Walking around See's Candies is without a doubt what I imagine heaven to look like. Everywhere you turn, there's candy! And every person you pass, without fail, smiles and says hello to you.

Granted, I was walking around with Dave Chapman, the factory's production coordinator who's been with the company for 30 years and is the nicest human ever, so that surely gave me a leg up. But, I suspect being around the scent of chocolate all day just makes you happier, you know?

And while the factory isn't open to the public, we got an inside look at how some of the most iconic See's Candies goodies are made, like crunchy Peanut Brittle and creamy Bon-Bons (they're hand-decorated with insane precision). Operations for the west coast brand are split between Northern and Southern California; in the massive Los Angeles factory we visited, chocolatiers crank out Molasses Chips, Toffee-Ettes, Scotchmallows, and other white, dark, and milk chocolate treats.

See's produces over a billion—yep, with a "b"—pieces of candy every year, and they've been making chocolate since 1921. Needless to say, they know what they're doing. You can order See's online (check out their seasonal Valentine's candies below!) or head to a store to taste-test a free sample, first.

While the flagship stores are located in San Francisco and Los Angeles, See's operates stores in 20 states and select airports around the country. Bold statement, but it's truly some of the best chocolate you'll ever try.

An Inside Look at the Beloved See’s Candies Factory in Los Angeles

See’s Candies , the iconic West Coast chocolate and candy brand, has been an American favorite since 1921. The first shop opened in Los Angeles and used Mary See’s one-of-a-kind recipes. There are now over 200 retail shops on the west coast, and when a new shop opens, there’s typically a line of anxious people wrapped around the building. 

See’s chocolate is melt-in-your-mouth delicious, and you can’t possibly go inside a See’s Candies shop without purchasing (or at least sampling) a few chocolates, but there’s more to this candy company than meets the taste buds. After taking an inside look—and eating one too many scotch kisses—during the See’s Candies factory tour in Culver City, there are more reasons than ever to love their sweets. 

The second you walk into any See’s Candies store, the sweet smell of fresh chocolate completely engulfs you…now, imagine that smell multiplied by 100. The See’s Candies factory is a chocolate lover’s dream—26 million pounds of candy is produced each year between the two Los Angeles and Bay Area factories. The first stop of the factory tour was the Bon Bon room, which is filled with employees making beloved See’s Bon Bons. Each piece is hand-dipped and hand-decorated—the patience and precision is unmatched! Scotch kisses (marshmallows wrapped and rolled in a thick, creamy caramel) are also produced in this room, and See’s marshmallows are made in-house.

The next part of the factory features a conveyor belt longer than a football field, which transports each piece of chocolate through a number of different steps. In fact, See’s employees who work at the start of the conveyor belt arrive to work 30 minutes before those who work at the end of the belt! The conveyor belt is filled with details that perfect each piece of delectable chocolate: a machine that coats each piece of chocolate not once but twice, a temperature gage to ensure the temperature of the chocolate is spot-on (so it won’t melt in your hand) and a moving curtain that whips a swirl design on top of the chocolate pieces. The chocolate is transported down this long belt, checked by employees and then placed directly in the box to be sent to stores! 

See’s uses top-shelf ingredients and no added preservatives in all of their products. This is why See’s products have a shorter shelf life compared to other candies and chocolates; other brands can stay on grocery shelves for years, whereas you can taste the quality and freshness of See’s from the first bite.

Production Coordinator Dave Chapman, who has worked at See’s Candies for 30 years and gave the factory tour, says, “ See’s Candies is a phenomenal company. People have worked here for generations; children and grandchildren have worked here and retired with See’s Candies.” See’s focuses on working with California partners and aims to stay true to their brand. Meeting Dave Chapman Production Coordinator at See’s Candy Corporate office in Los Angeles, I “robed up” in a white See’s Candy jacket and donned a blue hair bonnet before he escorted me into one of California’s most beloved chocolate and candy companies.

For over 28 years, Chapman has made sure that Mary See would be proud of her candy company. He told me: “We make the finest, freshest ingredients and still use Mary See’s recipes to make our delicious chocolates and candies.”

It’s almost been 100 years since Mary See started making candy back in 1921. Today the privately held company makes over 100 different chocolate candies and has 260 stand-alone iconic black-and-white checkered floor shops. What people love when walking into a See’s Candy Shop is receiving a complimentary candy as a welcome treat.

The first thing I noticed on this private tour (not open to the public) is how clean each room is in the facility.

One of the first areas we approached was the pre-coating machine that places the first chocolate coating on a bright white marshmallow to make Scotchmallow candies. “This facility is over a football field in length,” said Chapman. Their popular Scotchmallow candy is made with in-house honey marshmallow and vanilla caramel before being dipped in dark chocolate.

They also make Scotchkisses made with honey marshmallow and a lighter caramel. “Our honey is a buckwheat honey, we add a little orange and soft marshmallow,” said Chapman as he handed me one. While touching the center I noticed was soft it was when I pushed down. It’s hand-made, hand-dipped and then boxed.

The next candy station had a group of ladies hand topping chopped almonds on solid medallions of Victoria Toffee. It reminded me of the iconic I Love Lucy episode where Lucy and Ethel go to work in a candy factory while Ricky and Fred do their housework. “Lucille Ball and Vivian Vance trained here before filming that chocolate factory episode,” Chapman told me.

Watching how fast the See’s candy makers make and package the nut topped toffee, I was joined by two other See’s employees, Kelly and Jensen DeWees, See’s Candies Marketing Director, who told me, “You are in luck, the public doesn’t get to see Victoria Toffee get made.” It’s a big slab of buttery, crunchy toffee that is coated with milk chocolate and hand dipped in roasted chopped almonds. “It’s an original from Mary See’s recipe book,” said Julia. “The candy makers package this candy in one solid piece to ensure freshness. It’s traditionally available only during the Christmas holidays.”

Chapman told us that chocolate is the most expensive ingredient in the candy, so they make sure none of the dark liquid stored in 80,000 pound tanks goes to waste. A blower takes the excess chocolate off the candy and it drips down in wells; then it’s piped and recirculated to be reused.

See’s chocolate is perfectly tempered so it won’t immediately melt in your hand. They have a Chocolate Tempered meter to make sure the chocolate will have the proper gloss and shine.

Dave pointed to a flexible material that has cut-outs on it to touch the coated candy and give it a decorative design or swirl on top. He also showed me the state-of-the-art metal detector that every candy piece must goes through to make sure it’s safe. “We take pride that our chocolate candies don’t have shells or pieces of material that could cause someone to send us their dentist bill,” said Chapman.

Ready to sample some candy, Dave put on his blue sterilized gloves and grabbed a few pieces from boxes and trays. He even reached over and took a few chocolates just leaving the conveyor belt, “This is about as fresh as you can get,” said Chapman. Biting into a freshly made Scotchmallow, I did notice that it had a softer mouthfeel than when I purchase this candy at a See’s store. Dave even found one that was a connected twin. “This is a lucky chocolate. We can’t sell this to the public.”

Over at the Dark Almond candy conveyor belt station, Chapman said, “This chocolate is made with just two ingredients – dark chocolate and roasted almonds.” When I asked where See’s got their chocolate, he said, “Guittard Chocolate in San Francisco. It’s a company that has been in business since 1868. We buy exclusively from Guittard. They make the chocolate to our specifications and age it, just like wine, to acquire our specific taste profile.

Going into the Bon-Bon room, we learned that 17 years ago CEO Charles Huggins (1972-2005) and Warren Buffett invested a lot of money to make this See’s Factory into a first class operation. Buffett wrote that there were two reasons for See’s sustained success: “people and product.”

In this room I met Juani, who has worked at See’s since 1975. Her mother worked here. too, as have other of her family members. She is an expert on making the Maple Pecan Bon-Bon. Working at a golden cauldron, she stirs the coating often, while dipping a maple center with a special metal spoon into the smooth coating. Next, she places half a pecan on top and creates a beautiful swirl. “We make five different types of Bon-Bons,” said Chapman and Juani. In addition to the maple, they make apricot, orange, coconut and a Tipperary Bon-Bon, made with vanilla caramel with chopped pecans.

Another employee named Wilma walked passed us as we were stopped in the hallway near big red heart boxes. She has been working at See’s for 25 years. “Did you know you can buy a custom made heart-shape box filled with chocolates all year round? It’s not just for Valentine’s Day,” Chapman said.

There is someone at the Candy facility 24/7. At 3 a.m. the supervisors come in and get the stations ready for the candy makers. The first shift is 5 a.m. to 1:30 p.m. The second shift is from 2 p.m. to 10:30 p.m. Then sanitation comes in and makes sure the areas are sparkling clean for the next morning.

For the upcoming holidays visit See’s Candies for their colorful seasonal treats. They offer a Thanksgiving dessert in a fancy box full of rich, creamy truffles in Apple Pie, Cranberry Orange, Pecan Pie and Pumpkin Pie in two bites. They also sell pumpkin spice lollipops, milk chocolate turkeys and pretty foil wrapped chocolate leaves. All are ideal hostess gifts, especially with the Sweet Harvest porcelain Candy Dish.

Candy From the Heart: Inside the See's Candies Factory Ahead of Valentine's Day

The 99-year-old candy company makes its once-a-year chocolate hearts in only one factory, right here in the bay area, using locally-sourced ingredients, by jonathan bloom • published february 13, 2020, what to know.

Although there are no oompa loompas, rivers of chocolate or everlasting gobstoppers inside the See's Candies factory in South San Francisco, it's still a place filled with mysterious magic.

Much like Willy Wonka's fabled chocolate factory, See's rarely offers tours to the public. But as the company prepares to celebrate its 100th anniversary, it doled out a small handful of "golden tickets" to reporters, and we were among the lucky few.

Our tour happened a few weeks ahead of See's busiest day of the year: the day before Valentine's Day. With laser precision, robotic cookie cutters that normally stamp out circles and rectangles were cranking out hearts — small ones and big ones — as confectioners wheeled out giant tubs of their secret-recipe candy fillings from the two massive kitchens.

Our tour guide wasn't Mr. Wonka, but he was the next best thing. Bob McIntyre has been See's production manager for 23 years. He's always smiling, and knows the names of every belt, wheel and roller in the whirring stainless steel machines that methodically slather chocolate on top of concoctions of nuts, cream and sugar, coating them in a shiny, flawless shell that snaps when you bite into it.

"This right here is called a licking roller," McIntyre said with a chuckle, pointing to a device that layers chocolate onto the bottom of See's newest creation, a dark chocolate peanut butter heart.

In a room that could easily swallow two football fields, candies pass through solid curtains of molten chocolate, then chilled tunnels that solidify the coating, and then more chocolate, pumped out of 50,000-pound tanks. The delicious smell of that chocolate — delivered by tanker truck from chocolate maker Guittard in Burlingame — finds its way into every nook and cranny of the facility, and even wafts into the office spaces upstairs.

Walking past the final cooling tunnel, McIntyre called our attention to a stack of cardboard rectangles at the end of the production line.

"The only purpose of this (cardboard sheet) is to be able to pick the candy up off the belt and put it in a box," he said with a knowing grin. "Remember the 'I Love Lucy' episode?"

In what's been deemed one of the funniest moments in television history, Lucy is seen frantically trying to pick up and package individual candies as they pour onto a racing conveyor belt — stuffing them into her hat, her uniform and even her mouth. By allowing employees to lift up a dozen candies at a time, McIntyre said, those simple pieces of cardboard can prevent that hilarious food safety disaster.

A lot has changed since the days of "I Love Lucy," but one thing hasn't: See's hand-dipped bonbons.

"This goes back to the days of the 1920s," McIntyre said. "And this is how we used to make all our candies — they were hand-rolled."

In a quiet room adjacent to the bustling factory floor, half a dozen employees — most with decades of experience — are busy tossing small lumps of candy, one at a time, into colorful pots of warm fondant. With a flick of the wrist, they retrieve the candy with a curved utensil, set it on a tray, and draw a design on top with the excess fondant — all in one swift motion. Within seconds, the candy hardens.

Each candy has its own unique design on top, McIntyre said.

"The pink one has an 'S' for See's," he said, and added, "This is really an art form."

Founded in 1921 in Los Angeles with Mary See's candy recipes, See's Candies is now based in South San Francisco, with over 200 retail stores across the U.S. and Asia.

Mayordomo Chocolate Factory

More a market than a manufacturing plant, Mayordomo produces southern Mexico’s most celebrated confection, which comes from the Mayan word cacahuaquchitl (flower of cacao). The informal tour describes Mayordomo’s 1956 origin as a family business, and lets you see how the cocoa beans are ground, then mixed with spices and hot water to turn into a rich cup of hot chocolate.

Mast Brothers Chocolate

Mast Brothers is a bean-to-bar Brooklyn shop—which means guests who get to take its factory tours get to see the whole process, from the sifting of 150-pound bags of beans (sourced from Belize, Papua New Guinea, the Dominican Republic, and Madagascar) all the way to the creation of finished bars. If you can, visit this family-owned estate on a buying day; you'll watch as cocoa beans are weighed and farmers inspect them for purchase. On other days, you can see how machines ferment and dry the beans, plus check out the factory's traditional bean-polishing method. The final treat: a cup of cocoa-tea, a local favorite.

Jacques Torres Chocolate

You can't step inside the factory, but at Mr. Chocolate's Hudson Street store you can get a sneak peek of the day’s production through an enormous glass window. Watch the white-apron-clad staff bake cookies, roast cocoa beans, and mold chocolate; if you’re lucky, you'll see Jacques in the kitchen overseeing the day’s work flow. Tip: The best times to visit are Tuesday through Saturday between 10am and 5pm.

See's Candy is one of Los Angeles' sweetest institutions, serving up treats made locally since 1921. The company prides itself on sourcing as many of its ingredients as possible from California, making many candies--including recipes created by the store's real namesake, Mary See--by hand, and employing a loyal workforce who stick with the company year after year.

But those are cold details in comparison to the chocolatey, creamy, warm, sweet reality of being lucky enough to step inside the doors of the See's L.A. factory--a treat most don't get to enjoy, except vicariously through tales like ours of a visit to where the magic, and hard work, happens.

The unmistakable scent of melting butter permeates the first steps into the factory, which branches off into several areas with intriguing names, like the "enrobing room" and the "cream tables." There's something going on every hour of the day inside the longstanding facility on La Cienega, from cleaning and maintenance to the sweet business of making a significant chunk of the 92-year-old company's line of chocolates and candies.

Comparisons to Wonka's dreamy Chocolate Factory aren't remiss; there are indeed wide pipes of liquid chocolate you can picture getting sucked into, Augustus Gloop-style, after a gluttonous episode of filling your face at your own peril. Of course, in your hairnet and white lab coat with your gloved escorts, there isn't a chance of this happening.

Large tanks outside keep the factory pumped with Guittard milk and dark chocolate, and, of course, sugar. Inside are highly-skilled candy makers, many of whom have been working at See's for more than 35 years, and many who are related to each other. One smiling woman on the line is radiant in her pink lipstick, cracking quips, and standing on two replaced hips as she monitors golden squares of butterchew sliding past her; you'd never guess she was in her 80s.

The enrobing room is the length of a football field, where workers supervise and intervene manually as belts of goodies are systematically cooled and coated in creamy chocolate that oozes at a highly regulated rate and temperature atop the bare insides of things like peppermint patties and squares of California brittle.

The chocolate never stops pumping, and what doesn't blanket that morsel you pluck from a box isn't wasted, it's held and pumped back in. In fact, waste is astonishingly minimal here; a machine shakes chocolate off nuts so both ingredients can find new homes in new treats, and excess trimmed from shining slender bars of their delicious butterchew and their seasonal hand-molded Easter eggs get worked right into the next batch. The skill and artistry of their handiwork is awe-inspiring. Just watch one of a half-dozen smiling women turn out a stream of hot pink icing rosettes with what seems like mere wrist flicks all while holding a conversation with you and you will understand.

The folks at See's have gotten their candy-making down to a science after doing it for 90 years. In fact, there's even a full on science lab upstairs, where chemists test incoming product to ensure continuity, quality and safety.

But even on the second floor, that age old promise to "quality without compromise" doesn't overshadow the pure joy of being inside a chocolate factory. It's firmly encouraged to think back to that beloved 1952 episode of "I Love Lucy" that found Lucille Ball and Vivian Vance "Job Switching" their way into mishaps at a candy factory. Ball and Vance in fact spent the day at the See's Factory, researching candy making and box filling in order to re-create them accurately--with some comedic license--with hilarity back at the studio.

You won't want to pelt the women who still hand-dip the bon bons with a fist full of creamy chocolate--or maple or lemon, as the case may be, like Lucy Ricardo did, should you see them swiftly dunk the filling into the vat and in an astonishing motion fish it out, top it with a perfect piece of pecan, then adorn it with a graceful swirl. The only thing better is eating one...or more.

While you may never make it behind the scenes yourself at See's in L.A. or at their other factory in San Francisco (tours, alas, are not open to the public) you can get your candy online or at the many See's locations around the state and nation. Angelenos just got really lucky, thanks to a rare new store opening in the city that's home to See's, with a new black-and-white shop at The Grove . There's candy enough for every one...but we don't blame you if you end up in a chocolate fight.

Seattle’s Newest and Sweetest Attraction: Seattle Chocolates Factory Tour

This is going to be a super sweet experience for the whole family. Seattle Chocolates celebrates its 25th anniversary and you are invited to take a look behind the scenes of the factory. Get to see how chocolate is made and what’s involved in the whole process. This is the newest adventure you can go on in Seattle. Since January 2017 the Seattle Chocolates Company has now an hour-long tour through the factory.

The Experience Chocolate Tour starts in a classroom where you will get to know more about the history of chocolate and the basics of how to make chocolate. Lesson learned and now you get to see the cool stuff, well let’s call it the sweet stuff! But before you go inside the factory, you will get a nice fashion accessory and you get to keep it for free – a stylish hairnet for the modern Seattle Chocolates Tour visitor!

Kandise was my tour guide for the Saturday afternoon tour. After the classroom, where I got my first taste of chocolate, we headed into the factory and up the stairs on the elevated pink walkway. Don’t worry if you are handicapped, they will have a special tour for you but let them know ahead of time.

Throughout your tour, you will meet Carle from Germany and Aasted from Denmark, the two main machines used here to produce the fine premium chocolate. You get to know more details about them on the tour.

The highlight comes after you did the walk through the factory. In the tasting room, you get to taste different chocolate flavors produced all here. This is probably a highlight for the younger once on the tour.

I learned a lot about chocolate during my visit here. I used to look at chocolate different before. We all take chocolate for granted but there are regions in the world and even this country, where people have to starve. That’s why Seattle Chocolates is giving back: One purchase = One Serving  and #chocolategives .

Seattle Chocolates is known to use honest ingredients for their premium chocolate is part of the Rainforest Alliance, which helps to protect the planet and giving back to the families harvesting the chocolate. The entire chocolate line is certified Kosher and a variety of chocolates are also gluten-free and vegan.

Unfortunately, cameras and cell-phones, as all other personal items are not allowed inside the factory. You will be provided with a locker to store your belongings until after the tour. Also, children under the age of 6 are not allowed on the tour.

The tours run from Monday to Saturday from 10 a.m. until 3 p.m. and cost $10. It’s best to visit during the week to see the factory during production. You are also invited to put a truffle on the “Truffle Wall”, the beautiful and sweet counterpart to the Seattle Gum Wall .

Who couldn’t love the idea of a chocolate factory tour??!! That amazing smell of chocolate permeating everything in the building. Oompa Loompas singing as they work (ok, that’s just me dreaming). Being unleashed with chocolate samples to eat to your hearts content (still me dreaming – sigh).

BUT – there are many aspects of touring the Seattle Chocolate company’s factory that are to love, especially if you’re a chocoholic.

Before I tell you more details about the tour, here’s all of your basic questions answered;

 How much does a tour cost?

Tours cost $12 per adult, or $10 per child (between 6 and 12), plus taxes and fees.

How long does the tour take?

The tour takes about an hour, to an hour and a half. The first tour of the day starts at 10am.

Do I need a vaccine pass?

Yes, you’ll need to show your proof of vaccination, and wear a mask throughout the tour.

What do I see, do and get to sample on the tour?

Imagine the sensation as a liquid chocolate bar flows down your throat, the dark richness of it coating the inside of your mouth with a delicious warmth. Nom nom.

THIS is exactly the way this tour starts, and I must say it’s a mighty fine way to begin. When you begin your tour, you’re ushered into a tasting room, where you’re given a delicious melted chocolate to drink. Have I said nom nom yet?? As you devour your melted chocolate, you’ll watch a video that shares the story of the Seattle Chocolate company. This includes where their cacao beans come from, who owns it (Jean Thompson), how they’re harvested, and the process of turning them into the chocolate bars and truffles that the Seattle Chocolate company sell.

Ethical chocolate

Like Theo, the origin and stewardship of their cacao beans is important to them. It was great to see that they are part of the Rainforest Alliance in West Africa and Peru. Additionally, a portion of the proceeds goes back to local charities to feed the hungry in the community. Big tick Seattle Chocolate. All of this costs money, which is why your Seattle Chocolate will cost a little more than the chocolate you’d normally be buying at the supermarket.

Once the video is finished you’ll head into the factory. No cell phones, handbags etc are allowed on this part (they’re all securely stowed for you). You’ll climb up stairs onto an overhead walkway that enables you to look down on all sides of the factory. Making, processing and packing on one side, and stores of chocolate on the other. It’s great to see how the production line works. Depending on what they’re making that day, you might see bars being made, truffles being filled, chocolates being wrapped and packed, or gift baskets being put together. It’s fascinating to watch from above, and you can may even get a smile and wave from one of the workers. It was surprising how many parts of this process were done by hand. I found this part of the tour fabulous, and a step above what I saw on the Theo Chocolate Factory tour.

After the tour, it’s back into the tasting room, to try some more samples. How this is done is quite unique (I won’t spoil it for you). However, I was a little disappointed that you couldn’t choose what you wanted to try, as for me, one of the great things with a tour, is to be able to try the chocolates you think you’ll like, before you purchase. At the conclusion of the tour, you’re given a 10% discount voucher to use in the shop (if you so wish!). Personally, I thought 10% was a little miserly, especially if you compare it to the deals at the Theo shop .

BUT, the shop does have a great range of truffles that you can buy per flavour, which I loved. I’m definitely a truffle kinda gal, and loved being able to purchase my favourites, and only my favourites. The Seattle Chocolate company has a great range of both truffles, and chocolate bars, so there’ll be sure to be something in the shop to tempt everyone. There’s also a range of complementing souvenirs, including wine!

In fact, one of things they do that I really love, is their chocolate bar packaging. These are designed in collaboration with several artists, including Seattle locals. Just like the chocolates, the wrappers are designed to capture the spirit of the Pacific Northwest. As an example, the Hiker’s Trail Mix bar is designed to embody and complement the outdoorsy lifestyle available in abundance in Seattle. It’s filled with raisins, peanuts and roasted sunflower seeds. Perfect to pop in the backpack on one of those famous Seattle hikes me thinks! This uniquely PNW wrapping also makes these the perfect ‘omiyage’ – souvenirs to take home.  Now, if you can’t make the tour, you can still get your fix of delicious Seattle chocolates through the delightful experience of online shopping.

All in all, I really enjoyed the tour – I’m sure there’s not a chocolate tour I wouldn’t enjoy, let’s be real! It did however, make me appreciate the Theo tour a little more. As with anything, they both had really good points, and things that could be improved. I really think you need to try them both to make up your own mind on them!

It’s definitely a unique thing to do in Seattle, that I’m sure you’ll all be talking about it later, as you munch your way through your purchases.

I’m not sure how true this is, but I have heard that Friday is often a day without production, so if you’re thinking about going on a Friday, and seeing the factory itself working is important to you, it may be worth phoning and checking.

AND, I’ve also heard that on Saturdays, they bring out bags of ‘seconds’ for sale at fab prices in the shop!
