Truffle hunting experience in Istria

Join us for fun, educational and unforgettable truffle hunting experience. You will learn more about this precious mushroom, dog training and overall tradition of truffle hunting in Istria. Then we will go to the woods in search of truffles with our two dogs and will be looking for truffles in our family forest where 3 generations have been going hunting and searching for this underground treasure for years. After coming back from the woods, we will together prepare full truffle lunch with your freshly found truffles! With the help of mama Prodan, you will learn all the tips and tricks on how to make perfect scrambled eggs with truffles. There will even be a desert with truffles. That is what we call complete truffle experience!

This was not a tourist trap experience like we heard others had. We got to learn about the family, the land, and most importantly: the dogs!!! Lila was a phenomenal truffle hunter and we found at least 5 truffles. This wasn’t a hide and seek situation that they set up, it was truly a real and immersive experience. We then had a lovely lunch made for us that included plenty of wine and all things truffle! If you’re on the fence, book it! Did I mention they have a puppy? Why go truffle hunting and tasting in Istria? 

Most of the ‘ fresh truffles ’ served at restaurants around the world are ‘ previously frozen truffles ’ because truffles only have at most 10 days shelf life after being dug out of the ground. The aroma and taste from truly fresh, 30 minutes out of the ground, truffles is unparalleled . And you can only get that from going truffle hunting and cook it right afterwards . Istria, Croatia is undoubtedly the most accessible place in the world for such truffle hunting and fresh truffle tasting adventure, a 10/10 Sensational + Well experience. 

White truffles grow wild in Istria, Croatia too

White truffles are much more expensive than black truffles, for their aroma, rarity, and the shorter shelf life. While black truffles grow naturally in many regions, white truffles are very hard to find.  

White truffles (Tuber Magnatum Pico) are mainly found in the forests of the Piedmont , Tuscany and Umbria in Italy . It’s commonly known as “Piedmont Truffle” or the “ Alba White Truffle” or “Italian White Truffle”, but white truffles naturally grow in Istria too. 

Where are truffles found in Istria?

The first truffle in Istria was first found by an Italian truffle hunter near Livade unintentionally while he’s on vacation with his truffle hunting dog in Istria in 1925. In the 1930s, first truffle hunting businesses were established, and Istrians under Yugoslavia rule traded truffles with Italians for Italian food. 

Motovun Forest is where the truffles, especially white truffles are found in Istria, for its unique and perfect habitat for truffles. The forest spans across the central part of the northern region of Istria. Movotun , Livade , Buzet are the three main truffle towns along the Forest. You’ll find truffle producers and truffle shops in these towns. 

Truffle hunting is the most accessible in Istria

Truffle hunting in Italy can be very challenging and expensive. Truffle hunting in Istria, however, is easily accessible and half the price or less than in Italy . And as long as you go in season, the hunting dogs usually find truffles. 

Some Istrians living around the Motovun Forest have their own truffle hunting dogs for personal use. 

Truffle hunting tours in Istria, Croatia

While there are very small companies or side businesses offering truffle hunting tours, midsize to large companies (large for Istria) tend to be more responsive for booking, and may offer a more robust and reliable hunting experience as they may have more generational knowledge and backup solutions. 

How much is truffle hunting in Istria? 

The truffle hunting tours are around 90 Euros per person (2023) including a cooking and tasting experience after the hunt. You may also find truffle hunting only tours for about 50 Euros. 

The best truffle hunting tours in Istria: 

Pietro&Pietro (Natura Tartufi) in Buzet

You will spend a good two hours in secret spots in the forest hunting for truffles. The family business started in the 1930s. They have a more upscale touch but surprisingly better pricing. Pietro&Pietro shop is the meeting point for the truffle hunting tour. 

Miro Tartufi in Motovun

Miro also has a piece of land where he inoculated the young roots with truffle mycorrhizal fungi spores more than a decade a ago. He takes tours there for demonstration purposes. Miro started his truffle business in 1990s. Miro Tartufi shop is the meeting point for the truffle hunting tour.

Karlić Tartufi in Buzet

Karlić family truffle business started in 1966 and the business expanded in the 90s. Karlić Tartufi is very committed and does well promoting their tours and products. Karlić Tartufi shop is the meeting point for the truffle hunting tour.

These truffle hunting dogs are not born with specific hunting capabilities and are not purebred. Obviously they need to have the right build for the job, and the owners will training them every single day for years. On the truffle hunting tour, you’ll be able to see how the guide trains a hunting dog in training to learn from an experienced one.  

Truffle digging is a delicate job

The hunting dogs sniff and dig for you first, but towards the end, the guide will need to dig and grab the truffle before the dogs eat it. They know it’s delicious too. 

The cooking and preparation that brings the most out of truffle

Low heat cooking actually brings the most flavor out of truffles . The truffle shaving you see at restaurants is just for show. You will learn how to best cook truffle, typically truffle omelette, and how to put together dishes using truffle products. 

When is truffle season in Istria?

The prime truffle season is fall , from September to November , when you can taste both fresh autumn black truffle (Tuber Uncinatum) and white truffle (Tuber Magnatum Pico) . The truffle festival “ Zigante Truffle Days ” is every weekend in October in Livade . Be aware that this is also the busiest season in Istria. The shops will be crowded and you won’t be able to have a free tasting at your own pace. 

May to August is the season for black summer truffle (Tuber Aestivum Vittadini) , which is the mildest . December to March is the season for black winter truffle (Tuber Melanosporum Vittadini) , which is more intense than summer and autumn black truffles. 

Pro tips in buying truffle products 

Here is the reality check: the best truffles are sold fresh for the best profitability. The unsold fresh truffles, usually smaller or less mature, are used to make truffle products. But these truffle products made in Istria are generally more genuine or better quality than those made in Italy, and cheaper . 

Buy truffle products from Istrian truffle producers with processing facilities

You can easily find black truffle slices preserved in a jar of olive oil in truffle regions in Europe. The mid-price ones we bought in Tuscany have artificial flavoring in it to enhance the flavor from lower quality truffle, whereas the ones in Istria don’t.

Pietro&Pietro (Natura Tartufi) , Zigante Tarfufi , and Karlić Tartufi process and produce local Istrian truffle products . These are the big trusted brands. When buying from smaller shops or brands, ask them if the products are made in Istria because otherwise Croatia export fresh truffles to Italy and import truffle products from Italy . 

The truffle oil myth

Many chefs will tell you don’t buy truffle oil because it is oil with artificial truffle flavoring and not made from truffle at all. This is true for most truffle oil products around the world. In Istria, it’s possible to find truffle oil made with olive oil and natural truffle flavoring , meaning an extract from truffle is used. Besides, Istrian olive oil is superb. When in Istria, ask the producer which is used for their truffle oil.

Alex spent time in his early years working with top wine merchants and restaurants in Napa Valley and New York City. Inspired by his culinary work abroad, he returned home committed to showcasing the high-quality produce of his native Istria. A licensed guide of greater Istria, Alex is also a trained wine sommelier and an expert in olive oil and truffle tasting. Truffles are an important part of the culture and cuisine of Istria and Alex loves how they connect him to nature and to his ancestors. In the foothills of Motovun, a beautiful village atop a hill in Istria, learn about truffle hunting and tasting and some of the region’s many exceptional food products.

What to expect

Food tour: (4-20 guests) Your host Alex will pick you up from your hotel on the western coast of Istria and drive you one hour to Livade, where your truffle experience takes place. Your experience will take place during a truffle fair weekend, one of 10 special weekends organized annually by the region. Start off your experience with a group truffle hunt! Head into the woods to go truffle hunting with Alex, truffle hunting dogs and a truffle master. An electric train will take you closer to the truffle hunting region, a few miles into the woods. Walk through the woods, following the lead of the dogs under oak, elm and poplar trees to uncover truffles found in the rich soil of this Istrian region. While the truffle hunting experience organized for the fair is open to other travelers who may also be present during the hunt, Alex will be your private truffle and tour guide. Your hunt may last up to an hour as you watch how truffles are collected and learn about the different types of truffles found in this region. Return to the fair and share a truffle-inspired lunch with Alex at a local restaurant. Choose between homemade pasta with black truffles or a truffle burger that you can enjoy over a glass of wine. After lunch, Alex will help you explore the fair where you can taste and sample some of the region’s best products, from white and black truffle-infused products, to cheese, to world famous olive oils. In addition to the food samples, you will be provided a glass to taste some of the many wines produced in the area. End your visit with a short trip to a local honey producer where you will get to taste some spectacular Istrian honey. Around 4pm, you will depart for your hotel.

Croatian cuisine is based on fresh local produce and seasonal availability, and many restaurant chefs pick herbs and vegetables just before preparation, but there is surely no experience quite like hunting truffles for dinner! Try your hand at foraging with the Kotiga family and their specially trained truffle-hunting dogs in the beautiful forests and nature of Istria. If not to find the treasure, it is the unique chance to enjoy time engaging with the locals in the pretty surroundings of the famous truffle-filled Istrian forests!

The theory of truffle hunting and the stories behind delicacies produced of various truffles that grow in the area can be as entertaining as the hunt itself and are surely necessary to put things into perspective before embarking into the forests.

You will then join the Kotiga family and their specially trained dogs, and head downhill through the steep forests to try your luck with the valuable black and precious white truffles. After all, this is the region where the largest white truffle in the world was discovered! Your efforts and earned appetite will be rewarded by a hearty lunch prepared exclusively for Secret Dalmatia guests, with a tasting of local truffle delicacies including different types of cheese, truffle honey, pâté and even truffle biscuits.

The truffle, or tartufi as they call it in Croatia, is a unique underground mushroom with potato-like shape, and is considered the highlight of Istrian cuisine. Known for the highest quality of truffles – especially the white truffle, the Istrian variety often rivals those of Alba and Piedmont regions in Italy. The fine white truffle is the most valued, and grows from September until January and is best enjoyed freshly shaved over pasta, meat or fish. The 1.31 kg white truffle found in the forest around Motovun in 1999 was the world’s heaviest truffle in the world for a while, but the current title holder from Umbria, discovered in 2014, makes its seem small with its 1.890kg.

Start with a scenic drive to Paladini, a small village hidden in inland Istria. Upon arrival at the estate, meet the Karlic Family who has been hunting for truffles for generations. Your friendly hosts will tell you all about truffles, the tradition of truffle hunting, and their truffle hunting dogs. Taste delicious truffle products all prepared by the family, including Istrian cheese, sausages, pate, honey and olive oil. The highlight of your tasting experience is a live interactive presentation of making famous Istrian "fritaja" scrambled eggs with truffles.

After tasting, your hosts will take you to a truffle hunt in their own woods where they grow and harvest black truffles. Both white and black truffles found in the area are considered to be among the best quality truffles in Istria. The thrill and excitement that you will experience together during the truffle hunting will have you understand why truffles are their love and their way of life.

 Cycling and truffle hunting in Istria

Experience the beautiful Croatian countryside and partake in the local tradition of truffle hunting in Istria on this exciting cycling tour . The trip is perfect for those looking to explore inland Istria in a fun and active way while also getting a taste of the local way of life .

We’ll have the chance to cycle through the forests surrounding the picturesque town of Motovun and take in views of Istria’s medieval hilltop villages, vineyards, olive groves and meadows dotting the rolling hills and valleys.

The trip also includes a genuine truffle hunting experience near Motovun. With the help of a local truffle hunter and trained dogs, we will learn about the art of finding truffles and the history of this delicacy. At the end of the trip, you’ll get to enjoy a light lunch with truffle products and other local specialties.

Please note that we use several different bike routes depending on group preferences and abilities. The start time and order of the itinerary may vary depending on the weather conditions and recommendations from the local truffle hunters.

CANCELLATIONS:

In the case of extreme weather conditions, Terra Magica Adventures will reschedule the activity for a day or two prior to or after the date booked, if possible. If the change is not possible, payments will be refunded in full.

• 2-7 days prior to arrival – 50%

Your guide will meet you at your hotel and bring you with the metro (or a military van as option) to a professional shooting range , located 3 stores underground in an old Soviet beer factory. In this historic and secured environment, you will fire off a selection of iconic Russian weapons  under supervision of a professional instructor .

At the end of the rampage, you’ll get to keep your target with you as a proof of your great success! 🙂

2) The Kalashnikov AK-47 – Legendary Russian military weapon, in service 1949-1974. Its powerful 7.62×39 rounds will shake your foundations.

3)  The Dragunov sniper rifle  – Still in service today for more than 50 years, this semi-automatic rifle can hit a target 1,3km away! With its 7.62×54 rounds, every trigger pull will deliver you a nice adrenaline shot!

It will be an authentic UAZ 452, a model first built in the 50’s to transport men and military equipment down the snowy or muddy Siberian roads. Thanks to its simplicity and robustness, it is still in service today as ambulances! Ours are fully decorated to reproduce the Soviet atmosphere , equipped with sound systems and even featuring a souvenirs kiosk onboard !
