Details of Cruise Liner Chef Jobs

Cruise Ship Executive Chef: The executive chef on a cruise liner is responsible for the administration aspects and cooking of all the meals. The executive chef is the person in charge of the kitchen and all the other chefs and kitchen staff.

Cruise Ship Sous Chef: The sous chef is the second in command of the kitchen and will work closely with the executive chef. The sous chef will make sure that all the food going out to the guests is of the best standard, and also prepare food as delegated by the executive chef.

Cruise Ship Chef de Partie: The chef de partie is in charge of preparing the gourmet cuisine and sauces. This is a specialty position and requires creativity and expert knowledge on international cuisine.

Cruise Ship Baker: The baker supervisor must make all of the bread and other baked goods that are required by the restaurants, galley, and shops for the duration of the journey. The baker will also need to keep an accurate record of all the ingredients and stock needed and used.

Cruise Ship Food and Beverage Manager: This position is one of the most important on the ship. The food and beverage manager is responsible for all of the areas that deal with food and beverage, and will manage the stocks, budgets, standards, health and hygiene and more.

Cruise Ship Pastry Chef: The pastry chef is responsible for preparing and making all of the pastries and desserts on board the ship for the guests and crew, as well as for the various gift shops.

Set sail with Carnival Cruise Line and help us bring the FUN to life aboard one of our fantastic vessels as a Sous Chef - Pastry. You will form part of the Culinary Arts management team and lead the pastry and bakery operations of the ship.

Position Duties and Responsibilities:

• Must have comprehensive knowledge of Pastry & Bakery operations.
• Precise knowledge of all product specifications in use
• The ability to coach, mentor and develop personnel and their work is a necessity

Position Minimum Requirements:

• Ideally, the candidate must have a Bachelor's in Hotel Management or an equivalent in Culinary Arts
• Ability to clearly communicate in English, both verbal and written
• Cruise line experience comparable to CCL or work exposure at a 5-star property at minimum with multiple dining venues is a requirement where the last position held is at Pastry Chef or equivalent
• Experience of the following:
• Fine dining desserts and advanced plating techniques
• Formal dining desserts and plating techniques
• Petite fours, Mignardises and Friandises
• Advanced chocolate and confectionery
• Advanced buffet desserts and presentations
• Advance Ice Creams, sorbets, and gelato
• Advanced bakery techniques, including French and Italian bread and sourdough
• Advanced Viennoisserie
• Intermediate sugar and chocolate arts are desirable
• Demonstrated knowledge of  manpower scheduling and duty rosters
• Practiced exposure to cost management and should have been responsible/ participated in achieving set cost goals
• Demonstrated exposure to hygiene and food safety practices comparable to principles listed under the USPH VSP program

Undergo assigned trainings to develop skills & knowledge for the future positions.

Report any equipment malfunction, difficulties & concerns to the supervisor on duty.

Follow additional duties, other than listed in the job description, assigned by management due to the operational needs/shortages/changes.

Ensure beverage stations are full at all times and cleaned daily.

Engage in light conversations with guests always greet them with a smile.

At least 5 years of experience in similar roles is required.

Chefs de Cuisine

Pro Sea Staff is recruiting  Chefs de Cuisine for both ocean and river cruise lines. Candidates must have experience in international cuisine in high-end establishments, and in managing large brigades. Chef de Cuisine onboard a cruise ship is a senior member of the cruise line culinary team  and is responsible for all other functional Chefs in the cruise ship kitchen. Chef de Cuisine  oversees the galley/kitchen and is responsible for the production of all foods available to passengers in the various food outlets and buffets on the ship.

Pro Sea Staff is recruiting  Sous Chefs for both ocean and river cruise lines. Candidates must have experience in international cuisine in high-end establishments, experience in managing large brigades and experience with volume. Sous Chefs assist with the overall production of all foods in the galley/kitchen and manage a team of Chefs de Partie and Demi Chefs de Partie.

Pastry Chefs

Pro Sea Staff is always looking for Pastry Chefs for both ocean and river cruise lines.  Candidates must have experience in both Pastry and Bakery and have knowledge of international pastries. Strong knowledge of HACCP standards. The cruise ship Pastry Chef is responsible for the day-to-day operation of the Pastry and Bakery sections and the production of all pastry and bakery goods . Pastry Chef job responsibilities also include menu costing, portion standardization, supervision of food preparation and hygiene standards in the Pastry area.

Sushi Chefs

Pro Sea Staff is always looking for Sushi Chefs for ocean cruise lines. Candidates must have experience in high volume preparation of sushi, nigrini, temaki and sashimi. Experience with mise en place, production techniques and a broad knowledge of a variety of raw fish, seafood and other ingredients. Strong knowledge of HACCP standards.

Cruise ship hospitality jobs

Italian / French Restaurant Waiters (M/F)

For specialty restaurants onboard luxury cruise lines REGENT SEVEN SEAS / OCEANIA  . Candidates must have 2 years of experience in high-end hotels and restaurants, good knowledge of mise-en-place and table service. Contracts are 6 months on/2 months off. Salary is $2750 per month with flights paid by cruise line. ONLY Italian and French Passport holders may apply. Fluency in English is required.

Restaurant Waiters and Waitresses (Empregados de Mesa / Camerieri-e di Sala)

Candidates must have a minimum of two years of experience in four or five-star hotels or high-end restaurant and knowledge of wines and international cuisine. Fluency in English is important. Contracts are 4 months on board followed by 2 months leave. Salary is paid in Euros.

Housekeeping Stewards and Stewardesses

Candidates must have a minimum of two years of experience in housekeeping in hotels or residential areas. A good level of English is required. As of April 2023, we are NOT recruiting for this position. We will inform you when we are asked to resume the recruitment of Housekeeping staff.

Hotel Director / Assistant Hotel Director / F&B Manager

Pro Sea Staff is always looking for Senior management positions for both ocean and river cruise lines. Applicants must have cruise ship experience in the position they are applying for.

Chinese (Mandarin) and Japanese speaking applicants

Applicants with experience in one of the following areas: – Entertainment (theater, entertainment experience) – Restaurant staff – Front Desk (hotel experience). A minimum of two years of experience is required for each of these areas. Applicants must be fluent in Chinese or Japanese and conversational in English.

Cruise ship technical jobs

Candidates must have a minimum of two years of experience working as Carpenter, preferably on ships, shipyards or in large hotels and resorts. Candidates must speak English at fluency level.

Electricians

Casino dealer

Working as a dealer at a cruise casino can be an exciting gig. These workers may oversee poker, blackjack, roulette, and more games.

Some cruise ships also hire nurses to provide care to passengers and cruise staff.

The amount of money nurses make on average usually depends on the type of nurse. Registered nurses (RNs) make $81,220 annually. Licensed practical nurses (LPNs) make $54,620 a year.

Massage therapist

Many cruise passengers opt to take advantage of spa services. Massage therapists may work in a spa or travel to guests’ rooms with their equipment to provide massages.

Licensed massage therapists make just under $49,860 annually on average.

Pay for these workers can vary, depending on the cruise line’s tipping policy. The average salary for a server in the U.S. is $29,120 annually.

Sales associate

Part of the beauty of the typical cruise ship is that it’s kind of like a floating mall, filled with gift shops and retail stores galore. Ships often need many sales associates to staff these stores.

Again, depending on the cruise line and the job, the pay for these gigs may vary. However, BLS data puts the average salary for a retail sales worker at $30,750 annually.

That’s not huge money, but perhaps it's enough for students to get ahead financially during breaks between school years.

Bottom line

Working as a cruise crew member is certainly not for everyone — lodging for staff can be cramped, days can be long, and you might be away from home for weeks at a time.

“Italian Chef, Great Food” Review of Aist

Aist Cafe is a great place to visit any time of the year. However if you go in the summer time you can eat outside on the ground floor patio, inside in the relaxed cafe style area, first floor with a more traditional restaurant lay out and watch the chefs at work or on the roof patio. The food is generally international leaning towards Italian due to the chef's origins. Fish courses are particularly good with fresh catch each day. The young staff are generally attentive and most speak some English. Though I did once witness the owner, Arkady Novikov cracking the whip on his staff. He does set high standards. All menus are Russian/English so finger pointing is no problem with the waiters for your choice! A good wine list though not unexpected prices are steep though there is normally a good South African or even a classy Graves under GBP100! After many visits I usually lean towards fish courses but this is purely down to taste. Expensive? Yes but the quality of food is good and generally the staff very helpful. If you want to be brave try ordering their specially brewed ginger tea it is addictive!

Went to Aist cafe a few times during my one week stay in Moscow. Excellent food. Sunday brunch was very delicious as well as the usual dinner menu. VERY nice and friendly staff. A friend of mine who doesn't speak any Russian was able to order in English and surprisingly got the right order. Considering how rude the crowd can be at other places it is impressive that these folks stay so chill and helpful. Interior decor is classy and cozy. Loved it so much especially the roof top. Highly recommend this place to both locals and visitors. I was impressed.

Visited this place with a business partner. The atmosphere was rather trendy with mostly an upscale younger crowd. The food was good - particularly enjoyed the fish baked in salt crust and the buratta salad - but the wine was really over priced and not that great.
