Along with releasing her new LP this year, Beer also published a memoir, The Half of It . Speaking of the connection between the book and the album, Beer said, “There are some serious songs on the album that are about really emotional and personal things to me. My fans who have read the book will go into the album with a clearer vision.”

A Food and Drink Tour of Madison, Wisconsin

I 'm what you would call a food-motivated person. When I wake up in the morning, one of the first things I think about is that day's food possibilities. (Will I make kimchi noodles or curry? Will we dine at the new Laotian place or get our favorite burritos?) When I'm traveling, this goes from about a 10 to, oh, 10,000. (My partner pretty much goes along with this, so long as I "walk" her between meals.)

Which was why I was so delighted by a recent trip to Madison, Wisconsin. I was there last June for a conference but was able to extend my trip and explore. And I was bowled over by what I found: new spins on the Wisconsin tavern, creative chefs, and a seemingly endless supply of fantastic produce. It's a college town, yes, but it's also one of the most inspiring cities I've eaten my way through recently. And it should come as no surprise, given that it's surrounded by an impressive farming culture headlined by young farmers, has a strong Hmong (Indigenous Southeast Asian) community that has contributed greatly to Madison's Laotian food scene, and is drawing such acclaim that some of the latest season of Top Chef: Wisconsin is set there .

Here's where to eat-and where to "walk" it off in between.

Where to eat in Wisconsin

Supper clubs, Laotian restaurants, and cheese shops-oh my! This isn't an exhaustive list, but there are many local highlights. And a note about drinking: You should! Madison has a fantastic beer and burgeoning distillery scene-it's too much to get into here, but for a taste of the city's best beer, try the Spotted Cow at New Glarus Brewing Company or one of the high ABV brews at Giant Jones Brewing Company , and for spirits, I recommend a little day trip to the J. Henry & Sons bourbon tasting room in Dane, about 30 minutes north of Madison. (And for the stories behind these places, check out the Pour Another Round podcast.)

For a taste of Lao, look no further than Ahan , a busy spot on Williamson Street. Executive chef and co-owner Jamie Brown-Soukaseume grew up in the food industry-her family owns another popular Madison spot, Ha Long Bay -and her mother, who was born in Laos, passed down her recipes. They now form the base for some of Jamie's most to-die-for dishes, including rich, brothy khao soi and sweet and savory papaya salad. Don't miss the Lao egg rolls.

Fromagination

It's almost too overwhelming to step into this cheese shop, but when we're traveling we must persevere. Fromagination is where you come to taste Wisconsin in cheese form, whether you want to try an aged cheddar with a streak of blue (Dunbarton blue from Roelli Cheese Haus) or a creamy goat cheese (Linedeline from Blakesville Creamery). The friendly cheesemongers can guide your purchases-grab a bunch of cheeses, along with the crackers and other treats they sell, and make a picnic, or walk around the corner and order a bottle of wine at Square Wine Company for a true feast. Want something more substantial? They also make sandwiches , mac and cheese, and salads-plus "cakes of cheese" that look like legit wedding cakes.

This market-driven restaurant-meaning that Wisconsin-grown ingredients are the stars of the show-is an absolute must. At Fairchild , the vibes are mellow but luxurious, the cocktails are fabulous, and the ever-changing dishes that chefs Itaru Nagano and Andrew Kroeger send out-such as pan-fried sweetbreads with pickled sunchokes and a Door County cherry and shiso puree-are reason enough to relocate to Madison. And if accolades are your thing, the chefs took home the award for best chef(s) Midwest at the 2023 James Beard Awards.

Harvey House

The supper club is a classic Wisconsin experience, offering ambience, cocktails (including the brandy-based Wisconsin Old-Fashioned), and a relish tray with cheese dip and pickled and fresh veggies. The Harvey House took that concept and ratcheted it up a few notches, adding a dash of train travel glamour. It's located behind Madison's historic train depot, and chef Joe Papach and his wife, Shaina, embraced the rail history, even fully restoring a train car that's available to book. It's one of those happy, sparkly places you want to linger all evening. I started with a relish tray outfitted with deviled eggs and a smoked salmon dip and an ice-cold martini, one of the best I've had in recent memory. Then I worked my way up to the Harvey's wedge salad and the superior walleye, the restaurant's take on a classic Wisconsin fish fry.

For something a little more low-key, turn to Joe and Shaina Papach's newest endeavor: Butterbird , an ode to fried chicken. Yes, you will wait in line, but it moves quickly and it's worth it to chow down on mac and cheese bites, fried dill pickles, and fried or rotisserie chicken prepared to juicy perfection. It's also a great place to bring the kiddos: There are games, a claw machine, and a photo booth to keep them entertained.

Lao Laan-Xang Restaurant

This institution was Madison's first Laotian restaurant when it opened back in 1990, and it's still a local favorite. Christine Inthachith and her mother, Bounyong, opened Lao Laan-Xang to share the flavors of their home city, Luang Prabang, which you'll find in dishes like the squash curry (four different kinds of squash, Thai eggplant, and basil) and moak pa , catfish steamed in banana leaves.

Mint Mark has been heralded since it opened in 2018, and for good reason: Chef Sean Pharr-a multi-year James Beard semifinalist-crafts small, creative plates using only what's in season. People wax poetic about his divine buttermilk biscuits and the roasted cauliflower, which is tossed with bagna càuda and white wine–plumped raisins; both items have been on the menu since day one. Everything else ebbs and flows with the season-right now you might order duck frites, an endive salad, and a proper meat pie, filled with tender braised beef.

Muskellounge and Sporting Club

If you want to drink like chef Sean Pharr, pop into his Muskellounge and Sporting Club , also known as the Musky. He says it's like a Wisconsin 1970s parents' basement/fishing club. And it looks the part, with lots of wood paneling and fish painted on forest green walls. This is where you come to play shuffleboard or darts while sipping a whiskey neat or one of the many local beers on tap. Next door is Hank's , a to-go burger and fish fry joint that Pharr opened in 2023 so that Musky drinkers could grab a shrimp po'boy and cheese curds to soak up the good times.

Pig in a Fur Coat

Yes, Pig in a Fur Coat is another champion of Wisconsin's impressively varied and delicious seasonal cuisine. But here chef Dan Bonanno brings his Italian roots to bear, though I wouldn't classify it as a fully "Italian" restaurant-you'll find dishes like Parisian gnocchi with short ribs and mushrooms, but also jerk rabbit with spinach and parsnips. And you have to come back during the day for a sandwich (meatball? pastrami? mortadella??) at Alimentari by Pig in a Fur Coat , Bonanno's Italian deli right around the corner, which was inspired by the one his dad worked at for years.

This 48-year-old restaurant has been called the Midwest's Chez Panisse : L'Etoile is the city's original farm-to-table spot, and many a local chef has worked here before moving on to their own spot in town. Founded by Odessa Piper, it's now owned and run by chef Tory Miller, one of the city's most celebrated chefs. The real move is to opt for the ever-changing tasting menu-right now, you'll find chèvre agnolotti with spring nettles and New York–style strip steak with celery root and black trumpet mushrooms. But you can also choose à la carte, or go for the more casual vibes at Graze , a restaurant that combines Miller's Wisconsin and Korean heritages.

Short Stack Eatery

You've gotta find a good breakfast spot on the road, and Short Stack , a busy one near the capitol, is where I would happily ensconce myself time and time again. Given the name, pancakes are absolutely a star here-go for sweet potato oatmeal or the classic blueberry stack. But there are plenty of savory options, including pulled pork with cheesy grits or corned beef hash. Risk-takers: Order the Blind, an always-changing dish that comes with a discount if you don't ask what it is. (The only question you can ask is if it's sweet or savory.) I love that they have strong gluten-free and vegan options, too, like a vegan hash and gluten-free buttermilk pancakes.

A travel-oriented bookstore where I can also drink late at night? Hello, my new home. I was so enchanted by Leopold's that I visited twice, once (by bike) for a midday coffee and book perusal (all the shelves are organized by country) and once in the evening to sip a Black Walnut Manhattan and eavesdrop on conversations flowing around me.

Where to work up an appetite in Madison

Madison is an outdoor lover's dream, offering plenty of ways to enjoy the sunshine and the lakes-and rebuild your appetite.

Dane County Farmers' Market

Wisconsin has an incredible farming community, meaning that perfect produce is only a stone's throw away. And the 52-year-old Dane County Farmers' Market is where Madison's food action happens on Saturday mornings. The largest producer-only farmers' market in the United States (meaning that only vendors who grow their own produce are allowed), it surrounds the Wisconsin State Capitol building from mid-April through early November. It's the best possible place to stroll on a Saturday morning-though the crowds can be intense after 9 a.m.-and get a taste of Wisconsin's bounty, from Door County cherries to cheese curds.

Madison Adventure Tours

Madison is a platinum-certified cycling city with more than 60 miles of bike paths within the city proper and more than 200 miles in the city surrounds, and an ideal way to see all of it in one (or two, or three) gulps is on two wheels. The city has an excellent bike-sharing program, BCycle , but I recommend starting with an e-bike tour with Madison Adventure Tours , ideally on the first or second day of your trip. On its two-hour city tour, you'll get the lay of the land, while also learning cool facts about the capital city (like, it's built on an isthmus between two lakes-one of only two major U.S. cities with this distinction). And because they use e-bikes, people of all ages can join and pedal happily.

Sometimes, you just need a break from everything. After a busy week, I had a chance to cocoon myself in Kosa Spa , an Ayurvedic wellness center in the Garver Feed Mill (also a great place to eat and drink). Ayurveda is a highly seasonal system of traditional Indian medicine, and owner Shilpa Sankaran has infused her spa with those tenets-you could easily spend a day here getting a consult, resting in the sauna and steam room, or getting an Abhyanga massage using customized oils. Plus, there's good food here: hot golden milk (an oat-based turmeric drink), decaf chai, and khichdi , a rice and dal dish based on a recipe from Sankaran's family.

Olbrich Botanical Gardens

Not far from the Garver Feed Mill: the 16-acre Olbrich Botanical Gardens , a perfect (and free) place to lose yourself in between meals. There's the traditional English-style Sunken Garden with a reflecting pool, a shady birch walk, and a 10,000-square-foot conservatory ($6 admission). Don't miss the gorgeous, gilded Royal Thai pavilion, a gift from the Thai government and the only such feature in the United States.

Kayaking-and log-rolling

There are five lakes in Madison-part of the Chain of Lakes connected by the Yahara River-and come summer, you shouldn't miss an opportunity to engage with at least one of them. Lake Mendota and Lake Monona are the largest (the city is built on the isthmus between them), and you could easily spend a summer weekend kayaking and lolling about on the beaches. Rent a kayak through Madison Boats , which has three locations on the lakes. For a quintessential Wisconsin experience, get in touch with your inner lumberjack at a log-rolling class on Lake Winga.

Phish is a jam band run by a control freak. That’s perfect for the Sphere.

Trey anastasio leaves nothing to chance when staging his surreal spectacles, which invade the new las vegas landmark this month. his goal: to let the rest of the band groove without distraction..

madison beer room tour

W hen Phish sold out all four of the April concerts it had booked at the Sphere , just as quickly as everyone expected, the obvious question arose: Why not do more?

After all, U2 opened the $2.3 billion venue that remade the Las Vegas skyline this past fall with what was supposed to be a 25-show run — until demand built to a fever pitch, and the rock veterans shrewdly extended their stay, amortizing their investment in a dazzling, site-customized light-and-video show over an entire 40 nights.

And yet as Phish prepared to take up the Sphere’s second residency slot, and the band’s fervid fans bid up aftermarket prices well beyond U2’s, guitarist and frontman Trey Anastasio hesitated.

What would an extra weekend of shows mean for quality control?

He posed the question to show director and co-creative director Abigail Rosen Holmes. “It’ll be good,” she told him. “But it won’t be great. If you just do four nights, it’s going to blow minds.”

That was all Anastasio needed to hear.

“Then we’re not doing it,” he recalled telling her.

That is the Phish way. To the uninformed, it may come across as yet another breezy, shambolic jam band, inheritor of the Grateful Dead’s traveling circus. But devoted members of the Phish “herd” understand the complex dynamics that drive these erstwhile Vermont hippies. Anastasio and his bandmates want every show to be the aural equivalent of an Easter egg, offering joy and surprise and an unreplicable magic. At some shows, fans encounter an unannounced rock opera, staged with actors and elaborate props; at another, they’ll each walk away with a free box of mac-and-cheese. Phish never repeats a set, and it refuses to commemorate its classic albums.

Not exactly what you expect to find among the A-list nostalgia acts that dominate the Strip, which in coming months will host residencies by Mariah Carey, Garth Brooks and the Killers, re-creating their 2004 album “Hot Fuss.”

“There is a quality of Vegas where older bands go to play their old album, to make a lot of money late in the twilight of their career,” Anastasio says. “That’s not what we’re interested in.”

So Phish will sweep into town on April 18, intent on playing about 80 songs over the course of four concerts, repeating none. And yes, that will include most of the new material from “Evolve,” an album fans won’t hear until its July release. (The title track drops Thursday.)

Meanwhile, the Sphere’s high-tech 160,000-square-foot LED screen will offer the band a proper swirling canvas for its elaborate visions, as channeled by Holmes. She got her start as lighting director on the Talking Heads’ groundbreaking 1983 Stop Making Sense tour and has since collaborated with Roger Waters, Peter Gabriel, Miley Cyrus and Janet Jackson.

She is also — as is required in the Phish camp — an excellent secret-keeper. Anastasio divulges that the four shows will be linked by a theme, but neither he nor Holmes will say what it is.

“I’m not trying to be cagey,” she says. “I just want people to not have any idea what’s about to happen when they come into the room. That’s part of the fun of this.”

T he path to the Vegas Sphere began in an incongruous place: the tie-dye-friendly campus of the University of Vermont, where Anastasio jammed with longtime bassist Mike Gordon and dress-wearing drummer Jon Fishman for the first time on Dec. 2, 1983, in a student dining hall. A fourth member, guitarist Jeff Holdsworth, dropped out before graduation but the others kept going, soon joined by keyboardist Page McConnell.

It was a Burlington band through and through, imbued with the crunchy spirit of a city that had elected Bernie Sanders mayor, launched Ben & Jerry to ice cream fame and nurtured Bread & Puppet, a politically radical theater company known for its antiwar, anti-nuke parables told through gigantic puppets.

Phish built its loyal audience over a decade through constant touring, without MTV or radio hits. Eventually, after signing with Elektra, the band played “Saturday Night Live” and David Letterman’s show. But the musicians followed the Grateful Dead’s grass-roots model by creating their own company, Dionysian Productions, to handle tours and merch.

It was perhaps not surprising that Phish intersected with certain other aspects of Dead culture. Every show was a freewheeling party, awash in exotic substances. As the party grew, so did Anastasio’s personal struggles, and the band made the difficult decision to break up. The farewell show in 2004 in Coventry, Vt., grossed almost $9 million, but the guitarist remembers a more dizzying number: the 3,000 friends on the guest list for the out-of-control backstage festivities.

But Phish never fully drifted apart. The musicians were best friends as much as bandmates. Even at Anastasio’s lowest point — he was briefly jailed after a 2006 narcotics arrest — he remained in regular communication with Fishman, Gordon and McConnell. Stranded in Upstate New York for 14 months as he completed a felony drug-court program, he found himself picking up the phone to call McConnell.

“Like, a lot,” Anastasio recalls. “And he wasn’t happy because the band had broken up. Yet I never got that. I would call him, and he would answer the phone, and we would talk. I can’t even say how much I care about that man.”

“I guess in my heart, I never actually believed that the band was over,” explains McConnell.

In 2009, a rehabilitated Anastasio returned to the stage with the rest of Phish. There were some changes. The band members signed to a management company, Red Light, to liberate themselves of the pressure of overseeing a staff. And they altered the culture. No more open bar. Not even a can of beer. There was no discussion about this. It just happened.

“I think everyone was relieved to stop having these huge scenes backstage,” says McConnell. “It was just, you know, Trey’s sober and do we really want a bunch of people drinking backstage?”

Even while the easy, loose-limbed sound of classic Phish sprang back to life, the revived band’s prankster glee seemed to swell in scope and ambition. Lighting master Chris Kuroda handled a rig that grew so large it couldn’t always fit into arenas. At a show in 2009, Fishman was shot out of a cannon. In 2017, Phish played 13 Madison Square Garden concerts in a row (now known as “The Baker’s Dozen”) in which not a single song was repeated and a special doughnut was distributed to everyone in the audience. In 2018, a Halloween show turned into the debut of Kasvot Växt, an alter ego band of white-suited Scandinavian ’80s-synth enthusiasts, with an entire set of new songs written just for the gig.

B ut there was only one way for Phish to maintain the organic, improvisational sound that fans fell in love with while carrying out its ever more theatrical visions.

The mandate was to allow the musicians to remain in the moment, plucking jams out of thin air, and not let them get distracted by the cues involved with sending a giant drone whale soaring over the crowd or an all-male kick line in flesh-tone bodysuits dancing onto the stage in time for the closing chords of “Carini.”

Phish could only achieve this by shifting even more power to the band’s in-house control freak: Anastasio.

His wife, Sue, calls him the “relentless communicator.” He is the one who bonds the disparate figures who handle everything including sound, lighting, production and design in the Phish universe. Anastasio has a mantra, “Teams win,” that he repeats more than 10 times in a two-hour interview. He also peppers the conversation with an endless list of names (Garry … Abbey … Chris … Amy … “the French guys at Moment Factory ” … and of course Page, Mike and Fish) of people who deserve credit.

But ultimately, he concedes, this is not a democracy. Having one leader with never-ending energy is how you launch three major production-number set pieces in 18 months while also playing the Sphere and recording a new album.

“There was a time when we started doing these New Year’s gigs, where we’d all four be together, and all the management would all sit in a room and have multiple meetings of all of us, and eventually that kind of wore down to just Trey taking that on himself,” says McConnell. “If there was something that was really major, we would all discuss it together. But most of these things are just details, you know what I mean?”

The Sphere run started with a conversation at a Rangers game with James Dolan, the chief executive of Madison Square Garden, where Phish has played 83 times (more than Elton John, less than Billy Joel), and the mastermind behind the new Vegas venue .

There was initially talk of Phish going in first. But after U2 ultimately opened the venue in September, Anastasio and Holmes went to see the gig.

A longtime fan, Anastasio admired the way U2 commanded the arena. But he knew the Phish gig would have to be different. Take those hero shots of Bono and the Edge, looming large on the LED wrap as they strutted the stage.

“It suited Bono because he is that kind of star,” says Anastasio. “But that’s not me. I don’t do that. And same with Edge. There’s one song where he just rocks into the camera. He steps forward and he’s 800 feet high on the wall. I’m not going to do that.”

So what would he do? Holmes asked him early on.

“I said, ‘What do you think this is? Do you think this is one of those New Year’s productions or is this a Phish show in a great new environment?’” she recalls. “And his thought is that it’s a Phish show in a great new environment. And so that’s sort of how we framed thinking about all of the creative choices we’ve made. We wanted to absolutely make the most out of the room and also support Phish doing what Phish does best.”

Obviously, there would have to be four different sets for the four nights. That was barely a discussion. Sure, it would have been a lot easier for Holmes and the tech folks if they could stick to the same 20-song set list each night. But that would be like telling Jackson Pollock to paint poodle portraits.

“What won’t let us repeat a set is the fact that we don’t want to,” says McConnell. “We want to keep it fresh for ourselves and fresh for everybody else.”

Kuroda, the light master, would be on hand to work with Holmes. But Phish’s usual rig wouldn’t fit into the Sphere. And then there was the challenge of the sound.

At the U2 show, Anastasio was struck by how mono the mix was, as if all the speakers were crammed together, booming from the small stage on which the band performed. He discovered that there was a reason for this: The Sphere’s shape spawns reverberations that make it difficult to effect a true stereo sound without creating bounces and delays that would distract people on one side or the other. But Anastasio recognized it wasn’t inherent to the venue’s sound system. When he went to see the short Darren Aronofsky sci-fi film that screens regularly in the space with a different setup, he was impressed by the acoustics.

Enter veteran Phish sound man Garry Brown. With the help of the Sphere staff, he crafted a miniaturized version of the venue in Rock Lititz, Phish’s regular rehearsal space in central Pennsylvania.

“I don’t know what limitations U2 put on themselves, but obviously with them being the first one in the building, it was a learning experience,” says Brown. “With my mini-Sphere, I could technically go in, sit in Section 201, which is all the way left, you know, far away, all the way over. And I could technically sit there and place the instruments where I felt they could work. And then I could move around to 13 different seats in the venue digitally, to see if what I was doing was working. And so I’ve created a soundscape that is a lot wider than what U2 did.”

For Anastasio, the Vegas gigs will offer a chance to experiment with a new venue packed with sonic and visual opportunities. But then, having achieved mastery over the Sphere, Phish will happily put it in the past. This summer, the band will move on to multiple dates in Mansfield, Mass.; East Troy, Wis.; and the four-day Mondegreen Festival in the Woodlands of Dover, Del.

And Anastasio has his own visions yet to fulfill for those shows. He is always happiest with the one he just completed.

“I thought the Mexico shows [in February] were just crushing in terms of music,” he says. “Just the music itself. I know bands always say, ‘Well, our last shows were the best shows,’ and most of the time they’re lying. I’m actually not.”

Doja Cat has rarely turned in an uninteresting or unprovocative performance, and her headlining set Sunday night at Coachella offered a plethora of looks and concepts designed to prompt dazzlement and debate among the viewing audience. Dinosaur skeletons? Mudbath choreography? Twerking Yetis? Her hour-and-a-half set just about had it all…

Popular on Variety

The set ended with a big, brown bang, as Doja took to the center platform out in the audience she had begun the show on — no longer clean and gleaming, but filled with mud — for “Wet Vagina.” Soon, her phalanx of dancers joined her there, but this was no mud wrestling exhibition, as the choreography continued just as studiously as it had back on the main stage, albeit with all the women down on their knees for this last round of literally dirty dancing. It was like Woodstock ’95 inverted, with the audience kept safely away from an artists-only slimefest.

This was hardly the only memorable setpiece. Not very much earlier, Doja Cat had been sharing the thrust ramp with a giant prehistoric beast, brought to life by a group of puppeteers controlling the skeleton from underneath, walking the dinosaur, as it were.

Even Doja’s hair changed during the set, as for most of it she bore the extremely close-cropped, blonde look fans have become familiar with. At the outset, though, she was wearing a blonde wig so long that it was if she had taken a look at Ice Spice’s extraordinarily long red wig from the night before and said, “Hold my beer.” Eventually that look led her from the ramp onto the stage, where she was awaited by a team of dancers dressed up as platinum Bigfoots, with long, blonde tresses of their own that just happened to be covering their faces, as well as the rest of their bodies.

Guest Teezo Touchstone had the most potentially dangerous costuming of the night, wearing a vest covered with spikes in both front and back, making it painfully clear that he and Doja would not be embracing at the end of their shared number, the brand new “MASC.” The other two guests who shared the stage with her, 21 Savage (who performed his own “n.h.i.e.”) and ASAP Rocky (who joined the headliner on her new “URRRGE!!!!!!!!!!”), were less thorny in their brief appearances. Rocky’s costuming looked close enough to what he’d worn in also making a guest appearance with the previous night’s headliner, Tyler, the Creator, that some viewers wondered if he’d just slept in his flamboyant clothes.

Although the aforementioned four top 10 hits made their way into the set, as one commenter said in the chat, “She seems to be finished with her pop era.” Nearly every song included emphasized Doja’s well-respected rapping skills over the pop singing heard on some of the absent hits. The general avoidance of “Planet Her” was surprising for anyone who caught her “Scarlet”-based arena tour last year, during which she did perform the relative oldies casual fans might’ve expected to hear, albeit sometimes in refreshed arrangements.

Was it polarizing as hell? That much was obvious from even fleeting looks at the chat, where the tenor of the comments ranged from “Now, that’s how to headline,” “That was fiiiiire” and a constant (yes) “Mother is mothering” to “She literally skipped all her hits” and “Stop playing ‘Scarlet’!” (some viewers still being under the impression that a chat is a request line). Forgettable? Not remotely. If the setlist wasn’t necessarily what the usual rules of show business would have dictated, then, to paraphrase the most oft-quoted line from “Paint the Town Red”: Bitch, she segued what she segued.
