be my preference over the xxx (BTW-that was a really interesting fact). However, this is somewhere we would go as hubby loves a good beer and good beer tour. I would enjoy the ambience, but could still be the designated driver.

Love the trivia about the X’s! I’m definitely a 1X kind of beer-drinker. Funny, that XXX can mean something completely different too. Cascade looks very pretty and a great place for a beer tour. Sitting in the sunshine and enjoy some pints after the learning part – a day well spent I think.

The Cascade Brewery was established in 1824 by ex-convict Peter Degraves. Australia’s oldest continuously running brewery, it’s located in the foothills of Mount Wellington, five minutes' drive from Hobart's CBD. It is also a proud Tasmanian Brewery.

Cascade’s brewers combine traditional beer-making skills and pure mountain water with premium barley and hops to create a range of fine Tasmanian beers. This includes the multi-award winning Cascade Pale Ale and the seasonal First Harvest Ale.

The brewery’s two-hour tour is an essential for any beer enthusiast visiting Tasmania. It’s a look into every aspect of the beer-making process – from malting and brewing to packaging. While the tour involves plenty of stair climbing, your efforts will be rewarded by thirst-quenching free samples at the end.

The Cascades Visitors' Centre, once the brewery manager's house, is now a laid-back and light-filled bar and restaurant. Here you can sample the Cascade range and enjoy a meal by the atrium window, then wander through the picturesque gardens before browsing in the retail shop.

Cascade pale ale.

An Australian style Pale Ale, well-loved in our southernmost state for generations, Cascade Pale Ale is the oldest continuously brewed beer in the country. Hopped with Pride of Ringwood hops, it has a fragrant hoppy nose with a fine malt note in the mid-palate and a firm hop bitter finish. It uses our unique Cascade yeast.

Try matching with spicy grilled pork ribs with shredded apple & cabbage slaw. The refreshing and light malty palate contrasts the spiciness of the ribs, but also has the ability to complement the sweetness of the apple slaw.

Cascade Stout

Brewed in Australia's oldest operating brewery, Cascade Stout is brewed using all natural ingredients, the heroes being the rich roasted barley and Cascade's unique traditional yeast strain. This stout is a favourite amongst brewers at Cascade because of its toffee and caramel notes.

The roasted barley provides deep chocolate notes which are balanced with subtle sweet toffee and nutty roasted tones. Cascade Stout has a smooth and creamy body with a slight bitter lingering finish.

Try it with chocolate pudding served with cream. An alternative to port or dessert wine after dinner, the mocha notes of the stout contrast the sweetness of this decadent dessert and also cleanse the palate allowing you to have another delicious mouthful.

Cascade Draught

A classic Australian draught lager, recalled by many as the avour associated with the coming-of-age in Tasmania. Others might call it an old-school draught beer and drink it for a little of the retro-cool factor. A resinous hop aroma is backed up by the hint of caramelised malt and subtle fruity notes that create a traditional character. The bitterness is moderate and this beer nishes clean and refreshing.

Try it with flaky pastry Angus beef pie or a Shepherds pie topped with smooth, creamy mash.

Cascade Lager

A classic Australian lager, traditionally brewed with Australian hops, malt and yeast. Clean, sharp character, exhibiting good hop bitterness. Try it with a grilled beef patty, caramelised onion, vintage cheddar and tomato relish on a sourdough bun.

Cascade Premium Light

Cascade Premium Light is brewed using a combination of pale malt and roasted barley along with aroma and bittering hops to deliver a balanced combination of flavours at low alcohol (2.4%).

The soft, oral, herbal hop aroma and hint of roasted character follow through to the palate, delivering a full flavoured malty lager at reduced alcohol. The well rounded and moderately lingering bitterness provide a refreshing, clean finish.

Try it with grilled chipolatas, marinated olives, haloumi cheese and a side of crusty bread.

The James Boag Brewery Experience venue also incorporates a café, merchandise store and museum, giving visitors an insight into the Boag family and the development of the Boag brands throughout the last century. Shambles Brewery – Shambles was opened in 2016 by a couple of avid home brewers, following the ‘beer-life crisis’ of ex-science teacher, Cornel Ianculovici. Joined by his brother, Adrian, the pair brew a mixture of different styles in their converted warehouse premises on Hobart’s fringe.

T-Bone Brewing – Tom and Carla Bignell launched T-Bone Brewing in 2015. Tom was an avid home brewer and utilised his father’s award winning distillery, Belgrove when he was first getting started. The husband and wife team are now based on Elizabeth street, where they use recycled cooking oil to help power their brewery.

Hobart Brewing Co. – Hobart Brewing Co. opened the doors to it’s Red Shed on Macquarie Point in 2016. Founder, Brendan, was inspired after a trip to Belgium and was joined by brewer, Scott, who learned his trade in Colorado, before brewing for Moo Brew in Tasmania, then settling in at HBC. The venue, with it’s large outdoor area, plays host to lots of live gigs and some fantastic Dark Mofo activites.

Captain Bligh’s – Steve Brooks, the owner and brewer at Captain Bligh’s is fiercely passionate about independent Australian breweries. Fascinated by the history of Hobart and brewing in Tasmania, his brewpub is located on the site of the old Punshon’s Brewery, dated back to the 1830’s. Steve brews a wide mixture of styles and is also in the process of starting his own spirits brand with his son.

The Albert Brewery - Opened in Moonah in 2020. The Albert is dedicated to creating authentic Bavarian beer styles. Using classic techniques like open fermentation and decoction mashing their lagers are crisp and delicious. The brewhouse is a restored pilot set and looks like it was taken from the set of a Cold War era TV show!

Two Metre Tall - Run by Ashley and Jane Huntington in the Derwent Valley, Two Metres Tall are dedicated to the idea of terroir and true farmhouse ales. Having worked in the wine industry in Southern France, Head Brewer Ashley is passionate about where his ingredients come from and the way they are showcased. Jane keeps their Cellar Door running smoothly, where all Two Metre Tall brews are served by authentic British style beer pumps.

Spotty Dog  - Starting in 2015 with the launch of their Portland Pale Ale, Spotty Dog gypsy brew at a couple of different breweries around Hobart. Founders, Klimt and Domonie Donohoe and Michael and Marnie Rybak named the brewery after the two families pet Dalmatians. Best known for their West Coast IPA, the Cali Haze is another one to keep an eye out for.

Morrison Brewery - Morrison launched in Launceston in 2011, after brewer Paul received a lot of encouragement on the back of his successful home brewing skills. Morrison leans towards balanced beers and a quick look at their core range shows that they take a lot of their inspiration from the British Isles. Morrison have been a great supporter of brewing in Tasmania, helping lots of other brewers from KickSnare, Last Rites, Ocho and Devil's all get their start.

Tom McHugo's -  Tom McHugo's reopened on the site of the old Montgomery's hotel 2 years ago, when the landlords received an offer that was too good to refuse. Tom and Whitney bring their dedication to quality Tasmanian produce, utilising whole animals and lots of cuts of meat that don't usually feature on menus. Their rotating selection of vegetable dishes represents what's freshest from the small farmers around Hobart and they top it all off with a great selection of natural wine and an all Tasmanian beer selection.

The New Sydney   - The New Sydney is one of Hobart's best known pubs. With its Irish decor and giant fireplace, it's a popular spot on a Winter's night or a sunny afternoon. The best Guinness on tap to be had in Hobart features alongside a revolving selection of craft beers from around the country. One of the managers here taps his own beers under the Splendid Isolation label.
